I bought this sake because it is made from Koshihikari 🙋The rice taste is perfect and the aroma is good 😀 It is a more royal strong style sake than nowadays 😀.

I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture.
I've been curious about this sake for a while but never got around to it.
I will have it with boiled flounder 🙏.
I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆.
It's a bit like a lighter version of Tamagawa.
As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

This time it is a R4BY of Shunshin's yeast-free, pure yeast-stocked, pure rice x Koshihikari-brewed sake.
I brought this sake back from a recent visit to Takashimaya in Namba for a tasting to meet the toji-san.
It has a golden hue.
The nose has a strong acidity with aromas of savory grains and soy sauce, and a sweetness that reminds us of dried fruits and barrels.
First, it is served at room temperature.
The taste is a bit thick and smooth, with a strong lemon-like acidity that is covered by a rich grain-like broth-like umami and concentrated sweetness like dried fruit. Ah, a unique yet beautiful taste.
Surprisingly, it has something in common with Ine Mangaka 🤔.
The sweet and sour taste that stands out when it is warmed up and the dashi-like flavor is irresistible, yummy!
It feels as if you are drinking Japanese hot wine and the aftertaste is very pleasant.
The citrusy acidity and the full rice flavor that wraps around the acidity are unique and delicious.
This is the sake that bouken-san told me I would like. He was right.

I bought it when the brewer came to Takashimaya.
I've never talked to Mr. Nishide because of bad timing every time😅.
The name comes from Moro-chan and Mi-chan (Moromi🐱) that he keeps at the brewery.

Sourness and appleiness. Gentle sweetness. I got the impression that it is a low-alcohol, sweet and sour sake. I'd like to try the light nigori sake that Hirupeko-san was drinking 😋.
I feel it is a sake that is easy to drink and has a unique atmosphere of Shunshin at the same time.
I thought it would be suitable for warming up sake.
If you drink it at room temperature, you'll get more apple flavor, but you'll also get a stronger woody aroma.

This time it is Junmai-shu Moromi from Shunshin. Sake from Komatsu City, Ishikawa Prefecture.
Today is Neko day,
I was so taken by the cuteness of the hand-knitted coasters in the Nyannyan set that the Nishide Sake Brewery puts out every year that I ordered one.
And they let me choose one of the four Nishide cats 😻I chose the youngest one, Oar-kun.
By the way, the two animals on the label are Nishide Moro and Nishide Mi-chan.
The letter and sakekasu (sake lees) came as a free gift. The sakekasu is fresh and has a whey aroma! Delicious as it is 😋.
The sake has a light muddy yellow color, and the aroma of green bamboo and dark orange juice.
First, drink it at room temperature.
It has a slightly thickened mouthfeel. The smooth sweet and sour taste is interesting, with orange-like sweetness and acidity mixed with the rich rice flavor. The latter half of the taste is tightened up with a tangy, bitter spiciness, while enjoying the lingering umami of the rice.
When heated, it was delicious!
A simple pairing dish of heated sake and the sake lees we received.
The orange flavor is more intense when heated and it goes well with the sakekasu cheesecake.
When heated up, the aroma of the rice expands richly on top of it and goes well with pork marinated in miso lees!
