Almost Sashi-Drinking🍶 with the owner, Mr. Kawada, at Standing Drinking CHUIN The fourth sake was Matsuo's MADARAO. The fourth sake was Matsuo's MADARAO, an autumn-aged junmai ginjo sake brewed with 100% Yamae-Nishiki from the foot of Mt. I think I have not had Matsuo since Pon-chan brought it to me at the Kansai Sake no Wawa Hankai Train Off-line Meeting 🤔. The aroma is mild, but the ginjo aroma seems to have deepened slightly with aging. The mouthfeel is soft and smooth with a calming texture that gives a slight sense of maturity. The sweetness and acidity are also very mild, giving a good impression of calm and cleanliness. While showing some complexity from the aging process, the beautiful sweetness and umami spread softly and flow smoothly. It is likely to warm up considerably, but it is also delicious cold. It is not a smooth saké, but it is a saké that can be drunk slowly and easily. It's delicious. ☺️ I want to try drinking it at home. While discussing the contents of the SAKE DIPLOMA exam with the owner, Mr. Kawada, we moved on to the next sake.

Almost a casual drink with the owner, Mr. Kawada, at standing drinking chuin 🍶. The third sake was Kanae. According to one theory, this sake is said to be the "overthrow of Jyuyo. The aroma is much milder than expected. Although the ginjo aroma can be detected, the graininess is also rather strong and a bit complex. This area may change after the bottle is opened. The taste is more like a special junmai sake than a junmai daiginjo, with a very strong taste of rice rather than sweetness and acidity. It has a good sharpness and a long aftertaste, but it still has a strong rice flavor. Since I had intended to drink a fruity sake, I was a bit surprised at how different it was from my previous image. When I told Mr. Kawada about it, he said, "It certainly feels a little different from before," and "It is very strong. I was relieved to hear that my senses were not off-kilter, and moved on to the next drink.

Fukumochi Sake Brewery, which brews Tenga-Nishiki in Mie Prefecture, had an unforeseen accident in 2023BY and was unable to brew any more. This is the "Suzuka Brewing" 🍶. I was surprised to find out that if it is brewed with the same facilities as the "Saku" brewery, it is almost like a "Saku".... The palate is clear with a slightly solid sweetness, a memorable "Saku" flavor! It is a memorable "Saku". Then, after spreading throughout the mouth, a slight change is felt, and gradually, "Oh, this is not "Saku"🤔", with a slightly complex acidity and umami. The sharpness is good, and the aftertaste is reasonable. Interesting! Sake that looks like a sake but is not. Perhaps because of the use of equipment such as a pastry riser, it has a fresh taste despite being fire-aged, and the impression at the beginning is that of Saku, and then the Tenkanishiki comes to the fore and pulls away in a friendly manner. I can't compare the two until I try the genuine Tenga-Nishiki, but I found this to be quite tasty 🍶.

After a long time, I went to CHUIN to talk with the owner, Mr. Kawada. This time, I was almost alone with Mr. Kawada (although there was also a former Gassan brewer from Shimane until halfway through the meeting), so we drank sake together without taking notes 🍶. First we toasted to this Shinshu Kamereizan Meganishiki Junmai Ginjo. The timing of chuin-san's bottle opening is completely by luck, but recently I've been lucky🐢. ☺️ The aroma is even more vibrant than usual since it's almost a mouthful. Wonderfully fresh and sweetly fragrant and fruity. On the palate, a chili and pleasant gassy stimulation 🫧 that I didn't recognize on the exterior. Sweetness reminiscent of apples, pears, and white peaches with a good balance of juiciness and transparency coexisting, and a fresh and gentle spread of acidity. The flow from the middle to the latter half of the bottle reminds us of the beauty of Shinshu water, and the lingering aftertaste leaves only the remnants of a crisp, pleasant, and fruity ginjo aroma. This is the kind of sake that makes you think sake is wonderful. It has been almost two years since I decided to make sake my hobby, but there are still so many things I want to know, sake I want to taste, and people I want to meet. I enjoyed my favorite sake, Shinshu Kamerei, while thinking about how I should take steps forward little by little, without overdoing it or being greedy.

Urasato is brewed by my favorite Touji, Chikara Urasato. The Junmai Ginjo Nama Hashiroshi, which I liked very much last season, is here again this year 🍶. The appearance is a pale silver-green crystal. The aroma is mild. It has a hint of ripe melon and banana, and as is typical of a sake yeast yeast, there is a rich aroma of dairy products, like young yellow cheese. The texture is smooth and silky. From the moment it enters the mouth, a juicy, fruity sweetness spreads, and it is accompanied by a ladylike acidity. The bright flavor from the mild aroma is round and soft, with an indescribably intoxicating feeling. The dark flavor spreads softly with the pleasant stimulation of the acidity and finishes refreshingly crisp. A gentle yet refreshing crispness that is different from a dry feeling. The lingering finish is moderately medium. You can't help but grin at the deliciousness of the wine. While the color of the taste is rich and vivid, the sense of freshness is also felt with a sense of fullness, yet it is a beautiful and stylish type of sake with no heaviness. We also tried heating it up 🍶. The aroma is mild and the flavor is rich and full, so it would go well with soup stock dishes or saikyo yaki (grilled fish) 🤤. Three days after opening the bottle, the sweetness and umami of the flavor had increased, and the sense of freshness had changed to a smooth one. Urasato does not betray. Thank you for the treat 🍶.

When I tried Argo, I also bought this one! It is "PARA ME SPARKLING SAKE" by Nihon Zakari, a major sake brewing company in Hyogo 🍾. This PARA ME SPARKLING SAKE is a sparkling sake with 7%-8% alcohol by volume and the addition of brewing alcohol and sugar. The appearance is a clear, slightly pale green-gold. It has a lively gaseous sensation on the rise. The aroma is youthful and fresh. The aroma is a combination of pear, young melon, and sweet malted rice, and is quite fruity. The mouthfeel is smooth and has a lot of gas, but it is gently stimulating. The overall impression is of a koji base, with a firm sweetness and a refreshingly soft acidity. While it flows with a swirl, surprisingly, there is a light tightness of bitterness at the end. It is sharp and has a short aftertaste. I felt a stronger sense of sake or koji than I expected. I imagined it to be like a super light sparkling white wine, so it was quite unexpected. Still, it is very easy to drink as a sake, and I guess it's just a matter of cost performance. A 180 ml bottle costs more than 200 yen, so it is no match for the shochu-hai RTDs that cost around 100 yen for a 350 ml bottle. I would like to promote the unique strengths of sparkling sake 🍶.

A new attempt by Gekkeikan. It is an Argo with 5% alcohol by volume that claims to be surprisingly drinkable. This is a new product that is the result of the seriousness of a major sake brewing company that wants people to enjoy sake even on weekdays. I tried it because I wanted to experience the seriousness of a major company! The appearance is pale yellow gold. No gassiness. The aroma is very mild but refreshing. The main flavor is freshness of young pears, with some plums including acidity. The riceiness is also quite noticeable. Smooth mouthfeel. After the unexpectedly firm sweetness and acidity, the refreshing rice and koji sensations spread with a strong sense of transparency, and it finishes with that same transparency. The finish is sharp and has a short aftertaste. It has a watery quality that makes it easy to drink, and it certainly has the feel of a sports drink! The sweet and sourness accompanied by a slight alcohol bitterness has the feel of plum wine or apricot wine. In a word, it is a "spodolite drink made with rice. The fact that the only ingredients are rice and rice malt shows its spirit. Gekkeikan's technical ability to commercialize an ultra-low-alcohol sake that can be stored at room temperature without the addition of brewing alcohol or sugar is a feat of excellence. I would like to positively support their efforts to broaden the base of sake in various directions and to explore the fan base. ☺️📣

「酒米のダイヤモンド」とも呼ばれる愛山🌾 通常、兵庫県内でしか栽培されない愛山の産地違いが「剣愛山」。 徳島県の名峰「剣山」(表ラベルの背景の山が剣山⛰️)を仰ぎ見る圃場で栽培されています。 剣愛山を醸したお酒は、冩樂と寒菊のみ! 外観はやや淡いイエローグリーン。 ガスの泡は疎。 香りは爽やかで華やか。 グレープフルーツや洋梨、メロンやバナナを盛り合わせた甘味のあるフルーティーな吟醸香がグラスの外まで届く。 茹でる前の白玉団子のような米香も豊か。 その奥に微かにヒノキのようなニュアンスも。 滑らかで微かにトロッとするテクスチャ。 ガス感の優しい刺激🫧 ジューシーで優しさや繊細さも感じる甘味と、そこに寄り添うなめらかな酸味。 中盤からは米の綺麗な透明感を感じさせる旨味が流れていき、最後に苦味の締まりを残してキレる。 余韻は長く、舌に僅かに苦渋み。 戻り香にもフルーティーさと米感。 透明感のある優しい寒菊、という印象。 落ち着きと上質感に綺麗な米感もあって、とても酔いです! 剣愛山の歴史を記す年代期(クロニクル)となるお酒🍶 来年以降も毎年飲みたいなぁと思いつつ、盃を重ねました。

Gyve and Hirupeko's sake terror @Jinma, who couldn't stand to drink alone @chuin🍶. Here is the last one. Shinshu Kamerei Junmai Ginjyo Hitogochi from Nagano. The menu in the picture is unusually incorrectly labeled as Tozawa Hitogochi (I didn't notice that at all until I looked back at it for this post 😅) The exterior is a pale silver green. The aroma is my favorite 🐢 fresh and gorgeously fruity. It's always frustrating that I can't describe it well, but pear, white peach, sweet banana and melon spread out with a chili-like stimulation. The rice aroma of powdery Kamishinko and white dumplings is also pleasant 🌾. The texture is smooth and silky. The first sip has a fruity sweetness and a refreshing sourness that spreads beautifully. From the mid-palate, the transparent rice flavor flows through, and the full-bodied flavor is accompanied by a bitter taste and a sharp finish. The lingering finish is rather long. As the cup is tasted, the sweetness feels lighter, the clarity of the rice and the moderate stimulation of the acidity are pleasant, and we feel it would be good as a mealtime sake. It is delicious after all. It is hard to find, but if you visit the brewery, you can buy just one bottle, which is another point I like about Okazaki Shuzo: ☺️ I would like to visit the brewery in Ueda, Shinshu someday 🚗. I couldn't take Jive's alcohol terrorism, so I threw away my work and drank at chuin🍶. The second glass was Mikotsuru Junmai Sake Oragami Unfiltered Unrefined Nama Sake. I drank Mikotsuru Junmai Sake at home before, but I think this is the first time for me to drink Oragara-mi. I think the label design is more colorful when it is ogara-mi. The appearance is mist-white with a transparent feel like a spring haze. The aroma is of hakusuku peel, white parts, young pears, blue melon, and a firm rice cake-like aroma. Smooth texture with a hint of orikara. The fluffy sweetness is followed by a crisp, dry acidity. The after-flavor has a rice flavor with a firm bitterness. The lingering finish is medium. The imaginary Miko-chan in me is sweet and fruity, so even when I drink this junmai sake knowing it is dry, I find it "quite dry". However, since it is orikarami, the rice flavor is fluffy, and then the dryness gives it a sharp edge, and the contrast is intoxicating. This kind of refreshing Mikotsuru is also delicious. ☺️ It is delicious cold, but I would like to try heating it up.

The other night, Jive-san came to Kansai and went to Kitahama Hakkosho in Osaka, and Hirupeko-san joined us at Kamima-san in Kyoto where we were having a drink. Since I was terrorized by sake in my real-time post, I couldn't just throw my work away and go to Kyoto... so I went to chuin at least 😁. From Shichiyou Sake Brewery's Yuma, which was re-launched in 2022. I have never seen Yuma outside of Sumiyoshi Sake Brewery in Fukuoka. They say it is stocked by a customer who has business trips to Fukuoka 🚄. The exterior is a mist white color with a haze of tailings. The gasiness also drifts through the tailings. The aroma is of grapefruit, pear, and melon with a youthful freshness, while the rice aroma is about the size of a white dumpling. On the palate, the sweetness of the rice is followed by a stimulating acidity with a refreshing citrus sensation that covers the sweetness. The umami with bitterness is well felt and finishes crisply. The lingering finish is rather long. Last year, the impression was of a light, refreshing grapefruit, but this year, while maintaining the freshness, the flavor is more intense and robust, and the nuances of a rice-brewed sake have increased. The first half is refreshing, and the second half is designed to have a tight bitter taste accompanied by a full-bodied, rice-like flavor. Delicious as always. ☺️ I resent the fact that you can only buy this sake in Kyushu🍶.

Here is another drink I came across at an after party after a work party🍶. I don't have any notes, so this is for my records. The two sakes available are Kangiku's Orange Sea and this one, Kihotsuru Hiyoroshi. I thought it was a drunken drinking place that hit my personal pressure point: ☺️ There is no way to go through with it. No one drinks sake, and while my seniors and juniors are ordering beer, shochu highballs, and highballs, I have the gall to ask for sake and even take pictures of the bottles 😄. It is not fruity, but has a mild aroma of rice with a hint of sweetness. Drinks at an after-party after a work party. There are no tasting notes, so this is for the record. This is an autumn sake from Kangiku Meikozo called Tomi (橙海). Kangiku is one of my favorite sakes, but due to a mix-up with the inventory in my refrigerator, I have not been able to purchase the Ocean99 series, although I have purchased a lot of the super-limited occasional series to drink at home. The Orange Sea is no exception. I thought I couldn't buy it, but luckily I was able to drink it. Since it is an autumn sake, it is not unpasteurized, which is rare for Kangiku, but is once-heated sake. Whether it is because of this or the environment in which it is drunk, it has a relatively subdued impression, but the fruity pear, melon, and other ginjo aromas typical of Kangiku can be pleasantly detected. The taste is also smooth in texture, with a soft, dark sweetness and soft acidity spreading juicily and gently, flowing down the back of the throat and finishing with a sharp finish. The aftertaste is moderate and clean. While retaining the juicy fruity character typical of kangiku, it was delicious with a sense of tenderness that is perfect for the long, ennui nights of autumn 🍶.

Off-line meeting with Mr. Yoohee at Dairy and Yeast Factory Kaku-uchi (corner drinking) at Dairy and Yeast Factory It was a bit early in the day, and we had plans for the rest of the day, so we had the second last drink. Actually, I had the "Odayaka Namaishuku Junmai Ginjo Cold Oroshi" from Niida Honke, which brews Niida Zenshu, which I had not had yet. As the name suggests, the aroma was calm and refreshing, with a gentle ginjo aroma. The taste is soft and smooth. It was served well chilled, but it had a clear, transparent taste with a hint of acidity and a milky, clear flavor, so it seemed like it would be good warmed up. I would like to drink it at room temperature or warmed. After the Dairy and Yeast Factory, Yoohee told us he was going to visit Sumino Sake Brewery, so we went along with him 😄. Yuehee's stocking at Sumino was dynamic and very interesting 😁. After that, we expected it to rain, and since we didn't bring an umbrella, we had to end the party before it started pouring. At the end of last month, I had an off-line meeting with Mr. Yoohee at Mystery Chee-ya (?). The meeting was held at the end of last month 😁. Mystery Chee-ya" or "Dairy and Yeast Factory" is a cheese, Japanese wine and sake store located in Nagata-ku, Kobe City. (The location registration of Sake-no-wa is the old name of the store.) In addition to Abeyagata, Niida Zenshu, Honkin, etc., Kinjaku and Imi are also available. It is one of my favorite sake stores not only because they carry many of my favorite brands, but also because the proprietress of the store is modest but very kind, and even as a newcomer, she teaches me a lot of things. She let me wait for Yoohee's arrival at the store, and during that time I was able to listen to her interesting stories about cheese and the difficulties involved in handling rare brands. ☺️ After that, Yoohee-san arrived at the shop, and we listened to him as he happily talked with the proprietress about the store and its products, just like a regular customer, thinking "how nice ☺️. I bought it because it was brewed by Chikara Urasato, a toji I guess. I have been drinking it since the other day and finished it yesterday. Here are my notes from the first day of drinking. The appearance is a pale yellow-green. The nose is youthful and fresh, with blue melon and freshly peeled banana. The nose has a coolness of chervil and sweet rice aroma like white dumplings. Smooth texture. Dark sweetness and a firm umami taste, then a dryness that leaves with the stimulation of alcohol sensation. The finish is crisp with a hint of bitterness while retaining the flavor. The aftertaste is short and medium. It is different from the "light dry" type of sake, and is a dry sake with a strong umami taste, which is different from the watery type of sake. It seems to go well with all kinds of food. It is a sake that can be easily drunk at any time of the day. I also compared it with Shirakiku Honjozo+ from Okunoto to go with the meat and tofu with hot egg on top, but they all have different qualities and intoxicating feeling. ☺️ Yesterday, the 9th day after opening the bottle, I felt the bitterness in the aftertaste was a little more pronounced than before, but it was delicious. At standing drinking chuin where we stopped by on our way home from Kaze no Mori WEEKS 2024. Kyokko is brewed by Watanabe Shuzo of Tochigi, the Nanbu Touji master of my favorite Touji, Urasato Chikara Touji. Whenever I find it, I drink it. The first thing that catches my attention about this junmai ginjo of early autumn is the seven varieties of sake rice (Yamadanishiki has six varieties because of its different milling ratio), which are all different in terms of milling ratio and the ratio of rice used. It seems that the sake was brewed by gathering surplus rice, but I like this kind of thing because it is ethical and interesting 😊. The concept of this hiyaoroshi is that it is not ready to be heated, even though it was stored at ice temperature, so unusually it is recommended to be served cold. The yeasts used are 1801 and 701. The appearance is a slightly pale silver-green crystal. The aroma is gorgeous, but low in tone and mild. Typical cleanness of yellow apple, pear, melon and banana capsicum + vinegary iso. There is also a rice aroma about the size of rice cakes. When drinking, it has a smooth texture. The sweetness is moderate, and the acidity is fine and spreads smoothly. The stimulation of the fine acidity spreads and passes from the upper jaw to the back of the throat. The bitter, complex flavor can be sensed, and it finishes with the acidity. The finish is moderately sharp with a medium aftertaste. It was quite an interesting sake. Thank you for the sake.

At standing drinking chuin where we stopped by on our way home from Kaze no Mori WEEKS 2024. Tasake Benkei was opened on the same day as Jyushiyo. Sake rice Benkei is a Hyogo variety originally selected and bred by the Hyogo Prefectural Agricultural Experiment Station from the native variety Benkei 1045. Although widely grown from the Taisho era (1912-1926) to the prewar period, it disappeared around 1955 with the advent of Yamada-Nishiki, the KING of sake rice. In the recent trend of brewing with restored rice, Benkei was also revived in 2012 by Yamagata's Sakata Sake Brewery (Kamikigen). Nishida Sake Brewery (Tasake) has also been brewing Benkei since 2013. I like sake made with native rice, so I'm looking forward to Benkei too😄. The exterior is silver-green crystal. The aroma is gorgeous and refreshing. Yellow apple, pear, melon, banana, and rice aroma like white dumplings. The taste starts with a smooth, dark sweetness, and while the acidity is gentle and smooth, the stimulating acidity goes down the back of the throat in abundance. The taste is rich in umami, including bitterness, and the lingering finish is rather long and finishes with a complex flavor that lingers on the tongue. The overall flavor is rich and complex for a rice wine. According to the owner, Mr. Kawada, it has the richness of old-time rice wine. I don't dislike this kind of sake with a strong flavor!

On 9/24, I was on my way back from visiting Kaze no Mori WEEKS 2024 at Daimaru Shinsaibashi store. It was a good opportunity for me to visit standing drinking CHUIN for the first time in a while. There was still some of the Jyushidai Arahajiri Kamimoroshiro Honnen and Harazake that everyone had at the after-party of the Kansai Petit Off-line Meeting with Tomo-san, so I had some of it. We had it on the 3rd day after opening the bottle after 7 months of aging in ice temperature. The appearance is a slightly pale silvery yellow-green crystal. The aroma is just juicy. The aroma is rather rich with rice aroma amidst an assortment of ripe fruits such as pears, white peaches, and melon. The first touch of flavor is the transparency of the rice. From there, the juicy sweetness spreads as if popping, and the harmony with the refreshing acidity is superb. The beautifully clear rice flavor flows with a hint of bitterness and a good sense of fullness. The sharpness is beautiful and the aftertaste is long. Excellent ☺️ I have been in love with this sake for a long time while drinking it. The power of Tojo Yamadanishiki and Takagi Sake Brewery, even I, an amateur, could feel the awesomeness. It was the best 🍶.

It's Sake Day 🍶. Shirafuji Sake Brewery evacuated the Honjozo and Junmai-shu (Neine) that was topped up at the end of the year to the only thermal tank that was still in operation, while it was damaged by the Noto Peninsula earthquake. The sake was then shipped out and bottled by Yoshida Sake Brewery. First, it was served cold. The aroma is gently banana and melon, with a freshness like green bamboo. It has a deep sweetness like caramel, a nuance of cypress, and a rice aroma like freshly pounded rice cake. From the dark rice sweetness, along with the light stimulation of alcohol, a moderately gentle acidity spreads with a sense of plump rice flavor, fades away and finishes with a sharp finish. Ah, this is the Shirakiku of Okunoto: ☺️ It is soft and gentle with a strong flavor. . Warmed up 🍶. The caramel-like sweetness is enhanced and the rice aroma has the aroma of freshly cooked rice. A sense of fluffiness with fullness in the sweetness. The taste is rich but not angular, with a soft, thick sweetness and umami that gently spreads, and the acidity, including a slight spike, rises from the back of the throat to the nose. Ahhh, this is also Okunoto's Shirakiku. ☺️ The sweetness and umami that is brought out by heating up the sake is very intoxicating. We hope that Okunoto Shirakiku will be brewed again in Wajima as soon as possible.
