This time it's Okura's Aizan x Association No. 8 unfiltered raw sake R1BY. It's already crazy 😅. It is served cold. Pale yellow-green in color. The nose has a mild ripe apple and nutty aroma. The mouthfeel is thick. The taste is robust and rich, The first thing that hits your throat is the acidity. From there, deep raisin and ripe apple nuances, and overall, a round and thick flavor that is pleasantly mellow and thick. In the latter half, the bitter taste gradually fades away, leaving behind a mild sweetness and umami. The powerful flavor of Aizan and Association No. 8 is, of course, a given! However, R1BY's mildly rounded and matured taste makes it easier to drink and tastier than expected. It is powerful, but it doesn't stop you from drinking. This kind of mellow umami type is still my favorite 💕. And when heated, the ripe aroma settles down, and the savory broth from the rice, acidity, and bitterness become more balanced and delicious. In my opinion, Aizan sake is sweet and juicy. But this one is not sweet 😎. Aizan, like Okura, was recommended to me by Noyori-san and it was a good encounter 😊.
