This sake is from the Fujimoto Sake Brewery in Mizuguchi, Koka City, Shiga Prefecture. It's been a while since I've had a sake from Shiga Prefecture. My wife's parents live near this brewery, but this is the first time I've heard of it 😅. It's not a very aromatic sake, but it's easy to drink, with a good amount of acidity and sweetness.
It's close to my family's home, so I'll definitely buy some when I go there. ‼️
Shinkai KT-901
The aroma has a strong acidic and alcoholic smell.
Mouthfeel is like a modern sake with a strong sweet, sour and umami taste. It has a firm taste, but the rest in the mouth cavity from the middle is refreshing! 😗(The acidity is squeaky clean!)
I was told that KT-901 is a yeast based on Kyokai No. 9 that is capable of producing more acid! I learned a lot 📖.

This brewery is located in Mizuguchi Town, Koka City, Shiga Prefecture.
The rice is polished to 60% Nipponbare produced in Shiga Prefecture.
It has a gentle rice aroma and a light, fresh acidity,
Soft rice flavor with a gentle, crisp finish.

Here is another brand new to me, Kamikai from Koka City, Shiga Prefecture. The light pink label is impressive, but it does not appear to be a spring sake.
It has a refreshing mouthfeel with gentle sweetness and acidity, and the umami is well balanced. It has a moderately dry taste and a bitter aftertaste, making it a good match with pizza.
I have been exploring new brands lately, and this one was right up my alley.

Slightly sweet mouthfeel. Woody and grassy aroma penetrates the nose. Faintly foamy numbness. Astringent and refreshing on the palate. Slightly bitter taste. Taste of new sake.
Purchased at a sake brewery. The area of Koka City with its fields and residential areas.
The sake bottles are lined up in a showcase at the entrance of the office, with three bottles of new sake on the outside for show. I had to buy them because they were next to two bottles with cool labels.

When heated, the bitterness disappears and the sweetness is very strong. However, it is not too strong. Very tasty.
