Kokuni-shu Fair 2025 Osaka (2) Since all prefectures except Kagoshima and Okinawa are exhibiting at the Kokusyu Sake Fair, our strategy beforehand was to try to get sakes from prefectures we would not normally be able to drink 😀. However, the first booth we visited was in Yamaguchi Prefecture, and the one facing us was in Nagano Prefecture 🤣. When I saw Nagano sake, which I love, there was no way I could not visit 🤣. However, since I was there, I decided to stop drinking the sake that I usually get, and went for a sake that I don't usually drink...or can't afford...and this Junmai Daiginjo from Masumi caught my eye 😀. I usually can't afford a sake of this price 😅. I felt a little bit of Yamahai-like nuance in the top nose, but the overall impression was of a clean, easy-drinking sake that went down smoothly😇. I've only had Masumi sparkling nigori so far, so I had a good impression of my first clear sake😇. I also enjoyed Comet and Shinshu Maihime, which I hadn't had yet😇. The new Maihime in particular was described as dry, which is not the type of sake we would normally drink, but the first attack was a big thump, followed by a sweet fruity taste that we would fully enjoy at home 😇.

Kunisake Fair 2025 Osaka (1) On Sunday, I attended the first ever Kunisake Fair in Osaka 😀. I was overwhelmed by the size and scale of the venue, but I was able to meet up with Eiji-san from Sake-no-wa and we had a great time 😇. At the booth I visited with Mr. Iji, the brewer asked me if I was with my family ❓... I wonder if Mr. Iji's grandparents saw us 🤣. First of all, I headed straight for the Yamaguchi Prefecture booth, my hometown 😀. I looked at the list of participating sake and toasted Kaorin with a Junmai Daiginjo from Kinjaku, which I had been looking forward to since the day before 🍶. Kinjaku is still delicious... a crisp, robust fruit with a sweet umami flavor that finishes off nicely 😇. In the end, we stayed for 3 hours yesterday, and the first and closing toast were both by Kinjaku 😇. I also had a great time talking about Shimonoseki with a brewer from my hometown, Amami, at the Yamaguchi booth, and it was the longest stay from the beginning 🤣.

Summer Nigorinpik 89 Today we had Tate no Kawasan's nigori sake, Hakuba no Kishi 😇. It was a complete jacket purchase, but since it's Tatenokawa's sake, I'm not worried about the taste at all 🤣. This Hakuba no Kishi was a beautiful Junmai Daiginjo sake, not at all like a nigorizake 🤣. It is a delicious sake with no rice flavor at all, just a strong clean taste 😇. It is nigori but not like nigori, very strange but delicious 😀.

Summer Nigorinpic 88 While yesterday's new Koei Kiku, today's is the Snow ⭐️ Crescent that we've had many times, but it's a little different 🤣. Actually, this one was made in May 2023 and aged for more than 2 years below freezing by a liquor store in Kochira before being sold😇. It has the mellowness of any Koeikiku sake I know 😀. It's less like Koueikiku, but it's still a mellow and delicious sake 😀. I guess it depends on your taste, but it was delicious to see a different expression of Koei-Kiku 😇.

Summer Nigorinpik 87 I recently opened a bottle of this new sake from Koueikiku, which I was very curious about after reading many comments on Sake no Wawa😇. As you commented, I chilled it properly and quietly turned the plastic part around the stopper gently, but at that moment the stopper blew out and I was surprised 🤣‼️ I was even more surprised when the cork blew out and the top clear liquid was safely removed. ‼️🤣 The top nose was quite mature, but in the mouth it was delicious with a strong piquancy and quiet fruity sensation. The fresh rice flavor was also very tasty 😇. The comparison of the top clear and the mixed one at room temperature was very impressive with the clear taste of the top clear 😇

Summer Nigorinpik 86 Continuing from yesterday, we had summer nigori, Hatada ⭐️ squash against the Ramune label 😀. Actually, this sake is from a brewery we visited last year on a tour organized by Kyukura on the day of the Shiga brewery opening, but we couldn't bring it home due to the limited number of bottles 😀. The sake is made by second fermentation in the bottle from re-fermented mash that is squeezed in a wooden vat🤣. It tasted like... an adult banana squash 😇. Yesterday's Ramune Label was a transparent sake, but this one was a fruity squash with a sweet and sour banana taste... delicious 😇.

Summer Nigorinpik 85 Finally, we were able to have our first summer sake nigori at the Summer Nigorinpik. It's a summer nigori with a ramune label, made by this season's key sake maker, Murasakyuu 😀. I chilled it perfectly and opened the bottle slowly 😀. I thought the bottle was safely opened... but a few seconds later, there was a thud and then a blowout from the automatic stirring 🤣. Well, I could have guessed that from the amount of oli that had accumulated at the bottom of this bottle. I let my guard down😅. The blowout was minimal and saved my life, but you can never be too careful😅. The taste was a bit different from the usual Purple Space's, but the light sweetness and beautiful carbonation reminded me of a soda Ramune 😇. In case you missed it, we went out for lunch today to celebrate with Kaorin's dad who lives upstairs with a gift and sushi 🤣❓❓ As I'm sure you all know, Kaorin got Father's Day wrong for a week😅. I was buying gifts as Kaorin made me 🤣.

Summer Nigorinpik 84 The first bottle of Tasake's light nigori that we opened earlier was laid down to be aged for a while, but the bottle of Mutsu Hachisen that we opened today was obtained at the same time as Tasake's and ended up being aged for a while as well as Tasake's 😀 As usual, we tasted them including the supernatant that we put back at room temperature. As usual, I tasted the sake mixed with the supernatant that had been brought to room temperature, and I was able to taste the fruity aroma that reminded me of white peaches, and the peach flavor that seemed to be pulled along with it 😇. I don't know if this was due to the petit aging process or the ability of Mutsu Hachisen's orikarami, but it was very tasty😇.

Winter Nigorinpik 83 Today's sake is also from the Winter Nigorinpik, a light nigori sake from Tasake. Actually, this sake has been aged at freezing point in our sake cellar for 6 months since I heard in a post by Sake-no-Wawa that new sake is a little bit cloudy 🤣. I don't know what it tasted like at first, but the taste I got today after a little aging was very refreshing and the fruity acidity was very pronounced. Summer Nigorinpic 81 The Nama-shu Dai-open series has ended with Jigin-sama's Jungin Omachi Nama-shu, and today we are resuming the Nigorinpik 😀 We say summer, but there are many left over from the winter and spring Nigorinpiks 🤣. The last in our series of "Nama-Shu" (aka "raw sake") to be released for drinking while it's still tasty is Jikin's Jungin Omachi Nama-Shu 😇! I looked at the list of sake that I can buy with my points at the liquor store I frequent and found a four-pack of Jikin Toku Jun Hi-ire and a bottle of this Jikin Jungin Omachi Nama Sake...now which one should I buy 🤣. I decided to go for the bottle I usually don't buy because I had a bottle of Toku Junsei that I had just opened in my cellar and I thought this might be my last chance to get a bottle of this season's Jijikin Nama Sake 🤣. It was great to compare the Toku Junsei and Jungin Omachi Nama for the first time 😇. Both are wonderfully balanced, just like Jikin-sama 😇. However, when compared to the Jungin Omachi, I felt that the Jungin Omachi was more balanced and all the flavors were more pronounced 😀. First up is Jikin's Special Junmai Nama 😀. Jikin has a good balance, but this special junmai nama is the one that sticks out to me the most😇. Today's sake comparison is Shinshu Kamerei and Tsukiyoshino, both of which were opened earlier, but since they are all delicious sake, we chose Japanese food such as sushi, bamboo shoots and eel liver so that the food would not interfere with the sake 🤣. All the sakes are definitely delicious 😀. We were able to compare the best of the three sakes: the well-balanced Jikkimasama, which I never get tired of drinking, the 🐢sama, which has great flavor and sharpness, and the Tsukiyoshino, which matches its gorgeousness and gentleness 😇.

Good evening, Yasube! I'm drooling over this wonderful drinking comparison 🤤. Jikin-sama's Tokujunsei is a great aromatic and well-balanced sake, and it's also a great choice to pair with a meal 😋. You are having the best drinking time 😊.

Good evening, Yasubeyesan 🌛Isn't that a special pure sake of Jikkasama 😳It's my most favorite sake ✨I know it's a distant memory 🤣There are so many brands to compare 🤤It's one of the best ☺️

Another unfiltered raw sake from Nagano Prefecture 😀. This is also the first sake that I bought at Wakabayashi Brewery on my way back to Ueda City from the Kitamukai Kannon Temple, which I visited first thing in the morning when I went on a tour of Ueda breweries in March. The aroma is as gorgeous as the name "Sakura" and the taste opens up in your mouth. I failed in the timing of drinking this 🤣. I should have brought it to a spring hanami 🌸😅. It's really rare to find a sake that is so gorgeous and fruity, yet not clingy at all 🌸. Unfortunately, it's hard to find around me, but it was a delicious sake that made me think I could visit Ueda again just to get it 😇.

Good morning, Yasubeyesan 🌞I've never seen this sake before and I'm learning a lot about it ✨It sounds like it has a gorgeous flavor typical of a female toji 🤤I'll put it on my list to stop by when I can travel to Ueda✨.

Hi Nao888 😀 I am not familiar with this brewery in Osaka, but it was a delicious sake 😇. By the way, in Nagano Prefecture, there are also some wonderful female toji, such as Tsuki Yoshino, Shinshu Kamerei and Kawanakajima Genmai, who are doing their best 😀.

Today we have the last of this season's sake from Shinshu Kamerei in our cellar 😀 I was a little hesitant to open the bottle, but I didn't want to leave it out and miss the chance to open it 🤣. I was a little hesitant to open the bottle, but I didn't want to leave it out and miss the timing 🤣. There was a little bit of the last 🐢 Yamada-Nishiki Nama Sake left, so we compared the two 😇. The Yamadanishiki has a more gorgeous taste, but the Hitogokochi has a more complex flavor that I prefer 😇. But I guess this difference is just my personal preference, and I guess everyone has their own way of feeling 😅. Now only fire-brewed Shinshu Kamerei is left in our cellar 😅. I'll have to open the fire-brewed ones little by little until the next new sake season 😅.

Good evening, Yasube, 🌛It's a stunning lineup of Nagano sake 🍶It's sad that we're going to lose this season's draft sake, but it's great that you can make do with fire-roasted sake 😳. I'm jealous that you like it 🐢✨.

Following yesterday's Nagano Sake Festival, we will be having Kitaan Okuni Sake again 😀! This is another challenge sake from Kitaan Okuni, a raw sake made with wine yeast😇. We went walking to the Expo Park as we usually do on holidays when we don't have any plans, but today we decided not to have a Japanese style lunch as it would probably be too acidic due to the wine yeast, but to have Western or Chinese side dishes that would be more acidic 😀. As expected, the sake was white wine-like, but with more sweetness and acidity, and it went well with the sour side dishes and the fruit cakes we bought on the way to the park for dessert 😇

I was able to get it again this year 😀. This sake is brewed by Kitayasu Okuni in Nagano in collaboration with Hata Sake Brewery, which I visit every week, and I was able to have it again this year 😀. This sake is brewed at the beginning of the year and as soon as it is ready, it is locked up in a room made of snow and aged in the snow for a long time until the end of April 😀 The base is fruity, sweet, and delicious. The base is fruity, sweet, and delicious, and because it was aged in the snow for months, the freshness and punch of the freshly brewed sake has been slowly aged at a low temperature, resulting in a rounded, beautifully finished sake that was sweet, fruity, and fresh, but perhaps had a bit of a roughness to it. This is the taste of aging with a lot of time and effort 😀. I'm glad I could drink it again this year 😇

Hi @Mizuhashi! I heard that this store sends the sake that is aged in the snow right after it is made and then dug up at the end of April when the snow melts, which was also at this time last year 😀. I feel that sake matured in the snow tastes better 😇.

I bought this sake when I visited Wada Ryu during my Ueda brewery tour the other day 😀. The timing of the brewery's preparation did not coincide with my visit, so the fridge was empty, including the sake I was looking for, Wadaryu Tomisui🤣. The president of the brewery was very apologetic when I told him that I had come from Osaka, and he brought me this junmai sake, saying that it was the only one they had in the brewery at the moment 😀 The aroma was junmai, and the taste was very typical of junmai sake. The aroma is very Junmai-like, simple and reminds me of freshly cooked rice 😀 The taste is also very robust. The taste was also very rich, with a hint of sweetness from the rice as the main taste 😀. It was quite different from our family's usual choice, but sometimes this kind of sake is also instructive 🙆. The president of the brewery was a real talker and explained a lot about Ueda to the two of us, including the delicious food, stores, and movie locations in Ueda, and thanks to him, we were able to get some delicious soba noodles and movie locations afterwards😇. The office staff who went out of her way to serve us tea on the way to the restaurant laughed and said that our company president really likes to talk 😀. The warehouse made a really good impression😇
