This sake was also purchased during a visit to the Ninjutsu Village in Koga. Kitajima Sake Brewery is a major sake brewer in Shiga Prefecture. This one is probably a honjozo sake. The aroma that rises from the nose is slightly grain-like. In the mouth, it has a mild rice flavor with no corners. It has a sweet wafer-like flavor. There is not much acidity. It is mellow. From the mid-palate, there is a light bitterness and, as is typical of honjozo sake, a light sharpness. The back palate is light and refreshing. It tastes like a refined version of Kikusui's Funaguchi Ichiban Shibori. Delicious. Taste level: 85 points
