Surprisingly, Fushimi's sake is not drunk. Even though it is the town where I work.
It's a wonder I don't buy it when I think I can buy it anytime.
So, I chose a brand of sake that I can buy anytime but usually can't.
It is a limited edition sake for the opening of the brewery. It was specially stocked at a liquor store near my workplace.
The rising aroma is mild and fruity.
In the mouth, it has a muscat-like aroma and acidity typical of nama-shu.
There is also a slight effervescence.
Moderate thickness.
It has a slight habit similar to that of Asakayasama.
Up to this point, the taste is rather typical of unfiltered nama-zake, including a cloying taste and a lack of cohesiveness.
From the mid-part, the sweetness comes to the surface and the acidity is pulled back.
It ends with a soft sweetness and umami.
It is surprisingly crisp and leaves a light impression after finishing.
The alcohol content is 18%, but it feels light due to the lack of bitterness and spiciness on the back end.
From the first half of the bottle, the middle to the end of the bottle is very elegant.
It is delicious.
