Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

This is the first Gassen in a year. It has a fruity aroma with a hint of acidity. Let's try it. It is a little sweet, but the acidity makes it not at all bitter! It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Like Minatoya Toisuke, this is another brand of Murasuke that I bought because I liked it after tasting it at Ponshu-kan in Echigo Yuzawa. There are many liquor stores that sell Murasuke in Tokyo, but I had never seen this brand before. As its name suggests, it's low in alcohol content at 13%, so it's easy to drink 😚. When you drink it cold, it's light and refreshing, with no hint of bitterness. It's delicious in its own right, but when it's chilled at a cooler temperature, it becomes sweeter and more impressive. I liked it best when it was chilled in the wine cellar at about 15 degrees Celsius 😄. It's interesting to see how it changes with the temperature, but in any case, it's a different direction from the sweet and sour fruity Murasuke. I think it's a fine sake that won't go with any snacks 😋

Hankyu Oasis in the basement of Hankyu Sannomiya Station has a full lineup of Japanese sake, including draft sake, 300ml and cup sake. Surprisingly, it is easy to drink. It has a bitterness at the end, with a hint of gruffness. It's easy to drink and tastes better than most of the sake in cups with alcohol.

Kochi sake swamp. I was getting quite drunk, but this is Okada Izura, also known as Manslayer Izura! This is another light, dry sake with a strong rice flavor. This sake seems to be limited to the Kochi Liquors Club, but it was recommended by the proprietress! The saltiness of Shimanto River's Gori seems to be an endless loop.

I thought it was a classic type, but unlike the image on the label, the acidity was noticeable and it was a bit modern? It looks like it would go well with Western food 🍴.
