This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake.
2) Fruitful Hokusho
Sake from Murakami City in Shimoetsu.
It is often seen at Yamaya with a special distributor label of Taiyozakari,
Hokusho is a junmai ginjo brewed entirely in Niigata with Niigata yeast, rice, water, and techniques, and aged at a low temperature for more than half a year.
It is served cold.
The color of the sake is a gentle yellow-green.
The top aroma is mild and smooth on the palate.
The flavor structure is similar to Tsukifumi no Ike, with a clean, refreshing sake with a blue banana aroma and moderate rice flavor. The moderate acidity is also effective and crisp.
It is a lighter ginjo-style sake than the junmai sake Tsukifumi no Ike, with a good amount of rice flavor, yet it is easy to drink and delicious. Expect it to warm up as well. ♨️🍶

Autumn, the season of Niigata Sake
While visiting the Niigata Sake Festival at the Kintetsu Main Store in Abeno Harukas and having a few drinks, I decided to try to immerse myself in Niigata sake this fall,
I decided to drink Niigata sake this fall. We will start with Kitahama Hakkesho, which is also rumored to be a Niigata sake brewery.
By the way, Kitahama Hakkosho is also holding a Niigata Fair.
(1) Tsuki no Fumi no Ike hiyaoroshi (hiyaoroshi from Tsuki no Fumi no Ike)
This sake is from Itoigawa in Joetsu.
It is read as "Tsukimizu-no-ike.
It is served cold.
It is a light cream-colored sake.
The top aroma is of gentle banana.
It has a smooth, refreshing taste with a hint of blue banana, caramel, and rice flavor. The final taste is dry and tight.
It is a light and dry sake, but it is delicious with a strong rice flavor 😋 I would like to heat this up!

Ayu Masamune Honjozo.
The aroma is full of ayu, and the mouthfeel is full of umami and ayu sweetness, and the taste is crisp on the tongue, followed by a clean and pleasant aftertaste.
[I was surprised to find a sake with such a name after reading other people's reviews of it on Sake-no-wa.
We left the store with some souvenirs ✨.
The fourth picture shows a restaurant near Shin-Osaka station that serves Kochi's famous "Jang-men", which I had been interested in for a long time, so I stopped by for lunch before heading to "Kitahama Hakkosho" (Kitahama Fermentation Factory) 🍜.

Hokusho Junmai Ginjo Hokusho in Fruits.
The aroma is a little difficult to smell due to the wind, but it gives a cool and refreshing feeling.
I've been curious about "Hokusho" ever since I saw a review of "Hokusho Mild Nigori Hon Nama Nama Sake" by the King of Menshu about a year ago, and I finally got to drink it 😁.
It has a delicious fresh flavor typical of Niigata sake 😋.
After a dramatic increase in workload since the beginning of the current fiscal year, and after successfully completing the torrent of field work from July to the end of September, I finally had a week's refreshment break ✨.

Harada Special Junmai Unfiltered Nama Sake
The aroma of rice is classic, the carbonation is so slight that you have to concentrate on the tip of your tongue to feel it, the taste is fresh and KEG-like, and the fruity sweetness on the back is refreshing and fruity, with a sweet aftertaste.
The gap between the classic aroma and the modern taste is pleasant and delicious 😋.

It has a fresh and fruity aroma like Muscat and LaFrance, and a pleasant mouthfeel.

A store with a server where you can experience the taste and flavor of "freshly pressed" sake, which can only be experienced at a sake shop by packing freshly pressed sake in a special container.
Raifuku was interested in trying it out because I had already had it at home.
Alcohol content: 16%.
The yeast was not listed, but I guess it was cherry blossom yeast.
The faintly fruity aroma reminded me of elegance.
When you put it in your mouth, a good acidity spreads and a fresh flavor spreads. It is a clean sake with good sharpness and good mouthfeel.
