Packaged sake from Kamo Nishiki Brewery, which brews a packaged sake that I would like to try. Found in the fridge at Yamaya. The price is less than 2,000 yen for 1.8 liters including tax. If it tastes good, I want to make it a regular sake. How does it taste? The aroma is fruity. Melon or pear? A beautiful aroma. It is not a strong aroma. When you put it in your mouth, you can feel the juicy acidity, umami, and sweetness that matches the aroma. The taste is not thin, but has a full body. This is delicious. I think it is quite tasty among modern type sake. Bitterness appears from the middle to the end of the bottle. I feel that this leads to a good sharpness. It can be served with a meal or on its own. I prefer to drink it with light snacks or on its own rather than with a hearty meal. How about the deterioration of the paper carton? It's been two weeks since I opened the bottle, but I have no problem with it at all, except that it seems to have become a little milder! To be honest, I can't believe that a bottle of sake of this level is priced at less than 20 I can't believe that this level of sake is less than 20,000 yen (tax included) for a bottle of sake. I think it would not be surprising if it were twice the price. It can fit in the side pocket of my fridge, and I don't think there is anything better for everyday drinking of a modern type of sake. I read a book the other day called "Late Night Sake Reviews" about this bottle. I was told that it goes great with okonomiyaki. I have no choice but to try it. The aroma that rises from the nose is a grain-like aroma. In the mouth, there is a bitter flavor reminiscent of caramel and a thick rice flavor. There is not much sweetness. As is typical of honjozo, the sharpness is good. It has a light aftertaste. I drank it at room temperature, but I am sure it would be even better if it were heated. It is good with okonomiyaki! The rich and complex flavor of the okonomiyaki sauce is certainly a perfect match for this sake with its bitterness, umami, and sharpness. To put it in the style of Jojo's Billions, Okonomiyaki makes sake! The sake enhances the okonomiyaki! I think it's called "harmony." ~~~~~~~ Harmony of flavors! It's like a Simon and Garfunkel duet! Ucchan against Nanchan! Tetsuya Chiba's "Ashita no Joe" against Asao Takamori's original work! It's just like that~~~! Obtained at a liquor store I occasionally visit. It is Wakanami's Honjozo. This is the first time for me to try the Honjozo. Wakanami is my favorite modern type of sake. The aroma is light and muscat-like. It is refreshing and good. In the mouth, it has a slightly sweet mouthfeel that matches the aroma. There is some acidity, but it is not noticeable. The umami is moderate. It is not so thick, but it is well balanced with this flavor. The lightness stands out because the other sake we were comparing was rather heavy. The aftertaste is also clean and crisp, probably due to the honjozo (honjo sake), and there is no aftertaste. It is easy to drink. It seems a little more mature than Junmai Wakanami, but I wonder if the vectors are the same. It is a high level modern type of sake that does not interfere with food. If you don't restrain yourself, you will finish a bottle in no time. To my taste 90 points

Hakkaisan is a well-known Niigata sake. It was so major that I somehow never drank it. I had drunk it when I was a student, I think. I was a student, but that was about it. Urakasumi was better than expected, so I decided to try more and more major breweries and bought this one. The aroma was a little fruity. In the mouth, there is a freshness typical of nama-shu, but the balance of aroma, umami, and sweetness is very good. It is neither too light nor too heavy. Purchased on a trip to Kagawa Prefecture. Lately when I travel, I of course check out liquor stores, but I have been buying more and more of the sake that is available at local supermarkets. It's fun to get a glimpse of the local standard sake. This is one such example. The aroma that rises from the bottle is like the smell of olives. When you put it in your mouth, it has a flavor that you don't find in sake. It has a muscat flavor. The acidity is a bit reminiscent of a white wine. The mid-palate also has a dry white wine-like acidity. It is not too thick, but not too light. There are other sake with acidity and muscatelike aroma, but this one has a white wine-like balance. I paired it with olive oil sardine, and it was a perfect match. Perhaps it was my preconceived notion that olive yeast is used. The power of yeast is great. Delicious. Degree of liking 87 points

Purchased in Shiga Prefecture for Valentine's sake. I have had white, black, blue, and gold Laughing Shiki, but the black one seems to suit my taste the best, so I bought it for the first time in a while. The aroma is a little sweet. In the mouth, it has a firm umami and sweetness, followed by a sourness. The aroma has a fruity, muscat-like flavor, but I think there is also a caramel-like flavor. In the latter half, a slight bitterness is felt. All in all, a sake that can be drunk slowly with ripe fruitiness and a bitter aftertaste. With a rice polishing ratio of 50%, is it a Junmai Daiginjo spec? Cosmetically, it is very good. I felt that the flavor would be more cohesive 2 to 3 days after opening the bottle. Preference 86 points

It has been a while since I have been here. I have been hooked on fishing since last summer or so, going out night fishing about 2 days a week. So I used to drink sake, but I was too lazy to keep a record of sake due to fishing trips and preparation for them. From now on, I will drink sake with the fish I caught, and record the sake that left a lasting impression on my memory. This is a bottle I got on a one-day trip to Shiga. I had seen this sake in a magazine, but this was probably my first time drinking it. The aroma that rises to the surface is a little apricot-like. When you put it in your mouth, it has a very smooth texture, without the vigor that is typical of nama-zake. The apricot aroma continues, and the flavor, sweetness, and acidity are well balanced, and the sake goes down smoothly. The thickness is moderate. The beautiful impression remains unchanged from the latter half of the bottle and fades out with a slight bitterness. It is not flashy, but it is a food sake that gives the impression that it was carefully made. Delicious. Taste: 85 points

As autumn is almost upon us, I would like to share my thoughts on the first summer sake I drank this year. This is our family's regular summer jungin sake from Bunkajin. As usual, the ghost label is POP and cute. This is a total fun sake, including the label. The aroma is sweet but refreshing, reminiscent of cider or ramune. When you put it in your mouth, you can feel the fizzy and bubbly sensation. The aroma is like that of ramune, with sweetness, umami, and acidity. The harmony of aroma and taste is wonderful. It has the atmosphere of an adult's rum. However, it is quite thick. It gives the impression of being medium to full-bodied. It is refreshing, but you can feel a strong alcohol taste, and it finishes clean. I think it is a model for summer liquors. I try to buy this bottle every year as much as possible. I'm glad I had it again this year! My favorite 90 points

Summer sake from Hakurei Shuzo. I have had Hakurei's sake several times, but this is the first time I have had this product. The label is nice and cool. The aroma that rises is a fruity ginjo aroma. The aroma is not too strong, but moderate. The aroma lingers in the mouth, but the taste is sharp. It has a hard image of umami. There is not much sweetness. The impression of sharpness remains unchanged from the mid-palate. The spiciness comes out and it becomes what is called a "refreshingly dry" aftertaste. As is typical of summer sake, there is a moderate aroma, and it is a refreshing and solidly tasty sake. To my taste 85 points

It is no exaggeration to say that I bought this bottle of Genmai Tokusyu for my goal of this year, which is to match Genmai with Katsu-ni. The aroma is elegant and fruity. In the mouth, the sweetness of the rice and the aroma are well balanced. Nanasho, also from Nagano Prefecture, is also fruity, but Gensho has more depth. It has a cohesiveness. The flavor is layered and elegant. Nanasho is clean and crisp. Each is delicious. The aftertaste is also moderately long in relation to the aroma and taste. It tastes great on its own. I can't imagine that the elegant Genmai goes well with the popular Katsu-ni. Is it a good match for simmered pork cutlet? Let's try it with simmered pork cutlet. There is no discrepancy. It is delicious. The multi-layered flavor of Genmai matches the thick, oily, sweet and spicy pork cutlet stew. The sweet aroma of the pork cutlet stew is not strange. Another goal for this year achieved. 90 points for my favorite!

Purchased at the Kyoto branch of Asano Sake Brewery because it was delicious after a stand-up drinking session. This sake is made by the Ikeda Sake Brewery in the north of Kyoto. First time for me. The aroma was a little muscat-like. The mouthfeel is smooth with a fizzy, bubbly sensation. It is fresh. It has a sweet atmosphere, but is very light. The umami has a moderate thickness in relation to the aroma. The alcohol content is 16%, but it is very easy to drink. The aftertaste is not spicy, but very light and clean. Is it suitable for drinking with a glass of sake? It is fresh, light and refreshing. It seems to be popular with everyone. It has been a while since I've had it, but I think it is similar to Sawaya-Matsumoto's Mori-Ba-ri series. Degree of liking 86 points

Sake made by Kubohonke Brewery, famous for its sake yeast yeast yeast dobu, etc. This is my first time. The label is cool. I would like to complete the list of "X-Ryu" sake from all over Japan. So far, I have had "Kuroryu", "Kutouryuu", "Hakuryu", and "Choryu". If anyone knows of any other "X-Ryu" series, please let me know! The aroma that rises is a bit of apricot aroma. When you put it in your mouth, it has a great rice flavor. There is also a hint of cooked rice. There is also a bit of acidity. This is a draft sake, but if it is heated up, the flavor will expand even more. I enjoyed it cold and at room temperature. I think it tastes better at room temperature, as the soft umami of the rice is more pronounced. It is a mellow type of sake, but has a good sharpness. I bought this one because Sugiyuu's Omachi was quite good for me. The rising aroma has a slightly fruity flavor. In the mouth, it has a sweet mouthfeel that matches the firm umami of the rice and the rising aroma. It is quite thick and has a complex, layered umami. There is also some acidity, but it seems to be supported in the background. Some people may find it heavy. From the mid-palate, you can still taste bitterness. The umami continues. This is a product recommended by Mr. Rui Yoshida. I saw it at a nearby Friend's Mart and bought it. There is not much of an aroma that rises to the surface. In the mouth, there is a citrus-like aroma, acidity, and a firm rice flavor. There is also a mild grain-like aroma. It is rather heavy and drinkable. The umami can be felt well into the mid-palate. The sharpness is not as sharp as it should be. The sharpness is not as sharp as you might think, but it is very refreshing. The aroma is restrained, making it a good mid-meal sake. Akashi Sake. It's been about 10 years now, but this is the town where I lived for 3 years. To be exact, it was in the Nishi Ward of Kobe City, but the nearest station was Akashi Station. I had recorded Kazuhiko Ota's program in Akashi, and I really wanted to go there, so I went to the Akashi station area for the first time in a while. I bought this at Tanakaya in Uonotana, which was mentioned in Kazuhiko Ota's program. The aroma is a gentle fragrance that combines apricot fruity and graininess. When you put it in your mouth, it has a firm umami flavor. It also has a gentle sweetness. Even when served cold, it gives the impression of a full Junmai sake. From the mid-palate, the acidity and bitterness in the back come out a little, and it finishes crisp and clean. Not flashy, but solidly delicious. The side dishes were Akashi sea bream sashimi and conger eel tempura. Then, Tanakaya's sea bream with black pepper and sansho (Japanese pepper). This was the best. The area is close to the sea, moderately urban, and rich in nature. It is also very easy to get to Kobe and Osaka. I would like to live in this area again. Degree of preference 85 points

Recently, I have been drinking honjozo sake more actively than before. If the sake is well made, it has a light and refreshing aftertaste without a strange harshness. And I get the impression that it warms up nicely. It's also easy on the wallet. This is a Honjozo of Mikuyo, which I have wanted to try for a long time. I believe it costs less than 1,000 yen including tax. The aroma is a little citrusy. In the mouth, you can taste just the right amount of acidity and umami. The impression is clean and neat, as is typical of Bishou. The aroma is moderate and mild compared to junmai- and junmai-ginjo. This level of aroma may be more to your liking.
