We have just finished a big job and had a private launch lol.
Ganzan" is a famous sake shop in the neighborhood.
They have 50 kinds of Sake, Shochu (barley, sweet potato, etc.), and Awamori!
The first one is Tobiroki (🍶).
I had it at the first sip.
It is a beautiful and refreshing sake!
The sweetness was refreshingly crisp and went well with sashimi and tempura.

It is Tobiroki Special Junmai.
The bottle was opened the day before.
The appearance is a slightly pale silver green.
The aroma is mild but fruity with a nice scent of pear and melon.
Smooth texture, with a first touch of soft rice sweetness.
The refreshing acidity spreads lightly, and a refreshing dryness passes through the back of the throat and nose.
The sweetness sometimes shows depth, which is pleasant.
The crisp, lingering aftertaste is only a slight bitterness.

According to the owner, Mr. Kawada, he only buys the shipment at this time of the year because it has matured nicely from the time it was actually pressed 🤔.

A soft and gentle ginjo aroma. The color is clear. Sharp and clear sweetness in the mouth. The middle part of the aroma is pleasant, with the umami of rice, strong bitterness, and astringency, but it is not unpleasant, and the aroma with this umami and bitterness is pleasant, cutting through and passing through to the nose. The aroma is pleasant, and the bitterness is pleasant. The final taste lingers on the tongue.
It is a classic sake, but it is not old-fashioned.
The crisp acidity that comes out as it warms up is also delicious.

The last time I drank Tokujun at a bar, it tasted more like I was back at home, but this one is more refined. It may be because it's from a home-drinker's palate.

In a way, it's my standard sake along with Tasake and Nabeshima Tokujun, isn't it?
