Koka, Shiga Prefecture. Yasui Sake Brewery. New Hatsusakura, Junmai Tamakae Hi-iri Hiyoroshi. This is a sake brewed by the sixth generation of Taro, who trained at Akiga and Tensei. We couldn't find the unforgettable Namahashitaro at the Shiga Jizake Festival in Otsu 2023, but discovered Hiyadoroshi. I bought it as well as the difference between Ginbukiyo and Tamakoei. The unforgettable Namahashidorotaro was good warmed, but this time I tried both. I will drink it cold. It is hi-iru, but there is a short gas sound when the bottle is opened. The color is clear and slightly yellow. The top aroma is slightly caramel-like and mature, followed by a strong sweet aroma and alkali aroma. On the palate, a mild acidity spreads to the mouth, followed by a mild nutty flavor. The nuttiness is strong. Serve warmed. At about 45°C, the acidity is assertive and makes the tongue tingle, and the caramel-like flavor is spicy as well. As the temperature cools down, the tingling goes away and the spiciness mellows out to a slightly caramelized, slightly bitter chocolate flavor. It is still delicious warmed up. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 70%. Alcohol content: 16%.

It is a quaint liquor store that is sometimes featured on the cover of magazines, Nishimoto Sake Shop 🍶They have a display just like a donkey shop, and some of the items are as old as the date 😁, that's part of the fun 😊I was told there that it is from the end of March to April 😄.

This will be a new sake from Shiga's Hatsuzakura🍶. This is the first Junmai sake from Hatsuzakura. The aroma is sweet and sour with a moderate nose. In the mouth, it has a sweet and sour aroma and a sweet and umami taste of rice with the acidity of a junmai sake like Hatsuzakura, which is a pure sake with a traditional sake yeast yeast yeast. In general, it is a bit like a lighter version of Hatsuzakura, a sake made from the same yeast as the original. It was easy to drink and delicious.

Shiga Local Sake Festival in Otsu 2023 (7) Toshihiko Yasui Sake Brewery / "Hatsuzakura" Koka City, Shiga Prefecture Founded in 1884, well water from the Suzuka mountain range subsoil. Taro-san, the sixth generation, participates in sake brewing, brews New Hatsusakura, and designs the label. The label was designed by Taro, who is the sixth generation of brewers. The specifications are said to be different from those in the photo, but it is a gentle sake, easy to drink, and has a light "nama-hashiroshi" feel to it. AS TIME GO BY Aged at room temperature for 3 years. It is a collaboration sake with Hata Shuzo. It is surprisingly gentle and has no sake-like sensation. It has a warming feeling as if it soaks into your body. Yamada Ginjiro. This one is also different from the specs in the picture, but they said it was aged for 6 years. Almond aroma from the nose. It has a very strange sweetness and umami taste. I was quite impressed with this brewery. It is not fruity, but more like an austere, smoldering structure. Raw rice and Nipponharu rice used for rice. It was R1BY! Slightly savory aroma, thickening, umami, and acidity like dried fruit. Somehow, the ones that have been laid down for more than 3 years have an old sake-like feel to them (this is my personal impression). Personally, it makes me think that I still prefer the fresh one. I don't buy it by looking at the label on the back that closely. (Sometimes the brewing year is not written on the label.) It's a little heavy. I was drinking Laughing Four Seasons during this time (I'll report on that later), so it feels even heavier. Interesting!

I visited three sake breweries along the Tokaido Highway in Koka City, Shiga Prefecture during my Bon vacation. This is not my first visit to Shiga sake, but I'm looking forward to it since I haven't been able to explore the area much... First up was Hatsuzakura. I had bought some at a nearby roadside station, Ai no Tsuchiyama, but this time I went to the brewery. I was greeted by Tobita-kun, Shiga's famous pop-up boy 😬. This small brewery uses locally grown rice to brew their sake. The lineup includes both fire-brewed and unpasteurized versions. Some of the bottles were 7 years old! The first was a special junmai (pure rice) draft made with Shiga Prefecture's royalty, Tamakae. I'm curious about the particularity of mixing only 7% with other rice! It's R2BY, so it's been laid down for about 2 to 2.5 years. The aroma is strongly alcoholic, but with a hint of apple. The acidity is umami but clean and dry. The impression is polite and clean. It is the type of sake that enhances its umami when used as a food sake.
