This time it is a R4BY of Shunshin's yeast-free, pure yeast-stocked, pure rice x Koshihikari-brewed sake.
I brought this sake back from a recent visit to Takashimaya in Namba for a tasting to meet the toji-san.
It has a golden hue.
The nose has a strong acidity with aromas of savory grains and soy sauce, and a sweetness that reminds us of dried fruits and barrels.
First, it is served at room temperature.
The taste is a bit thick and smooth, with a strong lemon-like acidity that is covered by a rich grain-like broth-like umami and concentrated sweetness like dried fruit. Ah, a unique yet beautiful taste.
Surprisingly, it has something in common with Ine Mangaka 🤔.
The sweet and sour taste that stands out when it is warmed up and the dashi-like flavor is irresistible, yummy!
It feels as if you are drinking Japanese hot wine and the aftertaste is very pleasant.
The citrusy acidity and the full rice flavor that wraps around the acidity are unique and delicious.
This is the sake that bouken-san told me I would like. He was right.

Hi Jay & Nobby. It's a pretty sour sake, but the way it's wrapped up with a lot of brothiness is indescribable. I would definitely recommend this sake with warmed sake 😊.
