This time it is a pure rice daiginjo from Kamikai. This sake is from Koka City, Shiga Prefecture. It is a Junmai-Daiginjo with 1801 yeast. I bought it when I visited a sake festival at Takashimaya in Kyoto. I was attracted by its clean and beautiful taste, and the retro label is also a high point for me personally. It is served cold. Almost crystalline appearance. The nose is fresh and fruity, reminiscent of Japanese pears, with a sweet, candy-like aroma. It has a mild mouthfeel. The fresh fruity taste of Japanese pear is refreshingly light, with a gentle candy-like sweetness and a sourness derived from the sake's natural yeast. The astringent taste behind it reveals the full-bodied umami of rice. The aftertaste is pleasantly bitter, with a lingering bitterness that contains a full-bodied umami flavor. The base is light jun-dai, but the taste is delicious with a fullness of depth in a transparency that gives a soft Japanese pear taste. Actually, I drank it lazily after opening the bottle, but the sake quality has been stable during that time, and it was easy to drink as an unpretentious jun-dai that is distinctly different from the gorgeous fruity jun-dai that is common in jun-dai. I had just received some peaches, so I enjoyed it with peaches, and the fruity sweetness of the peaches made me happy🍑.

This time it is Akishika's Junmai Hachitan-Nishiki Unfiltered Unrefined Raw Sake Hachihachi, 2019BY. Hachitan Nishiki, 80% polished rice, three eights with No. 8 yeast. Akishika held their first sake brewery open house event, so I entered 🦌✨This is a souvenir from the many things I've had to drink. Soft yellow colored appearance. The top aroma is gentle and nutty, with aromas of savory grains, soy sauce, and mushrooms. It has a thick, mellow, rich, complex sweetness and acidity, but the sweetness is not so strong that it is easy to drink. It is delicious! We were impressed not only by the unique flavor of the 5-year-old unfiltered raw sake Hachihachi, but also by the way the flavors were beautifully put together. When heated up, the mild sweetness and umami in the mouth is lightly mellowed by the acidity and bitterness, and the cup is already too much to drink. Akizuka is located in the town of Nose in the northernmost part of Osaka. At the event, they prepared a space for eating and drinking by laying out pallets on the nursery bed, and the Akishika was exceptional while looking out over the rice paddies. I had not had this sake since I was at Shuroku in Kyoto (of course, at their booth this time). I was so happy that I opened it right away because I was so determined to bring it home with me this time 🤣. I'm going to drink it slowly from now on 💕.

Hi Hirupeco, good evening 😃. No.8 yeast, that's very rare ☺️ And it's a 5 year old unfiltered raw sake 😳It looks delicious cold and warmed to Hirupeko's liking, a gem for sake lovers 🍶. Bambi on the flat cup is cute too 🦌.

Good evening, Aladdin, No. 8 yeast is rare. The acidity of 3.1 and the thickness of the acidity match the taste of Akizuka. Akizuka is better served in a bambi sake cup than in a wine glass. Just my personal opinion😅.

This time it is a 1-gou can of Tasake (rice wine). This is the sake that everyone is drinking at Sake-no-wa these days. I really went to buy the red comet but it was sold out and I couldn't buy it 😭😭😭. So I decided to bring back another can I wanted to drink. I'll have it cold. Crystal appearance. The top aroma is gorgeous with juicy pineapple and apple aroma. The mouthfeel is light and refreshing. The taste is light with pineapple aroma, sweetness like cotton candy, and powdery rice flavor. The aftertaste is clean and refreshing. It is light and refreshing when cooled well, and the sweetness expands and the balance with the aroma is better when it is lightly cooled. This is the first time I have heard of the rice called Momota 😳. It is a sake rice from Akita Prefecture, where both parents have Yamada Nishiki as their mother. It tastes similar to Yamadanishiki and is a bit lighter! I learned a lot 📝. I want to drink comet next year. ☄️

This time it is a regular sake RClass Nao Kumi from Sanzen Sakura. It is a regular sake made from Natsuboshi rice. It is served cold. The color is almost crystalline. The nose has a fresh fruity aroma of Japanese pear and green apple. The mild mouthfeel has a slightly effervescent feel, as is typical of nama-shu, followed by a syrupy sweetness with a fruity aroma of fresh Japanese pears, and a malty flavor behind it. The aftertaste is refreshing, with a lingering sweetness and a gradually swelling bitterness. The quality is so good that it is hard to believe it is a regular sake, and the sweetness is delicious. R is said to have a rich taste and be reasonably priced, and this is exactly what it tastes like. The other day, I participated in a sake festival at Kyoto Takashimaya. I had heard for a while that the level of Sanzen Sakura's regular sake was very high, and I really wanted to try it! I really should have brought back a different kind of sake, but there were so many varieties and President Yamada was there, too. And I also got a cool bag from Sanzen Sakura, which I was really happy about 🌸.

This time it is Shikishima. This time it is Shikishima, a sake made in Aichi Prefecture. I've been wanting to drink Shikishima for a while, and the other day I finally went to a liquor store that carries it, so I brought home a bottle that is perfect for this season. The color of the label is the same color as my cell phone cover, which is also a point 🩵. I will drink it cold. The color has a slight yellow tinge. Fine bubbles also appear in the glass. The top aroma is of sweet ripe apples with a hint of Japanese pear. When you take a sip, the mouthfeel is slightly thickened, and you can taste the sweet and juicy sweetness of apples and the sweetness of koji. The aftertaste is unexpectedly refreshing, thanks in part to the effect of the slight foaming, while softly tasting the sweetness of the koji. The crispness from the juicy sweet and sour taste in the first half is very pleasant. It's juicy and smooth to drink, but you have to be careful because of the 18% alcohol content💦. I'm going to let it sit for a week and drink it according to the label on the back. I think this is the boxy aroma you all mentioned. The juiciness is subdued, and the sweetness is gradually giving way to a chewy, smoky flavor. This is also delicious. I feel that if I let it sit for a while, the balance of sweetness and bitterness will come together more lightly. Shikishima, I like it a lot. Is it unique? Maybe the sky blue label is easier to drink 😉.

This time it is a summer sake in figure. It is a sake from Tochigi Prefecture. Today, June 15, is Chiba Prefecture Citizens' Day! Oh, shoot! Why didn't I drink Chiba sake today, I regretted💧. And I just realized that Tochigi Citizens' Day is on the same day💡. I remembered that! And I hurriedly searched for the record of outside drinking and managed to show my love for Tochigi💕. Crystal color. The top aroma is of apples and pears. From the gentle mouthfeel, the fruity taste of pears on a gentle syrupy sweetness is delicious on the nose. The fruity flavor has a moderate umami on the back side, which is delicious. The sweetness develops into a fruity sourness, and then gradually shifts to bitterness, and the way it finishes with a hint of sweetness, like a sparkler, is delicious. I first encountered this summer sake at Cafe Boo, a stylish cafe near Dojimahama Beach in Osaka, where I found a selection of wine and sake on my way home from an offline meeting. Huh? I wondered if there was such a place here. I was surprised to find that it had just opened in May. I visited there just before closing time for one drink. It looks like a cafe, but is it OK to have a drink in the afternoon? I just had to ask 😅. A new store for daytime drinkers 🍶✨.

This time it is Miyamanishiki Junmai Junmai Unrefined Nama-shu from Morishima. This sake is from Hitachi City, Ibaraki Prefecture. I drank Morishima's Omachi at an off-line meeting last time and it was so delicious that I wanted to drink it at home. This is a Miyamanishiki limited edition Miyamanishiki Nama-no-Nazake for April. It is served cold. It has a slightly greenish appearance with fine bubbles. The nose has aromas of apples, pears, and blue melon. On the palate, the fresh aroma of melon with a hint of greenness is followed by a rich flavor of rice with a hint of malted rice, and the taste is quietly tightened by the fresh bitterness of the slight effervescence. It is a refreshing umami sake with a cool Miyamanishiki feeling and plenty of rice flavor. I would like to drink hi-ire sake as it is getting a bit heavy season for nama-shu 💕. We finally made it to the middle of June this year. I'm looking at the beautiful hydrangeas, and I think this might be the hardest time of the year since it's the beginning of the hottest day of the year. I wanted to drink right away today, so I'm going to take out sushi after work and have a relaxing weekend drink. I want to stay here until the end of the year 🍶💤.

This time it is nigori sake from Hanagaki. This sake is from Ono City, Fukui Prefecture. I couldn't forget the lukewarm sake I had at the Spring New Sake Festival when I traveled to Fukui, and I've been waiting for Hanagaki nigori to arrive 💕. It is a nigori with a strong sweetness due to the four-stage brewing process. It is pure white with a smooth color. The top aroma is of sweet sake with a lot of acidity. The main taste is sweetness from the smooth creamy mouthfeel of the ori. However, the mild sweetness mixed with the oli and the acidity are well balanced, making it strangely easy to drink. It is a refreshing sake to drink on the rocks in summer. It can also be served lukewarm. It has a smooth amazake-like flavor with a sweet koji aroma, and the acidity is also very pleasant, It has a smooth amazake-like taste with a sweet koji aroma, and the acidity is also enhanced. I dared to try Hanagaki nigori with matcha chocolate. The matcha aroma and bitterness add to the nigori, and the sweet and sour taste of the chocolate is in tune with the nigori, making it an immoral snack drink 😆. Review of the new spring sake festival is complete: ✌️

This time it is a strawberry mead barrel-aged junmai sake from Gojin Musume. It's a collaboration sake between hot DJ Tsuketaro-san, Terada Honke in Chiba, and ANTELOPE. I popped it when I saw Kirataso-san enjoying it😅. There is a craft mead brewery called ANTELOPE in Shiga. Mr. Tsukitaro was so impressed with ANTELOPE's strawberry mead aged in bourbon barrels that he decided to try aging sake in these barrels! He decided that he wanted to try aging sake in these barrels, so he made an offer to the Terada family, and this sake was born. It is served at room temperature. It has a slightly golden color. The top aroma is of honey and strawberries, and there is a gentle oak aroma. The mouthfeel is slightly thickened. The taste has a mild acidity from the sake yeast with the umami of rice, and the aroma of honey with the freshness of strawberry blends with it, leaving a gentle sweet oar aroma that disappears. Sweeter than sake and lighter than mead, this exquisite 🍯🍓🥃✖️🍶 harmony is a must. Is it heavy for the upcoming rainy season? but it's surprisingly not bad. Maybe it's the flavor that reminds me of plum wine. I'm glad I got the dipping sticker too💕.

This time it is Inanohana Umeju. This sake is from Tenri, Nara Prefecture, and was started in 2020 as a special distributor brand by inviting Mr. Kurose, the toji (master brewer) of the shochu Hyakunen no Koroku (Solitude of a Hundred Years). It is served cold. It has a faintly colored appearance. The nose has a gorgeous aroma of apples, pears, and muscat. The clear, light texture is generally refreshing, with fresh sweet and sour flavors of pear and muscat flowing lightly through the palate. The aftertaste is also very sharp, and it is easy to drink in no time. The juiciness of the sweet and sour taste blooms when it is not too chilled, giving it a gentle white wine-like deliciousness. Since I had half a day free, I went on a mini Nara trip! We ended up in Tenri. There is a direct sales shop in the long arcade in front of Tenri Station, which has a good old-fashioned atmosphere. But you can't buy Inanohana here because it is a special distributor's brand. (I was politely asked to find a nearby distributor.) Train trips are great! Because you can drink it.

This time it is Hanaboe's active nigori. I still have vivid memories of seeing mayu's post and regretting that I wanted to drink it 😭, I was passing by the Umeda Yamanaka Sake store and saw that they had Hana Tomoe, so I decided to stop by and try it 😤. I had to stop by and drink it  Anyway, aren't the specs for Yamahai jun-dai awesome? I will drink it cold. It is white like calpis. The top aroma is mild, with hints of pineapple and yogurt. When you take a sip, the sweet and sour taste of pineapple that pops and then yogurt with a gentle rice flavor spreads smoothly. It is an easy-to-drink sake with a strong sense of gas and a refreshing aftertaste with the acidity typical of Yamahai. The alcohol content is 17%! If you are not careful, you will drink it in no time 😱. The label has been stylishly changed this year, I don't remember Hanaboe being such a stylish sake. I think it is getting easier to drink every year. Now that I've done my exercises with Nara sake, I think I'll go out for a little stroll in Nara, I'm ready to go for a little stroll in Nara.

This time, Koi River's Kameji Good Day. Extra Edition. Sake from Yamagata Prefecture. One day, my partner called me to tell me that he was at a sake shop and seemed to be at a loss as to what to buy as there were so many different kinds. (I told him that he should decide for himself (since it would be my choice if I decide), and he was attracted by the label of Natsuko's sake and brought it back to me. Koikawa is not my favorite after all😍. This time the sake is a regular sake because it is brewed with kame-no-o rice, which was out of equilibrium due to last year's heat wave, but the specs say it is a junmai ginjo. The color has a slight yellow tinge. The initial aroma is caramel-like with a hint of herbaceousness. At first, it was served at room temperature. The rice flavor flows smoothly with a gentle, caramel-like sweetness, and the dry taste is tightly capped by a herbaceous bitterness. Warm it up to lukewarm, The rice flavor becomes richer and the sake becomes rich and dry. Oh, it's so good! When you hear that it has a Sake meter value of +11, you may think it is super dry, but it also has a richness of umami. But it is good that the richness of the umami can also be felt well 😊. I need to review Natsuko's sake. Jicchan, jicchan! 😭

This time it is Soma no Tengu. This sake is from Takashima City, Shiga Prefecture. Lightly chilled. It is a silky, slightly cloudy sake. The top aroma is fresh and juicy with hints of apple, blue melon peel, and cypress. The mouthfeel has a slight richness. The fresh blue melon aroma gives way to a full-bodied, fine-grained, milky sweet and savory taste. The aftertaste has a sharp grapefruit-like bitter acidity mixed with sweet umami, leaving a pleasant aftertaste. Saki-ten is a fresh, full-bodied sake that can be drunk without hesitation. It is delicious. From Takashima, where Furoisen is located, we received tsukudani (food boiled in soy sauce), a specialty of Lake Biwa. There are many kinds of tsukudani, such as tsukudani of gori, tsukudani of ayu fish, and grilled skewers of moroko. And when I rummaged through our refrigerator, there it was! Soma no tengu👺. What a beautiful day to open the bottle 😆🍶.

This time it's MIYOI ORIGIN from Adachi Nozawa Brewery. Mr. Adachi was a crafan who wanted to build a brewery in Takatsuki City, Osaka, and we supported him📣. As a result, he opened a brewery in Takatsuki City's Tomida Danchi! Tonda is a historic sake production area, and setting up a brewery in that housing complex is a great idea 💡. This sake is made from Koshihikari rice grown by Mr. Adachi with raspberries added. Lightly chilled. It has a slightly reddish, thin orikara with fine bubbles on the outside. The top aroma is of greenish strawberry acidity with a hint of rice. The mouthfeel is gentle. From the refreshing acidity reminiscent of yogurt, the aroma of soft raspberries and a mild milky sweet flavor gently melts in the mouth. The overall taste is refreshingly fruity with a good bitterness with a sense of effervescence. After drinking this sake, we visited Adachi Farmer's Brewery. They told us that although raspberries were used in this sake, the fruitiness was kept to a minimum to make it more like a sake, and that the fermentation was quite active and they were struggling to suppress the yeast bacteria, so the taste was more light and delicate. I was also surprised to hear that they use an ordinary coin-operated rice milling machine for rice polishing! We also toured the brewery. I was also given a tour of the brewery and was impressed by the ingenuity of the brewery, including the use of a mezzanine floor as a koji room so that everything can be brewed in a single room in the apartment complex.

Another bottle this time, This time, we have another bottle of Gozenshu Bodai Kisho Kojozo-shu. This sake was also brought back from the Gozenshu brewery where we stopped by during our GW San-in trip. It is a typical Gozenshu kijozo-shu with a base of Bodai-hashiroshi Junmai-shu. It is served at room temperature. It has a slight yellow color. The nose has a deep raisin and fresh green aroma. There is also an aroma of sourness like yogurt. When you take a sip, you can feel the fine thickening of the mouthfeel, and the dense sweet and sour taste with dried fruit and caramel-like sweetness. It also has a rice-like flavor, like glutinous rice. The aftertaste is clean and crisp with a sour and bitter aftertaste, making it easy to drink without being too heavy, even for a kijo sake. It may be even easier to drink when chilled. It does not have the peculiar taste of Bodhidashi, and the smoothness on the tongue is very pleasant and clear. You can taste the bright and dense flavor elegantly 😊. I tasted a lot of sake at the Gozenshu brewery, and this is the one to taste the Bodai Hashiro and Omachi character! I was right to bring it home 😆. Let's go back to Okayama 🍑.

This time it is Suwaizumi's Rabbit label. This sake is from Tottori. It is a junmai sake that has been aged for two summers and is a standard sake. The label was drawn by "Frog Studio" in Hoki-cho, Tottori Prefecture, and the rabbit, composed and drawn of plants, animals, and fungi, is based on the "White Rabbit of Inaba". It is served at room temperature. Yellowish tint. Aroma of soy sauce and dried shiitake mushrooms. It has a mild mouthfeel. It has a base of matured Sanin sake-like flavor, but it has a good balance of mild sweetness of rice spreading from bitter brown rice, acidity with matured umami, and a good bitter sharpness, and is overall neatly put together and easy to drink! When warmed up, the peculiar part of the matured aroma (which is not so much) settles down and the umami and acidity become more defined and the taste tightens up👍. During my GW Sanin trip, I found Suwaizumi's Sandesi at a Montbell store just before the trailhead of Daisen and took it home immediately. If it was this good, I should have bought a bigger one 😭.

This time it is the tide. I went out to Kobe Sannomiya and stopped by Ruishirushi, a restaurant recommended by Robin. A cozy restaurant with a counter only, just the way I like it 😍. Among the various sakes on offer, I ordered this retro label from the Morinokura sake brewery! I ordered it. I asked for a heated sake, which somehow reminded me of Morinokura. Heated sake. It was full of rice and had a fresh aroma. The taste is light and refreshing, with a soft and fresh aroma, the umami of rice, a light and sweet taste, and a strong bitterness. It is easy to drink with a freshly cooked rice aroma, umami flavor, and a characteristic sharp bitter taste. It is also delicious at room temperature. We had a pleasant time with delicious sake and appetizers while chatting with Mizui's regulars and the proprietress. Personally, I enjoyed the pickled chrysanthemum and learned that chrysanthemum can be pickled raw 😊. Sannomiya at night is gorgeous and full of young people. The refreshing sea breeze unique to Kobe and the lively mood of the young people made me feel like I was on a short trip 💕.

This time it is a bear tokkuri from Tamasakura. It is also a very attractive H29BY pure rice sake, "Gohyakumangoku", I was aiming to use it as a cup of sake! It's a sin to use a cup of sake Yuyuu Kanken-Yuyu as a cup of sake. I'm so excited to remove the crown with a corkscrew, isn't it ⤴︎? After opening the bottle, I immediately started to warm up the hot spring ♨️ Oh, I forgot to drink it at room temperature 😅😅. The color is lighter than the picture. The aroma is sweet, sour, spicy, and bitter. It also smells like soy sauce and shiitake mushrooms. The taste is like soup stock with a wild acidity and bitterness that is assertive and sharp. The contrast between the rich umami and bitterness is irresistible. The bitterness is a little more assertive than the impression of the cute little bear in the Yuyuyuukankan, but the flavor of the heated sake that brings out the broth-like umami is still 👍! I had a R2BY of the same sake at the end of winter, but the H28BY is more mellow and looks good when heated with water. TAMA-Sakura is so good! I think I could see a little bit of difference between breweries after my trip to San-in area in GW. But it's still too deep, I have to go back 💨. Here's a quick shot with the Tokkuri that contained the Ten Rising Sun's Gohyakumangoku, which I emptied earlier 📷✨. This time it is Hyakugakumon Junmai Ginjyo Nama Genjyo, a.k.a. Rainbow. The characters are rainbow 🌈. It is a sake from Gosho City, Nara Prefecture. Hyakurakumon is personally attracting a lot of attention this year, I brought this sake home when I heard that Mr. Taniguchi, the co-president of the company, would be visiting the store for an event. The aroma is sweet cotton candy with a hint of apple. It has a thickened mouthfeel. The juicy sweetness and deliciousness is balanced by the acidity and bitterness, and the balance between the rich sweetness and sharpness that is typical of Omachi is very pleasant. At this event, Hyakurakumon prepared two types of sake, Rainbow and Sae, and they are both made from the same Omachi, but they are made differently for sweet and dry tastes. At first impression, I thought I would choose the dry Sae, but when I tasted the Rainbow, I was surprised, The first taste was sweet! Too sweet? But when I tasted it one more time, I thought it might be easy to drink because it was sweet but had a clean aftertaste. The first impression is not everything when it comes to alcohol 😊. Just now at work, a coworker knew I loved it and gave me some Aomori's specialty squid crackers 🦑 thanks 😆. Ika senbei definitely goes well with Rainbow! Wow, the best!
