Again, a white chrysanthemum from Okunoto. This is Noto's Natsuyasumi's extra edition. After drinking the last Blue Sea label I am too anxious to get the extra edition too 🤭. The last label was blue sea. The extra edition is an evening view🌅. Both have a lovely view of the beautiful sea that reflects the look of the sky at that time of day. It will be served chilled. Almost crystalline in color. The top aroma is of fresh blue bananas. From the gentle mouthfeel, fresh banana aroma with a slight rummy taste spreads pleasantly, and the full flavor of gentle sweetness flows gently through the palate. The last taste finishes with a gentle bitterness. The taste reminds one of a summer moment when the heat gradually eases and the evening scene quietly fades away. Personally, I prefer the extravaganza. But, the best thing is that we can compare the Shirafuji Sake Brewery! Happy Natsuyasumi🌻.

National Sake Fair 2025 (5) National Sake Fair held in Osaka in conjunction with the Expo This is the last one. The last one is Shirakiku from Okunonoto. It is called "Noto no Natsuyasumi. The label is also nice and reminds us of the sea of Noto. This is the first sake after the resumption of brewing in Noto in March this year. It is served chilled. It has a slight yellow hue. The nose has a rich aroma of honeysuckle, chervil, melon, and cream. From the gentle mouthfeel, from the soft and fresh floral intro, the richness of sweet and umami taste is smooth, and the sourness like butter candy is firmly felt. In the latter half, the bitterness gradually appears and the finish is slow and lingering. The way the richness of sweetness and umami comes out may be a little unbalanced, but it is still delicious and keeps you coming back for more 😊. Is there a version of Ishikawa Sake No. 68, newly developed in Ishikawa Prefecture? Is the extra version, Yuyake, more on the dry side? I tasted a whole range of Noto sake at the National Sake Fair, and I still love Okunonoto's Shirakiku. I was so happy I took it home immediately😊. National Sake Fair 2025 (4) Kokuni-shu Fair in Osaka to coincide with the Expo. The fourth bottle is Hatsuhonohana. It is a sake from Sawada Sake Brewery in Kashiba City, Nara Prefecture. Would it be easier to convey the message if I say "joyful light"? As it is called Kashiba Mind, it is a sake made by growing dewy leaf wind from scratch locally. The color is a gentle yellow hue. The top aroma is of white grapes, mildly fragrant koji aroma, and rice aroma. From the gentle but thick mouthfeel, sweet and sourness like white grapes and young raisins spread thickly. The taste is refreshingly clean and crisp with acidity and mild bitterness. Delicious! It is similar to Tamagawa Ice Breaker. So, when served on the rocks, the sweetness is moderate and the taste is refreshing. Warmed up to lukewarm. It is easy to drink and has a fuller flavor. Personally, I like to drink it lightly chilled to fully appreciate its beautiful thickness. The brewer visited the Nara Prefecture booth and allowed us to taste two types of sake. I was surprised at the appearance of the bottle as I had only known the Kanji label, and it tasted delicious! I couldn't resist taking it home with me 😊. Nara sake is delicious!

National Sake Fair 2025 (3) The third bottle is an extra. When I bought the last bottle of Kiku no Tsukasa Shuzo's Shichifukujin, there was a sake called "Unraveling the Mysterious Sake 2025" that I bought along with it. I was thrilled to see the word "undisclosed" on the label. If you read the QR code on the label, a quiz will appear. The only information on the specs is on the back of the label, and you have to guess the rest (1) to (6) 🎯. In short, it's called blind tasting. By the way, there are 6 questions in the quiz. (1) 4 choices of specific name Honjozo sake/Junmai sake/Daiginjo/Junmai Daiginjo (2) 4 choices of rice used for sake Sake Mirai / Yamadanishiki / Ginotome / Yunokou (3) 3 choices of rice polishing ratio 40%/50%/60 (4) Alder addition or not (5) Whether or not the sake is fire-brewed (6) Yeast used (4 choices) Yuko's Thought / Giovanni's Research / K-701 / K-1801 It's especially difficult to choose sake rice and yeast because some of them are unique to Iwate Prefecture! National Sake Fair 2025 (2) The second bottle is Nanafukujin. This sake is made by Iwate Prefecture's Kiku no Tsukasa Sake Brewery. I compared the sake rice at the Iwate Prefecture booth with Yui no Kou, Gin Ginga, and Gin Otome (3rd 📷), and I was still curious about the Seven Lucky Gods, so I popped it in for a refresher. It is served chilled. The color is almost crystal with a few bubbles. The top aroma is sweet and gorgeous with aromas of apple and melon. There is also a slight banana feeling. From the smooth mouthfeel with a gentle effervescence, the sweet and fruity taste slowly dissolves and spreads a soft sweet richness with a slight caramelized taste. The lingering sweetness is slowly brought together by a refreshing acidity and gentle bitterness in the finish. From the gorgeous aroma, a gentle, full-bodied sweetness develops, which can be easily tasted with a greenish acidity and a gentle bitterness. I like this lingering bittersweet fullness. Research shows that Kikuno-ji Sake Brewery is the oldest sake brewery in Iwate Prefecture and is currently located in Shizukuishi Town, Iwate Prefecture. This Nanafukujin has been a long seller since 1966, and with renewals, it is now a Junmai Daiginjo made with Ginga. I wonder if the yeast is from Giopanni, a GI Iwate sake. It is only at the National Sake Fair that you can meet such a sake 😊.

Kunisake Fair 2025 (1) We went to the National Sake Fair held in Osaka to coincide with the Expo. I started with a 1 gou can. It is Kinryo's Seto no Ao. It is a junmai ginjo made from Oceto, which is well-known in Kagawa. The can package has a cool, Seto Inland Sea feeling with the 🐟🐙🪼 drawn all the way around the can 😍. It is served cold. Crystal color. The top aroma is sweet and fresh with blue melon, muscat and bay leaf. From the gentle mouthfeel, the main taste is a little different from the impression of the top aroma, with a fresh Jungin aroma and a smooth, firm layer of rice flavor. The second half of the bottle finishes with a mild citrusy acidity and a lingering umami taste mixed with astringency and spiciness. From the package, I imagined this sake to be a little lighter and more refreshing, so I was surprised to see the mild rice flavor from the aroma when I first opened the bottle. It is also delicious as it slowly rises in temperature from cold sake. At the end of June, I went to Shohikona Shrine to purify my body over the summer. The shrine is tucked away in a building in Doshomachi, Osaka's pharmaceutical district. Good things and not-so-good things, We went through the thatched ring to reset our lives once and for all. Let's move on to the next half year 😊. So it will continue 🤗

This time it is Wakanami Honjozo. This sake is from Okawa City, Fukuoka Prefecture. One day I had some time to kill, so I went to Kadoya-san and found this little guy standing in line. I had to bring them home. It's been a long time since I drank Wakanami. I drank it cold. Crystal color with a hint of yellow. Fine bubbles. The top aroma is of apples, pears, cotton candy, green bamboo, and freshly pounded rice cakes. The pleasant, slightly effervescent mouthfeel is followed by a light, rice-cake-like rice flavor. The fruity sweet and sourness gently accompanies it, and it finishes off smoothly. After opening the bottle for a while, the density of sweet and sourness increases, and the banana-like texture also expands. Actually, it was not so good when I opened it, But if you drink it at a temperature that is not too cold after opening the bottle, I think it will blossom. I finally got around to drinking Wakanami Honjozo! There are so many more sakes I want to drink🤗.

This time it is Gorimacho, a large sake cup. Attracted by the impactful label of the Macho series, I finally fulfilled my wish to drink it at home someday. And it is a 90% pure rice brewed in the ancient style of Nama-Motomoto. It is served cold. The color is a soft yellow. Lots of big bubbles when poured into a glass. The top aroma is fresh pear with a hint of banana. The mouthfeel is smooth. The large bubbles gently burst, giving off a pear aroma and concentrated flavor. The aftertaste is tightened up with a rush of acidity and fresh bitterness, and is light and refreshing. I opened the bottle, determined to drink it with all my heart from the specs and the label, Surprisingly, it is easy to drink. The rich and complex umami flavor is brought together with the freshness and acidity of the sake yeast, making it easy to drink and giving you power even in the dreary rainy season 😆. I would like to try it with beef cutlet. The banana flavor becomes more bananas and mellow after a day. It has a good balance with the acidity and is also delicious 👍. I still like Oubai 💕. Macho series finally debuted✨💪!

This time it is Junmai Daiginjyo Kame-no-o from Takihama. This sake was brought back from a visit to the nearby brewery after visiting Akame 48 Waterfalls in Nabari City, Mie Prefecture, back in the GW season. I think it was a Junmai Daiginjo series, and only this one from Kame-no-o was aged 3 years? (Sorry my memory is a little fuzzy on the number of years 🙏 ) It was only fate that I came across this one 😆. I will have it chilled. The bottle was opened with a whistling sound, which I didn't expect. The color has a hint of yellow. The top aroma is of plump bananas with a refreshing muscat-like acidity. It is already beautiful. From the fine, smooth mouthfeel, the banana flavor and light muscat acidity blend together smoothly, and the taste finishes with a slight bubbly bitterness, leaving a lingering rice taste on the tongue. As the temperature approaches room temperature, the fullness of the flavor gently expands and is delicious. Taki's signature dry and refreshing taste is refined and subdued, It is a good sake with a mild sense of maturity combined with a freshness. The common brands are good, but this is the kind of sake that should be served with Japanese courses, I would like to include this kind of sake in a Japanese course. The beauty of the fresh greenery and waterfalls at Akame 48 Waterfalls is so beautiful that I can't get it out of my mind's eye. I want to go back to soak up the negative ions!

This time, it is a raw yeast version of Katano Sakura's Hyakuten Manten. This sake is from Katano City, Osaka. I really wanted to make this sake the Kiri number! It's been three years since I've had this one. We were able to increase the harvest of sake rice cultivation that we are working hard on at Katano Orihime University, In addition to our regular fast brewing, we now have a long-sought after sake called "Namoishimo" 🙌. First, at room temperature. The color has a hint of green. The aroma is sweet like cotton candy with a hint of green bamboo. Mild mouthfeel. From the fresh and green banana aroma, there is a slightly darker sweetness with a caramelized taste. There's a cheesiness too. The second half has a crisp finish with a tangy acidity and bitterness. The balance of sweetness and bitterness can be more gently adjusted by heating it up to a hotter temperature. The complex umami and acidity of the sake's raw yeast stock enhances the full-bodied sweetness and umami that is typical of Katano Sakura. This sake is the one that inspired me to join Orihime University. It was a great honor to be able to taste it again as a member of Orihime University! This year marks the 10th anniversary of the sake brewing association. This year is the 10th anniversary of the Sake Making Club and the next sake rice has already been started.

Masterpiece is a sake with the theme of technical study and a retrospective and return to classic ginjo, I tasted it at last year's sake brewery tour and enjoyed it so much that I left without buying it, which I regretted a lot 💧. Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated. It is a moderate, not too hard-core food sake, and the more you drink, the more you will want another glass. And if you heat it up The contrast between the plumpness of the freshly cooked rice and the tangy bitterness is again delicious. I would like to try it with mackerel sushi as an entrée.

The sweetness from the rummy taste is thicker, and the balance with the tangy and spicy aftertaste is more to my liking. I wonder if the yuzu extract is used in both cases to give the sweetness a spicy edge. The taste made me miss sake 💕. GW is our annual camping trip. This year we went from Nara to the border of Mie prefecture. Soni Plateau and Akame 48 waterfalls. Hiking in fresh green ⛰️ Refresh yourself with fresh greenery with your whole body. However, I was the only adult on this trip, I was the only adult in the group and my companions told me to stop drinking 😭. I was told by my companions that I was not allowed to drink alcohol 😭. Spring Tokaido Sake Brewery Tour (1) After Iga Sake, Kouga Sake🥷. This year, I had no time and headed only for a quick stocking up. The first bottle is Hatsuzakura. I like New Hatsusakura too much, This year, I went to Shiga to pick it up 💕 again. This time I brought back a bottle of Gintaro-kun's raw sake. By the way, Taro and his wife were selling it. It is served cold. Pale yellow-green color. The top aroma is of orange and young raisins. From the soft mouthfeel, The juicy orange flavor gently blossoms and the umami of the rice flows smoothly. The second half is tightened with sweet acidity and mild bitterness, and finishes with a lingering taste of rice. It is best to warm sake just before heating. The rice is freshly cooked and fluffy. But from the way it warmed up, it would be better to keep it cold or at room temperature. If it had been hi-ire, it might have been different. I can't wait to try it! I had prepared chicken marinated in salted malt for supper, but I came home late, so I thought I'd share with those waiting for supper (1) If you grill it, you can eat it as soon as possible. (2) It takes time, but you can deep fry it. (2) It takes a long time, but we can deep fry it. The unanimous vote was for fried chicken! I thought to myself, "Well, that's good! The top aroma is gently rounded, with an aged aroma reminiscent of fermented butter. From the slightly thickened mouthfeel, The mild ripeness of the mouthfeel The taste of rice is thick and round, The finish is capped off with acidity and bitterness, while leaving a lingering astringent taste and the umami of rice. The water content seems to have been adjusted, It is easy to drink, yet the thickness of the rice flavor can still be felt, which is typical of Mie Nishiki. When heated, the acidity and bitterness become more pronounced, and the richness of the creamy rice is more pronounced. Umu-umu-umu. Mie Nishiki is no longer brewed. Welcome Spring with Iga Sake Iga Sake Fair this spring. The fourth sake is Takijumo's Taki Suiryu, which is written "Taki Suiryu" and reads "Hayase" in Japanese. Like the third sake, Takasago, it is brewed in Nabari. It was selected as the sake for the dinner party at the Ise-Shima Summit. It is served lightly chilled. The color is crystal with a hint of yellow. The nose is of blue melon, honeysuckle, chervil, and freshly pounded rice cakes. The mild mouthfeel is followed by a slightly sweet aroma with a thick creamy rice flavor and a bitter, pungent aftertaste that is tightened up. It is a sake that delivers the delicious taste of rice without decoration. It is perfect as a food sake! Another good sake. It is my favorite type of sake💕. It is a sake that you should get because you have come all the way to Iga. I wanted to get this sake. I drank it lazily, so my impression is more relaxed than usual😅. First, at room temperature. It has a crystalline color, The top aroma is a mild citrus aroma with freshness. The light mouthfeel is followed by a gentle citrus sweet and sour umami flavor. When I was shopping at a liquor store in Iga, a customer who is a Hanzo fan came in and said he had to buy the new Kirigakure Saizo sake, so I took him home 😊! So I took him home 😊. The color is pale and cloudy. The top aroma is refreshing. It has a fizzy and foamy mouthfeel, like a cider with a gentle rice flavor.
