This time it is Urasato's Gohyakumangoku Junmai Sake. It is a fire-brewed sake from last year. I had muttered to myself that I would like to try Urasato, and my partner gave it to me for White Day. Crystal appearance. The aroma on the nose is like sweet candy with a hint of young bamboo. It is served cold. The overall impression is soft and gentle, like cotton candy, with a sweetness like cotton candy, a fruity taste like melon with a hint of greenness, the umami of rice gently accompanying it, and a lingering sweetness like banana mixed with a firm bitterness in the finish. It has been aged for a year in a fire-refining process, so it may give a different impression from the current draft sake. But the calm fruity sensation is delicious. I tried heating it up, but it was difficult to do so because it tasted so bitter. I'd like to taste this year's fresh nama-sake too💕.

This time it is Harushika's Super Dry. We went to Kurazushi for a late lunch. I see that you can now drink Harushika at Kura Sushi, which is a little expensive, but I'm happy about it😆. The top aroma is gentle green apple. It has a mild sweet-amami taste of rice with a slight aroma of green apple, and a sharp bitter taste that cuts through the flavor. The taste is stable and Harushika is super dry. This was the first time I learned about the Bikkura Pompulus system. Recently, there has been an extremely reluctant Bikurapon, It seems that if you add 10 yen per plate, you will win one out of every three times. Is that a breakthrough? I'm not sure, but I'm not sure that it's a good idea. The popular billing system, I must say, is terrifying. The weekday-only kake udon was a great cosmetic treat for my cold body 😊.

This time it is NUE. It is a new brand from the Shirasugi Sake Brewery in Kyoto. NUE is written in kanji as "鵺" (鵺), a monster from the Heian period. Just as Nue is a monster that is a fusion of four different creatures, this sake uses a blend of four different koji (white, black, yellow and mirin koji) and four different Kyoto yeasts. The label is similar to the three types of chimera. The crystalline appearance is spotted with fine bubbles. First, it is served cold. The top aroma is of gorgeous grapes and sweet koji malt. When you take a sip, the bright sweet and sour juiciness is impressive! The full-bodied umami, which is like sweet grape juice but lingers on the tongue, is derived from succinic acid? The aftertaste is refreshing with a sharp acidity and fresh bitterness. When warmed, the aroma of freshly cooked rice is gorgeous and the richness of the umami flavor is enhanced. I also like it warmed. I wonder if cold or warmed sake is better to make the individuality of the sake clearer. The president of Shirasugi Shuzo has a video tasting of NUE on their Instagram, and it shows that it has a familiar taste. It's delicious, with Shirasugi Shuzo's sweet and sour taste with a richness of umami that gives it depth. But you know, if I hadn't seen the insta, I wouldn't have known about succinic acid and malic acid, would I😓. Anyway, I recommend this to all Shirasugi Brewery fans😊.

This time it is Houmon Hakutake Josen. This sake is from Tsushima City, Nagasaki Prefecture. I got it at a previous event and enjoyed it so much that I popped it in. They sent it to me in a blink of an eye 😆. Crystal appearance. The top aroma is sweet and brown sugar like. Mild mouthfeel. The taste is impressive with soft brown sugar-like sweetness and caramelized acidity, with the umami of rice flowing behind it. The alcohol is strong, and the second half is tightened by a tangy, bitter taste. When heated, the alcohol attack becomes milder and the umami flavor expands. This time, I tried the fugu fin sake. I want to make my own delicious fin sake! I looked it up on the Internet and put it into practice. (1) Sear the fins well over low heat until a good aroma is released. Sear the fins well, especially at the base of the fin, so that there is no fishy smell. 2) Prepare hot sake. Pour the warmed sake over the seared fins and finally light a fire to release the alcohol. I was afraid to light the fire at the end. I was afraid to light the fire at the end, so I tried to do my best with a Chakkaman, but it didn't turn out well💦. This time, it's the same as it was long ago. This sake is made by Yamada, a brewery in Yaotsu-cho, Gifu Prefecture. I brought it home from a sales event of Gifu products at Shin-Osaka Station, where I saw an eye-catching label with an annual ring on it. It has a faint yellow-green hue. The top aroma is of sweet apples. At room temperature. It has a mild mouthfeel. The slightly hard rice flavor and acidity are pleasantly accompanied by a slight apple aroma as it passes down the throat, and the overall taste is gradually bitter. When warmed to lukewarm, the hard rice flavor is retained, but the acidity is mildly sweet and the bitterness is clear and crisp. It was a deliciously dry sake with a hint of apple flavor. The name "Mukashi no Mamma" suggests that it is a classic sake, but it was surprisingly easy to drink and I almost finished it before I could write about the sake 😅. The 900ml size is also very old-fashioned. It was an unexpected encounter 😊.

This time it is immovable. A sake from Chiba. Last year, I was taken aback by the bright pink color of the characters 💕Dewa Tsanzan 💕Erofudo 💕Dewa Tsanzan sake. The bottle was opened with a lively sound. When I poured it into the glass, it was full of bubbles. The aroma of sweet strawberry milk is gorgeous on the top of the glass. First, let's try the supernatant. The bubbly mouthfeel gives way to a sweet and sour taste of fresh strawberries with a hint of milkyness. The moment the supernatant was poured, the oli was mixed by automatic stirring, The roundness of the rice comes out and it becomes juicy like a peach from strawberry. There is not only a fizzy taste but also a bitter taste, which I prefer in orikarami. It's not surprising since it's sold as orikagari💦. I like to drink this kind of gorgeous juicy beer at the beginning of spring. The fresh bubbles and juiciness make it easy to drink. The Doll's Festival is coming soon. I bought a box of Sumiko's miniature dolls because they were so cute, but I had to buy 6 boxes to complete the set. This time it is the full moon of Kaga-no-moon. The full moon was yesterday, but oh well 🌕. First, at room temperature. The top aroma is of moist bananas. It has a smooth mouthfeel, with a ripe banana aroma and a hint of cheese. The taste of rice is also very rich. If you let it warm up slightly and then take a breath, the alcohol will lose its edge and the moist sweetness of the rice will expand, making it delicious. I opened a bottle to pair it with an eel that arrived from Shiga, and it turned out to be a very good pairing. A mini-tasting was held at a passing sake shop. They were tasting Kaga no Tsuki and Shojo from Yoshino, Nara, on the same day! I was so excited to be able to drink both! Another customer who was there with me and I took turns saying to the waiter, "I want to try that one," and "I want to try that one, too," and we ended up having a "kaku-uchi" (corner drinking) session. In the end, we had all kinds of sake, and at the end, we both said "Thank you very much," and quietly parted, each holding a bottle of the sake we wanted to buy. It was a tasting time with a strange sense of solidarity. Thanks also to the waiter who told us to go ahead and have a drink 🙏.

This time it is a dry junmai sake from Bunkajin. It is a Kochi sake. It has a clear color and an aroma of green bamboo. It is served cold. It has a mild mouthfeel with a clear, transparent texture, and the aroma of green apples gently fades into the flavor of rice. The mild bitterness and quiet finish. I personally like the clear, light and dry taste with a hint of green apple fruity flavor 💕. On the way back to the Enku exhibition at Abeno Harukas, which I was curious about. We went to Tossa Jikurasan in Kitahorie, where you can enjoy Tosa cuisine and Kochi sake. I can't resist the salted bonito tataki and dry Tosa sake! The three omakase brothers' zubatto dry sake, pictured above right, was also good 🐟✨. The energetic Enku Buddha statue and Tosa power recharge my batteries 🔌✨.

This time it is Junmai-shu Moromi from Shunshin. Sake from Komatsu City, Ishikawa Prefecture. Today is Neko day, I was so taken by the cuteness of the hand-knitted coasters in the Nyannyan set that the Nishide Sake Brewery puts out every year that I ordered one. And they let me choose one of the four Nishide cats 😻I chose the youngest one, Oar-kun. By the way, the two animals on the label are Nishide Moro and Nishide Mi-chan. The letter and sakekasu (sake lees) came as a free gift. The sakekasu is fresh and has a whey aroma! Delicious as it is 😋. The sake has a light muddy yellow color, and the aroma of green bamboo and dark orange juice. First, drink it at room temperature. It has a slightly thickened mouthfeel. The smooth sweet and sour taste is interesting, with orange-like sweetness and acidity mixed with the rich rice flavor. The latter half of the taste is tightened up with a tangy, bitter spiciness, while enjoying the lingering umami of the rice. When heated, it was delicious! A simple pairing dish of heated sake and the sake lees we received. The orange flavor is more intense when heated and it goes well with the sakekasu cheesecake. When heated up, the aroma of the rice expands richly on top of it and goes well with pork marinated in miso lees! Thank you very much, Nyanzu's mother 💕😸💕.

President Fujimura was at the Kikumori Fair at Asano Sake Shop the other day, so I went to see him. This posthumous mackerel is a raw sake, but it seems to be kept at room temperature in the brewery, I thought that might be the reason why I felt the various flavors were different at the restaurant, where they serve cold sake, so I took it home and drank it again. It is a yellowish sake with a light green tint. First, it was served at room temperature. The first aroma is of young bamboo and nuts. It has a smooth mouthfeel. The taste is rich and full-bodied. I had enjoyed a bottle of Jinyas nigori at SiZUK in Kyoto before, so I decided to bring this one back home, as I am a dry sake boomer. It is served cold. The first aroma is of fresh apples. It has a mild mouthfeel. The sweet and sour taste with a hint of apple gently rises, and the rice flavor like mochi (rice cake) expands in the mouth. The balance between the gentle apple flavor and the hard dry taste is delicious, and I prefer to drink it crisp and chilled. I opened the bottle thinking it would go well with Setsubun ehomaki. I opened the bottle thinking that it would go well with ehomaki rolls for Setsubun, but I was right. This sake is also inexpensive, And this taste is 👍. Tonight we have another bottle of doburoku from Hyakurugakumon. This sake is from Gosho City, Nara Prefecture. I stopped by a liquor store on my way home from the Bodaihashi Festival the other day and was told that if I bought a bottle of Hyakurakumon's Bodaihashi, I could go on a tour of the brewery! I was curious about the taste of Hyakurakumon and the story of its business succession, so I was grateful for the opportunity. Mr. Kubo, the brewery's toji, was very friendly and talked to us about many things, and Mr. Taniguchi, who became a co-owner of the brewery after the succession of the business, seemed to blend in naturally with the brewery. We had Bodai-Hashiroshi doburoku sake. I told them that I wanted to drink it but was afraid of it exploding at home, but they told me that they had a 500ml bottle in a 4-pack, so I could have it. Sure enough, I was able to open the bottle in a couple of sips. It is a doburoku with lots of rice grains. Not much aroma, The sizzling mouthfeel of this doburoku has a refreshing, restrained sweet and sour taste with just the right amount of rice flavor. It has a refreshing aftertaste and is easy to drink, despite its appearance of sludginess. It has a light aftertaste and is easy to drink, despite its sludgy appearance! At room temperature. The sake is slightly yellow in color, with a slightly refreshing ginjo aroma and sweet koji aroma. The first sip is refreshing, smooth, and full of umami, with a bitter taste that finishes slowly. The rich umami that fits into your body is pleasant, It is delicious! Although it is a 2019BY, it has only a gentle caramelized aroma. It is just a sake with a lot of umami. And if you heat it up..., Oh, the aroma of freshly cooked rice.... It has a light, light texture and a slight sweetness that makes the cup go down smoothly. It's hard to throw away the robustness at room temperature or the light rice flavor when heated! A sake that's a hit 💕! I can see why it is recommended! This time it was a sake from Fukuoka, I got some sardine cod roe, which I had been wanting to try for a long time. The restaurant staff told me to grill it well, and when I did, I found that the fat was released quite well. Juicy sardines and spicy cod roe! Go to the endless loop 🍶😆. This time it is steadfast Junmai Super Dry. When you meet Chiba sake, it's just that much more powerful💪. The top aroma is faintly green apple-like. The refreshing mouthfeel with no hint of sweetness gives way to a gentle taste of rice being chewed up, which is delicious. The second half of the wine has a sourness and then a bitter taste that is very sharp and crisp. I had something to do near Sumiyoshi Taisha Shrine, so I took a walk around the area. Wandering around the nearby Kouhama shopping street, I found Sougetsu, an udon restaurant where you can drink sake. The restaurant seems to be one of the top 100 udon restaurants on the food log. I ordered the chicken ball tempura udon, which was served in a rich broth with sticky noodles and a hearty portion of chicken tempura. And the lineup of three different kinds of drinks is just my kind of 💕. I ate the chicken tempura with salt and drank sake. Drinking udon soup and drinking sake is the best 🍶✨. On the way back to the restaurant, we passed a chartered car on the Hankai train and I was so happy to see the party mall through the window 🚃.

This time it's Yuu. Is this sake from Fukuoka's Shichiyou Sake Brewery and is it a PB from Sumiyoshi Shuhan? Thanks for the souvenir, Ofuji😍. Lightly cloudy and fizzy. The aroma is citrusy with a hint of yogurt. From the shwashy mouthfeel, lemon-like citrus acidity and silky yogurt flavor flow smoothly. The fresh bitterness gives it a sharp kick that makes you want to take another sip. Low alcohol, light and easy to drink💕 I think the flavor comes out more clearly if you let it cool down a bit. If you warm it up to lukewarm, the sweetness becomes more sweet and sour 🍋. This is also interesting. I would pair it with chicken. I think chicken steak or yakitori would go well with it. But this time I wanted Japanese style guacamole 🥑✨. I was reminded of the unimaginable fear of suddenly losing your home due to a disaster when just not being able to open it for a day is enough to make you panic. I'm not much of a drinker myself, so I got a couple of Notojima Glass Studio's sake cups. The color of Noto indigo is wonderful💕. Let's think about Noto while enjoying our drinks with the sake cups.
