KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

Sake from the very local Yanagisawa Sake Brewery. KATSURAGAWA ICHIMATSU" ARABASHIRI, direct pumping, raw sake. Purchased at Takahashi Yoh Shoten for ¥1,870-. The aroma is fresh and unobtrusive, with a slight effervescence that can be detected when pouring. The sweetness, acidity, and a slight gassiness make for a refreshing taste. On the second day, the cork was not properly set and the gaseous sensation was dramatically reduced (due to a problem with the accuracy of the cork). Anyway, it was a very tasty sake. I would like to buy it again with regret.

Sashi-Drinking with an old friend at an izakaya after a long time. We chose our first sake. I remember it went down smoothly...

Yesterday, I went to my favorite izakaya "我" ♡♡♡. I drank a variety of drinks in the all-you-can-drink 1 hour 1500 yen (*^^*) It was crowded, so I couldn't order at a high pitch, so I could only drink 9 kinds out of the 20 or so available...(-_-...) The 6th drink was "Miho". Oroku" and "Gassan" are the most famous sake from Shimane, so I haven't had many of the others. It has a strong sense of rice, but it's not mellow or fruity. I'm sure you'll love it. *I love it!

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

A little sweeter than Miyakanume? In short, both are delicious!

I remember the last time I drank Miyaganbai, it was delicious 🤔. I knew there was a sake collaboration between my neighborhood liquor store and the Kanmei Brewery, but I put it off thinking I could always buy it. But it's plum season and I finally bought it (almost, coyly). Oyusaki Quartet I heard that the name "Uguisaki" is a play on Osaki, where the cold plum trees are located, or plum blossoms and bush warblers (Uguisu), and many other things! At first, you can taste a little sourness. It's just a little bit sour, but it's not too much. The sweetness is soft and lingers on the tongue. Maybe a little more refreshing than the Miyakanume I had before (not sure I remember that 😆). Fresh, fruity and a little different from the gentle sweetness of rice. It is also beautiful and delicious 😋. On the second day, it seems a little more sour. And sweetness too. As an added bonus, here's a picture of the plums

It was my first time to try Usuzakura. I missed the chance to buy nama sake, so I bought hiyaoroshi. The rice is Ginfuki. It has a relaxed atmosphere. The aroma is a little fruity. It has a mild sweet umami taste. Is it sweet among the Hiyaoroshi?

I got what was left in the bottle for free. All of Usuzakura-san's are usually good, no matter which one I drink. It's not because they are free. LOL!

Another bottle I bought at Hasegawa-san in Tokyo station. The first time for Otokoyama-san in Yamagata This is also the original label of Hasegawa-san. The rice used is Miyamanishiki, so it's the same as "Junmai-shu Gold Label". Anyway, it was a delicious sake with a lot of fullness. The sharpness isn't bad either, and it's perfect as a sake for a meal. I thought it was good for everyday drinking. That's about all I can say for a 1-gallon bottle...

☆☆☆☆☆ A refreshing hiyaoroshi with a lot of acidity. It doesn't have much sense of maturity, but the umami is strong. Delicious sake that doesn't interfere with food.

The brewery uses 100% Yamada-Nishiki produced in Aichi Prefecture and soft Mikane-Sanrei subsoil water for the brewing water. The last time I had the unpasteurized sake, but this time it was a fire-brewed sake. It is light and dry, with a classic aftertaste. Personally, I prefer the nama sake.

I have neglected to record this and am back to New Year😓😓. At a New Year's party with my uncle, we were treated to a special product from Azumaya in Adachi-ku, Tokyo. It was a very elegant sake with a melon-like aroma and flavor and a well-balanced fresh acidity. ☺️ I know it's a little early, but I'm going to make a reservation for the end of the year 😅😅.
