Sourness in the mouth and a sense of rummy from the acidity!
It is a refreshing sake. The gaseous sensation is pleasant as it rides on the tongue.
This is a "delicious" sake.
It seems to have won the SAKE COMPETITION 2025 Junmai Ginjo category Gold Award!

Machida Shuzo has come up with a brand that is shrouded in "mystery! The only other information not disclosed is that it is junmai (pure rice) sake and that it is sake made from unpasteurized sake, so that it can be enjoyed by the nose and palate without relying on specifications. Since it is a test brew, this may be the only time you can challenge the "mystery" of this sake.
Freshness, light. Aroma: sweet, white peach type? Dry... Slightly igami.

No specs listed.
I thought the aroma was sour, but when I drank it, it had a profound sweetness and sharpness. There is a hint of a tangy taste, and it has the atmosphere of unfiltered raw sake.

A collaboration with Machida Sake Brewery.
I don't know what the specs are since they don't disclose them, except for the sake, but it's very dark, so it's probably a hara-shu.
I don't dislike it because of its richness and freshness, but it's not easy to drink because it's so thick.
It is dry but has a sweet aftertaste, which I used to like.
Schwarzenegger's Acid Bitter
Interesting.
But what's with the deliberate nondisclosure of the rice and milling ratio on the label?
Am I the only one who thinks that they should just hide that column?
