After ordering... looking at the label... this sake is 50% polished rice 😳 Junmai Daiginjo specs ✨.
I couldn't help but ask for it to be heated to human skin 😅.

Commentary.
Seito Sake Brewery, which brews Katsikoma, a "sake that knows true luxury" brewed by a small handmade sake brewery in Toyama, was founded in 1906.
It began when Keisuke Seito I, a member of the cavalry during the Russo-Japanese War, returned to Japan and opened a sake brewery, which he named "Katsikoma" to commemorate his victory.
The warehouse building still retains its old-fashioned sake brewery style, and was registered as a national tangible cultural material in 2000.
The brewery is a small brewery with a total production of about 300goku, and has been brewing sake under the motto of "no more falsehoods" (no more falsehoods) in the brewery since its establishment, with a "small brewery style, no more items, and no half-hearted new products".
Characterized by its gentle rice aroma, light taste, and well-balanced flavor, it is a sake that goes well with everyday home cooking, an authentic sake rooted in daily life.
The logo on the label was created by the artist Masuo Ikeda.

Today we opened a new sake called "Kachikoma" in hiragana ✨ We put as much heart and soul into our new sake as we do into our ginjo, even when it's freshly shiboritate.
Katsikoma, a natural and spunky beauty, has a "slightly dry" taste that soaks into the body smoothly 😆 We enjoyed it while praying that we will see it again next year. ☺️ Since it was so cold, we had a seafood hot pot 🍲 filled with the three most delicious seafood: oysters, milt, and cod 😋. with 😋!
