Fukui Reinetsu Trip in Summer (1) This is a 3-day/2-night trip based on the Echizen coast. On the first day, we visited Eiheiji Temple to get healed, and then went to Echizen Cape to visit the sake brewery Hakugakusen. We tasted a lot of sake at the Echizen Cape brewery, so we decided to have a drink at Hakugakusen. We had two kinds of sake: Kurotetsu and Umimatsu. Both are made from Gohyakumangoku sake produced in Fukui. We will have them lightly chilled. Junmai Daiginjo Kurotetsu The aroma of the first rise reminds us of ripe apples and grapes. The fruity acidity and full-bodied sweetness like that of wasanbon (a type of Japanese sweet and sour cake) rise up from the grape-like aroma, and a soft sweet aftertaste can be enjoyed slowly with a calm bitterness. Junmai Ginjo Umimatsu This is a fire-aged version of summer sake. I was surprised when I took off the cover of the bottle without thinking and the lid flew off. Good thing I was outdoors. 😮‍💨 The first aroma is like yellow peaches. From the slightly fizzy mouthfeel, the sweet and sour taste of fresh yellow peaches and the full-bodied, smooth sweet umami taste are delicious. Hakugakusen is a very beautiful sake with a full expression of sweet umami without any cloying taste ✨. With the cool call of the brown-eared bulbul in the background Watching the sun set over the Echizen coast, It is a blissful time to savor Shiratakesen 😊.

Another bottle this time, It is the same Hatsuzakura Yamada Ginjirou Nama Nama Normal Sake 2017BY as the previous one. As the name suggests, this sake is made with Yamada-Nishiki and Ginbuki, and was aged in the new koji room of the brewery at the time, as the smell of the new koji room tends to transfer easily. I brought this one home with me the other day when I stopped by the brewery. First, a cold sake. It has a pale greenish yellow color. What's that? Surprisingly, the color is the same as that of Nihonbaru. The top aroma is of fragrant chocolate with a high cacao content and a little bit of soy sauce. The aroma is full of fruity, cacao-like aroma, and the taste is matured and has a strong sweet/umami flavor. The sweet and savory taste is more well-rounded than expected, and the aftertaste is surprisingly refreshing. When heated, the aroma of freshly cooked rice is gorgeous, with a soft, full-bodied acidity and a delicious sweet-umami flavor with a gorgeous cocoa aroma. It is like rice chocolate 🍫. When we stopped by the brewery, the brewer kindly allowed us to take a tour of the brewery 🙏 Thanks to the kindness of the brewery owner, we were able to see the brewery. I learned a lot as the brewery owner explained everything from the well to the Sase-style wooden vat press in great detail, all covered in sweat. Yasui Sake Brewery is a small brewery, so it's a pity that you can rarely see them outside of Shiga Prefecture 😢. The newest brew, Nama Hashitake Taro, and the aged Yamada Ginjiro are both delicious👍!

This time it is New Hatsusakura's Nihonbare. I like this series so much that I went to the brewery to bring back this year's newest release. With this sake, we now have three brothers (Tamaei, Ginbukiyo, Nihonbare). By the way, Nihonbare was the number one planted rice until it was overtaken by Koshihikari, and it seems that Tamagawa's Ice Breaker also uses Nihonbare. It is served cold. It has a pale yellow-green color. The top aroma is young raisins and apricots with nuts and green bamboo. The taste is a mixture of sweet and sour like juicy yellow peaches and soft umami. The summery, refreshing acidity is added in the aftertaste, and the juicy sweet-amami lingering taste can be enjoyed slowly. And when heated, the rice aroma is gorgeous, The aroma of rice stands out gorgeously and the taste is deliciously acidic. I thought it was a little watery at first opening, but it was still delicious and my favorite 😋. The entrée was cucumber and yam with umeboshi chazuke-no-moto. I was out for a drink the other night and was served a jar of cucumber tataki with umeboshi chazuke-no-moto sandwiched in between and was told to shake well before serving 😳. But it was definitely delicious 🥒🍵. I just didn't know that? Any vegetable can be made into asazuke super fast! Is summer the season for Nihonbashi and umeboshi chazuke?

This time it is a Junmai-shu retro label from Houken. This sake is from Kure City, Hiroshima Prefecture. Houken is known for its Hachitan-Nishiki, and this one is a Junmai-shu based on Hachitan-Nishiki, blended with Junmai-Daiginjo and Junmai-Ginjo blame portions. The label is also a must for retro label lovers😍. It is served cold. Crystal color with a slight yellow tinge. The top aroma is bitter and sour like grapefruit with a hint of green bamboo. The palate is gentle, and the overall impression is clear, light and dry like clear water. It has a light flavor with a hint of banana, a mild umami that seems to put a thin veil over the tongue, and a moderate bitterness that is crisp and tasty. I was impressed with the taste of this sake when I had it cold as my first drink at a heated sake bar. I was so impressed with the taste that I was going to buy it whenever I saw it. Then I saw it at Yamanaka the other day and immediately bought it at ‼️. It's too hot today, so I'll hold off, but I'd love to enjoy some heated sake 😊.

This time it was Tadashi Junmai Ginjo Yamadanishiki. I had been wanting to drink Tadashi for a while, so I went to a liquor store and found this black label and the light blue label (see Jay & Nobby for details) of the summer version of Yamadanishiki. The liquor store said that the summer sake was lower in alcohol and more acidic, but what did you think? I will drink it cold. It has a faint green hue. The aroma on the nose is of muscat, blue melon, fresh fruity apple, and cool bamboo grass. From the gentle mouthfeel, the fruity aroma of muscat with hints of soft sweetness flows gently. The lingering sweetness and umami that fades away with a moderate bitterness is absolutely beautiful. Overall, the impression is gentle, It has a refreshing yet powerful taste with a hint of the umami of the rice, and is a sake that allows you to enjoy the taste of Yamadanishiki in an elegant way. It is a quintessential "Danshi" sake! It is elegant and smooth like water, yet has a wonderful sense of balance that allows you to taste the umami of the rice. Today is the last day of work. I was struggling to get through each day 😫. Good night! I love having a drink with my new favorite friend 😆.

This time it's the Eiheiji Hakuryu collaboration sake from Okunoto's Shirakiku. When I stopped by Asano's, I found an orange-labeled collaboration sake of Hakuryu and Okunoto's Shirakiku. Crystal appearance. The top aroma is gently herbal and fresh, with a banana-like sweetness and calm acidity. The mouthfeel is gentle. The overall flavor is gentle, The full-bodied caramel-like sweetness is mixed with a refreshing acidity with a sense of minerality, and the lingering taste is slightly bitter and somewhat short. It is a good sake with an excellent balance of full-bodied and refreshing taste. It gives the impression of a refreshing version of the Niigata-style Yoshinogawa sake we had the other day, with a bit of Shirakiku-like richness added. As Asano Sake Shop is always open for events featuring visits by sake brewers, so it was a rare opportunity to enjoy a drink in a relaxed atmosphere. It's nice to drink in a relaxed atmosphere while enjoying the conversation between the regulars and the manager 😊.

Another bottle this time is Tasake's Red Comet: ☄️ I was looking for it after reading Matsuchiyo's review of it, and I didn't expect to find it at the Yamamoto store near me 😓. I haven't stopped by lately because I keep bringing sake back home with me 💸. I chilled it lightly and served it. Crystal fine bubbles appear all over the glass. The top aroma is clear green apple candy, fruity with a melon-like greenness. The mouthfeel is slightly thickened. There is also a mild fizzy sensation on the tongue. The taste is like a well-defined syrupy sweetness wrapped in a mild acidity, like that of a ramune. It has a fizziness and a bitter taste with the richness of the rice flavor, and it finishes with a medium aftertaste. It is a very beautiful sake with a Junmai Daiginjo-style mild sweetness and a fruity aroma with a summery freshness that is delicious. I wonder if it would have been better if it had been chilled and tasted crisp and clear? I thought it would go well with tempura, so I served it with fried lotus root stuffed with seafood that I found at the supermarket (also delicious), but I really want to enjoy it with hamo (Japanese conger eel) tempura to feel summer. Let's make the red bottle look like a lantern and enjoy the festive atmosphere 🏮✨.

This time it is a R4BY of Shunshin's yeast-free, pure yeast-stocked, pure rice x Koshihikari-brewed sake. I brought this sake back from a recent visit to Takashimaya in Namba for a tasting to meet the toji-san. It has a golden hue. The nose has a strong acidity with aromas of savory grains and soy sauce, and a sweetness that reminds us of dried fruits and barrels. First, it is served at room temperature. The taste is a bit thick and smooth, with a strong lemon-like acidity that is covered by a rich grain-like broth-like umami and concentrated sweetness like dried fruit. Ah, a unique yet beautiful taste. Surprisingly, it has something in common with Ine Mangaka 🤔. The sweet and sour taste that stands out when it is warmed up and the dashi-like flavor is irresistible, yummy! It feels as if you are drinking Japanese hot wine and the aftertaste is very pleasant. The citrusy acidity and the full rice flavor that wraps around the acidity are unique and delicious. This is the sake that bouken-san told me I would like. He was right.

This time we have another one, a special junmai from Gokujo Yoshinogawa. This sake is from Nagaoka City, Niigata Prefecture. I wandered over to Umeda Hankyu and found Yoshinogawa on tap, Niigata is known for its "Gohyakumangoku" (five hundred million stone)! I'm taking it home with me to study up on Niigata sake, which I haven't had much of. I drink it cold. It has a crystal, slightly green and yellow appearance. The nose is fresh, with grapefruit, banana, blue melon, and cypress nuances. The mouthfeel is smooth. The taste is sweet and delicious with a slight banana flavor, with a gentle acidity, a mild bitterness and a lingering astringent aftertaste like the aftertaste of bananas. The taste is light and dry with a sense of rice that is typical of Niigata. It won the gold medal in the national heated sake contest, so we tried it heated. Wow! Light and refreshing taste from the aroma of freshly cooked rice. Lightly heated sake! The fact that it's so light but still has a lot of body is probably due to the riceiness at its core. I mistakenly thought this sake was made with Yamada-Nishiki and made using the raw yeast method. My sake tasting ability has not improved at all😭. Putting all that aside. Let's enjoy it with watermelon chips I found at Donki!

This is Junmai Ginjo Gentatsu from Tsuneyama. It is a sake from Fukui Prefecture. Gendatsu" is named after Gendatsu Se, a fantastic sea area where the ban is lifted only from mid-June to mid-August. The sake is released in the image of the Sea of Japan in each season: Gendatsu in summer and Araiso in winter. The sake is made from Gohyakumangoku (five hundred million stone), The label features an attractive sea bream jumping in the cool ocean. It is served cold. It has a refreshing sour apple aroma. It has a refreshing taste. It has a freshness like mineral water, a mild lemon-like acidity, a gentle sweetness, and a refreshing acidity and fresh bitterness. The fresh, dry taste is just as beautiful as the label, and is perfect for hot summers! If I go to Fukui this summer, I want to stop by the brewery! And I also want to try the winter Araiso 😊.

This time it is a pure rice daiginjo from Kamikai. This sake is from Koka City, Shiga Prefecture. It is a Junmai-Daiginjo with 1801 yeast. I bought it when I visited a sake festival at Takashimaya in Kyoto. I was attracted by its clean and beautiful taste, and the retro label is also a high point for me personally. It is served cold. Almost crystalline appearance. The nose is fresh and fruity, reminiscent of Japanese pears, with a sweet, candy-like aroma. It has a mild mouthfeel. The fresh fruity taste of Japanese pear is refreshingly light, with a gentle candy-like sweetness and a sourness derived from the sake's natural yeast. The astringent taste behind it reveals the full-bodied umami of rice. The aftertaste is pleasantly bitter, with a lingering bitterness that contains a full-bodied umami flavor. The base is light jun-dai, but the taste is delicious with a fullness of depth in a transparency that gives a soft Japanese pear taste. Actually, I drank it lazily after opening the bottle, but the sake quality has been stable during that time, and it was easy to drink as an unpretentious jun-dai that is distinctly different from the gorgeous fruity jun-dai that is common in jun-dai. I had just received some peaches, so I enjoyed it with peaches, and the fruity sweetness of the peaches made me happy🍑.

This time it is Akishika's Junmai Hachitan-Nishiki Unfiltered Unrefined Raw Sake Hachihachi, 2019BY. Hachitan Nishiki, 80% polished rice, three eights with No. 8 yeast. Akishika held their first sake brewery open house event, so I entered 🦌✨This is a souvenir from the many things I've had to drink. Soft yellow colored appearance. The top aroma is gentle and nutty, with aromas of savory grains, soy sauce, and mushrooms. It has a thick, mellow, rich, complex sweetness and acidity, but the sweetness is not so strong that it is easy to drink. It is delicious! We were impressed not only by the unique flavor of the 5-year-old unfiltered raw sake Hachihachi, but also by the way the flavors were beautifully put together. When heated up, the mild sweetness and umami in the mouth is lightly mellowed by the acidity and bitterness, and the cup is already too much to drink. Akizuka is located in the town of Nose in the northernmost part of Osaka. At the event, they prepared a space for eating and drinking by laying out pallets on the nursery bed, and the Akishika was exceptional while looking out over the rice paddies. I had not had this sake since I was at Shuroku in Kyoto (of course, at their booth this time). I was so happy that I opened it right away because I was so determined to bring it home with me this time 🤣. I'm going to drink it slowly from now on 💕.

This time it is a 1-gou can of Tasake (rice wine). This is the sake that everyone is drinking at Sake-no-wa these days. I really went to buy the red comet but it was sold out and I couldn't buy it 😭😭😭. So I decided to bring back another can I wanted to drink. I'll have it cold. Crystal appearance. The top aroma is gorgeous with juicy pineapple and apple aroma. The mouthfeel is light and refreshing. The taste is light with pineapple aroma, sweetness like cotton candy, and powdery rice flavor. The aftertaste is clean and refreshing. It is light and refreshing when cooled well, and the sweetness expands and the balance with the aroma is better when it is lightly cooled. This is the first time I have heard of the rice called Momota 😳. It is a sake rice from Akita Prefecture, where both parents have Yamada Nishiki as their mother. This time it is a regular sake RClass Nao Kumi from Sanzen Sakura. It is a regular sake made from Natsuboshi rice. It is served cold. The color is almost crystalline. The nose has a fresh fruity aroma of Japanese pear and green apple. The mild mouthfeel has a slightly effervescent feel, as is typical of nama-shu, followed by a syrupy sweetness with a fruity aroma of fresh Japanese pears, and a malty flavor behind it. The aftertaste is refreshing, with a lingering sweetness and a gradually swelling bitterness. The quality is so good that it is hard to believe it is a regular sake, and the sweetness is delicious. R is said to have a rich taste and be reasonably priced, and this is exactly what it tastes like. The other day, I participated in a sake festival at Kyoto Takashimaya. I had heard for a while that the level of Sanzen Sakura's regular sake was very high, and I really wanted to try it! I really should have brought back a different kind of sake, but there were so many varieties and President Yamada was there, too. This time it is Shikishima. This time it is Shikishima, a sake made in Aichi Prefecture. I've been wanting to drink Shikishima for a while, and the other day I finally went to a liquor store that carries it, so I brought home a bottle that is perfect for this season. The color of the label is the same color as my cell phone cover, which is also a point 🩵. I will drink it cold. The color has a slight yellow tinge. Fine bubbles also appear in the glass. The top aroma is of sweet ripe apples with a hint of Japanese pear. When you take a sip, the mouthfeel is slightly thickened, and you can taste the sweet and juicy sweetness of apples and the sweetness of koji. The aftertaste is unexpectedly refreshing, thanks in part to the effect of the slight foaming, while softly tasting the sweetness of the koji. The crispness from the juicy sweet and sour taste in the first half is very pleasant. It's juicy and smooth to drink, but you have to be careful because of the 18% alcohol content💦. I'm going to let it sit for a week and drink it according to the label on the back. I think this is the boxy aroma you all mentioned. This time it is Miyamanishiki Junmai Junmai Unrefined Nama-shu from Morishima. This sake is from Hitachi City, Ibaraki Prefecture. I drank Morishima's Omachi at an off-line meeting last time and it was so delicious that I wanted to drink it at home. This is a Miyamanishiki limited edition Miyamanishiki Nama-no-Nazake for April. It is served cold. It has a slightly greenish appearance with fine bubbles. The nose has aromas of apples, pears, and blue melon. On the palate, the fresh aroma of melon with a hint of greenness is followed by a rich flavor of rice with a hint of malted rice, and the taste is quietly tightened by the fresh bitterness of the slight effervescence. It is a refreshing umami sake with a cool Miyamanishiki feeling and plenty of rice flavor. I would like to drink hi-ire sake as it is getting a bit heavy season for nama-shu 💕. We finally made it to the middle of June this year. I'm looking at the beautiful hydrangeas, and I think this might be the hardest time of the year since it's the beginning of the hottest day of the year. I wanted to drink right away today, so I'm going to take out sushi after work and have a relaxing weekend drink. I want to stay here until the end of the year 🍶💤.

I couldn't forget the lukewarm sake I had at the Spring New Sake Festival when I traveled to Fukui, and I've been waiting for Hanagaki nigori to arrive 💕. It is a nigori with a strong sweetness due to the four-stage brewing process. It is pure white with a smooth color. The top aroma is of sweet sake with a lot of acidity. The main taste is sweetness from the smooth creamy mouthfeel of the ori. However, the mild sweetness mixed with the oli and the acidity are well balanced, making it strangely easy to drink. It is a refreshing sake to drink on the rocks in summer. It can also be served lukewarm. This time it is a strawberry mead barrel-aged junmai sake from Gojin Musume. It's a collaboration sake between hot DJ Tsuketaro-san, Terada Honke in Chiba, and ANTELOPE. I popped it when I saw Kirataso-san enjoying it😅. There is a craft mead brewery called ANTELOPE in Shiga. Mr. Tsukitaro was so impressed with ANTELOPE's strawberry mead aged in bourbon barrels that he decided to try aging sake in these barrels! He decided that he wanted to try aging sake in these barrels, so he made an offer to the Terada family, and this sake was born. It is served at room temperature. It has a slightly golden color. The top aroma is of honey and strawberries, and there is a gentle oak aroma. The mouthfeel is slightly thickened. The taste has a mild acidity from the sake yeast with the umami of rice, and the aroma of honey with the freshness of strawberry blends with it, leaving a gentle sweet oar aroma that disappears. Sweeter than sake and lighter than mead, this exquisite 🍯🍓🥃✖️🍶 harmony is a must. Is it heavy for the upcoming rainy season? but it's surprisingly not bad.
