This time it is a little birdsong of Kamikame. I attended a shochu study group that I was invited to. I was excited to hear that the bar was participating in the go-around on 10/1, and that they were holding the event with heated sake from Kamikame. ⤴︎ Everyone was seriously tasting Shochu, but I wanted to drink Shinkame no matter what, so I started to warm up my own Shinkame 😅. But on that day, I dropped by the Hyogo Sake event at Kobe Hankyu, I stopped by the event of Hyogo sake at Kobe Hankyu, and had sake tasting -> shochu tasting without vomit vessel -> Shinkame -> wine. I was so drunk that I fell and injured my left hand on the way back home. On the way home, I fell down and injured my left hand, broke the screen of my cell phone, and missed the last train 😭. I missed the last train 😭 I was punished for not studying properly. That's why, The pairing of birds chirping and prosciutto ham was absolutely delicious! It was definitely delicious, but I can't write about it in detail. I would like to revisit Kamikame somewhere else! Cab fare and repair bills are a pain💸.

On its own, it was smooth on the palate, leaving a bitter aftertaste. Personally, it was not my favorite. With fish, the bitterness was a nice complement to the fish, and this was a good choice. When heated, the bitterness became even stronger.

Seven year old sake. They ship it at the peak of its flavor by aging it at minus 10 degrees Celsius with low sound aging. Saitama Prefecture produces a surprisingly large amount of sake, and there are top brands such as Kahayo Yoku, which I intend to slowly conquer. All I knew was that this brewery was the first in the postwar period to produce all of its sake from pure rice. The brewery seems to have a history of more than 100 years. At first, the lack of color on the label is noticeable, with no appealing colors, letters, or overall design. They seem to be concentrating on conveying what they want to say. I imagined that the brewer must be trying to avoid wasteful practices and cherish the old knowledge. The bottle is opened. The aroma is full and mellow. It has a sense of depth. The umami spreads slowly in the first sip. The taste of Yamada-Nishiki can be felt well. However, the taste is soft and not forced. Therefore, the use of rice has a strong influence on the flavor profile of this sake. Perhaps this is the effect of slow aging at low temperatures. This is the first time for me to drink a sake with this balance. If I drank it while intoxicated, I would probably just end up saying, "It's soft," because of its elegant and delicate flavor. It seems to be good warmed up. I prefer it cold.

On the second day, I was a little tired after starting work after the Bon Festival. I take a sip with cold tofu. A sense of security that I could drink without being conscious of it. I savored it while gazing up at an angle of 30 degrees. If it were a little cheaper, I would make it a regular place to stay, but I'll leave the special feeling of drinking once in a while.

Drinking at home. The color of this one is almost colorless. It doesn't have the same hiney aroma as the Hikomago we compared it to. It has a moderate umami taste, and even when served cold, it has an unconventional taste that makes you think it is an aged sake. After a few days from opening the bottle, it has a sweetness. When warmed, the soft umami opens up at around 40-45°C, and the sake becomes crisp. Personally, I think it is best served lukewarm.

Tasted again at Michifuji on 7/8, heated to 52°C. It has an elegant, soft umami typical of Shinkame with a heavy sense of maturity. A little harsh when heated.

Beautiful yellow color like the label. I'm going to open the bottle and leave it at room temperature for a while, but I tasted it lightly. I'm going to leave it at room temperature for a while. It has an aroma of rice. When I put it in my mouth, it has a clean entry, and the rice flavor spreads quickly and tightly. I'm looking forward to this one.
