Machida Shuzo, the third bottle for drinking at home. This time it is a green label 🟢 Miyamanishiki Tokujun. It doesn't have much of an upfront aroma, but the hint of pineapple🍍gasiness is strong, so it was a pineapple squash🍹 with little sweetness🍹.
However, compared to the previous Pink Omachi and Black Yamadanishiki, the sweetness is much less and the bitterness is a bit more subdued. In order of preference, I think it loses 😩.
Last weekend I went to a live concert for the first time in a while. It was raining hard, but it stopped before the show started and a rainbow 🌈 appeared, so I snapped a picture 📸.
It's hard to get tickets, but I want to go again.

Machida Sake Brewery, I see that the label changes depending on the sake rice! I haven't had it yet, so I'll keep that in mind ✨I think I'd buy Omachi if it were this sake rice. I'm jealous of the bearded man at the Nissan Stadium concert!

For the first time, I chose Omachi.
Fruity aroma when you open the bottle!
This is my absolute favorite!
It has a juicy sweetness in the mouth, but never too sweet, and I loved it!
I also bought the MAX Daiginjo to give to my dad for Father's Day. I am looking forward to giving it to him!
Rice used: Omachi Polishing ratio: 55
Yeast used: Association 1801 & Gunma KAZE
Sake meter: -2 Acidity: 1.6
Water used for brewing: Tone River subsoil water
It has a gassy, slightly sweet flavor and aroma like melon and green apple, with just the right amount of acidity to make it a juicy sake.
I served it with a side dish of betara-zuke (pickled radish), and the sweetness was very much in tune with it.

A fresh and fruity sake typical of Machida Shuzo.
The sweetness and acidity are exquisite, and combined with the gaseous sensation, it is crisp and refreshing.

It was named after the brewery's name in the hope that it would be widely known.
Currently, the brewery is led by Akiya Machida, the fifth-generation brewer, and his wife Emi Machida, the toji (chief brewer), who are married to each other.
