Fukuwagura Junmai Daiginjo
This is my first visit to Imuraya. Imuraya is known for its meat buns, bean-jam buns, and adzuki bean paste bars. They also make sake.
The aroma is fruity and gorgeous.
It has a bubbly taste with just the right amount of sweetness.
I think it's a royal taste.
It has little bitterness and finishes with a beautiful sweetness. Oishiiiiiiiii😍!
My second son started his exams today and things started to get tense in the house, but I couldn't stop my drinking 😅.

On Christmas Eve, I suddenly had to go on a business trip 😔 to a place in Mie Prefecture.
I was working late at night, so I didn't have a chance to get drunk and enjoy Mie's famous sake 🍶 at a restaurant 🥲.
I got myself together and drank one of the single-bottle bottles of local sake that I had bought as a souvenir.
Fukuwagura Junmai Ginjo.
Fukuwagura is a sake brewed by Imuraya, the maker of azuki bars, meat buns, and bean paste buns.
The appearance is a silvery crystal, almost transparent.
The aroma is sweet yet refreshing.
Melon with citrus nuances and young banana are the main notes.
There is a sense of koji, and the rice aroma is rather rich, like freshly pounded rice cakes.
The first touch is a deep sweetness.
The acidity spreads with a subtle gaseous stimulation, mixing well with the sweetness.
As the refreshing stimulation of the acidity passes from the back of the throat to the nose, the bitterness and slight astringency peek out while the umami is felt from the dark sweetness, and it finishes with the bitterness and astringency.
The lingering aftertaste is long and gentle, with a sense of the release of the stimulation through the nose and the tightening of the bitter astringent taste.
The overall flavor is strong, sweet at the beginning and bittersweet at the end.
I thought it was quite an interesting sake design.
It is a sweet, umami acid for adults, which does not seem to be possible.

It was definitely very sweet and strong, so it would be great with anko (red bean paste) or something else. ☺️ If it's summer, an azuki bar would be a good choice!

Imuraya, a confectionery maker famous for its Hokkaido adzuki-bar and taiyaki ice cream, launched Fukuwagura sake in July 2021. Imuraya brews sake rooted in terroir, using smooth water and high-quality sake rice grown in the rich climate of Mie Prefecture. The rice used is "Kami no Ho" produced in Mie Prefecture. The brewing water is a rare, mild, hard water with high calcium content from Matsusaka, Mie Prefecture.
It has a gorgeous aroma like muscat and a refreshing sourness like apples. It has a sharp and deep flavor that harmonizes the mellow aroma and mild mouthfeel.
It is said to be a sake produced by Imuraya, known as the maker of the Adzuki bar. I received it as a souvenir from Mie.
The aroma is full and deep, with a hint of sweetness. It also has a firm freshness.

Junmai is about 2,000 yen.
I thought it was a little expensive, but I wanted to try it once.

This one is brewed with Mie Prefecture's sake rice, Kami no Ho.
This is the fire-aged version brewed with Kami no Ho, a sake rice produced in Mie Prefecture.
The aroma is mild.
Very clear on the palate

We tried a Junmai sake this time from Fukuwagura (brewed by Imuraya of Azuki Bar), which was delicious the last time we drank it!

What's that?
Not as good as the junmai ginjos and junmai daiginjos from Fukuwagura that we have had so far...!
It has a sharp umami and sweetness.
It's not just sweet (it's like a combination of dry and sweet).
Very tasty!
Considering the cost, this is the best solution!
I highly recommend it to everyone!
Naturally, I'm adding it to my favorites.
Postscript
However, Junmai Ginjo and Junmai Daiginjo are by far superior in terms of fruity aroma. If you want to enjoy the mellow sweetness and aroma of Fukuwagura, junmai ginjo may be better overall.
In any case, you can never go wrong with this sake brewery.
