At CHUIN-san over the past day. We visited the owner, Mr. Kawada, again to visit him. We had drinks with Mr. Kawada's story. Here is the first one. Kiri-Tsukuba Honnen Junmai Usu Nigori (light nigori). It seems that only sake shops that went to Urasato Shuzoten for this sake can handle it, and there is almost no distribution outside of the local area 🤔. I did not even know it existed. The appearance is a light cloudy color with beautifully hazy gold tints. The aroma is mildly sweet and refreshing at the same time. Sweetness of green melon and banana, with a fresh, chili-chili-chili-chili-chili-chili aroma. The usual unbearable aroma. The aroma of rice, like freshly pounded rice cake, is also rich. After a smooth entry, a gentle gaseous stimulation tickles the palate with a pleasantly intoxicating sensation. The sweetness, like melon juice, has a roundness to it, and the acidity that spreads quickly is gentle and juicy. It finishes with a good umami flavor and a refreshing dryness that passes through the nose. The sharpness is good, and the lingering aftertaste of slight bitterness is also intoxicating. It is too delicious. This is a little too good. It is my favorite among the active light nigori that I drank this year 🥰. I want to drink a bottle properly 🍶. I later asked the toji, Chikara Urasato, about it, and he told me that it is brewed irregularly only in the years when there is surplus rice for sake🥺.

Let's drink Shiga's sake series. The other day, I visited Takatsu Sake Shop in Kusatsu City, Shiga Prefecture, for the first time and got this "back-up sake" 🍶. It is a "Ninja Junmai Daiginjo" from Seko Shuzo in Koka City. However, this sake is a ninja, but not a ninja 🥷. The details of this junmai daiginjo-shu are shrouded in mystery. For some reason, the cap also says "Junmai Ginjo," which is another sign that it is an undercover sake! The appearance is a pale silver yellow. The aroma is gentle, gorgeous and cool. The aroma is sweet and aromatic with apple, freshly cut pear, melon and banana in the background. Honeysuckle, cool and refreshing chervil, and a faint laurel. Rice aroma about the level of Kamishinko. Fluffy and mellow texture. A beautiful, rich sweetness and a gentle, fine acidity spread softly in the mouth. The alcohol passes through the nose, and the clear umami flows smoothly. The fruity sweetness of the overtone is intoxicating, and the sharpness seems to disappear. The lingering aftertaste is long with a slight, beautiful bitterness. Fruity ginjo aroma and extremely fine taste. ☺️ No, it's really messed up and wonderful 😊. Even the best sake breweries can be lost due to the circumstances of the time. The world of sake is harsh and ephemeral... I had this while thinking about many things 🍶.

Local sake "Hanari", exclusive to Hakariya, Kamenoi Sake Brewery's retail store in Yufuin ♨️. It is a souvenir from my subordinate who went to Yufuin😄. I never knew there was another Kamenoi Sake Brewery in Oita besides Yamagata 😳. ✅Cold (room temperature). Slightly pale gold. Classic, gentle isoamyl acetate ginjo aroma, with a slight hint of maturity, shiitake mushrooms, cypress, and alcohol loss. Rice aroma is full. Very moderate sweetness, firm and smooth acidity. Gentle rice flavor with classic hints. The breadth of flavor is relatively slim. There is a slight bitterness and lingering scent. It should be ✅ warmed up 🍶. It is likely to warm up, so it should be served warmed! The ginjo aroma is plump, gentle and sweet. The acidity gives it a refreshing alcoholic aroma, but it also has warmth. The aroma of aging has disappeared, and the rice aroma, which is like rice cakes, has become more robust and fragrant. The mouthfeel is smooth and soft. The sweetness of the rice is deep and soft, and the firm acidity has a rounded, intoxicating balance. The spreading umami of the rice is plump and finishes with a slightly crisp acidity. YUICHU is a fusion of Nanbu Bijin's traditions with a gyaru mindset and the prayers of Shibuya's gyaru, aiming to be a sake (YUI) that brings people together (CHU) 😁. The sake inside is "Nanbu Bijin Special Junmai" 🍶. The appearance is gold with a slightly pale green tinge. Mildly sweet, classic aroma with a hint of koji. Gentle aroma of melon and banana isoamyl acetate with a hint of koji-like acidity. Rice aroma like rice cake. Slightly tart texture. Moderate sweetness with a sense of rice, and rounded acidity that retains a koji-like character. From the mid-palate, it finishes with a sense of complexity and bitterness. Good sharpness, with a bitter aftertaste in moderation. Classic 🍶😳, which is hard to imagine from the pop appearance. Gal has a surprisingly good palate for authentic classic sake 🤔. Let's drink Shiga's sake series. This is a Sandesi (300ml bottle) from Kosetsu (Fushe) ☃️ that I have been curious about for a while! From the supernatant □□□. Pale yellow-green in appearance, with a soft gas bubble 🫧 with a shrieking sound. The aroma is sweet and fresh. Aromas of slightly young green melon and moderately ripe banana. Refreshing acidity that leaves a slight hint of koji and rice cake-like rice aroma. There is a lively gas-like stimulation, a moderately rounded sweetness, and a soft acidity with a sense of tailings. From the mid-palate, there is a sense of rice and a clean umami flavor, and a sharp finish that seems to disappear. The lingering finish is moderate and leaves a slight bitterness. Kamerei Mannen is brewed by Kamerei Shuzo in Saijo, the sake capital of Hiroshima. It is a junmai daiginjo-shu brewed with a luxurious polishing ratio of 45%. Shinpaku is a white, cloudy area that appears in the center of the rice, where the mycelium of koji mold enters the rice and leads to smooth fermentation. The shape of the core white varies, but Yamada-Nishiki is the most commonly known for its linear core white. It is a sign of excellent sake rice. The appearance is almost transparent silver. The aroma is fruity, soft and sweet. The fruity ginjo aroma is very soft and gentle, with hints of ripe melon and banana sweetness. The aroma of rice is modest and elegant, about the same level as that of Kamishinko. The mouthfeel is soft and smooth. The firm yet beautiful and elegant sweetness is sweet in combination with the fruity ginjo aroma. The smooth acidity gives the taste a sharpness and a slightly tangy dryness. Matsuo boast brewed by Kangiku Brewery. It is the only Kangiku standard sake that is relatively stable in its hometown of Chiba 🍶. I bought it at Yajima Sake Shop TDL when I stopped by on a business trip to Kanto 😊. Matsuo boast was brushed up in 2023 and became "Matsuo boast - Re:make-". It is a rare junmai-ginjo-shu (junmai-daiginjo-shu) among Kangiku's sake, which is mostly junmai-daiginjo-shu 🍶. There is also a raw version, but this time it is a once-heated version! The appearance is a slightly pale silver-green crystal. After some time, extremely fine gas bubbles float coarsely. The nose has aromas of young banana and melon, including a gentle yet floral and freshness. Discreetly serpentine and mineral. Powdery rice aroma is very rich, like freshly pounded rice cake. Slightly tart texture with a fine gasiness stimulation🫧. The palate is gentle, with a moderate but juicy sweetness and a gentle acidity that spreads familiarly. After the mid-palate, the wine recedes like an undertow, and then disappears without any change. The aftertaste is medium short. It goes well with Japanese food, Mexican nachos, and anything else. ☺️ Delicious. A classic sake that makes people living in Chiba Prefecture jealous 🍶.

The aroma is slightly youthful, gorgeous and fresh with a fresh, raw feel. Aromas of white grapes, strawberries, young yellow grapefruit, and young green-fleshed melon. Fresh, youthful yogurt, sour cream, and cheese aromas with a hint of acidity. The riceiness is about the size of a white egg dumpling. Moderately juicy sweetness. The R6BY All Japan New Sake Competition open tasting event was held in Ikebukuro, Tokyo on July 12, 2012. I was able to attend the event in conjunction with my training trip! It was a spectacular venue with 410 of the 809 R6BY sake entries and 410 of the prize winners all in one place 🍶🍶🍶🍶. The time limit was 3 hours⏰. I went to the event to at least taste 202 Gold Award-winning sakes. As a result, I was able to taste all the gold medal-winning sakes except for a few that were out of stock, as well as other prize-winning sakes that I was interested in! It was the first time in my life that I tasted more than 200 sakes in one day. It was a valuable tongue experience: ☺️ Checking in was my sake of choice, Kirizukuba 🍶. No notes... Modest but gorgeous aroma, soft velvety mouthfeel, sweetness that melts and opens in the mouth, extremely smooth and delicate acidity, round and soft umami, finish that seems to disappear rather than swallow, and a wonderful lingering finish. This is a drop of wine squeezed out by a master brewer who has concentrated his knowledge, experience, and skill. I would like to continue to study so that I can properly understand its value and convey it emotionally. It was an opportunity to get drunk. Thank you very much for your hospitality. By the way, I spent about 20 minutes in total at the beginning and the end of the event just trying out the "Sake Sensory Evaluation Standard Reagent" 😅. It's a rare chance to smell the individual aroma components correctly 😁.

Fateful encounter with a guess sake 😊. We had it at the place where we stayed during our training 🍶. The first day of opening the bottle. The appearance is beautiful with a warm, light cloudy appearance. The aroma is soft and fresh, with a hint of sweetness. It is accompanied by a gentle woodiness, an astringency like grape skins, and a fresh sweetness like freshly cut pears. The whey aroma creates softness. I was in Kanto for a short stay for work training. I took advantage of this opportunity to visit the Yajima Sake Shop in Chiba, which I had always wanted to visit. I was able to enjoy some sake that is hard to find in my daily environment 🍶. Please forgive me if the picture looks different from usual 🙇. The appearance is clear, almost transparent. Echigo Den'emon is brewed by the brewery's toji, Kouaoi Kato, alone. The label, the construction, the sake itself, everything is very interesting 🤔. One of my sake recommendations that makes me think that one day I will be able to drink a sake that makes my genes smile 🍶. By the way, vesicapaisis is the overlap of two identical circles when they are formed through their respective centers. In sacred geometry, it is the shape that means "the beginning of everything" 🤔. The appearance is a warm misty white with a hint of ochre. Fine gas bubbles dance in the haze. The aroma is gorgeous with a hint of gentleness. Aromas of pear and melon. It is round and refreshing. Rice aroma like freshly pounded rice cake. The sweetness is modest and present, with a sense of roundness and softness. The acidity that spreads with a soft gasiness has a refreshing and clean koji taste. The middle part of the flow contains a slight bitterness, and the disappearing sharpness is soft, and the lingering astringency is also intoxicating with complexity. I usually like sweet and umami, so although the direction is different, the taste of this wine is very delicious with a sense of solid structure 🥰. It's been a while since I've had a standing drink at chuin sometime ③🍶. (This is a staggered post.) The last sake of the day was Jikin. Junmai Ginjo Hachitan Nishiki Nama 🍶. The appearance is crystal with a pale yellow tinge. The aroma is fruity with a noble impression. Sweet aroma of pineapple, unripe green apple, and candy. There is also a slight sense of refreshing coolness. Rice aroma is about the same as that of Kamishinko to Shiratama dumplings. The taste is modest and beautifully sweet, with a firm and refreshing acidity spreading through. The clean and clear umami spreads through the refreshing acidity. It spreads quickly and finishes crisply. The aftertaste is moderate. Jikin is still delicious. ☺️ It's a unique experience to be able to drink a little bit of various sakes, including ones you can't get by yourself 😊. Thank you for the food 🍶. By the way, the 4th photo is not sake, but my favorite beer lately 🍺. It's a craft beer from Yacho Brewing, sold at 7-Eleven, called Ariens Ariens. It is surprising that HAZY IPA is available for about 350 yen, but the quality is amazing! The fruity hop aroma is gorgeous and the juicy flavor with a Hazy tropical feel is irresistible 🍺. Highly recommended😊.

It's been a while since I've had a standing drink at sometime chuin (2) 🍶. (This is a staggered post.) Jigoku summer ginjo. This junmai ginjo summer sake is made from 100% "Celebration" 🌾 grapes from Kyoto, polished to a 60% rice polishing ratio, and brewed with "Kyo no Saki", a high malic acid producing yeast from the Kyoto yeast line 🍶. The appearance is nearly transparent with a very faint haze of slime. The aroma is mild, yet refreshing and sweet. Aromas of ripe melon and moderately ripe banana. The aroma is refreshing, like that of ramune. Aroma of rice with a hint of white dumplings. The palate has a smooth, round texture. It has a moderate sweetness and a tight acidity that spreads quickly. The firm umami spreads and flows smoothly and dryly, and is crisp and clean. The lingering finish is medium. Moderately intoxicating 🍶. I still like Towestone too 😊.

It's been a while since I've had a standing drink at sometime chuin (1) 🍶. (This is a staggered post.) True White by Kangiku. It is a Junmai Daiginjo brewed with Omachi rice polished to 50% and unfiltered. The appearance is crystal clear. The aroma is a gorgeous mixture of red ripe apples, white peaches, ripe melon, lychee, nearly overripe banana, and various other fruits, typical of Kangiku. The rice aroma is about the same as that of white dumplings. On the palate, the first attack is a firm sweetness. The first attack is a firm sweetness, which is followed by an acidity that is sweet and sour. The impression is clean and crisp, and the umami that flows through it is also firm. The final part of the wine is gradually bitter and sharp, with a long aftertaste. I still like Kangiku 😊. It is delicious! I didn't buy it for home drinking this year, but I kinda regretted it😅. It was drunk 🍶.

This is a "super", super Kudokutei, a Junmai Daiginjo-shu brewed with a luxuriously polished rice of Modified Shinkou🌾 up to 30% polishing ratio and released in a fresh, once-heated condition. Kairi Shinko is a rice variety bred in Akita Prefecture in 1959 as a secondary selection from Takananishiki. The appearance is nearly transparent, with a slight yellow tinge. The aroma is gorgeous with a hint of freshness. Gorgeous acacia aroma overflowing from the glass. Aromas of apple, white peach, and melon. Gentle and refreshing selfeil. Beautiful rice aroma of about Kamishin powder. Slightly tart texture. First touch of rich sweetness with juiciness. Mixed with acidity accompanied by freshness, it spreads quickly and becomes more juicy. From the mid-palate, while the wine is nicely and smoothly receding with a moderate rice flavor, there are subtle nuances of complexity such as very slight bitterness and astringency. The long, stringy, beautiful lingering finish is tightened by bitterness and astringency. Well, delicious😊. Gorgeously sweet, not overdone, just beautiful. The beautiful complexity that is glimpsed is the goodness of the improved Shin Kou. It was wonderful 😊. Thank you for the food 🍶.

Private brand sake from Suzuden, a specialty sake store in Yotsuya, Tokyo. It has a sweet isoamyl acetate aroma, a crisp yet robust taste, and a lively, effervescent nigori (sparkling wine) with a hint of gas. (Not enough words, so just my thoughts on the nigori!) The appearance is silky natural white. The bubbles pop with a lively gaseous sensation like carbonated water. The aroma is gentle and sweet. Aromas of ripe banana and melon. The sweet aroma of vinegar and iso-type aroma rises with the bouncing gas. The gentle refreshing element derived from the tailings is also a very intoxicating aroma. The round and firm rice aroma is like freshly pounded rice cake. It goes in smoothly, and the gasiness is stimulating, dancing in the mouth. The moderate sweetness and gentle acidity spread in a refreshingly dry manner. From the mid-palate, the refreshing taste of the rice is quickly quenched, while the robust flavor of the rice is also felt. The lingering aftertaste is medium short with sweet hints of aroma. Delicious 😊Love it 🫶. I love it 😦. I like it 🍶🍶. I'm sure you'll be happy with the results 🍶.

At a drinking party with some work-related people sometime ago (4) last. No notes on the tasting, just a log for the record 😅. Drinking party with colleagues who know each other well. I asked my colleague who liked Tohokuizumi to try Tetorigawa. It is a junmai sake "niji" from the origin series, which is close to the original, standard sake 🍶. The reason why some of the photos are out of focus is not because I was drunk, but because my coworkers, who are under the influence of alcohol and want to drink as soon as possible around here, are pressuring me to take photos as soon as possible 😅. The taste of the sake is just as expected, Tetorigawa. It's light and more modern than classic. It's light and more modern than classic. It's a good sake to drink with friends and family. I like Ishikawa's sakes because they are refreshing, but also have a nice flavor, so I would like to try them all again. It was another fun day of drunken drinking 🍶. Thanks for the food😊.

A drinking party with colleagues who know each other well. The organizer was considerate enough to choose a restaurant that serves Sake, so out of respect, I drank only Sake 🍶. (I didn't drink as much as the other sake drinkers at Sake no Wa 😄) After the third glass or so, everyone around us was in sake mode. I toasted again with a tokkuri of tohokuizumi (cold or at room temperature) to match my love of clear, dry sake 🍶. There is nothing more to say about this kind of sake, it's clear and dry, and you can taste the umami flavor of the rice. I love to drink sake by myself, but it is also intoxicating to drink sake from the same sake bottle with a group of friends, pouring and pouring while enjoying the same sake 🍶. I was able to experience the moment when sake, which brews harmony, really comes into its own! My colleague who was drinking with us liked it so much that he repeated the tokuri several times! It is a great pleasure for me to know that people like and enjoy drinking any kind of sake. ☺️

This is Kanazawa-ya from Kita no Hana Sake Brewery in Kitakata City, Fukushima Prefecture 🍶. The rice used is not stated on the label, but it seems to be Fukushima Prefecture's original rice called "Satoyama no Tsubu"! The aroma is mild, apparently using No. 9 series yeast. The taste is dry with a hint of sweetness, but it is also dry with a hint of spiciness 😅. When I drink with colleagues who know each other well, I am so distracted by talking and listening that it is difficult to do a precise tasting (or rather, to keep a concrete memory of the aroma and taste I felt at that time) 😌. I'm not sure I'm capable of doing this, but it was a drunken drink during a meal 🍶.
