This time it is a R4BY of Shunshin's yeast-free, pure yeast-stocked, pure rice x Koshihikari-brewed sake.
I brought this sake back from a recent visit to Takashimaya in Namba for a tasting to meet the toji-san.
It has a golden hue.
The nose has a strong acidity with aromas of savory grains and soy sauce, and a sweetness that reminds us of dried fruits and barrels.
First, it is served at room temperature.
The taste is a bit thick and smooth, with a strong lemon-like acidity that is covered by a rich grain-like broth-like umami and concentrated sweetness like dried fruit. Ah, a unique yet beautiful taste.
Surprisingly, it has something in common with Ine Mangaka 🤔.
The sweet and sour taste that stands out when it is warmed up and the dashi-like flavor is irresistible, yummy!
It feels as if you are drinking Japanese hot wine and the aftertaste is very pleasant.
The citrusy acidity and the full rice flavor that wraps around the acidity are unique and delicious.
This is the sake that bouken-san told me I would like. He was right.

I bought it when the brewer came to Takashimaya.
I've never talked to Mr. Nishide because of bad timing every time😅.
The name comes from Moro-chan and Mi-chan (Moromi🐱) that he keeps at the brewery.
The name is derived from Moro and Mi-chan🐱.
Sourness and appleiness. Gentle sweetness. I got the impression that it is a low-alcohol, sweet and sour sake. I'd like to try the light nigori sake that Hirupeko-san was drinking 😋.
I feel it is a sake that is easy to drink and has a unique atmosphere of Shunshin at the same time.
I thought it would be suitable for warming up sake.
If you drink it at room temperature, you'll get more apple flavor, but you'll also get a stronger woody aroma.

Slightly sweet and gentle impression. There was also a bottle of this sake, but it seems to have been sold out. A little expensive.

This is a sake for Moro-chan and Mi-chan, the cats kept at the brewery.
I bought a packet because it was so cute.

Shunshin - Shunshin Nama Hashiroshi Junmai Koshihikari
It has a strong acidity and a unique complex flavor, and is quite peculiar.
It can be served at room temperature or warmed up. It left the biggest impression on me. I think Hirupeko would like it 🤔.
