This time it is Inanohana Umeju. This sake is from Tenri, Nara Prefecture, and was started in 2020 as a special distributor brand by inviting Mr. Kurose, the toji (master brewer) of the shochu Hyakunen no Koroku (Solitude of a Hundred Years). It is served cold. It has a faintly colored appearance. The nose has a gorgeous aroma of apples, pears, and muscat. The clear, light texture is generally refreshing, with fresh sweet and sour flavors of pear and muscat flowing lightly through the palate. The aftertaste is also very sharp, and it is easy to drink in no time. The juiciness of the sweet and sour taste blooms when it is not too chilled, giving it a gentle white wine-like deliciousness. Since I had half a day free, I went on a mini Nara trip! We ended up in Tenri. There is a direct sales shop in the long arcade in front of Tenri Station, which has a good old-fashioned atmosphere. But you can't buy Inanohana here because it is a special distributor's brand. (I was politely asked to find a nearby distributor.) Train trips are great! Because you can drink it.

This time it is Hanaboe's active nigori. I still have vivid memories of seeing mayu's post and regretting that I wanted to drink it 😭, I was passing by the Umeda Yamanaka Sake store and saw that they had Hana Tomoe, so I decided to stop by and try it 😤. I had to stop by and drink it  Anyway, aren't the specs for Yamahai jun-dai awesome? I will drink it cold. It is white like calpis. The top aroma is mild, with hints of pineapple and yogurt. When you take a sip, the sweet and sour taste of pineapple that pops and then yogurt with a gentle rice flavor spreads smoothly. It is an easy-to-drink sake with a strong sense of gas and a refreshing aftertaste with the acidity typical of Yamahai. The alcohol content is 17%! If you are not careful, you will drink it in no time 😱. The label has been stylishly changed this year, I don't remember Hanaboe being such a stylish sake. I think it is getting easier to drink every year. Now that I've done my exercises with Nara sake, I think I'll go out for a little stroll in Nara, I'm ready to go for a little stroll in Nara.

This time, Koi River's Kameji Good Day. Extra Edition. Sake from Yamagata Prefecture. One day, my partner called me to tell me that he was at a sake shop and seemed to be at a loss as to what to buy as there were so many different kinds. (I told him that he should decide for himself (since it would be my choice if I decide), and he was attracted by the label of Natsuko's sake and brought it back to me. Koikawa is not my favorite after all😍. This time the sake is a regular sake because it is brewed with kame-no-o rice, which was out of equilibrium due to last year's heat wave, but the specs say it is a junmai ginjo. The color has a slight yellow tinge. The initial aroma is caramel-like with a hint of herbaceousness. At first, it was served at room temperature. The rice flavor flows smoothly with a gentle, caramel-like sweetness, and the dry taste is tightly capped by a herbaceous bitterness. Warm it up to lukewarm, The rice flavor becomes richer and the sake becomes rich and dry. Oh, it's so good! When you hear that it has a Sake meter value of +11, you may think it is super dry, but it also has a richness of umami. But it is good that the richness of the umami can also be felt well 😊. I need to review Natsuko's sake. Jicchan, jicchan! 😭

This time it is Soma no Tengu. This sake is from Takashima City, Shiga Prefecture. Lightly chilled. It is a silky, slightly cloudy sake. The top aroma is fresh and juicy with hints of apple, blue melon peel, and cypress. The mouthfeel has a slight richness. The fresh blue melon aroma gives way to a full-bodied, fine-grained, milky sweet and savory taste. The aftertaste has a sharp grapefruit-like bitter acidity mixed with sweet umami, leaving a pleasant aftertaste. Saki-ten is a fresh, full-bodied sake that can be drunk without hesitation. It is delicious. From Takashima, where Furoisen is located, we received tsukudani (food boiled in soy sauce), a specialty of Lake Biwa. There are many kinds of tsukudani, such as tsukudani of gori, tsukudani of ayu fish, and grilled skewers of moroko. And when I rummaged through our refrigerator, there it was! Soma no tengu👺. What a beautiful day to open the bottle 😆🍶.

This time it's MIYOI ORIGIN from Adachi Nozawa Brewery. Mr. Adachi was a crafan who wanted to build a brewery in Takatsuki City, Osaka, and we supported him📣. As a result, he opened a brewery in Takatsuki City's Tomida Danchi! Tonda is a historic sake production area, and setting up a brewery in that housing complex is a great idea 💡. This sake is made from Koshihikari rice grown by Mr. Adachi with raspberries added. Lightly chilled. It has a slightly reddish, thin orikara with fine bubbles on the outside. The top aroma is of greenish strawberry acidity with a hint of rice. The mouthfeel is gentle. From the refreshing acidity reminiscent of yogurt, the aroma of soft raspberries and a mild milky sweet flavor gently melts in the mouth. The overall taste is refreshingly fruity with a good bitterness with a sense of effervescence. After drinking this sake, we visited Adachi Farmer's Brewery. They told us that although raspberries were used in this sake, the fruitiness was kept to a minimum to make it more like a sake, and that the fermentation was quite active and they were struggling to suppress the yeast bacteria, so the taste was more light and delicate. I was also surprised to hear that they use an ordinary coin-operated rice milling machine for rice polishing! We also toured the brewery. I was also given a tour of the brewery and was impressed by the ingenuity of the brewery, including the use of a mezzanine floor as a koji room so that everything can be brewed in a single room in the apartment complex.

Another bottle this time, This time, we have another bottle of Gozenshu Bodai Kisho Kojozo-shu. This sake was also brought back from the Gozenshu brewery where we stopped by during our GW San-in trip. It is a typical Gozenshu kijozo-shu with a base of Bodai-hashiroshi Junmai-shu. It is served at room temperature. It has a slight yellow color. The nose has a deep raisin and fresh green aroma. There is also an aroma of sourness like yogurt. When you take a sip, you can feel the fine thickening of the mouthfeel, and the dense sweet and sour taste with dried fruit and caramel-like sweetness. It also has a rice-like flavor, like glutinous rice. The aftertaste is clean and crisp with a sour and bitter aftertaste, making it easy to drink without being too heavy, even for a kijo sake. It may be even easier to drink when chilled. It does not have the peculiar taste of Bodhidashi, and the smoothness on the tongue is very pleasant and clear. You can taste the bright and dense flavor elegantly 😊. I tasted a lot of sake at the Gozenshu brewery, and this is the one to taste the Bodai Hashiro and Omachi character! I was right to bring it home 😆. Let's go back to Okayama 🍑.

This time it is Suwaizumi's Rabbit label. This sake is from Tottori. It is a junmai sake that has been aged for two summers and is a standard sake. The label was drawn by "Frog Studio" in Hoki-cho, Tottori Prefecture, and the rabbit, composed and drawn of plants, animals, and fungi, is based on the "White Rabbit of Inaba". It is served at room temperature. Yellowish tint. Aroma of soy sauce and dried shiitake mushrooms. It has a mild mouthfeel. It has a base of matured Sanin sake-like flavor, but it has a good balance of mild sweetness of rice spreading from bitter brown rice, acidity with matured umami, and a good bitter sharpness, and is overall neatly put together and easy to drink! When warmed up, the peculiar part of the matured aroma (which is not so much) settles down and the umami and acidity become more defined and the taste tightens up👍. During my GW Sanin trip, I found Suwaizumi's Sandesi at a Montbell store just before the trailhead of Daisen and took it home immediately. If it was this good, I should have bought a bigger one 😭.

This time it is the tide. I went out to Kobe Sannomiya and stopped by Ruishirushi, a restaurant recommended by Robin. A cozy restaurant with a counter only, just the way I like it 😍. Among the various sakes on offer, I ordered this retro label from the Morinokura sake brewery! I ordered it. I asked for a heated sake, which somehow reminded me of Morinokura. Heated sake. It was full of rice and had a fresh aroma. The taste is light and refreshing, with a soft and fresh aroma, the umami of rice, a light and sweet taste, and a strong bitterness. It is easy to drink with a freshly cooked rice aroma, umami flavor, and a characteristic sharp bitter taste. It is also delicious at room temperature. We had a pleasant time with delicious sake and appetizers while chatting with Mizui's regulars and the proprietress. Personally, I enjoyed the pickled chrysanthemum and learned that chrysanthemum can be pickled raw 😊. Sannomiya at night is gorgeous and full of young people. The refreshing sea breeze unique to Kobe and the lively mood of the young people made me feel like I was on a short trip 💕.

This time it is a bear tokkuri from Tamasakura. It is also a very attractive H29BY pure rice sake, "Gohyakumangoku", I was aiming to use it as a cup of sake! It's a sin to use a cup of sake Yuyuu Kanken-Yuyu as a cup of sake. I'm so excited to remove the crown with a corkscrew, isn't it ⤴︎? After opening the bottle, I immediately started to warm up the hot spring ♨️ Oh, I forgot to drink it at room temperature 😅😅. The color is lighter than the picture. The aroma is sweet, sour, spicy, and bitter. It also smells like soy sauce and shiitake mushrooms. The taste is like soup stock with a wild acidity and bitterness that is assertive and sharp. The contrast between the rich umami and bitterness is irresistible. The bitterness is a little more assertive than the impression of the cute little bear in the Yuyuyuukankan, but the flavor of the heated sake that brings out the broth-like umami is still 👍! I had a R2BY of the same sake at the end of winter, but the H28BY is more mellow and looks good when heated with water. TAMA-Sakura is so good! I think I could see a little bit of difference between breweries after my trip to San-in area in GW. But it's still too deep, I have to go back 💨. Here's a quick shot with the Tokkuri that contained the Ten Rising Sun's Gohyakumangoku, which I emptied earlier 📷✨. Now I have two more tokkuri as my favorites and my heated sake time is enhanced😊🍶♨️

This time it is Hyakugakumon Junmai Ginjyo Nama Genjyo, a.k.a. Rainbow. The characters are rainbow 🌈. It is a sake from Gosho City, Nara Prefecture. Hyakurakumon is personally attracting a lot of attention this year, I brought this sake home when I heard that Mr. Taniguchi, the co-president of the company, would be visiting the store for an event. The aroma is sweet cotton candy with a hint of apple. It has a thickened mouthfeel. The juicy sweetness and deliciousness is balanced by the acidity and bitterness, and the balance between the rich sweetness and sharpness that is typical of Omachi is very pleasant. At this event, Hyakurakumon prepared two types of sake, Rainbow and Sae, and they are both made from the same Omachi, but they are made differently for sweet and dry tastes. At first impression, I thought I would choose the dry Sae, but when I tasted the Rainbow, I was surprised, The first taste was sweet! Too sweet? But when I tasted it one more time, I thought it might be easy to drink because it was sweet but had a clean aftertaste. The first impression is not everything when it comes to alcohol 😊. Just now at work, a coworker knew I loved it and gave me some Aomori's specialty squid crackers 🦑 thanks 😆. Ika senbei definitely goes well with Rainbow! Wow, the best!

GW San-in Trip 6 Gozenshu's special Omachi 2.2 I got on the expressway after the Daisen trip, but Daisen was too good and I got sick of not wanting to go home. If we get off on the way, we can stop by Gozenshuu. I pretended not to hear the voices of my companions who said, "That's just to drink sake, isn't it? The area where Gozenshu is located has been developed as the castle town of Katsuyama and has a quaint atmosphere, and the store is in a renovated storehouse ✨. At the tasting counter, you can sample some of the very high quality sake that you can only drink here. The sake is a Junmai Daiginjo made from rice selected at 2.2 mm in size among the Omachi varieties as part of the Tokkami Omachi Project and priced at 30,000 yen for a 4-goupe bottle. Crystal color. It has a soft raisin top nose. The taste is clear and easy to get used to, yet the sweet and sour taste and bitterness that is typical of Omachi can be felt. It is wonderful to be able to taste such a beautiful Omachi. It is not something I can afford to buy, but I am happy to have tasted it! I tasted all of the other varieties available, and was impressed with the range of flavors in Gozenshu, which is brewed primarily with Omachi and Bodeshige. We started with a can of Gozenshu nigori and ended with a visit to a Gozenshu brewery. Thank you for a wonderful Sanin sake trip 🙏.

GW San-in Trip 5 Doburoku Uedaishiroku On the third day, we went to Daisen once more. On the way there, we went to a supermarket near the Hoki Town Hall, We found the doburoku we were looking for 💡. It seems that Hoki-cho is also a special zone for doburoku. I was curious about it. The aroma is a refreshing citrusy sourness mixed with a hint of koji (malted rice). It is served cold. The rice is smooth and the rice is soft and can be lightly crushed with the tongue. The juicy sweet and sour taste like mandarin oranges is mellowly enveloped by the rice, and combined with the fresh bitterness that tingles on the tongue, it is a sweet and refreshing sake. The 50% polished rice also makes it so easy to drink and delicious that it gives the illusion of being a juicy amazake! The young 20-something president and toji are very talented 💪. Daisen is a walk in front of the Daisenji Temple gate. The view of Mt. Daisen from in front of the National Park Center at the entrance is overwhelming! It's like being in the Alps. 🏔️ I went up the stone-paved approach to the temple and visited Daisenji Temple and Okumiya Shrine on my walk to the gate from there.

GW San-in Trip 4 🍶The zodiac label of the tenth rising sun, Jin Tiger ORIGAMI NAMA I set a goal of one brewery per day on this trip to the San-in region! I was more like begging my companions to do so. I asked for Kumezakura on the first day and Jyugyohi on the second day. It has a slightly cream-colored appearance with a hint of orikara. It is served at room temperature. The top aroma is not so noticeable. The mouthfeel is light and smooth. The moment it enters the mouth, it has a sweet and sour taste reminiscent of juicy pears and grapes, with a milky rice flavor that spreads gorgeously. The fresh and bitter taste is well balanced with a refreshing aftertaste. Located in a shopping street just outside Izumo City Station. Go to Asahi Sake Brewery of the Ten Rising Sun. They offer six different kinds of sake tasting for 100 yen. I asked, "Isn't that 600 yen? I ask. They were all delicious 😋. Back to the campsite for the second day's party. We enjoy some Lake Shinji clams with miso soup with shellfish broth to help with the liver, and enjoy some sake while roasting Shimane's specialty, Akaten (roasted red tempura) 😊. Daisen & sake on both days 📷✨. We were very satisfied with our trip to the San-in region! It was a very satisfying trip to the San'in region. Daisen was so good, On the 3rd day, we will enjoy Mt. Daisen once more while we are packing up 🗻🚗💨.

GW San-in Trip 3 Soba Noodles On the second day of our GW trip, we went to Izumo-taisha shrine. We departed from the campsite for Izumo-taisha Shrine after watching the sunrise over Mt. After praying at Izumo-taisha shrine, we went to Izumo soba (buckwheat noodle) restaurant Tanakaya! We stopped by Tanakaya, a soba restaurant in front of the shrine gate, where we found a limited-edition sake brewed in collaboration with Tensho and Tanakaya called Keikyo. Of course, I drink it! We will have it with cold sake. Lovely tray with green leaves 💕 Clear appearance. Slightly sweet koji aroma on the nose. From the gentle mouthfeel, the fresh rice flavor spreads to the palate, and the lingering slightly sweet aftertaste is followed by a bitter taste that is sharp and clean. The firm texture of Izumo soba goes well with the refreshing sweetness of tenpo! It is truly a flavor that goes well with soba. The rest of the sake was brought back to the campsite and served at room temperature. The fruity, apple-like flavor and sweetness of the sake is plumped up and thickened, and it is delicious even at room temperature. The rabbits in Izumo-taisha shrine are also making sake, so I felt strangely close to them on my Izumo trip 😊.

The top aroma is soft and fresh with a hint of banana. The mild and fresh mouthfeel is followed by a refreshing banana aroma and acidity with plenty of sweet umami flavor like that of wasanbon. The aftertaste is delicious and cohesive with a firm bitterness. This Junmai Daiginjo combines Noto's full of sweet and umami flavors in a flowing and elegant taste. One sip and you will be roaring with flavor. Honma, bamboo shoots arrived from my parents' house. I was going to pair it with tempura, but once I took a sip, I couldn't stop 😆. Tonight we have another bottle, Hyakuten Manten. First, let me explain about this sake. This sake was brewed by the Yamano Sake Brewery using rice produced by the Katano Orihime University Sake Brewing Group, of which I am a member. The sake I uploaded once at the new sake unveiling in March was a draft, and this time it is a fire-brewed version. It is served at room temperature. When poured into a sake cup, it has a sweet and gorgeous aroma. The aroma is especially gorgeous this year. The mouthfeel is mild and slightly effervescent. The aroma is reminiscent of a gorgeous pineapple, and the mild, full-bodied sweetness is delicious. The fire-aged version has a lighter taste compared to the nama-zake. Personally, I think I prefer the fire-aged version💕. The other day at Orihime University, there was a sake tasting WS where we compared several different types of sake, Of course the other sakes were delicious, but everyone agreed that Hyakuten Manten was the best 🤣. That's how much everyone who attended had a special place in their hearts for this sake 🌾✨. The time spent enjoying the sake that we all worked together on was irreplaceable 😊. We will start making the next sake rice from GW 💪!

This time it is a special junmai sake from Hatsukasumi. This sake is from Uda, Nara Prefecture. This sake was brought back from a trip to the sake brewery cafe directly operated by the Kubohonke Sake Brewery and the sake brewery behind the brewery this winter. It has a slight yellow tinge. It is served at room temperature. The first aroma is sweet and raisin-like. It has a mild and moist mouthfeel. The taste is full of mature rice flavor with a sharp acidity and bitterness. Fully fermented, deliciously sharp body, delicious 😊Perfect for drinking at home. When I think of Kubo-Honke, I have an image of a sake that is either a pure yeast yeast yeast yeast or a solidly matured sake. When I ordered the fermented lunch (delicious 💕) pictured at the brewery cafe I visited, I was offered a choice of three different types of sake for my lunch drink in addition to coffee 😆. I thought, "What's this? I had the Ichihi Junmai, which was delicious and full of rice flavor. I also brought back a bottle of Ichibi, the Hatsukasumi brand from the sake brewery in the back of the building as a souvenir. Last week, while drinking Dobu Soda at Hatsukasumi Sake Brewery in Nihonbashi, Osaka, I remembered that Hatsukasumi, whom I brought home the other day, had been staying at home for a long time... Sorry, Hatsukasumi!
