Finally, we are slowly moving into normal mode 🤣. Today's sake is Hanamup, a staple in our house😇 Today's sake is Junmai Daiginjo Aizan, which is a bit more luxurious than the other Hanamups 😇. Just had it last year on the eve of my birthday 😀. I blush when I read your comment at that time😅. The comment at that time was...too beautiful and not enough. I like Hana Yuu's Dewa Sanzu Junmai Ginjo and Kaorin likes Oumachi Junmai Ginjo... 😅. It's very beautiful but has a strong umami flavor and is still very tasty 🤣. We've been drinking sake for only half a year, it seems we're still too young for such a delicious sake 😅. By the way, we were able to drink Kinjaku until today and the aroma and luxurious flavor remained until the end😇.

We are still newbies to Japanese sake, but we are not very good at dry Niigata sake 😀. We knew that Yamashiroya was a famous Niigata sake brewer, but we had never picked up a bottle until now 🤣. This time, I happened to find Yamashiroya's Origara-mi at a liquor store I often visit, and as I love sparkling nigori and origara-mi, I thought it would be a good challenge for Yamashiroya as well 😀 It is not very effervescent, and it opens well. It didn't have much fizz, and when I opened the bottle, there was no ogori-gara-mi at all 🤣. I also felt it was a little dry, but that didn't bother me at all 😀 It was so delicious that I didn't mind at all. It was so delicious that I didn't mind it at all 😀. Maybe I'm gradually broadening my horizons 😇.

Kansai Sake-no-Wa Sakai Bring Your Own Off-line Meeting (7) I brought my own sake 😌. I was going to open it at the last minute, but I was able to buy Tenkaeru thanks to Mr. Yoohee, so I put it off. I thought the date might be a little old to bring it to the off-line meeting in November (purchased in July and manufactured in January...), so I brought it this time 🙄. I forgot to take a picture so I used the one I took when I bought it😅 I forgot to take a picture so I used the one I took when I bought it 🤣. It tastes like strawberry and berry. This is the flavor I had in mind when I first drank it. I sometimes had a hard time finding the right taste, but this time I realized that this is the taste that I think is the best 🤔.

We managed to reach the 400th milestone without a hitch 😀. Of course, our number one is Kaorin's favorite, Mr. Hanamup 😀! Out of the 400, Kido-san had the most bottles (20) and Hanamup-san had the second most bottles (12) 🤣. But due to some adult reasons, Hanamaru-san is only bottled in 1 sho (1.5 liter) bottles, and the rest are mostly 4-gou bottles, so in terms of the amount we drink, Hanamaru-san is number 1 in our house 😀. This is the only Hanamup that we currently have in stock, so we decided to open today's bottle with this Hanamup's Omachi 😇. Hanamaru-san's sake has a beautiful and delicious sharpness with any rice, but I still prefer the nama-shu with any rice. From now on, I can only get fire-brewed sake for a while 🤣.

The other day, Kaorin and I went to the Kinoshita Meishu Store, which is located near my house 😀. When we were there, the brewer from Okayama Prefecture's Kamishin Sake Brewery was there and they were having a tasting event, so we both had a chance to try some 😀 We didn't get to meet him that day, but it seems that bouken-san was there as well 😀. We didn't meet him that day, but it seems that bouken-san was there too 😀. Although it was different from the sake Bouken-san chose that day, Kaorin seemed to like this nigori, so we took it home 😀. According to Kaorin, this sake tastes like summer orange liqueur with soda 😇.

Tasted and purchased at a tasting at Kinoshita Meishakuten Rice: 17% Omachi for Koji rice, 83% Akebono for Kakemono rice As I wrote in my post about the tasting, satoumi rice is rice made with oyster shells as fertilizer. Sweet and juicy with a hint of pineapple 🍍. There is a bit of bitterness at the end, but I highly recommend this sake for those who like sweet and tasty! Much better impression than when I tasted it. Very sweet and tasty 😋.

It is said to be the earliest Shiboritate in Japan, prepared in summer. This is my first time to buy a sake with Princess Michiko yeast🌹. It wasn't on the tasting list at the Shinshin tasting, but I was told it was the last one, so I bought it😅. Somewhat floral yeast-like 🤔. Fruity and lychee-like as the label says. Delicious with sweet and sour taste 😋. Sake made with Princess Michiko yeast is usually Junmai Daiginjo, so it is often expensive, but this one is reasonable 💰.

After much agonizing over shochu tasting today, we were served the undoubtedly delicious Miko-chan's Active Nigori 😇. We managed to open the bottle without incident, and we were able to compare the supernatants as well😇. Miko-chan's supernatant is a bit dry and fruity, but it was even more fruity and tastier when mixed with the other shochu 😀.

Before slowly drinking the sake, we started with the shochu sake tasting training 😇. I immediately recognized the rice shochu because its aroma is close to the usual ginjo aroma 😀. However, I couldn't understand other shochu with strong aroma 😓. I would like to be able to identify shochu just by its aroma, but it seems to be very difficult 🤣. I'd like to be able to identify it by the aroma alone, but it's going to be difficult 🤣. Today I will be opening a bottle of my favorite Akita Sake Komachi Nama Sake by Hanamaru 😀. It's been in the cellar for a while, but the low temperatures have kept it from losing its fruity character 😀. I like the fruity taste of Hanamup's nama-shu, even if it tastes a little different due to the different rice 😀.

It is gassy and juicy like melon. Personally, I don't think it's too sweet. I've never heard of MS3, but I've heard it's a brewer's yeast. The bitterness lingers in the aftertaste. It seems sweeter at higher temperatures. On the third day after opening, the dryness is lessened and the sweetness seems to come out a little more.

A noble sake type. Not as gaseous as expected. Unique sweetness. Unlike the image on the label, it is not a very modern type and a bit peculiar. I like it, though. I haven't had Hagi no Tsuru at home in a while, but maybe the cat label was better and more stable 🤔.

The day after the Gifu event, I went to Kinoshita Meishu Store to pick up some sake. When I got there, Kabishin Sake Brewery was having a tasting event and I drank a lot of sake! I drank Shinshin Junmai Ginjo Bottle Enclosure Polishing ratio 55% Akebono The rice is made from oyster shells as fertilizer. The impression is that it is a mild yet umami (flavorful) sake. I did not feel any pungency or sake-like sensation. Shinshin Junmai Sake Jikoujyo Polishing ratio 70% Omachi It was delicious with juicy flavor. Sake with a challenge of acid base and sweet sake. Fruity sweetness. As Aladdin said, it is indeed a grape 🍇 not muscat, but a red one. Muscat is available, but grape is not so common. I think it's always great that it's low in alcohol but still has a solid drinking experience.

I have always wanted to drink Asukai, and finally got a bottle of the raw sake! I heard that the brewer passed away suddenly in 2015 and the brewer's wife and sisters are running the business. I wonder if that's why the production is so low, and even the distributors don't get many bottles in stock. It is Asukai's challenge sake with 13% alcohol and -5 sake. It is indeed a low-alcohol sweet sake with a gentle taste, but it tastes a little astringent at the end. It also has a strong acidity. Perhaps it is a characteristic of the brewery, but it has a flavor that is not often found in sweet sake. Thick sweetness like syrup. A little bit like Akizuka in the latter half 🤔.

Machida Shuzo Junmai Ginjo 55 Summer Jun Usu Nigori Omachi I took off the lid cover and it popped open on its own. The bottle opened on its own 😳. The day after we drank it and the day after that it was in the fridge. The bottle was flying open on its own 🚀😱. It's a very energetic sake 😊. They say it's an active nigori. But...when I drank it, it was surprisingly gassy Mature... 🙄. Fruity sweetness and acidity typical of Machida Full flavor unique to Omachi and A good amount of bitterness and a clean aftertaste ✨. I don't usually drink summer sake. but this kind of summer sake is not bad 🎐.

Today is Hanamamu 😀. Kaorin loves this sake the most 😇 The most checked-in sake in the past year is Kido and the second is Hanamu, but since Kido is a four-pack and Hanamu is a one-bottle sake, it is Hanamu that she drinks the most 😀. However, we were not able to stock many sake bottles because of the sake bottles, but now that we have a sake cellar, we are able to stock quite a lot of sake. We have 3 bottles of Hanamup at home, and after thinking about which one to open, I chose Sake Mirai, which was my favorite among the ones we drank last year 😀. Kaorin, by the way, said she liked Akita Sake Komachi the best last year 🤣. I knew it was delicious 🙆‍♂️ It's very fruity, but the flavor spreads beautifully and is not too strong, so even though it's sweet and delicious, it doesn't interfere with the meal at all 😇. It's a really delicious sake 😀.

Finally, we have three prefectures left in our sake tour of Japan... Okayama Prefecture, Shizuoka Prefecture, and our home prefecture of Osaka😇. I wondered which order to go in, but I'll start with Okayama Prefecture's Shinshin-san 😀. May they brew wonderful sake again this year 🙏! Actually, I'm going to Wakayama on June 16th to sign up to participate in Kido's sake rice planting 😀. I hope Kido will be able to brew a rich brew this year too 😀. This Shinshin doesn't have much of an aroma, but when you put it in your mouth, the sweetness and umami that you get from the rice spreads out in a natural way, and it cuts through in a flash 😇. It is a delicious sake 😀. Kaorin made sauteed meat and onions with handmade onions that Rafa papa gave us yesterday along with soba noodles.

I drank Urasato's light nigori earlier this year and was very impressed 😀. After that, I had the second version of the same light nigori at chuin 😇 It was totally different from the 1st version I had last time 🤣. Mr. Kawada of chuin-san's explanation convinced me 😇. This must be the great skill of Mr. Urasato Touji 😀 😀. Mr. Kawada says that even if the same ingredients are used and the same brewer makes the same sake, it will be completely different depending on the toji's blueprint 😀. Compared to the 1st sake, the 2nd sake has a more subdued aroma, but I felt again that this one has a better depth of flavor and depth of feeling 😀. The ability of the master brewer to make such a difference with just a blueprint is still amazing 😇.

Apple Ninja 🥷 purchased at the last store on the North Osaka liquor store tour with Rafa. It's a sake made with apple acid yeast (No.77). The cute ninja got me and I totally bought the jackets😅. The taste is suitable for cold drinking. The first sip is sweet (‼️), but it's also crisp, so I can handle it. I can also taste a hint of apple at the end 🍎.
