Autumn Dyed with Niigata Sake (2) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. 2) Fruitful Hokusho Sake from Murakami City in Shimoetsu. It is often seen at Yamaya with a special distributor label of Taiyozakari, Hokusho is a junmai ginjo brewed entirely in Niigata with Niigata yeast, rice, water, and techniques, and aged at a low temperature for more than half a year. It is served cold. The color of the sake is a gentle yellow-green. The top aroma is mild and smooth on the palate. The flavor structure is similar to Tsukifumi no Ike, with a clean, refreshing sake with a blue banana aroma and moderate rice flavor. The moderate acidity is also effective and crisp. It is a lighter ginjo-style sake than the junmai sake Tsukifumi no Ike, with a good amount of rice flavor, yet it is easy to drink and delicious. Expect it to warm up as well. ♨️🍶 Oops, neither of these are my favorite 💕. A good start 🚩. I'll be updating this autumn with more Niigata sake, interspersed with a little bit of another sake 😊.

(1) Tsuki no Fumi no Ike hiyaoroshi (hiyaoroshi from Tsuki no Fumi no Ike) This sake is from Itoigawa in Joetsu. It is read as "Tsukimizu-no-ike. It is served cold. It is a light cream-colored sake. The top aroma is of gentle banana. It has a smooth, refreshing taste with a hint of blue banana, caramel, and rice flavor. The final taste is dry and tight. This time it is Rumiko's special junmai aged sake H29BY. This sake is made with Ise-Nishiki and No. 9 yeast. Ise-Nishiki is the oldest remaining sake rice, and is said to have a lineage that extends all the way back to Yamada-Nishiki. First at room temperature. Sake with a soft yellowish color. In the aging process, it has a soft sweet and savory aroma with an earthy flavor. Am I the only one who can sense the abundant harvest of rice just from the aroma? From a very mellow mouthfeel, the sweet and savory flavor of gently roasted rice flows smoothly. The latter half of the taste is broken by acidity and bitterness, leaving a light aftertaste of sweetness from the rice. And when served warmed, The comforting sensation of gently unraveling with the soft and fluffy rice broth feeling. Happiness 😊. I met Rumiko at an event and was impressed by her powerful and agile hospitality! I will never forget the way she spoke passionately about sake and sake rice. I will never forget how passionately she talked about sake and sake rice.

This time, it is a pure Yamahai Junmai from Sanbaku. At the Takashimaya Sake Festival, When I visited Nozomu at the Takashimaya Sake Festival, I took home a bottle of this popular Tochigi Prefecture limited edition sake, which they claimed to have only one bottle left and no more available for tasting. From Takashimaya to Tochigi Love ❤️ It is served at room temperature. Pale crystal yellow in color. The top aroma is of grapefruit, ripe banana, and bay leaf, and the rice feeling is freshly pounded rice cake. The mouthfeel is stimulating, like a fine fizzy sensation. Fresh and rich acidity spreads from the citrus aroma, and the mild umami of the rice flows smoothly with a refreshing finish. No wonder this light and fresh Yamahai was so popular. I've burned myself out studying and drinking during the first two weeks of October. I will work properly from tomorrow! A lesson learned this time. Don't take the last train two trains before the last one. You'll miss it.

This time it is a little birdsong of Kamikame. I attended a shochu study group that I was invited to. I was excited to hear that the bar was participating in the go-around on 10/1, and that they were holding the event with heated sake from Kamikame. ⤴︎ Everyone was seriously tasting Shochu, but I wanted to drink Shinkame no matter what, so I started to warm up my own Shinkame 😅. But on that day, I dropped by the Hyogo Sake event at Kobe Hankyu, I stopped by the event of Hyogo sake at Kobe Hankyu, and had sake tasting -> shochu tasting without vomit vessel -> Shinkame -> wine. I was so drunk that I fell and injured my left hand on the way back home. On the way home, I fell down and injured my left hand, broke the screen of my cell phone, and missed the last train 😭. I missed the last train 😭 I was punished for not studying properly. That's why, The pairing of birds chirping and prosciutto ham was absolutely delicious! It was definitely delicious, but I can't write about it in detail. I would like to revisit Kamikame somewhere else! Cab fare and repair bills are a pain💸.

It is served at room temperature. It has a slight yellowish hue. The top aroma is sweet with a hint of apple. The taste is a robust Junmai Daiginjo with a gentle sweetness and umami. The bitterness is also well balanced and has a nice sharp taste. The soft sweetness and moderate acidity make it a good match with Japanese food. A lovely bouquet of flowers and sake, I would like to thank everyone who helped me prepare for this event, Let's go to the next place of work 💨.

This time it's another 1-gou can of Amabuki's Strawberry Yeast. I've been enjoying drinking cups of sake and 1-gou cans lately, so I ended up bringing home a series of them. This time, I was sure of it, I was informed that Tsutaya had some aluminum cans of KURA ONE at their Thanksgiving festival 🍶🏃💨. No one comes to a bookstore for sake, so the clerk said, well, we have some! I apologize for the inconvenience of having to send out a search party to find them (they were quietly in front of the cash register 😅). It is served lightly chilled. Pale yellow appearance. The top aroma is mild, with a hint of caramel, rice, and maybe some green bamboo. Smooth mouthfeel, rice flavor base with rounded acidity. The taste of sweet and sour strawberries can be felt in the mouth. Because of the umami base, the sweet-sourness of the strawberries is not too much, and the balance of umami and sweet-sourness is delicious. It should be good warmed up! When heated, the aroma of strawberries was mild and the rice flavor was enhanced. The collaboration of Omachi and Ichigo yeast is good, and you can enjoy this character at any temperature. If it had been a 4-bottle, I might not have reached for it. So thanks to Tsutaya for carrying it this time 😊.

This time it is Junmai Ginjo from Ippodo. Hiyayogoshi is out again this year, The season of Junmai Ginjo from Ippouki has come around again this year 🙌. Serve chilled. Crystal with a slight green hue. The top aroma is of dark strawberry jam. The mild mouthfeel is followed by a sweet and sour aroma reminiscent of strawberry jam and a cotton candy-like sweetness that spreads out and is backed by a sense of rice. The taste is refreshing with a soft bitterness, and the strawberry jam aroma quickly fades away. It has a strong impression of strawberry jam sweetness, which I have never felt before in Ippodo. Although it is a clean, light flavor, it has a strong sweetness that is new to Ippouki, I think I prefer this Jungin when it is cooled down. This year, too, we have finally reached the entrance of autumn, This is how this year's Ippo-self is different! I look forward to comparing them every year 😊. This time it is Nechi Nechi Otokoyama's Nechi Nechi Valley Gohyakumangoku 2019BY. It is a sake from Itoigawa, Niigata Prefecture. Nechi is a Nechiozan Nechi Valley Domaine sake. I stopped by for a drink after work because of the holiday weekend 😎. It is served cold. It has a pale yellow appearance. The nose has aromas of mushrooms, sweet chocolate, and soy sauce. From the soft mouthfeel, there is an excellent balance between the clear, caramelized sweet umami and refreshing acidity, with a beautiful finish where the bitterness slowly builds from the acidity and finishes with a sharp finish. With all due respect, I had no idea that this was such a beautifully aged sake, and I was very impressed after taking a sip. It is a sake that I am glad to have encountered, as it is able to express such a beautiful and deep state of maturity in cold sake. And, it is a pleasure to have found it, While I wrote that I stopped by for a cup of sake, I actually drank Kaze no Mori Weeks 2024, Gorin, and Nechi. Isn't that a pretty drunken course? Well, I'm a happy drunk 🤣.

This time it's Okura's Aizan x Association No. 8 unfiltered raw sake R1BY. It's already crazy 😅. It is served cold. Pale yellow-green in color. The nose has a mild ripe apple and nutty aroma. The mouthfeel is thick. The taste is robust and rich, The first thing that hits your throat is the acidity. From there, deep raisin and ripe apple nuances, and overall, a round and thick flavor that is pleasantly mellow and thick. In the latter half, the bitter taste gradually fades away, leaving behind a mild sweetness and umami. The powerful flavor of Aizan and Association No. 8 is, of course, a given! However, R1BY's mildly rounded and matured taste makes it easier to drink and tastier than expected. It is powerful, but it doesn't stop you from drinking. This kind of mellow umami type is still my favorite 💕. And when heated, the ripe aroma settles down, and the savory broth from the rice, acidity, and bitterness become more balanced and delicious. In my opinion, Aizan sake is sweet and juicy. But this one is not sweet 😎. Aizan, like Okura, was recommended to me by Noyori-san and it was a good encounter 😊.

This time it is Junmai Ginjo Hiyoroshi from Kido. This sake is made from Gohyakumangoku. The first Hiyahoroshi of the year🍂? It is served lightly chilled. It has a pale green appearance. The top aroma is of sweet cotton candy and ripe apples. There is also an aroma of rice like Kamishinko. The mouthfeel is mild. The taste is mild and somewhat light for a hiyaoroshi, The first half of the taste is juicy ripe apple with a burst of sweet and sourness like grapefruit, followed by the soft and full flavor of rice and hints of banana. The finish is tightened with a moderate bitterness and lingering umami. This hiyaoroshi is mild and easy to drink without being overly floral. This well-balanced flavor at a great price😳 Kido is a sake that I sometimes want to drink without any hesitation. It is a stable sake. 🌙 Watching the big red sunset and the crescent moon as I savor the hiyaoroshi ✨. Let's take it easy, one step at a time in autumn 😌.

This time it is a long-aged sake from Ippongi. It is a special junmai sake, a former product of Denshin, a limited distribution sake of Ippongi, that was stored for several years in a room temperature warehouse, and then aged for a long time in a Kotsuyaishi cave where the temperature is kept at around 10℃ throughout the year, making it a 31-year-old sake. It is served at room temperature. Topaz-colored appearance. The nose has hints of mushrooms, aromatic wood, burdock root, bitter chocolate, and sour cream. Gentle on the palate. The base is a fine bitterness and an angular acidity. The lingering taste is intertwined with bitterness and gentle sweetness, and flows down slowly and quietly. It is an aged sake with a well-defined and elegant taste, not too rich and dense compared to its age and apparent image. When warmed, the bitterness is subdued and the elegant sweetness is enhanced, making it delicious as well. In Katsuyama, where the Dinosaur Museum is located, I was forced to make a side trip to "Ippongi is so close! I was forced to make a side trip. I was so happy to get the old ripe one 💕💕.

This time it is a summer cup of Shinomine. I wanted to drink Shinomine in summer, but I haven't been able to drink it this year, so I got a cup of it. It seems to be a summer limited edition from Rokumaru. The label reminds me of summer vacation in elementary school, which is the complete opposite of Shinomine's style. It is served chilled. It has a slight green hue. The aroma is of yellow apples and grapefruit peel with a hint of bitterness and freshly pounded rice cake. The taste is sharp and crisp with a dryness that stands out. It was a little too cold. The taste is so dry that I can't really taste it, so I let it come back to room temperature for a bit. Then, the taste is a smooth flow of sourness with a hint of apple-like sweetness, and the rice flavor with a gentle rice-cake feel. It is a light dry shinomine with a firm bitter acidity and a sharp taste 😊. Maybe it is better not to cool it down. I want to drink sake from all over Japan, so I buy cups of sake at Ajinomatidaya and take pictures of them in a corner of my house 🤫. I can enjoy my cup sake journey for a while 🤭.

This time it's Oriental whey🦊 from Happy Taro, who brews craft doburoku. I finally got to go there when I went back to Shiga for Obon! We went to Happy Taro-san's at Lake Scole in Nagahama. I had the pleasure of meeting Taro-san and brought home a brewery exclusive Oriental Whey. Oriental Whey is a doburoku made by combining the whey from the cheese shop in Lake Schole with spices as the brewing water. It is served well chilled. The appearance is that of a frothy cola doburoku. The top aroma is fresh yogurt with spicy aroma of ginger and other spices based on cardamom. The taste is like a sweet and sour lassi full of craft cola, and the second half has a light milky rice taste that is tightened up with a spicy hot taste. The lightness of the 7% alcohol content makes it as easy to drink as a cola 🤣. To match this oriental whey, I went to the library and checked out a book called "My First Spiced Curry" and made a keema curry. I've never made a curry without curry powder before, and I managed to finish it while staring at the book😅. Pairing homemade keema curry is a good thing 😋.

Continuing from the last time, this is Cape Echizen, Kutouryuu version. This sake is made from Kutouryuu, a rare variety of sake from Fukui Prefecture that was revived in 2014 for the first time in about 10 years. We were looking forward to it because we heard that Kutouryuu was recommended by someone who visited Cape Echizen just before our trip to Fukui.â It is served at room temperature. Slightly greenish appearance. The top aroma is a gorgeous aroma of sweet banana and blue melon, green bamboo, cypress, and freshly pounded rice cake. From the smooth mouthfeel, the aroma of fresh bananas easily passes through to the nose, and the gentle acidity and umami of the rice can be felt firmly, although it is light. It has a mild bitterness and a short aftertaste. When heated, the fruity taste of banana and the umami of the rice are more mellow and sweet. Delicious balance of sweet taste and refreshing sharpness. Both of the sake I compared are suitable for a light and refreshing mealtime drink, The 🟣Gohyakumangoku is more mild, The 🟣Gohyakumangoku is more mild and the 🟡Kuzuryu is lighter with a fresh fruity taste. Both are delicious. The ease of drinking heated sake is 😋. Very happy to be able to compare them side by side with a glass from the spring Fukui New Sake Festival 😊.

This time it is Echizen-misaki. We visited the brewery because we stayed at Cape Echizen during our summer vacation in Reinokita, Fukui. The brewery staff had just left and we were greeted by the father, mother, and dog, Choco, who gave us a variety of tastings. This time we decided to take home two bottles of 🟣Gohyakumangoku and 🟡Kuzuryu with different rice 😊. By the way, the brewery is near Eiheiji, not Cape Echizen😅. I'll start with the Gohyakumangoku. It is served at room temperature. It has a slightly greenish appearance, and the top aroma is a calm banana with a hint of blue melon. It also has a freshly pounded rice cake and a little bit of green bamboo. It has a smooth mouthfeel. The nose is full of banana aroma, and the taste is crisp with a soft acidity and mild bitterness with a moderate umami of the rice. When heated up, the banana aroma subsides, and the soft acidity and the enhanced rice flavor can be enjoyed lightly, making this lightly heated sake one that can be drunk endlessly 😆. The mainstay of Fukui sake is Gohyakumangoku produced in Fukui. Ihyakumangoku tends to be a rather plain sake, but each brewery has its own originality and the unique flavor of Ihyakumangoku is good and never tiresome to drink. This was a sake trip that reminded me once again that Ihyakumangoku is also good. Next time, we will go to the Kuzuryu version.

Another bottle this time. It is WAKAZE nigori. It is a French WAKAZE, so, oh, is it a real national product, including overseas? This one was brought by a friend who got together with us. The top aroma is like calpis mixed with amazake. The sweet flavor of amazake with a slight caramelized taste flows easily and disappears like water. This time it's Hachigannishiki Hi-ire from Jikin. I've never actually bought a very famous brand like this for myself, and I was so thrilled to be able to buy it for myself that I couldn't open it by myself💦. I was too nervous to open it by myself 💦, so I decided to barge over to my friend's house and have a drink with her. The top aroma is a fresh, flowing pineapple aroma. The taste is gentle pineapple sweet and sour with a gentle rice flavor, and a firm bitterness with a refreshing aftertaste. It is a perfect summer sake that is refreshing and easy to drink. Fukui Reinetsu Trip in Summer (3) A 3-day/2-night trip based on Echizen-kaigan. On the last day, we went from Katsuyama to Echizen-Ono. First, we went to the Dinosaur Museum, which we skipped in the spring. I never cared much for dinosaurs, but after a tour of the dinosaur museum, they became more real to me and I think I shared my enthusiasm for dinosaurs 🦕. It's just like your sake! I was told of course 😅. Echizen Ono is a castle town and I wanted to climb the castle, but due to time constraints, I only went to the Ooshimizu spring. I would have liked to explore a bit more! Then we went to Hanagaki for sake brewery. Among the many samples I tasted, I brought home a Junmai Daiginjo of Misato Nishiki. I thought, "Isn't Misato Nishiki an Akita rice? I thought it was Akita rice, but when I tasted it, it grabbed my heart. It is served at room temperature. The top taste is ripe apple, banana, and green bamboo. The first sip reveals a refreshing acidity and a thick, creamy banana flavor that is typical of Hanagaki. The lingering astringency that quietly lingers in the aftertaste is pleasant. A little expensive, but delicious! It was fun to take a sake tour while viewing the beautiful countryside of Fukui! It was a wonderful summer vacation!

Fukui Reinetsu Trip in Summer (2) A 3-day/2-night trip based on the Echizen coast. On the second day, a footbath at Awara Onsen (hot spring), Tojinbo, Borgara rice, and a sake brewery are called "Hana Candle". The sake is served lightly chilled. The aroma is of ripe apples with a hint of barley. The overall taste is light and smooth. The nose has a soft apple-like sweetness, followed by a brandy-like smokiness, and the taste of rice cake. The aftertaste is bitter with a sharp acidity that gradually fades away with an astringent taste that lingers on the tongue. The peak of sweetness and umami, which changes from soft sweetness to smoky and thickens, is followed by an astringent finish that is interesting. After a day of drinking, the smokiness settles down and the sake becomes lighter and easier to drink. On the second day, we enjoyed a leisurely evening drink while watching the sunset on the Echizen coast and re-searing grilled mackerel sushi. I can't tell you how happy I am to spend the time leisurely as the sun sets and the moon turns to a crescent moon 💕. And all the while pretending to be a stylish dinnertime drinker, In fact, I made the painful mistake of forgetting to bring a sake cup this time. I'm drinking from the big mug provided in the cottage😅.
