Yamanashi prefecture I had not yet had a chance to meet. I chose Tadasan.
The aroma is fruity and the mouthfeel is smooth, but when I put it in my mouth, the alcohol taste was the first thing that bothered me.
The color is quite yellow and it has a moderate sweetness and umami. The acidity makes it crisp, so it goes well with a meal.
I paired it with cod on the first day and with Iburi Goko cheese on the second day. Fire-roasted? Maybe that's why it tastes good with little change in flavor, but I was worried about the alcohol taste until the end 😅.

This is the first sake of the new season at the brewery and is a limited edition sake only available at this time of year. It is brewed with carefully selected sake rice in the clear water of Fuji Misaka and bottled fresh from the press. This fresh sake has a sweet, lush flavor layered with delicate acidity and a refreshing taste, reminiscent of young fruit.
It has a good balance between soft sweetness and fresh acidity!
It had a gentle mouthfeel and went down your throat nicely, just like a bottle of summer sake. It is delicious.
Refreshingly fruity, but with a clean, crisp finish.
The aftertaste is not dull and finishes nicely... It goes well with any meal.
