As one would expect from Okuharima, it is a delicious sake.
Today's dinner was mainly cream stew, and I thought about how to match it with sake, but the deliciousness of Okuharima and the depth of its nostalgia went well beyond 👍.
This is Okuharima Junmai Orikarami H28BY.
This one has to be heated 🍶😆.
While it was heating up, I had a chance to taste it with a sake cup.
It had a bit of a raw hiney aroma, but the flavor was so full of flavor that it was hard to believe it was 9 years old, so my expectations were high!
The top aroma is slightly sweet with a hint of rice.
The raw hine aroma is almost completely gone 😊.
In the mouth, it has a mild sweetness of rice with plenty of umami.
I could feel the wonderfulness of maturity 😌.

Aromatic flavor of chestnuts and sweet potatoes,
Light texture with a hint of acidity.
The rice flavor is just right.
It has a green depth with a hint of herbs and earthiness.
The sweetness is soft and fluffy like a sweet potato.

The mouthfeel is completely classic!
Since I entered the sake swamp from a sweet modern type, it brought back my former dislike of sake, but I could feel the lingering rice flavor in the heavy flavor, and I was impressed with myself that my taste buds, cultivated in the swamp, have grown up😅.
We had #Okuharima Yamahai Junmai Stronger from #Shimomura Shuzoten in Himeji City, Hyogo Prefecture.
It tastes like custard cream on the palate and is immediately enveloped by a fruity lactic acidity that is typical of the Yamahai style. It is very tasty, but as the title "strong" suggests, the alcohol content is 20 degrees. It is very intoxicating.
Another version of Okuharima, an interesting sake that is R4BY and is a raw sake. It seems that it is no longer produced and may be valuable.
The aroma is slightly apple-like. The crisp and refreshing acidity spreads out, accented by an astringent taste with a matured umami flavor.
It is easy to match with food. Today's dish is saury.
For some reason, I opened this bottle just before the new moon.
Okuharima Yamahai, which I buy every year.
It is slightly colored.
Lactic acidity and a little malted rice. It has a pineapple flavor with a hint of banana and a little bit of maturity. Already good.
The taste is voluminous, with a subtle but core sweetness. The acidity in the back is also pleasant, and it penetrates into the body at room temperature.
