This time it is Rumiko's special junmai aged sake H29BY. This sake is made with Ise-Nishiki and No. 9 yeast. Ise-Nishiki is the oldest remaining sake rice, and is said to have a lineage that extends all the way back to Yamada-Nishiki. First at room temperature. Sake with a soft yellowish color. In the aging process, it has a soft sweet and savory aroma with an earthy flavor. Am I the only one who can sense the abundant harvest of rice just from the aroma? From a very mellow mouthfeel, the sweet and savory flavor of gently roasted rice flows smoothly. The latter half of the taste is broken by acidity and bitterness, leaving a light aftertaste of sweetness from the rice. And when served warmed, The comforting sensation of gently unraveling with the soft and fluffy rice broth feeling. Happiness 😊. I met Rumiko at an event and was impressed by her powerful and agile hospitality! I will never forget the way she spoke passionately about sake and sake rice. I will never forget how passionately she talked about sake and sake rice.
