This time it is Junmai Ginjo Hiyoroshi from Kido. This sake is made from Gohyakumangoku. The first Hiyahoroshi of the year🍂? It is served lightly chilled. It has a pale green appearance. The top aroma is of sweet cotton candy and ripe apples. There is also an aroma of rice like Kamishinko. The mouthfeel is mild. The taste is mild and somewhat light for a hiyaoroshi, The first half of the taste is juicy ripe apple with a burst of sweet and sourness like grapefruit, followed by the soft and full flavor of rice and hints of banana. The finish is tightened with a moderate bitterness and lingering umami. This hiyaoroshi is mild and easy to drink without being overly floral. This well-balanced flavor at a great price😳 Kido is a sake that I sometimes want to drink without any hesitation. It is a stable sake. 🌙 Watching the big red sunset and the crescent moon as I savor the hiyaoroshi ✨. Let's take it easy, one step at a time in autumn 😌.

This time it is a long-aged sake from Ippongi. It is a special junmai sake, a former product of Denshin, a limited distribution sake of Ippongi, that was stored for several years in a room temperature warehouse, and then aged for a long time in a Kotsuyaishi cave where the temperature is kept at around 10℃ throughout the year, making it a 31-year-old sake. It is served at room temperature. Topaz-colored appearance. The nose has hints of mushrooms, aromatic wood, burdock root, bitter chocolate, and sour cream. Gentle on the palate. The base is a fine bitterness and an angular acidity. The lingering taste is intertwined with bitterness and gentle sweetness, and flows down slowly and quietly. It is an aged sake with a well-defined and elegant taste, not too rich and dense compared to its age and apparent image. When warmed, the bitterness is subdued and the elegant sweetness is enhanced, making it delicious as well. In Katsuyama, where the Dinosaur Museum is located, I was forced to make a side trip to "Ippongi is so close! I was forced to make a side trip. I was so happy to get the old ripe one 💕💕.

This time it is a summer cup of Shinomine. I wanted to drink Shinomine in summer, but I haven't been able to drink it this year, so I got a cup of it. It seems to be a summer limited edition from Rokumaru. The label reminds me of summer vacation in elementary school, which is the complete opposite of Shinomine's style. It is served chilled. It has a slight green hue. The aroma is of yellow apples and grapefruit peel with a hint of bitterness and freshly pounded rice cake. The taste is sharp and crisp with a dryness that stands out. It was a little too cold. The taste is so dry that I can't really taste it, so I let it come back to room temperature for a bit. Then, the taste is a smooth flow of sourness with a hint of apple-like sweetness, and the rice flavor with a gentle rice-cake feel. It is a light dry shinomine with a firm bitter acidity and a sharp taste 😊. Maybe it is better not to cool it down. I want to drink sake from all over Japan, so I buy cups of sake at Ajinomatidaya and take pictures of them in a corner of my house 🤫. I can enjoy my cup sake journey for a while 🤭.

This time it's Oriental whey🦊 from Happy Taro, who brews craft doburoku. I finally got to go there when I went back to Shiga for Obon! We went to Happy Taro-san's at Lake Scole in Nagahama. I had the pleasure of meeting Taro-san and brought home a brewery exclusive Oriental Whey. Oriental Whey is a doburoku made by combining the whey from the cheese shop in Lake Schole with spices as the brewing water. It is served well chilled. The appearance is that of a frothy cola doburoku. The top aroma is fresh yogurt with spicy aroma of ginger and other spices based on cardamom. The taste is like a sweet and sour lassi full of craft cola, and the second half has a light milky rice taste that is tightened up with a spicy hot taste. The lightness of the 7% alcohol content makes it as easy to drink as a cola 🤣. To match this oriental whey, I went to the library and checked out a book called "My First Spiced Curry" and made a keema curry. I've never made a curry without curry powder before, and I managed to finish it while staring at the book😅. Pairing homemade keema curry is a good thing 😋.

Continuing from the last time, this is Cape Echizen, Kutouryuu version. This sake is made from Kutouryuu, a rare variety of sake from Fukui Prefecture that was revived in 2014 for the first time in about 10 years. We were looking forward to it because we heard that Kutouryuu was recommended by someone who visited Cape Echizen just before our trip to Fukui.â It is served at room temperature. Slightly greenish appearance. The top aroma is a gorgeous aroma of sweet banana and blue melon, green bamboo, cypress, and freshly pounded rice cake. From the smooth mouthfeel, the aroma of fresh bananas easily passes through to the nose, and the gentle acidity and umami of the rice can be felt firmly, although it is light. It has a mild bitterness and a short aftertaste. When heated, the fruity taste of banana and the umami of the rice are more mellow and sweet. Delicious balance of sweet taste and refreshing sharpness. Both of the sake I compared are suitable for a light and refreshing mealtime drink, The 🟣Gohyakumangoku is more mild, The 🟣Gohyakumangoku is more mild and the 🟡Kuzuryu is lighter with a fresh fruity taste. Both are delicious. The ease of drinking heated sake is 😋. Very happy to be able to compare them side by side with a glass from the spring Fukui New Sake Festival 😊.

This time it is Echizen-misaki. We visited the brewery because we stayed at Cape Echizen during our summer vacation in Reinokita, Fukui. The brewery staff had just left and we were greeted by the father, mother, and dog, Choco, who gave us a variety of tastings. This time we decided to take home two bottles of 🟣Gohyakumangoku and 🟡Kuzuryu with different rice 😊. By the way, the brewery is near Eiheiji, not Cape Echizen😅. I'll start with the Gohyakumangoku. It is served at room temperature. It has a slightly greenish appearance, and the top aroma is a calm banana with a hint of blue melon. It also has a freshly pounded rice cake and a little bit of green bamboo. It has a smooth mouthfeel. The nose is full of banana aroma, and the taste is crisp with a soft acidity and mild bitterness with a moderate umami of the rice. When heated up, the banana aroma subsides, and the soft acidity and the enhanced rice flavor can be enjoyed lightly, making this lightly heated sake one that can be drunk endlessly 😆. The mainstay of Fukui sake is Gohyakumangoku produced in Fukui. Ihyakumangoku tends to be a rather plain sake, but each brewery has its own originality and the unique flavor of Ihyakumangoku is good and never tiresome to drink. This was a sake trip that reminded me once again that Ihyakumangoku is also good. Next time, we will go to the Kuzuryu version.

Another bottle this time. It is WAKAZE nigori. It is a French WAKAZE, so, oh, is it a real national product, including overseas? This one was brought by a friend who got together with us. I knew I couldn't open it by myself, so they brought it to me! The character on the lid is adorable 💕. Thank you 😆. I'll have it cold. It is a light cloudy sake. The top aroma is like calpis mixed with amazake. The sweet flavor of amazake with a slight caramelized taste flows easily and disappears like water. This time it's Hachigannishiki Hi-ire from Jikin. I've never actually bought a very famous brand like this for myself, and I was so thrilled to be able to buy it for myself that I couldn't open it by myself💦. I was too nervous to open it by myself 💦, so I decided to barge over to my friend's house and have a drink with her. The top aroma is a fresh, flowing pineapple aroma. The taste is gentle pineapple sweet and sour with a gentle rice flavor, and a firm bitterness with a refreshing aftertaste. It is a perfect summer sake that is refreshing and easy to drink. It is a beautiful sake after all. Thanks to my friends for coming over and preparing so much food for us. Thank you so much! You are too good 😍.

Fukui Reinetsu Trip in Summer (3) A 3-day/2-night trip based on Echizen-kaigan. On the last day, we went from Katsuyama to Echizen-Ono. First, we went to the Dinosaur Museum, which we skipped in the spring. I never cared much for dinosaurs, but after a tour of the dinosaur museum, they became more real to me and I think I shared my enthusiasm for dinosaurs 🦕. It's just like your sake! I was told of course 😅. Echizen Ono is a castle town and I wanted to climb the castle, but due to time constraints, I only went to the Ooshimizu spring. I would have liked to explore a bit more! Then we went to Hanagaki for sake brewery. Among the many samples I tasted, I brought home a Junmai Daiginjo of Misato Nishiki. I thought, "Isn't Misato Nishiki an Akita rice? I thought it was Akita rice, but when I tasted it, it grabbed my heart. It is served at room temperature. The top taste is ripe apple, banana, and green bamboo. The first sip reveals a refreshing acidity and a thick, creamy banana flavor that is typical of Hanagaki. The lingering astringency that quietly lingers in the aftertaste is pleasant. A little expensive, but delicious! It was fun to take a sake tour while viewing the beautiful countryside of Fukui! It was a wonderful summer vacation!

Fukui Reinetsu Trip in Summer (2) A 3-day/2-night trip based on the Echizen coast. On the second day, a footbath at Awara Onsen (hot spring), Tojinbo, Borgara rice, and a sake brewery are called "Hana Candle". The sake is served lightly chilled. The aroma is of ripe apples with a hint of barley. The overall taste is light and smooth. The nose has a soft apple-like sweetness, followed by a brandy-like smokiness, and the taste of rice cake. The aftertaste is bitter with a sharp acidity that gradually fades away with an astringent taste that lingers on the tongue. The peak of sweetness and umami, which changes from soft sweetness to smoky and thickens, is followed by an astringent finish that is interesting. After a day of drinking, the smokiness settles down and the sake becomes lighter and easier to drink. On the second day, we enjoyed a leisurely evening drink while watching the sunset on the Echizen coast and re-searing grilled mackerel sushi. I can't tell you how happy I am to spend the time leisurely as the sun sets and the moon turns to a crescent moon 💕. And all the while pretending to be a stylish dinnertime drinker, In fact, I made the painful mistake of forgetting to bring a sake cup this time. I'm drinking from the big mug provided in the cottage😅.

Fukui Reinetsu Trip in Summer (1) This is a 3-day/2-night trip based on the Echizen coast. On the first day, we visited Eiheiji Temple to get healed, and then went to Echizen Cape to visit the sake brewery Hakugakusen. We tasted a lot of sake at the Echizen Cape brewery, so we decided to have a drink at Hakugakusen. We had two kinds of sake: Kurotetsu and Umimatsu. Both are made from Gohyakumangoku sake produced in Fukui. We will have them lightly chilled. Junmai Daiginjo Kurotetsu The aroma of the first rise reminds us of ripe apples and grapes. The fruity acidity and full-bodied sweetness like that of wasanbon (a type of Japanese sweet and sour cake) rise up from the grape-like aroma, and a soft sweet aftertaste can be enjoyed slowly with a calm bitterness. Junmai Ginjo Umimatsu This is a fire-aged version of summer sake. I was surprised when I took off the cover of the bottle without thinking and the lid flew off. Another bottle this time, It is the same Hatsuzakura Yamada Ginjirou Nama Nama Normal Sake 2017BY as the previous one. As the name suggests, this sake is made with Yamada-Nishiki and Ginbuki, and was aged in the new koji room of the brewery at the time, as the smell of the new koji room tends to transfer easily. I brought this one home with me the other day when I stopped by the brewery. First, a cold sake. It has a pale greenish yellow color. What's that? Surprisingly, the color is the same as that of Nihonbaru. The top aroma is of fragrant chocolate with a high cacao content and a little bit of soy sauce. The aroma is full of fruity, cacao-like aroma, and the taste is matured and has a strong sweet/umami flavor. The sweet and savory taste is more well-rounded than expected, and the aftertaste is surprisingly refreshing. When heated, the aroma of freshly cooked rice is gorgeous, with a soft, full-bodied acidity and a delicious sweet-umami flavor with a gorgeous cocoa aroma. It is like rice chocolate 🍫. When we stopped by the brewery, the brewer kindly allowed us to take a tour of the brewery 🙏 Thanks to the kindness of the brewery owner, we were able to see the brewery. I learned a lot as the brewery owner explained everything from the well to the Sase-style wooden vat press in great detail, all covered in sweat. Yasui Sake Brewery is a small brewery, so it's a pity that you can rarely see them outside of Shiga Prefecture 😢. The newest brew, Nama Hashitake Taro, and the aged Yamada Ginjiro are both delicious👍!

This time it is New Hatsusakura's Nihonbare. I like this series so much that I went to the brewery to bring back this year's newest release. With this sake, we now have three brothers (Tamaei, Ginbukiyo, Nihonbare). By the way, Nihonbare was the number one planted rice until it was overtaken by Koshihikari, and it seems that Tamagawa's Ice Breaker also uses Nihonbare. It is served cold. It has a pale yellow-green color. The top aroma is young raisins and apricots with nuts and green bamboo. The taste is a mixture of sweet and sour like juicy yellow peaches and soft umami. The summery, refreshing acidity is added in the aftertaste, and the juicy sweet-amami lingering taste can be enjoyed slowly. And when heated, the rice aroma is gorgeous, The aroma of rice stands out gorgeously and the taste is deliciously acidic. I thought it was a little watery at first opening, but it was still delicious and my favorite 😋. The entrée was cucumber and yam with umeboshi chazuke-no-moto. I was out for a drink the other night and was served a jar of cucumber tataki with umeboshi chazuke-no-moto sandwiched in between and was told to shake well before serving 😳. But it was definitely delicious 🥒🍵. I just didn't know that? Any vegetable can be made into asazuke super fast! Is summer the season for Nihonbashi and umeboshi chazuke?

This time it is a Junmai-shu retro label from Houken. This sake is from Kure City, Hiroshima Prefecture. Houken is known for its Hachitan-Nishiki, and this one is a Junmai-shu based on Hachitan-Nishiki, blended with Junmai-Daiginjo and Junmai-Ginjo blame portions. The label is also a must for retro label lovers😍. It is served cold. Crystal color with a slight yellow tinge. The top aroma is bitter and sour like grapefruit with a hint of green bamboo. The palate is gentle, and the overall impression is clear, light and dry like clear water. It has a light flavor with a hint of banana, a mild umami that seems to put a thin veil over the tongue, and a moderate bitterness that is crisp and tasty. I was impressed with the taste of this sake when I had it cold as my first drink at a heated sake bar. I was so impressed with the taste that I was going to buy it whenever I saw it. Then I saw it at Yamanaka the other day and immediately bought it at ‼️. It's too hot today, so I'll hold off, but I'd love to enjoy some heated sake 😊.

This time it was Tadashi Junmai Ginjo Yamadanishiki. I had been wanting to drink Tadashi for a while, so I went to a liquor store and found this black label and the light blue label (see Jay & Nobby for details) of the summer version of Yamadanishiki. The liquor store said that the summer sake was lower in alcohol and more acidic, but what did you think? I will drink it cold. It has a faint green hue. The aroma on the nose is of muscat, blue melon, fresh fruity apple, and cool bamboo grass. From the gentle mouthfeel, the fruity aroma of muscat with hints of soft sweetness flows gently. The overall flavor is gentle, The full-bodied caramel-like sweetness is mixed with a refreshing acidity with a sense of minerality, and the lingering taste is slightly bitter and somewhat short. The taste is like a well-defined syrupy sweetness wrapped in a mild acidity, like that of a ramune. It has a fizziness and a bitter taste with the richness of the rice flavor, and it finishes with a medium aftertaste. It is a very beautiful sake with a Junmai Daiginjo-style mild sweetness and a fruity aroma with a summery freshness that is delicious. I wonder if it would have been better if it had been chilled and tasted crisp and clear? I thought it would go well with tempura, so I served it with fried lotus root stuffed with seafood that I found at the supermarket (also delicious), but I really want to enjoy it with hamo (Japanese conger eel) tempura to feel summer. I brought this sake back from a recent visit to Takashimaya in Namba for a tasting to meet the toji-san. It has a golden hue. The nose has a strong acidity with aromas of savory grains and soy sauce, and a sweetness that reminds us of dried fruits and barrels. First, it is served at room temperature. The taste is a bit thick and smooth, with a strong lemon-like acidity that is covered by a rich grain-like broth-like umami and concentrated sweetness like dried fruit. Ah, a unique yet beautiful taste. Surprisingly, it has something in common with Ine Mangaka 🤔. The sweet and sour taste that stands out when it is warmed up and the dashi-like flavor is irresistible, yummy! It feels as if you are drinking Japanese hot wine and the aftertaste is very pleasant. This time we have another one, a special junmai from Gokujo Yoshinogawa. This sake is from Nagaoka City, Niigata Prefecture. I wandered over to Umeda Hankyu and found Yoshinogawa on tap, Niigata is known for its "Gohyakumangoku" (five hundred million stone)! I'm taking it home with me to study up on Niigata sake, which I haven't had much of. I drink it cold. It has a crystal, slightly green and yellow appearance. The nose is fresh, with grapefruit, banana, blue melon, and cypress nuances. The mouthfeel is smooth. The taste is sweet and delicious with a slight banana flavor, with a gentle acidity, a mild bitterness and a lingering astringent aftertaste like the aftertaste of bananas. The taste is light and dry with a sense of rice that is typical of Niigata. It won the gold medal in the national heated sake contest, so we tried it heated. Wow! Light and refreshing taste from the aroma of freshly cooked rice. Lightly heated sake! The fact that it's so light but still has a lot of body is probably due to the riceiness at its core.
