The last drink of the day.
There was a bottle design of Shinomine that had a different atmosphere from the Shinomine we usually see, so I tried it.
Ise-Nishiki is Mie Prefecture's prized rice for sake brewing.
It is said to be the ancestor of Yamadaho, the mother of Yamada-Nishiki.
It was developed in Ise in 1860 from Yamato, a native rice, and was popular in the Kansai region for a while, but was no longer cultivated due to its tendency to fall over due to long sticks.
Motosaka Sake Brewery, which brews Hachibei sake, revived the cultivation of this rice as sake rice in 1991.
Since then, it has been brewed by other sake breweries, but I did not know that it was grown in Nara Prefecture.
This junmai sake is brewed with Ise-Nishiki produced in Nara Prefecture using Kyokai No. 6 yeast.
The appearance is pale yellow-green crystal.
The aroma is mild and sweet.
The aroma is mild and sweet, with juicy sweet banana, apricot, and rice cake aroma.
On the palate, there is a soft texture and a very slight gasiness.
Juicy sweetness and rounded acidity.
A cool, refreshing flavor spreads.
A tight aftertaste of slight bitterness and astringency.
Oh, this is delicious!
The gasiness is pleasant, moderately juicy, and the rice has a beautiful umami!
I tend to drink a lot of Kaze no Mori and Mimuro Sugi as Nara sake, but Shinomine also made me want to try a lot of other sake 🍶.

I went to Asano-san to consume a ticket for one 45ml glass of super premium sake that I got from the anniversary gacha 🍶.
I chose this one from the type of sake I don't drink on a daily basis.
It is a Nishikigoi from Imadaiji Shuzo, which brews Imadaiji (Imayo Tsukasa) in Niigata.

The exterior is clear crystal with a brilliant shine.
The aroma is...mild, youthful and fresh.
The main aroma is a blueish selfeuille, with a hint of rice aroma.
As it warms up, there is a faint melon aroma.
The aroma may have faded with the passage of time after opening the bottle.
The texture is smooth on the palate.
The beautiful rice flavor with a hint of sweetness and acidity flows smoothly like water in a good sense and disappears with a slight alcohol taste.
It is so sharp and crisp that you would think it was alky.
As it warms up, the soft sweetness becomes softly perceptible with a hint of koji, and the fine acidity also comes out.
The aftertaste is long, with a delicate, gentle feeling.
It was a beautiful, sharp, and perfectly fine dining sake.
We had a ticket for the anniversary gacha snacks, so we paired it with smoked tea duck and smoked mackerel, and it was intoxicating!

It's a super fresh sake!

It doesn't have a shwashy feeling, but it is very fruity.
It also has a hint of THE sake.
It is delicious!

At Asano Sake Brewery, you can get drink tickets and other items in a gacha that you can play with three stamps from your visit to the store.
I won a ticket (worth 2,400 yen) for two 45-ml servings of "Super Premium Sake" in the special gacha for the anniversary year, which is a little more luxurious than the original one.
Before I could ask the manager, he quickly presented me with this bottle, saying it was a recommendation.
The appearance of the bottle was very beautiful, and since it had been quite a while since I had had a glass of Yukino Kayasha, I felt like drinking it, so I took it as is.
The appearance is clear crystal.
The aroma is sweet and soft, yet dignified and gorgeous.
Aromas of apple, white peach, melon, young banana, and a faint hint of Japanese citrus that seems to have been peeled from a distance.
Beautiful rice aroma of about Kamishinko.
When you drink it, it has a smooth texture.
Beautiful sweetness first touch.
The acidity, including fine acidity, seeps through smoothly and sizzlingly.
The beautiful umami descends softly, melts on the ground, and disappears like a flowing stream.
After the beautiful sharpness, there is a long lingering aftertaste like the warmth you feel when it snows.
This is the high class of Yukino Kayasha.
It was just a beautiful, dignified and noble sake.

Kaze no Mori was the first sake I fell in love with, and I've had many different Kaze no Mori's, but this time I'm deeply moved to celebrate the 500th check-in with it 😌.

The third cup is Eiheiji Hakuryu from Fukui.
It is a simple sake that is light, mild and easy to drink, but you will never get tired of drinking it. 🙆♂️

First up was the Amabuki, which I had been curious about for a while.
It is not as strawberry-like as I expected, but the sweet and sour taste of strawberries spreads slightly.

Due to the busy schedule towards the end of the year, we've accumulated a lot of alcohol that we haven't been able to check in 📷.

Sentori has undergone a brand renewal of "Edobari" this season and all the sake is now made with a new raw sake yeast.
I had been curious about it and had a chance to try it!
Since time was short and I could only have one sake, I selected Nakadori from the Hatsu Tank series for now.
Due to the convenience of the restaurant, the opened bottle was not enough for the prescribed amount, so we had to have some from the open bottle.
The restaurant suggested that we share a glass, and we ended up having a maniacal drinking comparison between the bottom of the bottle and the opening of the bottle of SENKORY Hatsubatake Nao Kumi Nakadori!
The glass on the left is the bottom of the bottle and the one on the right is the open mouth.
The left glass on the left is the bottle bottom, and the right is the open mouth. The ogara-gara-mi was beautiful, but the tailings were a little thicker in the bottle bottom.
The taste was softer and softer than I expected, and the flavor was clear and reserved.
I had imagined a sweeter, more pronounced flavor, so this was a bit surprising.
Maybe because it is a medium-bottled sake, the taste is less cloying and more refreshing 🤔.
The flavor profile was a little clearer than the bottom of the bottle!

Kaku-uchi at Asano Sake Shop Umeda.
I asked for Echigo Tsurukame's new brand, Echigo-Itsuru, which I've been curious about for a long time.
The pure white label with the subtitle "s-trooper" reminded me of a stormtrooper from Star Wars.
The brewer is probably a Star Wars fan, as there are other Koshuya brands such as "M-Falcon" and "death⭐︎star" 😁.
We had a mouthful of the last bottle in the store 🍶.
It has a strong schwashy feel!
The appearance is a clear, strong mist white.
The aroma is fresh and gorgeous pear and melon.
Slight pickle feeling lurks in the back of it.
The mouth is stimulated by a pleasant gaseous sensation.
The spreading sweetness is moderate, but the fresh acidity gives it a modern taste.
The slight pickle sensation lurks in the middle and after, but it is not bothersome, and the wine is refreshingly modern and pleasant to drink.
Modern!
But it is not overdone, and the natural feeling is just right and delicious!
I will try to follow Koshitai a little more!

Echigo-Tsurukame has a different brand name, Echigo-Tsurukai!
It has the same plain white label as Ebi White, but you can't see it, but it has the Echigo Izo mark that looks like a cloud of muscular clouds: ☁️

Visited at the Daishichi Fair.
There are three kinds of sake: Junmai-Nikaho, Kaiden (Junmai-Ginjo), and Minowamon (Junmai-Daiginjo).
Starting with the Junmai Namahashio classic neat umakuchi, the classic feeling fades and becomes more refined as the grade goes up from Kaiden to Minowamon.
However, the price goes up so much that it is difficult to afford Minowamon, so I decided not to miss this opportunity and went there.
On the other hand, it might be a good idea to go for a big bottle of Minowamon once a year.
There are still many sake that I would like to try, so I can't quite get my hands on Minowamon....

ALPHA3 is Kaze no Mori's only fire-aged sake
ALPHA3, which was originally intended for the overseas market, will now be discontinued due to improvements in refrigerated distribution technology.
It is fresh and almost like a draft sake, but unlike the usual Kaze no Mori, it has almost no gassiness. It is one of the sweetest Kaze no Mori, with a slight bitterness in the second half.
It has an atmosphere like apple juice with a little bitterness.
I personally prefer it to the regular Kaze no Mori 🤔.
