This time it is Akishika's Junmai Hachitan-Nishiki Unfiltered Unrefined Raw Sake Hachihachi, 2019BY. Hachitan Nishiki, 80% polished rice, three eights with No. 8 yeast. Akishika held their first sake brewery open house event, so I entered 🦌✨This is a souvenir from the many things I've had to drink. Soft yellow colored appearance. The top aroma is gentle and nutty, with aromas of savory grains, soy sauce, and mushrooms. It has a thick, mellow, rich, complex sweetness and acidity, but the sweetness is not so strong that it is easy to drink. It is delicious! We were impressed not only by the unique flavor of the 5-year-old unfiltered raw sake Hachihachi, but also by the way the flavors were beautifully put together. When heated up, the mild sweetness and umami in the mouth is lightly mellowed by the acidity and bitterness, and the cup is already too much to drink. Akizuka is located in the town of Nose in the northernmost part of Osaka. At the event, they prepared a space for eating and drinking by laying out pallets on the nursery bed, and the Akishika was exceptional while looking out over the rice paddies. I had not had this sake since I was at Shuroku in Kyoto (of course, at their booth this time). I was so happy that I opened it right away because I was so determined to bring it home with me this time 🤣. I'm going to drink it slowly from now on 💕.

Hi Hirupeco, good evening 😃. No.8 yeast, that's very rare ☺️ And it's a 5 year old unfiltered raw sake 😳It looks delicious cold and warmed to Hirupeko's liking, a gem for sake lovers 🍶. Bambi on the flat cup is cute too 🦌.

Good evening, Aladdin, No. 8 yeast is rare. The acidity of 3.1 and the thickness of the acidity match the taste of Akizuka. Akizuka is better served in a bambi sake cup than in a wine glass. Just my personal opinion😅.
