The first bottle was sold out, so we had a 4gou bottle.
The rich umami of the raw sake is pleasant along with the flavor of the raw sake.
I had the impression that Shirakiku was sweet, but it was just right, and the bottle was empty in less than two days.
Quite juicy, mellow and sweet.
It leaves a heavy aftertaste.
The acidity is less than I expected, and I think it is heavy for a summer sake.
However, the mild umami and richness that is typical of rice is deeply impressive, and is typical of Shirakiku from Okunoto.

Oh no, it's a sake from Shirafuji in Wajima. It is a special pure unfiltered raw sake.
I am glad I could get it during this Bon Festival.
When you put it in your mouth, you can feel the acidity and sweetness. This, this, this. After drinking it down, the bitterness from the umami of the rice lingers on the tongue. The overall taste of this sake is gentle and cohesive, a characteristic of the Shirafuji Sake Brewery.
I am slowly enjoying it with a side of grilled squid with shichimi mayo.
The number of brewers seems to have decreased, but I will continue to support this carefully brewed delicious sake.

I opened a bottle of Noto no Natsuyasumi Extra today 😀 I bought it because I had never seen the label before.
The extra edition was released from the brewery because there was a mistake in Shirafuji's operations. When preparing to bottle the "Junmai Ginjo Noto no Natsuyasumi", it was accidentally put into another tank and a significant amount of it was blended in. After much deliberation, the blended sake was adjusted and released from the brewery as "Nono no Natsuyasumi Extra Edition.
The aroma is mild 😊and the taste is mild with gentle sweetness and acidity 😚 It is good to drink without getting tired 😚👍✨The extra version is also a good😇 and tasty sake 🥳.

On Thursday, our client, who had come from Sapporo to support us, returned to Sapporo for the last time in July. It has been a year and a half since the disaster, and we thank them for their hard work.
This sake was also stocked but we opened a bottle.
This sake is also very mild and gentle.
By the way, I see that the brewery is featured in the dancyu summer sake special. It will be delivered to my house today, but the magazine has become more expensive 😅.

Sake brewing rice that survived the Noto Peninsula earthquake is used.
It was brewed at the Yukawa Sake Brewery under the supervision of the Shirafuji Sake Brewery. Last year, we were able to find and bring this sake to a sake shop in Nanao.
It seems that they have now resumed sake brewing in Wajima, so we decided to open a bottle.
It has been over a year since I bought it.
It is a mild and soft sake.
The rice was milled before the disaster and escaped the difficulties that awaited sake brewing.
We received a little bit of the power that survived.
I pray that no water disasters will occur this year 🙏.
Here is the first bottle of sake that was repaired from the brewery that was damaged by the earthquake and resumed sake production.
