This is the 2024 new sake I bought when I visited the brewery last December. It's been sitting in the fridge for a long time and I haven't been able to drink it because I was too lazy😅. And the other day, I finally opened it! When I opened it, there was a great popping sound! I wasn't expecting it at all 💦. The carbonation that crackles from the soft mouthfeel is addictive 😋. The moderate sweetness enhances the depth of the flavor and does not become monotonous while drinking! 👉 The slight bitterness that lingers in the aftertaste is just right. I didn't think this sake could taste this good after a year, maybe even better than when it was first brewed!

When I opened it, I didn't feel the gas stirring on its own, the lees were sticking to the bottom of the bottle a bit 🤔. The aroma is pear-like 🍐. When you drink it, it's full of juice 🍹. The fine bubbles popped in my mouth and it was pleasant! Not too sweet. The body is very mellow. There is a refreshing sourness like lemon and a slight bitterness and astringency in the aftertaste. Very tasty! The middle never betrays you! This year, the Japanese saury 🐟🐟 seems to be in great abundance and the news said the size is very fat! I was so happy to be able to buy saury flown in from Nemuro to Taiwan at my usual fish shop. I made saury with soy sauce and liver 🤗. I watched a lot of videos on YouTube 😝😝 on how to cut fish, I tried to cut the fish into three pieces for the first time, took off the bones, wrapped it around and put it on a skewer. I don't have a grill at home, so I grilled it in an air fryer instead, and brushed it with liver soy sauce as it grilled 😋. It didn't look too good, but tasted great! ✌️ I paired it with sake and it really went well with it!

I'm invoking the disease of waste 😷. Almost a year since I bought this alcohol. I'm still having trouble opening it. Thanks to your article, I have decided to open this sake 🥹. The aroma is not so strong right after opening the bottle, but you can smell a hint of lactic acid! The mouthfeel is smooth and has a rounded sweetness (I haven't had much of that 😅) The taste is rich and thick, with a good amount of alcohol. The aftertaste has a subtle astringency and bitterness, and the balance is excellent! To be honest, I don't feel much of the sake's "sake yeast" character, except for a bit of lactic acidity at the beginning. Or maybe it's because I left it too long. It rained so much this year that I couldn't eat any of the delicious mangoes that I look forward to every summer 🥭. I recently bought some pre-cut coconuts🥥 at the market, which looked cheap and convenient at about 100 yen. It feels so much cooler when I drink it when I'm in the kitchen boiling fish and it's hot and humid: ✌️

Limited Active Nigori of Shichibonjari Tamakae produced in Shiga Prefecture This is the first time I've had sake made with this rice 😚. I've never heard of Tamaei outside of Tottori, but it's from Shiga! Fruity sweet and sour aroma. Shwashy and creamy with a great rice flavor💕. Not too sweet and dry when the lees are involved Delicious fresh bitterness from the raw sake at the end 😄.

I saw "Futo" 🐰🐰's Yamadanishiki 55 light nigori on the menu and remembered having had the Yamadanishiki 65 nigori version before, so I wanted to compare the two 🤓. The nigori version was really impressive! I still clearly remember the time I struggled to open the bottle with an ice pick! If I wasn't careful, the whole contents would blow out 🥹🥹🥹. This direct-fed smoky nigori seems to be a bit rare I don't remember seeing it before. On the back of the bottle, it says "Limited Distribution". The aroma is modest and a little banana-like. Fresh and juicy with a slight sweetness and sourness. The rice flavor gradually emerges. There is a slight bitterness and astringency in the aftertaste, and it is delicious to finish 😋. The photo is of kittens sunning themselves at the entrance to the Yamakawa Port Ferry 🛳️ terminal in Kagoshima Prefecture! Aren't they cute😍.

Delicious sake from Aizu Sakashita Akebono Brewery Tenmei Nakadori Ichi-go Ogirami 🤗. Citrusy aroma. Slightly gassy but almost imperceptible Clean and light mouthfeel typical of Gohyakumangoku It is fresh, sweet and tasty! The alcohol content is normal at 16 degrees, but it is very easy to drink. Sake and Meshi RIKI" 🍶 in Kumamoto Sake and rice at RIKI 🍶. Milt as a side dish is a good start, isn't it? 😆😆 The first drink was Jikin Origigarami 🤩. It was my first time so I was happy to be able to drink it ✨. Freshly squeezed new sake Freshness is outstanding! It has a nice gassy feel to it! Melon-like fruity taste, soft sweetness, and a strong flavor of the tailings. Delicious! It's a very good wine 😊.

I stumbled upon it in an inconspicuous area of a liquor store. I get super excited when I find it, so I'm happy about that✨. Kaze Wa Kaze Yawaraka Sake made with "Gohyakumangoku" from Sado Island Light fruity aroma Tropical nuances such as lychee, coconut and coconut milk Full of freshness with a nice slight effervescence Firm sweetness and flavor Sweet and sour fruitiness spreads in the mouth 😋. The rich umami and gentle acidity intertwine with each other gently like silk. There is a lingering aftertaste, but it is not harsh and crisp. Niigata sake is said to be light and dry, but this is different! Sake is fun 😚. The snack was a piece of nori seaweed that I bought in Saga on this trip, sandwiched between eel and camembert cheese 🤭. Super delicious ‼️🙏💥💯 I found an interesting boar cup when I went to the flower market last week! Will I see them again next time I go? 🤔 I'm in the mood to buy one😅
