My last sake of the year will be this one. I will finish the year with a new sake from Yamada-Nishiki Ni-No-Nozo. The appearance is a slightly pale champagne gold crystal. The gasiness is moderate for a San-do sake, with just a hint of bubbles in the glass. The nose is youthful, fresh and sweet. Refreshingly sweet, like fresh young pears or yellow apples. There is also a hint of woody nuance. The rice aroma, which is somewhere between mochi (rice cake) and shiratama dumpling, is also beautiful. Extremely smooth texture with a gentle gassy stimulation. The sweetness, where fruitiness and transparency coexist, is balanced with a beautiful acidity, and spreads with a sense of dryness. Hints of pear and apple spread from the mid-palate, and from there the flavor becomes more vivid and colorful. The final part of the bottle has a beautiful flow of umami, and it finishes with a crisp finish. The slight bitterness in the aftertaste is really beautiful. The faint lingering aftertaste is moderate. No matter when I drink it, I still think this is the one. I am glad I chose Sansho as the last sake of this year. I enjoyed the sake to the last sip, expressing my gratitude for all the encounters I had this year with sake and people, and my hopes and prayers for the coming year. We are grateful for the many drunken sake and good people we have met this year. I wish you all a very happy drunken New Year🍶.
