This day, February 5, is "Nigoras gather for nigori sake day" 🍶. When I mentioned this to the owner, Mr. Kawada, he said, "There is quite a lot of nigori today! I told Mr. Kawada, the owner, about it. I was surprised to hear that the sake I was looking for was already nigori. But before that, here it is! I like Yamazan because it has many flavors that suit my taste. ☺️ It is a junmai ginjo-shu, a light nigori (light nigori) sake brewed with my favorite sake rice from Nagano, Hitogokochi, polished to 55% rice polishing ratio 😄. The appearance is a cloudy, misty yellow-green. Gas bubbles stick to the glass 🫧. The aroma is mild, pale apple, pear. Sweet rice cake-like rice aroma. Soft touch on the palate. The gasiness is rather firm. The nose is clear, with a strong sweetness. The acidity is smooth and gentle. In the middle part of the mouth, the feeling of dregs spreads softly and the gaseous sensation gently goes down the back of the throat, followed by a crisp and sharp finish with umami including bitterness. The bitter aftertaste is moderate. It has a good balance of sweetness and bitterness that is typical of Hitokochiki! I would like to drink this at home, too! Delicious!

On this day, the sake I was looking for was on tap, so I went to chuin. We started with Matsuo Jugyo, a local standard sake from Kangiku Meikozo, which brews Kangiku, which I had been curious about for a while. This is a limited-edition Shiboritate that is released only once a year during the new sake season! This is a limited-edition, raw version of the It is an unfiltered junmai ginjo sake. I tend to get junmai daiginjo at Kangiku, so junmai ginjo might be a new experience for me 🤔. The exterior is a very pale silver yellow crystal. There are gas bubbles in the glass 🫧. The aroma is mild cold chrysanthemum. Ripe apple and pear aromas in the distance, with a touch of riceiness there. When you drink it, the first touch is Jun and sweet. Soft gassy and tart texture. The bitterness from the mid-palate is also slightly effective, sweet but tight. The loss of alcohol, which is typical of nama-shu, is also intoxicating. It is drunkenness, isn't it? This is a standard sake that makes local Chiba Prefecture residents envious. Compared to Kangiku's Occasional series and Ocean99 series, it was less vivid, a calm Kangiku that is just right for drinking as a standard sake. On days when I go to the liquor store and find that there is nothing in particular that I am looking for today, I envy the Chiba residents who can buy this kind of sake as a standard sake. ☺️

The sweet and sour taste of the juiciness is followed by a clear and bitter aftertaste that is both sweet and sour. The other day, I opened a bottle of Viridian to unravel my mind without thinking. The bottle was opened after about 9 months of ice aging. On the first day of opening the bottle. Pale yellow-green crystal. Youthful freshness with no hint of aging. Firmly woody. Pear with acidity, slightly sweet yuzu and apricot. A yogurt feeling typical of sake yeast yeast yeast yeast. Rice aroma of white dumpling. While it flows smoothly, the tip of the tongue is slightly chilled to the point where it is hard to tell whether it is gas or acidity. The deep sweetness and fresh transparency are impressive. The citrusy acidity with lactic acidity spreads with a sizzle. The woody and yogurt-like aroma is also rich. The lactic acidity passes down the back of the throat, and the lush transparency naturally fits into the palate and finishes off. The lingering aftertaste is medium with a slight bitter astringency. After the third day of opening the bottle. The sweet and sour juiciness increases slightly, and the flow from the mid-palate becomes more transparent, with a clearer sense of umami, including a natural bitter astringency. Rolling on the tongue, the sizzling sweetness is mixed with Japanese citrusy acidity, and the sweet and sour taste is thick with a bittersweet aftertaste. Japanese juiciness, if you will. This is the first commercially available Kako, Sansho 2023 Kako, released last year 🍶. Kabashiko is a native rice that took the Hananoka Sake Brewery about three years to revive from seed hulls. As the name suggests, it has a characteristic aroma. It has a strong carbon dioxide bubble, which is called "brewer's foam" in the producing region. The aroma is gorgeous and complex with restrained tones. Impressive are the sweetly scented white peaches and white grapes. Pear, melon, and yogurt whey are also present. The rice aroma is aromatic, mingling with the sweet white peachiness. The mouthfeel is soft and vigorous with fine gas. A moderate sweetness with a pear-like sensation spreads with a transparent cream cheese sensation. While the gaseous sensation quickly converges and disappears finely, a gentle and smooth acidity accompanies the sweetness. The clear umami quickly disappears with a mature, bitter complexity. The lingering aftertaste is pleasantly intoxicating, with a beautifully tightened bitterness and a return aroma like that of white peaches, which is typical of Kako. It is delicious. It has a deep flavor. At the end, the sake becomes lightly nigorigo (lightly cloudy) due to the tailings that have accumulated at the bottom of the bottle! The flavor and taste is as if you are eating a fragrant child. This final reward is also the best! The word "delicious" is not enough, we would like to continue to enjoy the world that only Sansho can express.

At the after-party of a recent drinking party. The customer next to me was not sure what to drink, and the waiter said, "It's not on the menu, but we have it here today! The person next to me did not seem to be a regular sake drinker and was wondering what to drink, so I impolitely told him, "Tasake's light nigori is a limited edition sake available only during this season and I like it too! It's delicious! It's delicious! They drank it, liked it and were happy. ☺️ Seeing this, my colleagues who came with me also had the second glass of Tasyu's light nigori 😊. I have been drinking only seasonal Tasake lately, so I decided to drink the regular sake at home this time and passed on both the Usunigori and the Kijoshu. However, everyone was drinking it so deliciously that I wanted to drink it myself when I recommended it to them 😅 The refreshing and pleasant apple aroma was just right, and the white dumpling-like aroma with the tailing was soft and intoxicating. When you drink it, you will feel the stimulation of a slight gaseous sensation and the soft flow of sweetness and umami that is fresh with a hint of nigori (light nigori). Zero drinks before the recent party 🍶. Sugihara Sake Brewery in Gifu, which brews Imi and Chiyonohana. At the beginning of this year, we learned of the sudden death of Shoji Sugihara, the fourth-generation brewer, from the back etiquette of this year's Imi, which someone had checked in. I am very sorry to hear of his sudden passing, and I pray for his soul rest in peace. We offered a toast with the BY1 Sagami, which was probably brewed with Mr. Hiroki Sugihara, the fifth generation of the family, in his days. The color of the liquid was originally a strong haze, which was thought to have been a solid orikara or light nigori, but it became a complex color with a golden green tinge after aging. The aroma is also complex, with the original sweetness and the fermentation of the sake's tailings coming through the aging process. The taste is smooth and thick, with plenty of residues. I like Kyushu's mellow and complex sake, and Chiebijin is one of my favorite brands. It's been a while since I've had it, and I'm glad I did. ☺️ The aroma is fresh, sweet and nice. When you sip it, you can feel the freshness and a very slight stimulation of gas. In addition to the firm sweetness and mild acidity, it also has a rich umami flavor that is typical of Chiebijin, and it is intoxicating. I didn't say it out loud because I was talking with my colleagues, but in my heart I said, "Oh, it's delicious! I said in my heart, "Oh, it's delicious!" ☺️ I did think that it would go well with cheese in a wine glass, like a sweet white wine, receiving it with a sweet and robust flavor for a new wine. The last drink of the day. There was a bottle design of Shinomine that had a different atmosphere from the Shinomine we usually see, so I tried it. Ise-Nishiki is Mie Prefecture's prized rice for sake brewing. It is said to be the ancestor of Yamadaho, the mother of Yamada-Nishiki. It was developed in Ise in 1860 from Yamato, a native rice, and was popular in the Kansai region for a while, but was no longer cultivated due to its tendency to fall over due to long sticks. Motosaka Sake Brewery, which brews Hachibei sake, revived the cultivation of this rice as sake rice in 1991. Since then, it has been brewed by other sake breweries, but I did not know that it was grown in Nara Prefecture. This junmai sake is brewed with Ise-Nishiki produced in Nara Prefecture using Kyokai No. 6 yeast. The appearance is pale yellow-green crystal. The aroma is mild and sweet. The aroma is mild and sweet, with juicy sweet banana, apricot, and rice cake aroma. On the palate, there is a soft texture and a very slight gasiness. Juicy sweetness and rounded acidity. A cool, refreshing flavor spreads. A tight aftertaste of slight bitterness and astringency. Oh, this is delicious! The gasiness is pleasant, moderately juicy, and the rice has a beautiful umami! I went to Asano-san to consume a ticket for one 45ml glass of super premium sake that I got from the anniversary gacha 🍶. I chose this one from the type of sake I don't drink on a daily basis. It is a Nishikigoi from Imadaiji Shuzo, which brews Imadaiji (Imayo Tsukasa) in Niigata. Hello 😁. The exterior is clear crystal with a brilliant shine. The aroma is...mild, youthful and fresh. The main aroma is a blueish selfeuille, with a hint of rice aroma. As it warms up, there is a faint melon aroma. The aroma may have faded with the passage of time after opening the bottle. The texture is smooth on the palate. The beautiful rice flavor with a hint of sweetness and acidity flows smoothly like water in a good sense and disappears with a slight alcohol taste. It is so sharp and crisp that you would think it was alky. As it warms up, the soft sweetness becomes softly perceptible with a hint of koji, and the fine acidity also comes out. The aftertaste is long, with a delicate, gentle feeling. It was a beautiful, sharp, and perfectly fine dining sake. We had a ticket for the anniversary gacha snacks, so we paired it with smoked tea duck and smoked mackerel, and it was intoxicating!

The last of the day was a series of drinks left to the owner, who, again, asked us to choose sake that we would not normally choose ourselves. We were served a Niigata sake recommended by Mr. Kawada, the owner of CHUIN, which he always buys every year. Kenshin was a first for me! The aroma is...ladylike, sweet and juicy with a hint of koji (malted rice) including the acidity typical of sake, with pleasant aromas of grapefruit, melon and banana. On the palate...smooth, mellow, and super juicy! With all due respect, it is overflowing with juiciness that is hard to believe this is a Niigata sake! While a gentle dryness peeks out a bit, the umami, including a slight bitterness, flows nicely and spastily. The aftertaste is medium short. This is delicious! It has no alsophony, and if you were to give it to me blind, I would say it was a junmai type. This is the kind of sake that overturns my biased stereotype of Niigata sake and makes me feel ashamed of my lack of knowledge and experience. I was surprised after a long time. It is delicious! The freshness and vibrancy of freshly pressed sake, the aroma brought out by the aruzome and the sharpness at the end. All the characteristics of this sake were working in the right way. Seigyoku is located in Tokushima, Japan. The annual production is an astonishing 2 koku (200 bottles) 😳. It is only sold at the brewery's store, and is not distributed by liquor stores. I purchased this sake on a recent business trip. My sake master, Mr. Kawada, the owner of chuin, had never had this sake, so I was able to bring it to him this time 🍶. The rice used to make this sake is unknown, but it is a Junmai Ginjyo unfiltered raw sake with a 50% rice polishing ratio and squeezed in a bag. The exterior is a golden green color with a very faint haze of rice slime. The aroma is classically gorgeous. Rounded ginjo aroma of sweet melon and banana, with a hint of koji acidity. Elegant rice aroma, like that of koshinko (rice powder). The mouthfeel is gentle and soft. Elegant soft sweetness, with a firm acidity that has no spine. The hint of fragrance is also a noble ginjo aroma. The rounded flavor spreads gently like a bud opening and finishes with a full-bodied umami including bitterness. The aftertaste is soft and elegant. A classic, high quality sake that conveys the careful craftsmanship. I usually prefer modern sakes, but this sake reminds me of the beauty of the classics. It is delicious. When it is at room temperature, the softness and elegance become more pronounced, making it an appropriate sake to be enjoyed slowly and carefully.

This sake is rich and refreshing with the good qualities of Akitsuho, and shows the determination to brew all the blessings of the Katsuragi Sanroku area. This is the second First Edition of S Kaze no Mori. The future sake level is ★★★. Pale yellow-green crystal. Fine gas bubbles stick to the glass. The nose is mildly fresh and volatile with a strong aroma. The nose is full of tropical passion fruit and young bananas with a hint of acidity. The woody nuance, characteristic of new breweries that use a lot of cedar, is also abundant. The rice aroma is about the same as that of white dumplings, with a slight malted rice aroma and powdery minerality. It is light and has a soft stimulation of gaseous sensation. It has a strong sweetness with a slightly tropical flavor, and is refreshing with a gentle acidity and the loss of a sense of schwarziness. The hint of aroma is soft with fresh volatile aroma. When I always choose my own sake, I tend to ask for the sake I have had before, which I prefer. In search of new encounters, I decided to leave the last drink to the owner 🍶. Here are the sake selections. It is a limited edition bespoke sake from Jizakeya Miyajima, a sake shop in Ueda, Shinshu, and is usually shipped as fire-aged junmai sake. It is marked by a shoulder label that reads "Karakuchi Fruity Nao Kumi," which Mr. Miyajima came up with. He wants it to be called "Karakuchifru Junmai! The aroma is fresh and gorgeous. The aroma is fresh and gorgeous, with a light, fruity feel. Unsweet apples, pears, melon, and blue bananas are covered with the rice aroma of freshly pounded rice cake. Smooth texture. This is another series of sake that I want to drink at home but for some reason can't afford to buy every year. This is "Do" from Yamamoto Sake Brewery, which brews Yamamoto, a sake that I have always been curious about as a nigorist. It seems that "Do" is always released a little after the sake I really want to buy, so when I see it at the store, I always think, "Aha! Whenever I saw it at the store, I had to pass it up because my fridge was always overflowing with it 🥲. This is the first time I've had this sake, including outside drinking 🍶. Since it was an outside drink, they stirred the tailings well before pouring it. By the way, it looks and sounds like doburoku, but it is not doburoku because it is "seishu" and is filtered. The appearance is a snow-white color with a hint of green and green, with beautifully spacious tailings dancing in the air. There is a rich aroma of rice in the tailings, with a slight pickle aroma in the back that is not unpleasant. The mouthfeel is pleasantly mellow with a gassy, shrieking sensation. The day we compared Kaze no Mori Akitsuho 657 and NeXT drinks. Not wanting to stop there, we were treated to a series of sakes that I would love to drink at home but for some reason can't afford to buy every year. As a fan of Kangiku, I am ashamed to say that I have yet to drink it at home, Hashu Honor. I have come across it on display in stores, but because of the time of year and the overlap of the sake I want to buy right before every year, I cannot buy Haneju Homare due to storage space limitations. I was thankful to be able to drink it out of the store. The aroma is mild and modestly fruity. On the palate, it has a clear touch. The sweetness has a dark, juicy, Kangiku-like character and a smooth acidity. The overt aroma is sweet and soft. It has a clear umami taste and a gentle, slightly bitter astringency. The aroma and flavor change depending on the sake container and how long the bottle has been open, so it is difficult to make a blanket statement, but it was crisp and clearer than I had expected. It had a taste of sweetness that is typical of Kangiku, so I thought it might be interesting to let it sit for a while.

It is a 100% Yuyamanishiki junmai ginjo brewed up to 55% polished. The appearance is clear crystal, almost transparent. The aroma is fresh and gorgeous. The ginjo aroma is of freshly cut pears, young white peaches, and white grapes with a hint of grapefruit. The fresh rice aroma is like white dumplings.
