I brought back a bottle of Tamakae's super-limited Nakakumi, a regular sake
I had brought back a sake called "Tamakae" from a Shiga liquor store in the summer and put it to sleep.
It is served cold.
The color is a gentle yellow.
The top aroma is grapefruit, orange peel, and bay leaf.
The palate is lightly thickened, with juicy, bittersweet citrus flavors spreading richly, and when the sweet and sour flavors reach their peak, the bitterness of the orange peel-like flavor pulls the juicy flavors together, while the lingering citrus pulls the palate together.
It may be better 🍹✨ if it is brought to room temperature a bit.
Even the standard Tamakae is so juicy in the very limited Nakakumi.
You will be surprised at the intense flavor.

Even though I am from a neighboring prefecture, there are very few Shiga sake on the market.
It's a shame, because there are so many delicious sake.
Hot sake.
Aromas of alcohol and rice mingle softly, lime-like.
The texture is smooth and smooth.
The rice has a rich umami and sweetness with a firm feel.
The acidity is a bit sharp.
The aroma of rice is relaxing and lingers for a long time.

It is difficult to describe, but the aroma reminds me of mushrooms or wet forest...or maybe it is the taste 🙄 The aroma reminds me of melon, apple and apricot, with a strong acidity and richness. It has a chili-like flavor and is rather refreshing to drink.

It has a slight sense of aging, but not enough to be bothersome, and has a mild umami and a tangy spiciness.
It is not in the image of Shiga sake's umakuchi (flavorful) taste, but it is good in general.
It has a mild maturity with little character, so it is suitable for a wide range of dishes except sashimi.
It tastes better warmed than cold.
It's not what you would expect from Shiga sake, though.
