Again, a white chrysanthemum from Okunoto.
This is Noto's Natsuyasumi's
extra edition.
After drinking the last Blue Sea label
I am too anxious to get the extra edition too 🤭.
The last label was blue sea.
The extra edition is an evening view🌅.
Both have beautiful sea views.
It will be served chilled.
Almost crystalline in color.
The top aroma is of fresh blue bananas.
From the gentle mouthfeel, fresh banana aroma with a slight rummy taste spreads pleasantly, and the taste has a gentle flow of richness with a gentle sweet flavor. The last taste finishes with a gentle bitterness.
The taste reminds one of a summer moment when the heat gradually eases and the evening scene quietly fades away.
Personally, I prefer the extra flavor.
I am looking forward to the chance to compare the Shirafuji Sake Brewery's offerings!
Happy Natsuyasumi🌻.
National Sake Fair 2025 (5)
National Sake Fair held in Osaka in conjunction with the Expo
This is the last one.
The last one is Shirakiku from Okunonoto.
It is called "Noto no Natsuyasumi.
The label is also nice and reminds us of the sea of Noto.
This is the first sake after the resumption of brewing in Noto in March this year.
It is served chilled.
It has a slight yellow hue.
The nose has a rich aroma of honeysuckle, chervil, melon, and cream.
From the gentle mouthfeel, from the soft and fresh floral intro, the richness of sweet and umami taste is smooth, and the sourness like butter candy is firmly felt. In the latter half, the bitterness gradually appears and the finish is slow and lingering.
The way the richness of sweetness and umami comes out may be a little unbalanced, but it is still delicious and keeps you coming back for more 😊.
Is there a version of Ishikawa Sake No. 68, newly developed in Ishikawa Prefecture? Is the extra version, Yuyake, more on the dry side?
I tasted a whole range of Noto sake at the National Sake Fair, and I still love Okunonoto's Shirakiku. I was so happy I took it home immediately😊.
Finishing up with everyone who went to the Kokunisake Fair 📷✨.
Good evening, Peco 🦉.
I can tell from the photos that you had a lot of fun👍and I want to drink this sake! It's a taste of Okunoto after all ✨The sake cups are beautiful with matching labels too ❣️
Hi, Pon. I can imagine how hard it must have been for you to go back to Noto and restart brewing again. I had the sake cup made of Noto indigo, thinking of Noto 😊Pon-chan, I hope you will too!
Hi, Hirupeko 😃.
Okunoto! It's a nice, calming label 😌 something to think about, it's great that you arrived at this peaceful blue color 🥹.
I would love to drink it 😊.
Good evening, Jay & Nobby. The label of the calm sea is lovely, but I think it's only because of your efforts to restore the calm (maybe not yet). I also got the extra sunset and will upload it later 😊.
I bought it because I thought the atmosphere of the label and the name "Natsuyasumi" sounded like a nostalgic game called Boku no Natsuyasumi (Boku no Natsuyasumi) 🏖️
This is the first sake brewed at the brewery after the earthquake.
The taste is calm and quiet, but it has a refreshing sweetness and beautiful acidity.
I'm glad to be able to drink it again 🤗.
Good morning, Termat 😀
Boku Natsu's relaxed world makes me want to be healed 😌 We may still have a long way to go, but we are making progress towards recovery by being able to make sake in the brewery 😊.
It's been a while since I've been to the night market 😁I enjoyed the local beer, so I'll be back for 3 straight ⚾️ and today I'll have some sake from here 🍶.
😋.
Let's start with the standing aroma. I feel a refreshing sweetness that tickles my nostrils. In the mouth, there is a strong sweetness and umami from the rice, and a smooth mouthfeel while retaining the sake-like acidity, with a slight refreshing bitterness at the end.
Serve with sashimi (🐟). It goes well with all seafood 😁The strong rice sweetness and umami of this sake gently envelopes the sashimi. It goes well with everything ❤️👍

It's been a while since I've had a local sake from Noto.
This is my first time to drink Okunoto's Shirakiku, but it was gentle and kind, a good bottle for a mealtime drink. It was delicious 🍶.
I would love to travel to Noto someday 😌.
Sales are finally underway.
Shirafuji Sake Brewery has made a comeback in the disaster-stricken area of Wajima. Here comes "Noto no Natsuyasumi".
The label is a beautiful blue label reminiscent of the "sea of Wajima.
When poured into a glass, the sake is beautifully clear. The sweetness and umami of the rice comes through in the mouth.
The other day, I had a chance to drive around Okunoto. The reconstruction of Okunoto is still in the middle of the road. We will continue to support them without forgetting.
The sake was finally made at the brewery after the earthquake.
While I think that some areas of Noto must still be in trouble, I can't help but cheer when I see scenery like this that is returning to normal. I hope I am supporting them even a little by drinking this sake.
It is a junmai ginjo, so it has a gentle sweetness. It tastes like melon. It was delicious.
(沒沒沒) ▥Director of the Department of Health, Labor and Welfare🍶🍶🍶🍶
Today, I came back to my hometown and had a bottle of Okunoto Shirakiku that I bought at a local liquor store.
The aroma is mild 😀The taste on the palate is refreshing and light 😚👍It seems to be a refreshing and crisp sake that goes well with this season ✨🥳✨.
The fourth picture is a tenmusu inari (station bento) I bought at Toyohashi station on my way home on the train 🚄🍙The flavorful inari sushi was delicious 😋👍.
Good evening, Jay & Nobby 🌃😀
It's a summery ☀️🍉🌻 sake with a name and label 😚👍It's a Hakugiku that was totally destroyed, but this time it was brewed independently 😊I have plans after I get home 😵I wanted to have a drink 😭

The same fruity aroma as on the top, the full rice flavor and sweetness spreads with beautiful acidity, and it finishes quickly with a little bitterness and lingering sweetness of rice.
It is fresh and has a good balance of sweetness, umami, and acidity, and is delicious with a meal or on its own.
It went well with Thai carpaccio and homemade meat sauce.
