GW San-in Trip 6 Gozenshu's special Omachi 2.2 I got on the expressway after the Daisen trip, but Daisen was too good and I got sick of not wanting to go home. If we get off on the way, we can stop by Gozenshuu. I pretended not to hear the voices of my companions who said, "That's just to drink sake, isn't it? The area where Gozenshu is located has been developed as the castle town of Katsuyama and has a quaint atmosphere, and the store is in a renovated storehouse ✨. At the tasting counter, you can sample some of the very high quality sake that you can only drink here. The sake is a Junmai Daiginjo made from rice selected at 2.2 mm in size among the Omachi varieties as part of the Tokkami Omachi Project and priced at 30,000 yen for a 4-goupe bottle. Crystal color. It has a soft raisin top nose. The taste is clear and easy to get used to, yet the sweet and sour taste and bitterness that is typical of Omachi can be felt. It is wonderful to be able to taste such a beautiful Omachi. It is not something I can afford to buy, but I am happy to have tasted it! I tasted all of the other varieties available, and was impressed with the range of flavors in Gozenshu, which is brewed primarily with Omachi and Bodeshige. We started with a can of Gozenshu nigori and ended with a visit to a Gozenshu brewery. Thank you for a wonderful Sanin sake trip 🙏.

GW San-in Trip 5 Doburoku Uedaishiroku On the third day, we went to Daisen once more. On the way there, we went to a supermarket near the Hoki Town Hall, We found the doburoku we were looking for 💡. It seems that Hoki-cho is also a special zone for doburoku. I was curious about it. The aroma is a refreshing citrusy sourness mixed with a hint of koji (malted rice). It is served cold. The rice is smooth and the rice is soft and can be lightly crushed with the tongue. The juicy sweet and sour taste like mandarin oranges is mellowly enveloped by the rice, and combined with the fresh bitterness that tingles on the tongue, it is a sweet and refreshing sake. The 50% polished rice also makes it so easy to drink and delicious that it gives the illusion of being a juicy amazake! The young 20-something president and toji are very talented 💪. Daisen is a walk in front of the Daisenji Temple gate. The view of Mt. Daisen from in front of the National Park Center at the entrance is overwhelming! It's like being in the Alps. 🏔️ I went up the stone-paved approach to the temple and visited Daisenji Temple and Okumiya Shrine on my walk to the gate from there.

GW San-in Trip 4 🍶The zodiac label of the tenth rising sun, Jin Tiger ORIGAMI NAMA I set a goal of one brewery per day on this trip to the San-in region! I was more like begging my companions to do so. I asked for Kumezakura on the first day and Jyugyohi on the second day. It has a slightly cream-colored appearance with a hint of orikara. It is served at room temperature. The top aroma is not so noticeable. The mouthfeel is light and smooth. The moment it enters the mouth, it has a sweet and sour taste reminiscent of juicy pears and grapes, with a milky rice flavor that spreads gorgeously. The fresh and bitter taste is well balanced with a refreshing aftertaste. Located in a shopping street just outside Izumo City Station. Go to Asahi Sake Brewery of the Ten Rising Sun. They offer six different kinds of sake tasting for 100 yen. I asked, "Isn't that 600 yen? I ask. They were all delicious 😋. Back to the campsite for the second day's party. We enjoy some Lake Shinji clams with miso soup with shellfish broth to help with the liver, and enjoy some sake while roasting Shimane's specialty, Akaten (roasted red tempura) 😊. Daisen & sake on both days 📷✨. We were very satisfied with our trip to the San-in region! It was a very satisfying trip to the San'in region. Daisen was so good, On the 3rd day, we will enjoy Mt. Daisen once more while we are packing up 🗻🚗💨.

GW San-in Trip 3 Soba Noodles On the second day of our GW trip, we went to Izumo-taisha shrine. We departed from the campsite for Izumo-taisha Shrine after watching the sunrise over Mt. After praying at Izumo-taisha shrine, we went to Izumo soba (buckwheat noodle) restaurant Tanakaya! We stopped by Tanakaya, a soba restaurant in front of the shrine gate, where we found a limited-edition sake brewed in collaboration with Tensho and Tanakaya called Keikyo. Of course, I drink it! We will have it with cold sake. Lovely tray with green leaves 💕 Clear appearance. Slightly sweet koji aroma on the nose. From the gentle mouthfeel, the fresh rice flavor spreads to the palate, and the lingering slightly sweet aftertaste is followed by a bitter taste that is sharp and clean. The firm texture of Izumo soba goes well with the refreshing sweetness of tenpo! It is truly a flavor that goes well with soba. The rest of the sake was brought back to the campsite and served at room temperature. The fruity, apple-like flavor and sweetness of the sake is plumped up and thickened, and it is delicious even at room temperature. The rabbits in Izumo-taisha shrine are also making sake, so I felt strangely close to them on my Izumo trip 😊.

GW San-in Trip 2 🍶Kumezakura's wolf cup sake Driving from Hiruzen Kogen Plateau to Daisen through the fresh green beech forest, we went to Kume-Zakura Sake Brewery. We got a cup of wolf cup sake and Yamadanishiki from Yago of Daisen G Beer. Lightly colored appearance. First at room temperature. The mouthfeel is light and smooth. The balance of acidity wrapped up in the savory flavor of the rice is delicious. When heated, the rice flavor and bitterness become more balanced and delicious. Daisen has an interesting expression that changes depending on the angle you look at it from. From the Oku Daisen side, the view of the mountains with snow still standing on the ground. From the village of Daisen Makiba Miruku You can enjoy the large, gently sloping, freshly green and beautiful Mt. From there, we went to Ryokusuiko Campground via Yonago. It is nice to be able to see Mt. Daisen from the campground as well. Sake and 📷✨ Enjoying the sake we bought, We warmed up by the fire and gazed at the stars. Well, the best 😆👍

GW San-in Trip 1 Bodhi Hashiroshi Nigori Sake (Bodhi Hashimoto Nigori Sake) This time, we will travel to Izumo for 3 days and 2 nights starting from Ryokusuiko Campground located south of Yonago City, Tottori Prefecture, during GW. The first day started from Hiruzen Kogen Plateau. I found a can of Gozenshu at a roadside station right after getting off the highway and bought it immediately 😊. At room temperature. The top aroma is that of alcohol. Light on the palate. Milky rice flavor and a refreshing and tantalizing acidity, It is easy to drink and delicious. Great for outdoor activities! It goes well with barbecue. And empty in no time 😱. Dangerous drink with a pretty face 🤣. One more thing at Hiruzen Kogen, I try to buy a big version of Okayama's famous banana cream roll. This time it's Shirakiku from Okunoto. Since it is GW, we are opening a special sake🤭. This Junmai Daiginjo was rescued from the brewery after the earthquake. It is served at room temperature. The top aroma is soft and fresh with a hint of banana. The mild and fresh mouthfeel is followed by a refreshing banana aroma and acidity with plenty of sweet umami flavor like that of wasanbon. The aftertaste is delicious and cohesive with a firm bitterness. This Junmai Daiginjo combines Noto's full of sweet and umami flavors in a flowing and elegant taste. One sip and you will be roaring with flavor. Honma, bamboo shoots arrived from my parents' house. I was going to pair it with tempura, but once I took a sip, I couldn't stop 😆. There were some scratches on the bottle, Is this sake that had already been bottled? I was wondering if it was okay for me to have such a precious sake. I was so thankful to have found it. I can't say "good luck with the recovery" lightly, but I just want to let you know that the delicious sake cheered me up 😊. 400 check-ins👣.

Tonight we have another bottle, Hyakuten Manten. First, let me explain about this sake. This sake was brewed by the Yamano Sake Brewery using rice produced by the Katano Orihime University Sake Brewing Group, of which I am a member. The sake I uploaded once at the new sake unveiling in March was a draft, and this time it is a fire-brewed version. It is served at room temperature. When poured into a sake cup, it has a sweet and gorgeous aroma. The aroma is especially gorgeous this year. The mouthfeel is mild and slightly effervescent. The aroma is reminiscent of a gorgeous pineapple, and the mild, full-bodied sweetness is delicious. The fire-aged version has a lighter taste compared to the nama-zake. Personally, I think I prefer the fire-aged version💕. The other day at Orihime University, there was a sake tasting WS where we compared several different types of sake, Of course the other sakes were delicious, but everyone agreed that Hyakuten Manten was the best 🤣. That's how much everyone who attended had a special place in their hearts for this sake 🌾✨. The time spent enjoying the sake that we all worked together on was irreplaceable 😊. We will start making the next sake rice from GW 💪!

This sake was brought back from a trip to the sake brewery cafe directly operated by the Kubohonke Sake Brewery and the sake brewery behind the brewery this winter. It has a slight yellow tinge. It is served at room temperature. The first aroma is sweet and raisin-like. It has a mild and moist mouthfeel. The taste is full of mature rice flavor with a sharp acidity and bitterness. Fully fermented, deliciously sharp body, delicious 😊Perfect for drinking at home. When I think of Kubo-Honke, I have an image of a sake that is either a pure yeast yeast yeast yeast or a solidly matured sake. This time it is KURORYU NO SHIZUKU. We entered the Spring New Sake Festival held in front of Fukui Station. This event features sake from 23 breweries in Fukui Prefecture, as well as sake and snacks from Toyama and Ishikawa. The first drink was a good one! Kuroryu Shizuku. There were many people in line who seemed to be in the same boat as me. The governor of Fukui Prefecture was on stage giving a toast, so I was happy to be able to choose a gorgeous sake to share 🥂 with him. The aroma was soft and gorgeous. It has a clear, fruity flavor that flows easily. It has a mildly bitter taste with a nice sharpness that goes well with spring 🌸. What did you drink from here? Echizenmisaki, Tsunezan, Hayaseura old sake, Hanagaki nigori, Hakugakusen, Unnoi, Hakuryu, Naruri Hyou, ah, Fukuchitose awamori infused sake and Maibijin SuppasanQ! I think I drank ok 🤔. All were delicious and I was impressed by the high quality of Fukui sake! I'm glad to see that there were quite a few breweries preparing heated sake 💕. I'm so glad I decided to go to Fukui the day before after worrying and worrying about it! I'm glad I took the plunge and decided to go the day before. It was a fun day trip from Kansai, from the Thunderbird and Hokuriku Shinkansen on the way there, to taking the regular train back slowly to see Lake Biwa at dusk 😊. This time it is HATADA☆SQUASH. This sake was brought back to Koka and Konan at the time of the opening of the breweries. When we opened the bottle, it did not blow at all. It has a foamy bubbles and a solid nigori. It has a yogurt-like aroma of young bamboo. When you take a sip, it is lighter than expected, with a refreshing yogurt taste from the shwashy mouthfeel. The yogurt-like sweet and sourness flows down the throat like dried fruit, and the lingering sweet and sourness is followed by a taste of rice flour like white bean flour. It is refreshing with a strong shwash and deliciously drinkable. The sake has a sake strength of -20 and an acidity of 2.6, which is a very good spec. This time I prepared bulgogi and ham katsu for pairing. The refreshing, shwashy sweet and sour taste goes well with these sweet and oily side dishes 😊. Looking back at the photos in my phone, I remember taking a picture with a Peruvian food vendor who had a stall at Jinkai 😅. I was also forcing a picture with the beautiful sisters nearby 😅💦. I went to the brewery openings in Konan and Koka City, Shiga Prefecture, where many members of the Kansai Branch participated, and decided to bring this sake home with me. Crystal appearance. First at room temperature. It has a sweet, raisin-like aroma with a mild mouthfeel. It has a mild mouthfeel. This time it is Hanakaze. I had been curious about rice and agave, but hadn't had a chance to drink it. The retro, eye-catching color lured me in and I brought it home. It is a sake that I want to open today, when the sky is clear and blue after a series of downpours. It is served cold and shaken well. It is white and lightly cloudy with fine bubbles. The top aroma is of white flowers and grapefruit. From the soft, slightly effervescent mouthfeel, the sweet and sour taste of fresh, concentrated grapefruit flows gorgeously through the mouth, and the lingering aroma of softly returning koji and the bitter bitterness of hops make it a sake that can be drunk easily. It is similar to the sake we drank at the end of last year, a collaboration between Pukupuku Brewing and Terada Honke, but I think Hanakaze is drier. It is strange that the combination of low-polished sake and hops gives it a bewitching taste like citrus juice that is hard to believe it is sake. Sake and other cultures mingle in this sake. I would like to try it with ethnic or spiced curry 😊. Oh, but it can go with bean cake without bean paste 😋.

I took a sip of Tori at an event once before and it was delicious! I personally remember the incident when my partner spilled most of it when I was so impressed with the taste of Tori at a previous event and I got mad (I have a root for this kind of thing) 😂. The top aroma is a ripe citrusy, smoky, caramelized aroma. First at room temperature. Thick mouthfeel. From the strong citrus acidity reminiscent of kumquat, a creamy, rich sweetness and crisp bitterness spreads on the palate. The smoky brown rice flavor that lingers in the aftertaste is pleasant, and one sip draws you in for more and more. Light, mellow, crisp, and delicious! Heating up the sake makes the flavor more lively 👍. When heated with water, it has a soft mouthfeel and the sweetness of the rice softly stands out. Anyway, it's a great taste! I wish I could secure another bottle 😊.

Kinuhikari produced in Gosho City Gosho City peony yeast and peony flower yeast produced in Gosho City, This is the first sake brewed by Mr. Taniguchi, who took over the business of Katsuragi Shuzo. The bottle was opened in about an hour while slowly enjoying the doburoku dance. The first aroma was a soft floral scent mixed with pineapple. It is a vigorous and dry sake. The freshness and mild acidity The freshness and mild acidity combined with the rice's crumbly texture make it a dry and delicious sake. It is dry and delicious! It is not possible to open the bottle without chilling it thoroughly, but when it comes back to room temperature, a slight sweetness takes over and the flavor becomes more to my liking. It is a new type of floral yeast, We are very happy that it turned out okay. This time it was only a small amount of doburoku, but they would like to sell it as sake in the future.
