Kinjaku Autumn Rise, which was left at home in ice temperature to rise in winter. I had it before it became spring-ripened (this is a staggered post). The appearance is pale gold. The aroma is round and gorgeous. Red apple with honey, freshly cut pear, white peach, melon. The aroma has the solid feel of freshly polished rice and the fluffy rice aroma of freshly pounded rice cake. The slightly tart apple honey-like sweetness is intense and gentle. It is juicy with a gentle and fine acidity. The unbearable breadth of flavor and the fine acidity is like sparklers. The fragrance is fruity and full of rice flavor. While the acidity slightly increases its assertiveness, the beautifully clean umami of the rice flows softly and finishes off nicely, and the lingering taste is gentle. Hot sake... 🍶. The fruity aroma blends with the aroma of softly cooked rice, and the sweetness and warmth are pleasantly intoxicating. The softness of the texture and the fine stimulation tickles the tip of the tongue. The thick sweetness, as if the rice has been condensed and fruit juice added, seeps through, and the acidity, which includes a pleasant stimulation, is soft and fluffy. The rice flavor flows softly and mellowly, and then disappears. The lingering aftertaste leaves a faint fruity aftertaste. I like it very much. ☺️ It was the most delicious 🍶.

The nose has a gorgeous pineapple aroma. The aroma is tropical and tropical nuances are present. While it has a rich sweetness and umami flavor, it is clean and does not give the impression of being heavy or dry from alcohol. You can also enjoy the changes in flavor depending on the temperature range and the number of days after opening the bottle. ⭐️⭐️⭐️⭐️ Purchased at the brewery. I asked them to take out the wooden box so I could buy it for home use at a slightly lower price. The sake cup is also cute. I really like Kinjaku, but while I can find Tobisho and Daiginjo at liquor stores and souvenir shops, Jungin and Shiboritate, which I prefer, are available only at restaurants, and I regret that I have fewer opportunities to drink them.

Sake Koi Japan #4. The first Yamaguchi sake! I have never heard of this brand. I found out that this Jungin 50 is a rare sake that does not appear on the market very often. Moreover, the label seems to be different for Yongo and Ichimasu. The aroma and flavor are very gorgeous and fruity. The sweetness is quite strong. There are many fruity Yamaguchi sake, such as Otters and Toyo Bijin. I have never had Toyo Bijin, though.

I got it when I went to Iwakuni City at the end of last month and returned 🚗. I haven't had it since I drank it as a New Year's sake ✨. This time it was Junmai Ginjo. Polishing ratio 50%. 50% alcohol by volume When the bottle is opened, there is a loud pop. The aroma is fruity like melon. In the mouth, the umami and sweetness of the rice spreads and the full-bodied, bitter taste finishes with a sharp taste. This sweetness and richness is irresistible 😊. The entrée was gingerbread, but you can savor it with just the sake.

Kinjaku Junmai Ginjo. It has a fruity top nose like melon or pineapple, a smooth texture on the palate, and a slight effervescence. The sweetness of the rice is well drawn out on the palate, and the umami flavor is broad. The aftertaste is clean and crisp with some bitterness. It is a well-balanced sake that should be drunk continuously!

The director of a business partner was transferred to Hachinohe. We had a farewell party just the two of us. The owner of the restaurant told me that he got a job at Kinjaku. but I couldn't make it to the restaurant. Finally, we were able to visit. There it is...golden tyun tyun! I have never seen it here before. It's my first time. The aroma and taste exceeded our expectations. It has a strong ginjo aroma. Mellow and umami taste. No acidity, long aftertaste. I like this one!
