The last of the Tottori sake I purchased on a trip to Tottori.
In the early days of my interest in sake, I went to Tottori and drank this sake and was shocked at how good it was.
I haven't had it for a long time.
The aroma that rises is a mild ginjo aroma.
The ginjo aroma lingers in the mouth, but it is not showy.
The umami of the rice is in harmony with the soft acidity.
The quality of the sake is heavy, but clean and soft. There are no corners.
The mouthfeel is slightly thickened.
From the mid-palate, it becomes a little bitter and spicy.
The sweetness also remains, so there is a sweet, spicy, umami, and bitter aftertaste. However, the flavor elements do not fight each other, but are in harmony, and the taste is mellow and mild.
I think it is a beautiful sake.
For my current taste, it is a little heavy.
