This sake is rich and refreshing with the good qualities of Akitsuho, and shows the determination to brew all the blessings of the Katsuragi Sanroku area. This is the second First Edition of S Kaze no Mori. The future sake level is ★★★. Pale yellow-green crystal. Fine gas bubbles stick to the glass. The nose is mildly fresh and volatile with a strong aroma. The nose is full of tropical passion fruit and young bananas with a hint of acidity. The woody nuance, characteristic of new breweries that use a lot of cedar, is also abundant. The rice aroma is about the same as that of white dumplings, with a slight malted rice aroma and powdery minerality. It is light and has a soft stimulation of gaseous sensation. It has a strong sweetness with a slightly tropical flavor, and is refreshing with a gentle acidity and the loss of a sense of schwarziness. The hint of aroma is soft with fresh volatile aroma. The aftertaste is bitter and astringent with a dry feeling. Very crisp, with a beautifully complex tightness on the finish. When I always choose my own sake, I tend to ask for the sake I have had before, which I prefer. In search of new encounters, I decided to leave the last drink to the owner 🍶. Here are the sake selections. It is a limited edition bespoke sake from Jizakeya Miyajima, a sake shop in Ueda, Shinshu, and is usually shipped as fire-aged junmai sake. It is marked by a shoulder label that reads "Karakuchi Fruity Nao Kumi," which Mr. Miyajima came up with. He wants it to be called "Karakuchifru Junmai! The aroma is fresh and gorgeous. The aroma is fresh and gorgeous, with a light, fruity feel. Unsweet apples, pears, melon, and blue bananas are covered with the rice aroma of freshly pounded rice cake. Smooth texture. A hint of rice sweetness and a refreshing sourness spreads. From the fruity overtone, a beautiful umami flavor develops. This is another series of sake that I want to drink at home but for some reason can't afford to buy every year. This is "Do" from Yamamoto Sake Brewery, which brews Yamamoto, a sake that I have always been curious about as a nigorist. It seems that "Do" is always released a little after the sake I really want to buy, so when I see it at the store, I always think, "Aha! Whenever I saw it at the store, I had to pass it up because my fridge was always overflowing with it 🥲. This is the first time I've had this sake, including outside drinking 🍶. Since it was an outside drink, they stirred the tailings well before pouring it. By the way, it looks and sounds like doburoku, but it is not doburoku because it is "seishu" and is filtered. The appearance is a snow-white color with a hint of green and green, with beautifully spacious tailings dancing in the air. There is a rich aroma of rice in the tailings, with a slight pickle aroma in the back that is not unpleasant. The mouthfeel is pleasantly mellow with a gassy, shrieking sensation. There is almost no sweetness, and the taste of the rice in the gas and the tailings spreads dry and flat. The clear umami flavor is well balanced by the acidity and gassiness. The bitterness of the tailings lingers moderately in the aftertaste. I see what you mean. The dry, crisp, clean rice flavor is irresistible to those who like it 🍶. I can see why it is so popular!

The day we compared Kaze no Mori Akitsuho 657 and NeXT drinks. Not wanting to stop there, we were treated to a series of sakes that I would love to drink at home but for some reason can't afford to buy every year. As a fan of Kangiku, I am ashamed to say that I have yet to drink it at home, Hashu Honor. I have come across it on display in stores, but because of the time of year and the overlap of the sake I want to buy right before every year, I cannot buy Haneju Homare due to storage space limitations. I was thankful to be able to drink it out of the store. The aroma is mild and modestly fruity. On the palate, it has a clear touch. The sweetness has a dark, juicy, Kangiku-like character and a smooth acidity. The overt aroma is sweet and soft. It has a clear umami taste and a gentle, slightly bitter astringency. The aroma and flavor change depending on the sake container and how long the bottle has been open, so it is difficult to make a blanket statement, but it was crisp and clearer than I had expected. It had a taste of sweetness that is typical of Kangiku, so I thought it might be interesting to let it sit for a while.

On the palate, sweetness is accompanied by a hint of bitterness, followed by the lively stimulation of gas and acidity. The volatile aroma is rich and refreshing even in the hints. The sharpness is good, with a lingering complex flavor that is typical of Akitsuho. The usual sweetness of the dark hininess and the lingering bitter complexity are pleasant. At any rate, the brewing technique must be amazing to be able to change the flavor and alcohol content so subtly with such a similar sake quality design. It is a 100% Yuyamanishiki junmai ginjo brewed up to 55% polished. The appearance is clear crystal, almost transparent. The aroma is fresh and gorgeous. The ginjo aroma is of freshly cut pears, young white peaches, and white grapes with a hint of grapefruit. The fresh rice aroma is like white dumplings. The texture is smooth and smooth, with a fresh, gaseous sensation. As soon as it hits the palate, the juicy flavor that bursts forth is "Yum! Delicious! I am already happy from the first sip. This special junmai sake is brewed with 100% Yume no Kaori, Fukushima's original rice for sake brewing, polished to 60% rice polishing ratio. This is a new challenge for the 10th anniversary of the release of the special junmai sake👍. Taste memory... 🍶. The aroma is soft but fresh. The taste comes in smoothly with a slight veil of tailings, and is refreshing with a gentle hint of sweetness, and finishes with a mix of sweetness and umami. I thought I could at least have the contents, so I had it. I can recall the taste... 🍶. I think some time has passed since the bottle was opened, but the aroma is calm and fresh. The bottle has been aged in ice temperature for about six months since purchase! The appearance is a silvery crystal with a slight warmth. The aroma is calm and gorgeous. Fruity ginjo aroma of yellow apples, pears, white peaches, and melons aroma nobly. Elegant rice aroma like Kamishin powder and a faint powdery minerality. On the first day, there was a really faint, raw ripe muffled nuance in the back, but I didn't feel it after that. The first touch is smooth and transparent with a sense of roundness. It flows smoothly into the mouth, developing a gorgeous sweetness with a fruity feel and fine acidity. The fruity aroma is further enhanced in the nose, which is gorgeous. From the mid-palate, a clear and beautiful flow of umami can be felt, and it passes refreshingly to the back of the throat, leaving a clean finish. The crisp, clear aroma and slight bitterness lingers pleasantly in the aftertaste. The rich fruity first half is Yamadanishiki, the balance with the acidity and clear nuance is Miyamanishiki, and the two blend together to create the image of a beautifully fruity harmony. Zodiac Label Set 4 Sake 🍶. The fourth and last sake is Takachiyo's zodiac label. The official name is probably The official name of this set is probably "Koumun Mukashi Takachiyo custommade flat polished rice unfiltered raw sake NEW YEAR'S BOTTLE: The zodiac set about cats (why couldn't I be a zodiac sign?)". It is probably the longest sake I've had in the past. It is probably the longest sake I have ever had. Every year, Takachiyo makes a zodiac bottle based on an anecdote about a cat that couldn't become a zodiac sign (a cat was tricked by a mouse and was late, and after that, the cat started chasing the mouse). I like the white snake socks on the tail: ☺️ By the way, in Vietnam, instead of the Year of the Rabbit🐇, we have the Year of the Cat🐈. Now, the sake. The appearance is yellow gold with a slight haze of tailings. The aroma is fresh and very mild. Unlike my personal expectation, there was no fruity sweet aroma, but only a hint of sourness with a hint of malted rice. The taste has a strong attack of sweetness and dark acidity. Both sweetness and acidity have a strong tone. It is fresh and totally different from my personal prediction! I had to try the regular Hiragana Takachiyo for the first time in a long time. Oriental Zodiac Label Set 4 Sake🍶. The third sake is Mimuro Sugi Bodai-Hashiwadashi Yamada-Nishiki Year of the Snake Limited Edition KINOTOMI. This sake is not the one we drank earlier, which is sold only at the brewery, but a limited edition sake of the year of the snake from the Mimuro Sugi Bodai Hashiroshi series. Since the Chinese zodiac sign for this year is Kinotomi, they are all named "KINOTOMI". The "m" of Mimuro cedar on the jet-black bottle, depicted by a white snake, is still an impressive design 🐍. The fragrance is clean and sweet. It has a slight sweetness with a melon-like melon peel. The impression on the palate is clear. There is no sense of gas, and the soft, round texture has a beautiful umami flavor. Both this and the previous Samorosugi are both undiluted sake with an alcohol content of 13%, so there is quite a difference in aroma and taste depending on the presence or absence of gasiness and aroma. I thought this one is a type of sake that goes down very easily and can be used as a food sake as well.

Oriental Zodiac Label Set of 4 Sake🍶. The second sake is KINOTOMI, a limited edition sake for the year of the snake. Two of the sake in this set are Mimurorogi made by Imanishi Shuzo in Nara. The other two sake in this set are from Imanishi Sake Brewery in Nara, and the rest are from Mimurosugi. The clear bottle is an unfiltered, unfiltered, unpasteurized orikarami sake, which is limited to the brewery and the brewery's direct sales office. Imanishi Sake Brewery is located at the knee of Ojin Shrine in Nara. Ookami Shrine is dedicated to the deity Omononokunushi, who is also famous as the god of sake. The sake forest (cedar ball), which is part of the shrine's sacred body, is also famous for representing the arrival of new sake from breweries across Japan. There is also a regent shrine dedicated to Takahashi no Ikuhi no Mikoto, the founder of the Toji clan. I came to Chuin today to drink this! Year of the Snake🐍 zodiac label 4 sakes drinking comparison🍶. I wanted to buy these sakes for drinking at home but had to give up due to storage space, so I'm very thankful 🥰. The first sake is Ni-Rabbit🐇🐇. Every year, the rabbits do their best in the two hare zodiac bottles, but this year, the composition was a bit surreal, with a snake charmer-like rabbit and a rabbit controlling a snake muppet in a showdown? It's a bit surreal 🐍. The rice used for the sake inside is "Manzai" rice, which was revived and cultivated in 2013 in the local city of Okazaki, and Maruishi Brewery was entrusted with its brewing. This junmai ginjo is brewed with Manzai rice, which is very important to Maruishi Brewery, and polished to 55% rice polishing ratio. The aroma is crisp and fresh, like a young chervil. The taste has a soft dryness that is refreshing. When I drank Ni Usagi before, there were many sweet and tasty sakes, so I was surprised at the refreshing and youthful impression this time! But delicious 🍶.

I noticed that before I knew it, "Sake and Otsumami Chuin Shinmachi" had 200😳 check-ins! I know there are some sakes that have not been registered, but I'll call it a milestone. We secretly celebrated with our favorite sake, Kinjaku, which was opened on the same day. The aroma is refreshingly fruity. It smells of green unripe apples, pears, and fresh chervil. The raw material aroma is like white dumplings and polished rice. The taste has a crisp sweetness and a sharp, soft acidity. It may sound strange, but it is a bit crispy. The refreshing and juicy sweetness and acidity are found in a clear pillar of umami. The balance between the transparent sweetness and the lingering bitterness and astringency, leaving a nuance of acidity, is superb. It is still a unique sake 🐤. Delicious ☺️ Chuin is a place that I could not do without in my sake hobby because the owner, who knows and loves sake, serves drunken sake at a good distance and at reasonable prices without meals, and many of the regular customers also like sake in a good way 😊. I highly recommend this place to anyone who likes sake in the Osaka area! If I'm having a drink too, I'd appreciate it then 🍶😊.

Okuroku is a new series started in 2023 by Iwate Meizou, which brews Iwate Honor and other brands, as a special distributor-only product. The concept is to use locally grown contract rice as the raw material, while sticking to the basics of sake brewing, such as the use of a traditional sake yeast yeast yeast and Yamahai sake brewing method. It is supposed to be a food sake with a mild aroma and an excellent balance of acidity and sweetness. The brand name comes from "Okuroku-gun," the generic name for the six counties in the region of Oshu. The motif on the label is the Kawanishi Dainenbutsu sword dance to appease ghosts, and the toji, Kentaro Miura, is apparently a central dancer in the sword dance. I finally got to drink Okuroku, which I have been curious about for a long time: ☺️ This is the first shibori "FIRST", the only draft sake in the Okuroku series 🍶. It has a gentle aroma with a clear sweetness. The texture is smooth and silky, with a skimpy sweetness. The acidity is crisp and soft with a gentle sourness. The overtone is gentle and sweet.
