However, with such hot weather, I still want to drink summer sake 🌻.
That's why I bought this one at Dairy and Yeast Factory the other day.
Abe Summer Sake is the only sake in the Abe series that bears a seasonal name.
It is the driest of the Abe series, and the closest to the Abe Shuzo's traditional sake design.
The sixth-generation brewer, Yuta Abe, has been working every year to create a more contoured acidity in the sake.
The appearance is a clear, slightly pale yellowish green.
The aroma is gentle, with a hint of sweetness, a chili-like acidity, and a fresh rice aroma like freshly pounded rice cakes.
When probed, there are faint grapefruit, greenish melon, and bitter minerality.
First, there is a gentle gasiness.
Smoothly, the sizzling sweetness and acidity spreads, and the light acidity dissipates in a flash.
From the mid-palate, the beautiful umami of rice flows through, and it finishes dry and crisp.
It has a natural dryness without dryness, and the aftertaste is moderate, ending with a gentle bitterness that lingers on the tongue.
As you continue drinking, the sizzling sensation diminishes, and the smooth, clear sweetness and outlined acidity can be felt, and the bitter astringency is clearly tightened.
The aroma is moderate, and the taste is clean, clear, and refreshing without being cloying.

I couldn't drink on the bullet train because it was during working hours, so at least I could drink sake 🍶 at the hotel.
So, I bought Ohmine Cup.
The cup is stylish 🎇.
The exterior is a warm silver crystal.
The first impact of the freshly opened aroma is surprisingly the sweet sake aroma typical of sake cups.
From there, refreshing pear and melon overtake it with a whiff of freshness.
The texture is very smooth and silky.
The deep sweetness is covered by a refreshing acidity, which spreads out and finishes with a light acidity.
The finish is crisp and lingers well.
Well, it's been a while, but Omine is delicious ☺️
The flavor is rich, yet has a good acidity that makes it light and has a nice sharpness.
Half a cup (100ml) is not enough for such a small cup.
Next time, I will buy something in a 4-gou bottle.
Since this is not enough, I would like to introduce you to one of the three best taiyakis in Japan, taiyaki from Taiyaki Wakaba in Yotsuya.
It is thin-skinned and filled with anko (red bean paste) all the way to the tail, sweet but with a hint of saltiness, which I love to say the least 🥰.
I ate this one before I had time to combine it with Ohmine.

There was one more sake from the "Tasting Sake by Female Toji" event held by Standing Drinking Chuin that I had been curious about for a while, so I took this opportunity to have it 🍶.
Tomikunaga Junmai Ginjo Hattanso.
This sake is brewed by Touji Miho Imada, who was selected as one of the "100 Women of the Year" in 2020 by the BBC.
I was curious about the sake rice, Hattansusa.
It is a fantastic rice that is the root of the "Hachiganso series," a group of sake brewing rice representative of Hiroshima, and is an ancestor of Hachiganshiki and Hachigansho 35.
Yatanso is a native variety from the late Edo period (1603-1868), but it was difficult to cultivate and disappeared for a time, pushed aside by its successor varieties.
However, Mr. Toshi Imada and the Imada Sake Brewing Company revived its cultivation from a handful of seed hulls, and after 100 years, they are once again brewing sake with Yatanso.
Incidentally, the brand name "Fukucho" was named after Senzaburo Miura, who established Japan's first soft-water brewing method and made Hiroshima one of the three most famous brewing regions in Japan!
The long story short, here's the sake 🍶.
It has a well balanced ginjo aroma with hints of pear, melon, and banana.
The clear sweetness gives way to a crisp acidity, which gives way to a beautiful umami.
The acidity finishes with a flowing finish.
Everything is just right and I like it. ☺️
It was a drunken sake typical of Hiroshima 🍶.

The owner, Mr. Kawada, told us that there were only a few sakes left from the sake club's "Tasting Sake by Female Toji" event held the other day, so we could purchase them individually (originally as a set)!
The sakes on offer were as follows.
Hideko (Suzuki Shuzo Brewery), Shiwa (Shiwa Brewery), Machida Shuzo (Machida Sake Brewery), Shinshu Kamerei (Okazaki Sake Brewery), Kawanakajima Genmai (Sake Sengrano), Toyoga (Takazawa Shuzo), Ko no Tsukasa (Shibata Shuzojo), Fukunaga (Imada Shuzo Honten), Wakanami (Wakanami Shuzo).
And I will not hesitate to...
Shinshu Kamerei Miyamanishiki Junmai Ginjo.

The acidity and smooth umami that goes out moderately, and a good bitterness that lingers in the aftertaste.
The acidity stands out, and the freshness is just the right amount of intoxicating in summer.
There is a slight astringency on the tongue.
Perhaps it was because it was right after the Crimson Glory of Glorious Fuji, but my sense of sweetness and sourness was off, and I didn't feel like I tasted it properly.

To get back on track, this Junmai Daiginjo Unfiltered Harajuku is brewed with red yeast which makes the sake red.
It looks like this, but there is no gasiness.
The sake rice is 100% Haenuki, a common rice for rice.
The sake has a threatening Sake Degree of -58😳.
The acidity is 7.3, not as high as Mai-bijin, but not bad either!
After being so sharp in so many ways, it comes full circle and settles down.
The appearance is crystal with a light pink tinge, like a pale rosé wine.
The aroma is sour plum, plum wine, and apricot wine-like.
The aroma is a thick sweet-sourness that cannot be hidden.
When you drink it, it is still extremely sweet and acidic with a plum and apricot liquor feeling.
From the mid-palate, the refreshing acidity leaves and it becomes a little lighter, but it does not have a sake feel.
Quite interesting and in a way a terrific experience.
Another customer of CHUIN said, "It's a pin⚪︎n without bubbles!" but I've never drunk enough pin⚪︎n to be able to talk about it, so I'm not sure about that part 😌.
To be honest, I don't have the courage to drink it at home, but I got a good opportunity to experience it for my tongue 😁.
If you don't usually drink sake but like plum wine or apricot wine, I recommend it 🍶.

Sasasamune is often recommended by my almost only favorite restaurant, Standing Drinking CHUIN.
This time, it was a summer nigori (nigori) draft sake, so I thought I couldn't miss it as a nigori list, so I tried it.
The appearance was snow-white with a slight greenish tinge, like the lingering snow on the surface of a mountain.
The aroma is mainly banana and melon, with a refreshingly exhilarating pear.
The mouthfeel is smooth, tart, and sizzling 🫧.
From the rich sweetness, a refreshing acidity that quickly follows and spreads out is light, my favorite pear taste🍐.
The gasiness and acidity are pleasantly stimulating and delicious.
The oli is involved, and the more tangy aftertaste fades away and the finish is pleasant and intoxicating ☺️
The aftertaste is moderate, and I like the bitterness that is typical of sasanigori.
This is very tasty.
It was also good that the gasiness was lively on the first day of opening the bottle, but I was also curious about the changes in the bottle opening, and most importantly, it was so good that I wanted to drink it at home.
However, there don't seem to be many stores in Kansai that carry it😌.

Looking at the participating breweries, I've always been curious about Echigo Tsurukame's Echigo brand, so I was hoping they would bring some 😊.
We can only keep Yongbottle at home.
We can't drink Hana Yuu, which is usually only available in 1 sho bottle, at home, but we were able to find shigou bottles of Omachi and Rikuwada, so we brought Omachi back home with us.
The appearance is almost transparent silver crystal.
The aroma is a beautiful, fresh, and fragrant fruity aroma that is the essence of ginjo aroma.
It has a sweet and refreshing aroma with hints of pear, peach, melon with a hint of melon, and red apple, and a fresh aroma like white dumplings.
The mouthfeel is smooth.
The elegant sweetness is quickly followed by an acidity that spreads through the mouth.
The light but strong acidity can be felt, and while the fragrance has a noble ginjo aroma, the acidity stimulates the palate and passes down the back of the throat.
The sharpness is good, and the aftertaste is long and lingering.
The umami of the rice is also beautifully expressed.
On the fourth day after opening the bottle, the aroma has a stronger nuance of apple honey than on the first day, and the freshness is irresistibly fruity with an increased prodigal sweetness.
The flow of the flavor remains the same, but the acidity has taken a half step back, making it easier to perceive the beautiful umami in the sweetness and the subtle bitterness that accentuates the sweetness.
I prefer it to the first sip.
If the brewer wants us to taste the changes in the opening of the bottle, then I can understand why the main bottle is a one-bottle bottle.

It is a freshly squeezed Junmai Ginjo Nama-shu.
It is freshly pressed and has been aged in ice for about two and a half years in the store.
The appearance is yellowish green.
The aroma of raw ripeness is in the air, and it has a light candy-like sweet aroma like a lingering scent of ginjo aroma.
The taste has a tart texture.
The taste of Kinjaku is irresistible from the first sip, with a balance of dark, fruity sweetness and acidity!
It unfolds with a freshness that belies its two and a half years of aging.
It is at its best at this point.
From the irresistible taste, the acidity tickles the palate with a light stimulation, and then it is sharp and snappy.
The finish is sharp, with a medium short finish.
The flavor is just great.
According to Mr. Kawada of chuin, if you don't need the aroma of fresh ripeness, it is recommended to drink it after around six months, even if stored in ice temperature.
Personally, I don't need the aroma of fresh ripeness separately, but the depth of flavor is so great that aging may be possible.
In the future, I would like to compare it with something that has been aged in ice temperature for a shorter period of time (although it will be a time difference).

It's a very happy sake worthy of the 500CI 😊.
CLASSIC uses yeast from when Nabeshima was first introduced to the world.
The Heian-emaki style label was created by Hinako Iimori, the 4th generation, and is a tribute to Tomikuchiyo, which was once brewed by the Tomikuchiyo Sake Brewery.
The appearance is a pale silver yellow, almost transparent.
The aroma is fresh and gorgeous.
Pear, peach, melon with a hint of green, young banana, charming honeysuckle, and chervil.
There are also hints of powdery rice flour and freshly pounded rice cake.
Very light and smooth texture.

Yellow apples, pears, blue melon, bananas, and other aromas are gorgeously fragrant, while there are nuances of koji and fresh rice aroma like white dumplings.

We had two Fukui sake that Jive gave us the other day 🍶.
The first one is Kansai Kasen.
Who said, "If you want to know the brewery, drink the regular sake." I was so glad to hear that.
This is the perfect sake for me, as it is the first time I have had "Kansai" in Kansai. ☺️
The appearance is silver crystal.
The aroma is mild, sweet and refreshing.
After the flat rice sweetness with a graininess comes on strong and smooth, the acidity spreads and comes on quickly, leaving a stimulating alcohol taste at the back of the throat and finishing with a sharp finish.
The lingering aroma is short, with grain and malted rice flavors.
When heated, the aroma of cooked rice is gently fragrant, with a hint of acidity.
The mouthfeel is more smooth, and the taste is distinctly sweet, with a koji-like flavor that is quite intoxicating.
Next up was the Wakaka Bambi cup 🦌.
Slightly pale yellow-green in color, the aroma is typical of sake with a koji-like sourness and sweetness.
The smooth, subtle sweetness and refreshing acidity spread with a sense of grain and slight bitterness.
There is a lingering alcohol taste and a strong sense of having drunk sake.
When lightly warmed in the microwave and served lukewarm, the acidity comes to the fore and a sharp stimulation can be felt from the back of the throat, giving a stronger sense that one has drunk sake!

Yesterday was the Yodogawa Fireworks Festival in Osaka🎇.
Since it was a special occasion, we toasted with sake released by Hanakoh Sake Brewery in connection with the river festival!
At a quick glance, it is the same as the regular Homasu Go Nojo sake, and if you miss the description on the back etiquette, you can't tell the difference.
According to the brewer, the high acidity produced by the natural lactic acid bacteria, the complex flavor of the Homasu sake, and the depth of the sake's natural yeast stock combine to create a refreshing and rich flavor.
It seems that the lactic acid bacteria with the brewery did its best and has an acidity of 3.8.
It is named "Kawamatsuri" after an agricultural ritual to pray for no shortage of water in the rice fields.
It has a pale yellow-green appearance.
It has a vigorous gassy taste and is shriveled and refreshing.
The sweet aroma of pears, Japanese pears, and white peaches is pleasantly mingled with the noble aroma of wooden vats and yogurt.
A fresh citrus-like aroma is mixed in there, making it even more refreshing.
First, there is a lively gasiness and a pear-like sweetness.
Soon the acidity rises and spreads, making it refreshing.
At the same time, complex flavors including umami and bitterness emerge, with nuances of the white peel of Japanese citrus fruits such as Banshakuyuzu.
