This is another brand I was interested in. Purchased on a trip to Tottori. The aroma was slightly apricot-like. When you put it in your mouth, it still has a flavor reminiscent of apricots and plums. Then, there is the umami of rice. There may be some acidity, but it is not angular and is smooth and mild. The thickness is moderate. From the mid-palate, there is a sense of alcohol and bitterness that passes through the nose. The aftertaste is long. The umami, bitterness, and apricot-like flavor remain. The flavor is similar to that of Shotoku's special junmai unfiltered raw sake. It gives the impression of a mountain sake. Taste level: 80 points

Kochi Prefecture's famous cel-24 yeast. I have been drinking sake made with cel-24 yeast from Kameizumi, Kaygetsu, and Bikuyo. I honestly cannot tell the difference between them because I did not compare them at the same time. I think the power of yeast is amazing. What they all have in common is a gorgeous tropical fruit aroma reminiscent of pineapple. Sweet and sour taste. Juicy acidity. How about Tsukibotan, a representative of Tosa's light, dry wines? The aroma that rises from the bottle is still gorgeous. It has a tropical fruit aroma. In the mouth, sweetness and pineapple-like aroma spread to the palate. It also has acidity. The pineapple flavor is quite strong. From the mid-palate, there is a slight bitterness. It finishes with sweet, bitter and acidic taste. The sweet, bitter, and acidic taste is very refreshing. This sake seems to be made with cel-24 yeast. I think it's delicious, but I can't think of a meal to pair it with. Taste 82 points

Junmai Ginjo from Morishima. The rising aroma is slightly muscat-like. The aroma lingers in the mouth. It has a slightly fizzy and bubbly taste with the umami of rice. The thickness is appropriate for the aroma. There is a bit of acidity, and the taste is sharp and modern. The impression is that it is truly Morishima. It is delicious. Although it is described as dry, I did not feel it to be so dry. It just has a clean and crisp aftertaste. It has a well-balanced and light impression. However, it is not lacking in depth and has the nostalgia of a sake that can be used as a food sake or a stand-alone sake. A reliable brand. Preference 90 points

There are no bad habits, but it has the flavor of sake from Kyoto (Fushimi) to Shiga area. It has a mild rice flavor. Bitterness appears in the middle and finishes nicely. It may be quite good as a food sake. Taste level 83 points

I ordered it because it was in the Co-op's catalog. It was my first time ordering this brand. I wondered if it was a major brewery, since it is a brand that can be found in local supermarkets and chain liquor stores. The aroma that rises from the bottle is of apples. In the mouth, the rice flavor is robust. There is also a hint of acidity, but it is not so pronounced. There is also a bit of bitterness. The taste is a little heavy. The taste in the mouth is unbalanced against the rising aroma. It does not have any strange habits, and the apple-like aroma and the firm umami of the rice are good on their own, but... However, I felt that the taste was somewhat strange. I drank it cold this time, but I wonder if it would be different if I warmed it up. Preference 75 points

This sake was also purchased during a visit to the Ninjutsu Village in Koga. Kitajima Sake Brewery is a major sake brewer in Shiga Prefecture. This one is probably a honjozo sake. The aroma that rises from the nose is slightly grain-like. In the mouth, it has a mild rice flavor with no corners. It has a sweet wafer-like flavor. There is not much acidity. It is mellow. From the mid-palate, there is a light bitterness and, as is typical of honjozo sake, a light sharpness. The back palate is light and refreshing. It tastes like a refined version of Kikusui's Funaguchi Ichiban Shibori. Delicious. Taste level: 85 points

A sake I had a while ago. I bought this bottle when I visited the Ninjutsu Village in Koga. It was my first brand from my first brewery. The aroma is fresh and fruity. In the mouth, it has a fresh acidity and a delicious sweetness. I didn't feel much fizz. The aroma lingers in the mouth. The aroma is more muscat-like. It is a little heavy, but refreshing. Bitterness appears from the mid-palate. The aftertaste is rather long. It has a freshness and liveliness that is typical of unfiltered, unpasteurized sake. It has a robust flavor, aroma, and freshness. I think I prefer to drink it by itself. Much tastier sake than I had imagined. I am very happy to have such an encounter on a trip. Degree of liking 87 points

I have wanted to try Katsuma for a long time. I don't have many opportunities to drink sake from Toyama Prefecture. The aroma that rises is a little fruity, a little like a ginjo aroma. In the mouth, it is more rice-like than fruity. It is full of umami. It also has sweetness. The acidity is not so strong, so there are no corners and it is soft. From the mid-palate, the slight bitterness and fruity flavor returns and the finish is refreshing. It is easy to drink. I've been drinking a lot of hot sake lately, but this one is very easy to drink and tastes great cold. It's not too fancy, so it's good with food. It is also good on its own. This is really the last of the 18 Tosa breweries. We've done it! I thought I drank this one on my own, but it was undrinkable. The aroma that rises is slightly fruity. When you put it in your mouth, the faint fruity aroma that rose to the surface disappears, and the taste is sharp, with little sweetness or aroma. It has umami and acidity, but it is quite refreshing. It has a dryness that makes it a very light and dry sake. Naturally, it has a refreshing sharpness. This is a food sake. Personally, I prefer a little more fullness and sweetness. It would be better if it were warmed up. I drank all of it cold. If you like dry, refreshing sake with a moderate aroma, I think this is right in the middle of the strike range. Taste 73 points Overall There are 18 Tosa breweries, each with its own unique characteristics. My favorites are Kure, Akitora, Minami, Drunken Whale, Tsukibotan, Kameizumi, Keigetsu, Bikuyu, Bunkajin, and Tosa Shiragiku. I will continue to drink Tosa sake!

I had a tingle in the base of my toe before and after my physical exam, and my uric acid level was caught in the results of the physical exam. A little freaked out, I started to take a little better care of my body by drinking less alcohol and mainly using Kou-class shochu. The road to conquering all Tosa sake breweries. I thought it was the last one, but it was only the last two. In the end, I popped them all together. The first one was Kirinosato by Bunmoto Shuzo. Is the brand name "Momotaro" the mainstay of the brewery? First, a cold sake. The rising aroma has a faint hint of sourness. In the mouth, there is a classic sake flavor that I don't like. You can taste the umami and sweetness of the rice. The thickness is moderate. The mid-part of the bottle is spicy, but as is typical of honjozo, it is light and crisp. Next, warm it up. Lukewarm warming softens it a bit, but leaves a flavor I don't like and makes it a bit hard to drink. Hot sake. The bad flavors disappear and the umami comes to the fore. This is delicious. The sharpness is good, making it a perfect mid-meal drink. Taste level: Cold 60 points     82 points for hot sake

Sake from Ishikawa Prefecture. The aroma that rises is classic sake aroma. It is not my favorite aroma. The rice flavor is strong, and the umami is stronger than the sweetness. The thickness is moderate. Perhaps it is because of the acidity, but it is refreshing without being cloying. It is rather spicy. It is like a classic umami spicy sake. It has the feeling of being carefully crafted. It is similar to Shinkame or Kaiharu. The soupiness is not as strong when heated up compared to Shinkame or Kaiharu, which have a stronger soupiness. The classic flavor that I don't like remains even when heated. However, when paired with a meal, it was instantly delicious. It went especially well with the fatty tuna kama. Taste level Cold sake 60 points     Hot sake 78 points

山形県の杉勇。 何度か飲んでいるが、重めでしっかりとしたお酒のイメージがある。 東の千代むすびみたいな。 立ち上がる香りはわずかにフルーティーさがある。 口に含むと杏とメロンを合わせたような香りと米の旨みを感じる。香りのせいか甘やかな口当たり。 酸味も感じるが、それほど主張しないかな。 生酒らしいピチピチとした発泡感。 中盤〜は香りなど残りつつも苦味が出てくる。割とはっきり感じる。酸味も残る。 最近燗上がりタイプの旨辛酒が多かったので、こういうフレッシュ生酒は久しぶり。 苦みが少し気になるけどそれ以外はとてもバランスが良く飲みやすい。 これ美味しい。 滋賀の北島の生酒に風味や発泡感が似ていると思った。 好み度 90点

It seems that a person who trained at Shinkame is the toji (master brewer) of the brewery. I drank some Shinkame, but forgot to take a picture of it. I will leave a record of this one. Cold sake. There is almost no aroma that rises to the surface. When you put it in your mouth, it has a classic aroma, which is not my favorite type of aroma. Mild sweetness and umami. It just has a nice sharpness. It is similar to Shinkame. It is a classic type of sake that is carefully made. Hot sake. The aroma, which I don't like, turns into a vanilla or wafer-like flavor. The acidity comes out from the back with moderation. The sweetness remains and the brothiness becomes stronger. Elegant umami. The sharpness remains good. A little spiciness appears, but the impression is that it is not so much super spiciness. I think this type of sake tastes better when it is warmed up. This is a delicious sake that warms up with a different flavor than Shinkame. Taste level Cold sake 65 points     Hot sake 85 points

I was about to go to bed, because I have to work tomorrow, when I saw the news that I couldn't help but drink. Mr. Osim passed away! Nearly 20 years ago, when I was still a university student and had time on my hands, I had the good fortune to watch every JEF Chiba home game. It was a tremendous shock. I was shocked by the many words of Osim's wisdom. In an interview at a game in which a player named Yuto Sato scored two goals and won, Osim said, "It was not Sato or Yuto who scored, but the JEF team that scored. I was so impressed. There is no end to what I can say, but for now, I would like to offer a toast. I opened a bottle of Okura to offer a toast to Mr. Osim. The aroma that rises from the bottle is floral and apricot-like. In the mouth, it has a soft acidity and a delicious rice flavor. The apricot fruit aroma continues in the mouth. It feels very smooth, as if it is well harmonized. You can enjoy the complex acidity and umami that is typical of Yamahai, as well as the expansion of the flavor of Omachi. It is easy to drink as it is not so heavy. The well-rounded flavor continues from the mid-palate and is refreshed with a hint of bitterness. This is delicious. Mr. Osim, may you rest in peace. Is there soccer in heaven? Mr. Osim, who loved sake, I will drink it for you in this life, so let's drink together there someday. I will drink sake on your behalf in this life. Degree of liking: 90 points

When I visited the Ninjutsu Village in Koga, I bought this sake at a liquor store I found nearby. It was wrapped in newspaper and was a mysterious sake. It was apparently made by the Tachibana Sake Brewing Company, which is not even registered on the Sake-no-Wawa website. The store where I bought it was Liquor Shop Tachibana, so maybe there is a connection. The store seemed to recommend this sake, so I bought it. I could not find much information about this sake on the Internet. It is a sake from the village of ninja, and it is full of mysteries. It may not be brewed in-house. The aroma that rises from the bottle is slightly sweet, which is different from fruity. In the mouth, there is sweetness, umami, caramel-like flavor, and bitterness. The balance is good. The alcohol content is 20-21%, but it is surprisingly easy to drink. For better or worse, it does not have the thickness of 20 degrees Celsius. The aftertaste is light and refreshing, perhaps because it is a honjozo. As you continue drinking, you will notice the high alcohol content as you get drunk quickly. It was a mysterious sake, but not bad. In fact, I quite like it. The mysterious part is probably due to the ninja's village. If the price was less than 1,200 yen, I would like it more. (I think the price was about 1800 yen.) Degree of liking 85 points

The last of the Tottori sake I purchased on a trip to Tottori. In the early days of my interest in sake, I went to Tottori and drank this sake and was shocked at how good it was. I haven't had it for a long time. The aroma that rises is a mild ginjo aroma. The ginjo aroma lingers in the mouth, but it is not showy. The umami of the rice is in harmony with the soft acidity. The quality of the sake is heavy, but clean and soft. There are no corners. The mouthfeel is slightly thickened. From the mid-palate, it becomes a little bitter and spicy. The sweetness also remains, so there is a sweet, spicy, umami, and bitter aftertaste. However, the flavor elements do not fight each other, but are in harmony, and the taste is mellow and mild. I think it is a beautiful sake. For my current taste, it is a little heavy. Taste 85 points

Here is another Tottori sake I wanted to try. The cherry blossoms are almost past their peak in my area, but Hiokizakura. Like Benten Musume, it is famous for its heated sake. First, cold sake. The rising aroma is mild and grain-like. In the mouth, you can taste a lot of acidity. Then comes the umami of rice. The impact is quite powerful. As with Benten Musume, it is not very thick, but it has a strong impact. The middle and later stages are rather refreshing and light. Next, hot sake. The mild aroma of grains is retained, but the flavor changes to that of a refined soup stock. The temperature is partly to blame, but it really sinks in. The acidity becomes a little less pronounced, giving the impression of calmness. This is delicious. The acidity is not too assertive and blends well with the umami. It has a wonderful taste as a food sake. Benten Musume and Hiokizakura have similar tastes, but both become very tasty when heated. I prefer Hiokizakura because of its milder acidity. If it is readily available in the Kansai area, it will become a regular sake. Preference Cold sake 75 points     Hot-warmed 93 points

Surprisingly, Fushimi's sake is not drunk. Even though it is the town where I work. It's a wonder I don't buy it when I think I can buy it anytime. So, I chose a brand of sake that I can buy anytime but usually can't. It is a limited edition sake for the opening of the brewery. It was specially stocked at a liquor store near my workplace. The rising aroma is mild and fruity. In the mouth, it has a muscat-like aroma and acidity typical of nama-shu. There is also a slight effervescence. Moderate thickness. It has a slight habit similar to that of Asakayasama. Up to this point, the taste is rather typical of unfiltered nama-zake, including a cloying taste and a lack of cohesiveness. From the mid-part, the sweetness comes to the surface and the acidity is pulled back. It ends with a soft sweetness and umami. It is surprisingly crisp and leaves a light impression after finishing. The alcohol content is 18%, but it feels light due to the lack of bitterness and spiciness on the back end. From the first half of the bottle, the middle to the end of the bottle is very elegant. It is delicious. Taste 80 points

400 check-ins. One goal accomplished this year! Wanted to see the Tottori Sand Dunes for the first time in a long time, so traveled to Tottori. The snack was a sake special in "Amakara Techo". It has a different selection of sake than "dancyu. The label of this sake is also cherry blossom. The label of this sake also has cherry blossoms on it. First, a cold sake. The aroma that rises is slightly herbal. Like Dr. Pepper. I have never smelled anything like that before. The aroma in the mouth is also a little peculiar, and the rice has a delicious flavor and acidity. The sweetness is moderate. The acidity is quite strong. The umami is not very thick, but it has a strong impact. The taste is a little rough, and each flavor element seems to come to the surface. The finish is rather refreshing. The acidity continues until the latter half of the bottle, and eventually a slight bitterness appears. It has a unique flavor. Try hot sake. The herbiness is lessened. It is softer and thicker, and the taste is more cohesive. It is like drinking a delicious soup stock. The acidity is still strong. Bitterness is a little stronger. The sharpness is good.
