The moment I opened it, I could smell the sweet aroma! I thought it would be sweet, but it was sharp and spicy! As expected of Onikoroshi...! But I still feel that the sweet aroma softens the spiciness. It's a fun drink 😁.

Genuine Sake (Normal Sake) Aizu Inshu ✨ The first cup of our annual New Year's sake 😆. Mellow, a little bit spicy 😳, good for warming up. Mellowed with Aizu's famous squid carrots 🦑🥕 ☺️ Aizu Kitakata Ramen Aikizuna @ Jujo 20240106

Normal sake The umami and acidity cling to the palate as you sip. It is a perfect match with Kitakata Ramen (soy sauce). More umami and sweetness. It was a very satisfying lunchtime Chinese drink 🎉. Aizu Kitakata Ramen Aikizuna @ Jujo 20230108

Mutenzo of Tachibanakura Shuzo, which we visited during our Saku Sake brewery tour in GW. My wife bought it as a souvenir. It is sweet and delicious. The sweetness is still there, but it is not too strong, and the spiciness finishes it off. Delicious.

Souvenirs of sightseeing in Akashi. Is it a limited edition of a sake brewery? I bought it because it is a limited edition sake brewery. It has a sour taste at first and a slight bitterness at the end. A little heavy? On the way, you may or may not feel a slight strange taste... (not a bad feeling). (I don't feel bad about it).

Hakone Drink Comparison Set (2) On March 1, after a year-long event, I went on a trip to Hakone as a way of consolation! The local sake was served to compare with Japanese kaiseki. It was my first time to try Hakonezan! This is the spiciest sake in the group. It is a dry ginjo-shu as you might imagine, but it is moderately rich and very good as a mid-meal drink. Of course, it goes well with ingredients as they are, but it also goes well with dishes that have been added, such as those using dashi (Japanese soup stock)!

Shin-Yamaguchi business trip (3) Shinkansen On the way back from Shin-Yamaguchi, I visited Izakaya Shinkansen after a long time 😆. Drinking Sandesi that I got yesterday at Kinko's Sake Brewery, I asked if they had 300ml of this at the brewery yesterday. I asked if they had a 300ml bottle of the Junmai Ginjo that I bought in a 4-quart bottle, so I asked if they had a different one. The one they brought out was still freshly made! The label was still fresh! I was so excited 😁. I told him it was fine if it didn't have a label on it (it's rare), but he said no, he called someone and went to the trouble of putting it on (thanks 🙇 ). mountain travel, water travel, and water travel A little sweet and sour. I remember that the last time I drank it, it was a little more dry and refreshing, maybe because it was cold sake. But this one is not so called sweet, but I can feel the sweetness of the rice. It's a nice taste! This time, I brought a glass (ochoko size) as a strong helper 🤣🤣. The possibility of having someone next to you increases as you go from Hiroshima to Okayama to Kobe. I'm a bit nervous😅😅

Shin-Yamaguchi business trip (1) Kanemitsu Brewery The day before, I had no special plans, so I arrived in Yamaguchi a little early and went to the Kinko's Sake Brewery (one stop from Shinzanguchi), which I thought would be a good place to visit. I was allowed to sample some 🍶 and was told to "take your pick from this list" 😆! I was so excited 😆. Nigori First impression, dark! This cloudy dark! Of course it is sweet! Junmai Ginjo Beautiful, delicious, soft acidity and sweetness! ZORRO This is another beautiful sake, but a little different from Junmai Ginjo. It has more acidity and fruity taste than Junmai Ginjo. Daiginjo Even clearer and more beautiful. I had called in advance (but an hour before) and felt bad that the person at the brewery had to deal with me. But they treated me well! 🙇. The nigori and junmai ginjo are new sake, and the other sake are this year's. The bottles are ready, but will be bottled after tomorrow. It's ready, but they say it will be bottled after tomorrow. I bought a freshly made Junmai Ginjo because I wanted to try it. There were also some other rare sake (aged sake) that I couldn't decide which to buy.., I also bought a 300ml bottle for the Shinkansen at Izakaya. I also bought a 300ml bottle for the Shinkansen (bullet train).

I found a sake tasting place near Yamagata Station. I didn't know such a place existed. I found one in Niigata before. I wonder if there is one in each prefecture. The taste is light, dry, and refreshing. The aftertaste is short and sharp. You can also taste the umami of the rice.

At a soba restaurant near Yamagata Station when I returned home. They use water from Antarctic ice. It has a beautiful ginjo aroma. The taste is light and dry, with a crisp acidity. There is also a slight bitterness, and the taste may be quite complex.

My daughter in Izumo sent me a bottle of sake as a birthday present. She went on a trip to Kurayoshi in Tottori Prefecture and bought it at a sake brewery 🍶. She went to Kurayoshi in Tottori Prefecture and bought it at a sake brewery. Genshu, first time to drink it. Tastes like rice Gentle rice sweetness 🍚. It's refreshing, and if I had to guess, it's more of a dry type, but there's almost no sourness. I think I haven't had a sake like this in a long time. I had never heard of this sake, but it is delicious 😋. My wife and my second son sent me some choko (cups)...they are all sake related... 😂. No, my eldest son and his wife sent me tennis and bicycle caps and a holder for my bicycle. So my daily life = tennis, biking, and drinking? I guess it fits 🤣. Thanks guys 🥰.

☀️ Saijo Sake Festival. Sake Hiroba. The difference from previous events is that the whole town of Saijo is drinking from noon 😅. There is no way that the already drunk people would come on time for the 17:00 start time 🙄. The Sake Hiroba venue got more and more crowded as time went by🤣. Sake 🍶. This sake 🍶 is a first for me 👀. It has a slight yellow tinge and a slight alcohol taste. Light sweetness, peanut🥜 type sweetness. A sake I thought had an old-fashioned finish 🍶. *The second picture is the label I put on myself at the labeling corner for the commemoration of my visit: 🏷️🤣

The aroma is subdued. It goes down the palate as softly as water, without insisting on much, and passes down the throat refreshingly and cleanly. It is just like a conductor who silently nurtures young people.

Rice used is Dewa Sanzan As indicated by the alcohol content of 19 degrees, it is a gut-punching wine. ‼️ And it has the same throat and mouthfeel as you would expect from Muroka Nama-no-Hara Sake. The sweetness also comes through perfectly. It has a great impact, but it is sharp and has a clean finish, so it does not feel too heavy. However, if you drink it too fast, it will take its toll later on. It was a fun drink. ❣️

This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens 😆. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.

A little bitterness on the nose and bitterness on the tongue. It tastes a bit like old-fashioned sake. However, it goes well with boiled fish. It is like a flavorful addition to fish. It would have been nice to have some local fish, but since we were drinking at home...

Tottori, Tottori Prefecture, Japan. Nakagawa Sake Brewery Co. Inabatsuru Junmai Sake, Namahashige, Strong. I don't remember where I bought this at the department store. I don't remember, but I tried it, liked it, and bought it. I drink it cold at room temperature. The color is clear with a slight yellowish tinge. The top aroma is a citrus aroma surrounded by a dignified alcohol aroma. The mouthfeel is clear and slightly yellow. On the palate, acidity and a slight astringency spread across the tongue, and after swallowing, one senses citrus and yogurt-like acidity, with a creamy, orange-infused yogurt-like taste. The aftertaste is sharp, lively, and pungent, with a short finish. I like the interesting yogurt-like creaminess of the unique sourness of the sake's raw yeast yeast yeast. I thought it could also be served heated, but I'll have to do it soon, it's already spring. I thought it would go well hot, but if I don't get it warmed up soon, it will be spring already. When lukewarm to human skin warming, the bitterness settles down, but the creaminess is not so strong. The creaminess is not so strong. I liked it best at room temperature. Ingredients: Rice (Tottori Prefecture), Rice Koji (Tottori Prefecture) Rice polishing ratio: 75 Alcohol content:15
