One of the brands that I never miss in my mind is Drunken Whale. I still think that the special junmai of Drunken Whale is one of the most cost-effective sake. This time it was a junmai sake made with Hachitan-nishiki, the winner of the Tosa Sake Gutto Campaign. The aroma that rises is a little fresh and fruity. In the mouth, it has a green apple-like aroma. Sourness emerges and citrus nuances can be detected. The umami is moderate. It is firm enough not to feel heavy. Bitterness emerges from the mid-palate. The finish is clean with a hint of spiciness. It has a good sharpness. It can be drunk without getting tired of drinking. Delicious. It gives the impression of being dry, but when heated up, the taste softens and expands, which is also good. It tastes like a standard Tosa sake. I like it. Degree of liking 88 points

Nada's sake, Daikoku-sama. The aroma that rises is apricot? Slightly fragrant. Muscat-like on the palate. The aroma is typical of nama-shu. It has a strong sense of rice flavor with no hint of corners. It also has a moderate acidity. It has a beautiful but heavy sake quality. From the mid-palate, a light aroma of rice and a tingling alcohol taste appear. There is a slight bitterness. The sharpness is good. It has a firm taste, but it disappears quickly. I think it tastes exactly as the back label says. According to the label, it is fruity and tasty, and aging in the bottle gives it more depth. It is heavy, clean, mellow, and crisp. A delicious sake. A gift. Looks like a sake for distribution. The rising aroma is almost imperceptible. On the palate, there is a delicious rice flavor, acidity, and a bit of sweetness. The umami is not very thick, but it is well balanced with the acidity. The aroma is not so strong, which may make it easier to sense. From the mid-palate, the harmonious flavor of umami and acidity continues, with a slight bitterness that finishes nicely. The taste is quite layered, but not heavy, and the aftertaste is clean. This is my recent favorite food sake. But about two weeks after opening the bottle, the classic sake flavor, which I am not a fan of, and a slightly burnt, caramel-like aroma emerged. Hmmm. Sake from Akita Prefecture. Junmai Daiginjyo sake for under 1,500 yen. According to the sake shop, a large group of sake brewers uses a central kitchen system for rice milling to reduce costs. The rising aroma is softly ginjo aroma. It is not flashy. In the mouth, fruity aroma and sweetness spread. I can't think of what kind of fruit it is. There is not much acidity. The umami is moderate. It is not too thick, but not too light. From the mid-palate, there is a touch of bitterness and a strong sense of alcohol. A little spiciness. The sweetness lasts until the end and ends with sweet bitterness. Clean sake quality typical of daiginjos. It is not a loudly fragrant sake, but a good sake that is beautifully put together. For the price, I have no complaints. The back of the label says it is a medium-bodied sake, but it may be rather sweet. Taste 85 points

I have had this brand only once before. I remember that it was a sake with a unique flavor. The liquor store told us that although it was from Kyoto City, it had a different taste from Fushimi because of the different water system. The pink label is spring-like. There is almost no rising aroma. In the mouth, there is a woody aroma reminiscent of cedar or something. Like a cask sake? There is also a twang of alcohol. The umami is robust. There is not much sweetness or acidity. However, it is somehow soft and does not have a hard image. From the mid-palate, bitterness comes out clearly. The sharpness is good. It has a unique cedar-like flavor, but gives the impression of being a solidly flavored food sake. This cedar-like aroma was also present in the previous sake, so it may be a characteristic of this brewery. Taste 75 points

Winning items from the Tosa Sake Gutto Campaign. The first. The rising aroma is slightly fruity. In the mouth, there is an aroma of rice and a firm umami flavor. It has a layered umami. There is almost no sweetness. The acidity is in the back and does not come to the fore. From the mid-palate, there is a certain amount of spiciness, which gives a refreshing impression. As with the Kaygetsu I drank before, it has a clean and dry impression. The taste is typical of Tosa sake. Good sharpness. The aroma is mild yet fruity. Although it has a complex taste typical of Yamahai, the lasting impression is clean and dry. I wonder if the 58% rice polishing in Yamahai sake gives it this kind of quality. It has a layered umami flavor, yet it is a type of wine that makes you drink it neatly. I like it now. Preference 88 points

It has been a long time since I last saw Hakugakusen. I went on a trip to Fukui Prefecture a few years ago, and this was my personal No. 1 brand that year. How does it feel to drink it after a long time? The rising aroma is not very noticeable. On the palate, there is a unique flavor that is a combination of smoky and vanilla-like aromas. Then, there is a firm, thick rice flavor and acidity. The acidity is quite strong. The sweetness is not so strong. Bitterness can be felt from the mid-palate. The lingering aftertaste is a bit long with umami and acidity. Unique. Layered flavor with a hint of Yamahai and Namahashimoto. When heated, it softens but remains smoky. Suitable for sipping with oil sardine late at night. Taste 83 points

Tsukibotan is the reason I fell in love with Tosa sake. I buy it whenever I see it. The rising aroma is slightly fruity. In the mouth, one senses a strong sense of rice rather than fruity notes. There is not much sweetness, but there is a firm umami of rice and a slightly hidden acidity. There is also a strong alcohol taste, giving it a robust impression. From the mid-palate, the spiciness comes out. The end is sharp and light. The later it gets, the more smooth and light it feels. When heated, it becomes even more delicious with a little sweetness and fullness. Taste 85 points

Under the influence of T.KISO, I tried drinking Akita sake. Surprisingly, I have not drank much Akita sake, so I bought some. Ryoseki Shuzo's sake. The one I drank before was Hanamup. This time, I got "FLAME OF SKULL" at the same time. Well, what do you think? The rising aroma is soft and fruity. Grapefruit-like nuance. The mouthfeel is sweet. And it is thick. It is a delicious sweet and savory type of wine. Medium to full-bodied and firm. It is juicy, so there may be some acidity in the back. There is a slight bitterness in the mid-palate. A solid sweet and tasty sake. It went well with cream cheese type snacks. For my taste, "FLAME OF SKULL" served cold was a perfect match. I would like to try many kinds of Akita sake. Influenced by T.KISO, I chose Akita sake. Ryoseki Shuzo's sake. I have had Hanamup before. This one has a rather impressive label. At the same time, we bought Suitama. Well, what do you think? There is not much of a rising aroma. In the mouth, fruity aroma and sweet flavor spread. There is not much acidity. The mouthfeel is very soft and easy to drink. It is totally different from the impression on the label. If it tastes like this, "Otsukare Nama Desu" would be more appropriate (?). The wine is a very good one. The sweet and umami flavors continue in the mid-palate and beyond. There is a slight spiciness at the end. Sake with a gentle flavor that spreads soft sweetness and umami. It has a nice sharpness and does not linger. Quite to my liking. However, when heated, the spiciness comes out all at once, just like the label says. I've had more opportunities to try heating it up since I got Kanmakase, but I realize that not all sake is suitable for heating up. Degree of liking Cold sake 95 points Heated 82 points

I have wanted to try this brand for a long time. Finally, I came across it. The aroma that rises is that of mild rice. When you put it in your mouth, you will feel a heavy umami taste. The sweetness and acidity do not come out much. It is quite dry in the middle with a heavy and hard impression. It's not a strange habit, but it's not an easy sake to drink. I assumed that it would be modern, light, sweet and sour, and fruity, so I was wrong. I warmed it up. The aroma that rises is still softly rice-like. However, the mouthfeel becomes much softer, and the acidity comes out. It has a thick, rich flavor that is really good. From the mid-palate, it is dry and crisp. I've wanted to try this sake for a long time. Hououmida, a brand with an awesome name. It has an air of a bossy character. As soon as I opened the bottle, a fruity aroma wafted out. I guess it's Muscat type. When you put it in your mouth, it has a smooth sweet flavor and a nice aroma. There is also a soft sourness in the back. I think it's a pretty strong sake, but it's so smooth that you don't feel any difficulty drinking it. There is a slight bitterness in the middle part, but it is a good accent. The aftertaste is moderate, neither too long nor too short. It has a well-balanced and beautiful quality. A very elegant and beautiful wine. The name speaks for itself. It is undoubtedly delicious, but it has an air of being out of place on my everyday dining table. I can understand why it is so popular. Preference 93 points

I've conquered all the breweries in Kochi Prefecture 17/18. This is the world's first sake made with Kochi yeast grown on the International Space Station. The aroma is mildly fruity. In the mouth, it has a refreshing acidity and a light rice flavor. The sweetness is not so pronounced. It is more like a refreshing citrus fruit. It is not very thick, but it is just right for the refreshing mouthfeel of this sake. From the mid-palate, it becomes spicy and refreshing. This is the middle of my image of Tosa sake. It has a good aroma and is light and crisp. It is a sake that can be drunk easily. It just doesn't have any special characteristics that make it a hook. I didn't understand the universe well, but it was delicious, so no problem. Taste level 85 points

It's been a while since I drank Tosa shiragiku. The aroma that rises is a little fruity. It smells like a so-called ginjo aroma. When you put it in your mouth, a fresh green apple-like aroma spreads. The sweetness is not that great. The umami is moderate. It's not thin or light, but it's not dense or heavy either. This impression remains the same from the mid-palate. There is nothing outstanding, but the balance is good. It is a little dry and crisp. Bocchiri" means "just right" in the Tosa dialect. That's exactly what it is. The aroma is typical of Tosa sake, and the sake has a nice crispness. It was recommended to be heated, but I found it better served cold, as it has a refreshing impression. Liked: 88 points

This sake is made with TOSA deep sea yeast. The price is a little over 1000 yen, which I appreciate. The aroma that comes up is a fruity Muscat-like scent. The aroma is similar to that of the Bunkajins I drank before. When you put it in your mouth, you can also taste a Cemedine-like flavor. Then, there is a solid rice flavor. I feel that Bunkajins have a thicker umami than other sakes from Kochi Prefecture. The sweetness and sourness can be felt in the back of the bottle, but the spiciness is clearly felt from the middle of the bottle. Bitterness also comes out. The sharpness is good. The taste is typical of Bunkajins. I don't know what the characteristics of the deep-sea yeast are, but it's delicious, so no problem. Taste level 88 points

This is the second of the few Okayama sakes I stocked up on when I went on a trip to Okayama for my birthday last month. This is the second and last one. This is a sake made by Kojima, famous for its denim. The sake brewery was close to the hotel. It doesn't have much of an uplifting aroma, but it does have a slight tang of alcohol. In the mouth, you can taste the sweetness of the rice. The taste is soft and gentle. Like the Taisho-no-Tsuru, it is a little quirky when drunk cold, but when it is warmed up, the quirks disappear and you can taste the soft sweetness of the rice. It is a soft and sweet sake. There is a slight bitterness at the end of the drink, which leads to the next drink. Sake from Okayama is also delicious. I'm not sure if Taisho no Tsuru or Juhachimori are the standard for Okayama sake, but I felt a similar taste. I personally find lukewarm to warmed sake strikes me as a sake for eating. This was a small bottle, so I would like to enjoy it slowly in a 4-pack. Taste level 85 points

Purchased on a trip to Okayama for my birthday last month. Purchased for the purpose of drinking Okayama sake from a Bizen ware sake cup. It doesn't have much of a rising aroma. In the mouth, it has a classic sake aroma that I'm not too fond of. And then the sweetness of the rice. The thickness is not too thick and not too thin, but moderate. It has no corners and is round, but it is a bit habitual. There is no bitterness or spiciness after the mid-palate, and it has a relaxed feeling. I'll try it lukewarm. As I warmed it up, the unpleasant aroma changed to a flavor reminiscent of vanilla and chocolate. I was surprised. It's not overly alcoholic, and the dusty, sweet flavor stands out even more. I can continue drinking it slowly and easily. This is good. It's delicious. I like it 90 points.

Sake in Nagasaki Prefecture. National conquest reach🀄 The only prefecture I haven't drunk yet is Miyazaki Prefecture. But I don't think I can achieve it. The aroma that comes out of the bottle is a little bit like cooked rice. I'm not sure if I'll ever be able to drink it again. It is quite powerful. I can also taste sweetness. The sweetness is like brown sugar. The sourness is not so strong. Bitterness appears in the middle of the taste. The overall impression is umami-sweet and bitter. It is more of a classic type of sake, but it does not have any quirks that bother me, and it has the thickness of a Junmaishu. It is best served warmed as a midday sake. I would like to try it with Nagasaki chanpon or Sara Udon. Favorite: 82 points

I'm a non-citizen who doesn't watch the Olympics at all, but I'll be participating in the Star Olympics. Shinomine in Gosho City, Nara Prefecture. I have the impression that Gosho City has famous sake such as Kaze no Mori and Hyakurakumon. The aroma that rises is gentle. It is grapefruit-like. It has a refreshing mouthfeel with a touch of gas. Then, you can feel the sweetness of the rice. It has a refreshing citrus aroma, acidity, sweetness, and gas, just like the label says. The gasiness is felt until later. At the end, there is a slight bitterness and a touch of alcohol. It also has a grapefruit-like taste. I think the lees make it a little creamy. It is very easy to drink for its strength. It's been a while since I've seen Tsurumei. It's been a while since I've had a bottle. I was curious about it, so I skipped waiting in the refrigerator and opened a bottle. Last summer, I was hooked on Soumeki, and I repeated this brand several times. However, I've only had the seasonal Soumoku. I thought this one would be a standard product, so I bought it. The aroma that comes up is slightly like cooked rice. The full-bodied rice flavor spreads in the mouth. When it is cold, the sweetness doesn't come out so much on the surface, but is supported by the background. When it approaches room temperature, it comes to the fore at once. It also has acidity. The flavor of the rice and the acidity are in harmony, and it goes in easily. It's not particularly thick or heavy, but the rice flavor is amazing. Rice juice, for adults. There is a slight bitterness in the aftertaste, so you won't get tired of drinking it. The one that Manachie drank seemed to be a bit twisted, but I was lucky. It was delicious. I wonder if the harmony of solid rice flavor, richness, and acidity is a characteristic of Tsurumei. I felt the same way about the Soumeki I drank before. I would like to buy it again if I see it. I like it 95 points.
