Autumn Dyed with Niigata Sake (6) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. 6) Kimi no I Yamahai Junmai Ginjo This one was also purchased at the Niigata Sake no Jinjin in Abeno Harukas. It was the only sake I bought on my first visit. Tasting it, I found it to be my favorite💘. I was wondering whether I should buy the unfiltered nama sake or the standard hi-ire sake, and decided on the unfiltered nama sake because it is not often available: ☝️ I will have it cold. It has a light greenish flavor. The top aroma is mild raisins, rice cake, cypress, nuts, and cheese-like aroma. Mild mouthfeel. The juicy flavor with plenty of raisin aroma is followed by the sourness of Yamahai. The juicy sweetness of the rice is relaxed on the tongue, and the cheese-like lactic acidity stays there, while the bitter bitterness opens up from the raisins and finishes off the taste. It is different from the image of Niigata sake, I was completely captivated by this elegant Yamahai with a raisiny sweet and sour youthfulness. It is a rich mellow style with a sweet and sour taste, but it has a very beautiful aftertaste 😊. One more bottle and I will make it last. Now what will the last one be? Hey, Mr. Aladdin🤭.

This time it is Ippouki's secret color. It has been a long time since Ippouki's newest product using Fukunoka. I was lamenting over the fact that it sold out so quickly, but Mamio-san came to my rescue and delivered it to me in a blink of an eye, Mamio-san came to the rescue and delivered it to us in a blink of an eye. Ippeppo Ambassadors work fast, too fast 💨🙀. I had to make a toast with Mr. Aladdin who called me. It is served at room temperature. It has a slight greenish flavor. The top aroma is gently sweet apple and green bamboo. The soft mouthfeel has an apple-like fruitiness with a smoky aroma. The soft umami of rice is silky and mingles with it. The aftertaste is crisp and clean with a sourness and bitterness that grows as it does. It tastes like a gentle Japanese white wine. It is a secret color that shows us a different aspect from the usual Ippou-self. A secret color that shows a different side to the usual Ippo Mi. I look forward to the next development 😊. If it weren't for the sake I wouldn't have been able to get the secret color. Thanks to Sake-no-Wawa, where I can meet friends who are full of love for sake! And also, Mamio, thank you so much 🙏!

This time it is Nichinichi. This is a sake from Fushimi, Kyoto. It may be the first time for you to visit our neighborhood 😊. The color is almost crystalline. The color is almost crystalline, and there is a large sense of effervescence. The top aroma is of clear grapes. Light on the palate with a mild effervescence. While the alcohol content is low, the taste has a fresh acidity with an elegant muscat flavor and a deep sweet flavor that flows through the mouth. It is so light and clear, The sake is so light and clear, and the sweet, sour, and umami flavors are well-balanced. My former boss and colleagues visited me at my part-time job and gave me this sake and a sake cup as a gift. and gave them this sake and a sake cup as a gift. This time it is Tenmei no Nakadori Zero. "New sake starts from Tenmei." I have been saying so every year, and this year, too, I was anxiously awaiting the day when the "Zero" ban was lifted. I will drink it cold. It has a pale ao-sae color and sooty nigori. The top aroma is sweet koji aroma with green apple nuance. It has a mild mouthfeel. First, take a sip of the supernatant. The koji aroma lightly wafts into the nose, and the soft, juicy sweetness and apple-like acidity spread freshly. When the oli is mixed in, the bitterness increases and the acidity becomes sharp, and it seems to be too dry. I think it is better not to cool it down too much, so that the bitterness of the Oli and the original juiciness can be balanced and become a cohesive type of beer. I don't know 🤗. I'm looking forward to Tenmei no Zero, thinking how hard it is to decide on the date of the ban and make sake every year. I'm thankful that I was able to taste it again this year 🙏.

Another bottle this time. This is Kaygetsu Nigori. A Kaygetsu salesman came to the basement Japanese and Western-style sake department during the Niigata Sake Festival held at Abeno Harukas, and we tasted this bottle. It is served cold. It has a silky cloudy color. The nose has green apple, green melon, and pear nuances. Smooth on the palate, The aroma of green melon and pear gives it a refreshingly fruity taste, while the taste of lactic acid beverage with a moderate sweetness can be lightly sensed. The bitter taste of nigori gives it a refreshing aftertaste. It's delicious when well chilled. This sake is made with CEL24 yeast, It has the effect of nigori (bitterness). It is not too sweet and fruity, but has a dry impression. The ori is strained once, and the fine ori is added in a quantity that does not make it too heavy, making it easy to drink 👍. It was fun to compare different types of Kaygetsu 💕

Autumn Dyed with Niigata Sake (5) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. 5) Tatomo Junmai Ginjo This is also a sake that we brought back with us at the Niigata Sake Festival held at Abeno Harukas with the Echigo Touji. The rice used is Koshitanrei. It is served cold. The color is almost transparent. The initial aroma is sweet, with notes of ripe apples and cotton candy. It has a smooth mouthfeel. The juicy sweet and sour taste with a soft apple aroma is followed by the umami of the rice and a refreshing bitterness that gives the apple aroma and a firm finish. The taste is mildly juicy and conveys the soft and clear feeling of melted snow. I had tasted Tatomo in Niigata before and thought it was delicious, but it is still delicious. I was talking with the salesman about how it would be nice if the brands of Takanoi and Tatyu, which are sold in supermarkets wrapped in newspaper, could be a little more unified. It's the first day of winter, and the first wintry storm has blown in👺🌬️ Niigata Sake Fair is coming up soon!

Autumn Dyed with Niigata Sake (4) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. Echigo Toji Honjozo This sake was recommended by bouken, Nemuchi, and Sakélan advisors at the Niigata Sake Festival held at Abeno Harukas. It was recommended by all three as the No. 1 sake that I would drink at the event, so I went back to Abeno Harukas on the last day 🍶💨. The color is almost crystal. The top aroma is milky with a hint of caramel. The mouthfeel is light and smooth. The taste is a nostalgic sweetness and umami like fine milk caramel that flows gently and smoothly. When heated, the milk caramel flavor increases and the taste is refreshing. It has a classic flavor, It is a delicious sake with a light, milky sweetness and umami that is easy to drink, with a smoothness that reminds one of the softness of Niigata's melted snow water. After all, this is the kind of sake that you want to drink at the end of the day! The selection ability of the three heavyweight members of the group is superb 😊. The Niigata Sake Fair is still going on.

Autumn Dyed with Niigata Sake (3) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. 3) Kashiwa Dew Sake's Yoshinoya The campaign is to "Enjoy Yoshinoya sake at home" with that sake that goes well with beef dishes! The sake was opened on Halloween in Yoshinoya's colors. Yoshinoya first? Halloween first? The Yoshinoya website had instructions on how to drink it cold, so I drank it cold. The sake has a pale green color. The top aroma is of rice and green bamboo. The smooth mouthfeel is followed by a moist and soft rice flavor, with a hint of sweetness in the middle part of the taste. The finish is crisp and dry. We paired it with a sumptuous takeout of beef sukiyaki hot pot. The sake played the role of rice in the sweet and savory flavor of the beef, while also refreshing the palate. Beef is good, but I personally prefer the beef with the tofu and vegetables in the beef sukiyaki nabe broth. Above all, the feeling of easy luxury makes me happy💕. If you want to customize it, I also recommend heating sake. We'll warm it up even if you don't tell us. ♨️🍶

This time it is a hiyaoroshi of Harunomine. It is a sake from Koka City, Shiga Prefecture. I had it at my part-time job a while ago. It is served at room temperature. The color of the sake is a pale yellow. The nose has a woody, nutty aroma with a rich aroma of rice. The mouthfeel is slightly thickened, and the rice flavor flows through the mouth with a light, tight acidity. The lingering aftertaste is pleasant, with just the right amount of bitterness and the rich rice flavor gently fading away. When heated, the rice flavor and acidity blend together to create a rich, chocolate-like flavor that is also delicious. Sake is a sake made from rice! You can feel it on your tongue. It is a good sake to enjoy with oden or other dishes for a leisurely evening drink. I think I'll roast some ginkgo nuts now that I'm feeling better. Harunomine's wife is a good calligrapher and runs a store selling handwritten T-shirts and other items. I ordered a birthday gift for her, and was thrilled to see the custom label and the wrapping, which is wrapped like a kimono with a cherry blossom handkerchief underneath in the photo 😆. I wanted to show you the sake-chan in kimono too, though I unwrapped it before taking the picture to see the label! Thank you, proprietress 💕

I'm worried that I'm looking at the wrong number 💦. The aroma is sweet with a hint of rice. It has a juicy flavor with bubbles popping like a sparkling sake. The sweetness of the koji is mixed with apple-like sweet and sourness and carbonation, making it juicy yet refreshing, with a lingering yogurt-like aftertaste. It is a very easy-drinking sake with 5% alcohol while retaining the sake-like character. Autumn Dyed with Niigata Sake (2) This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake. 2) Fruitful Hokusho Sake from Murakami City in Shimoetsu. It is often seen at Yamaya with a special distributor label of Taiyozakari, Hokusho is a junmai ginjo brewed entirely in Niigata with Niigata yeast, rice, water, and techniques, and aged at a low temperature for more than half a year. It is served cold. The color of the sake is a gentle yellow-green. The top aroma is mild and smooth on the palate. The flavor structure is similar to Tsukifumi no Ike, with a clean, refreshing sake with a blue banana aroma and moderate rice flavor. The moderate acidity is also effective and crisp. It is a lighter ginjo-style sake than the junmai sake Tsukifumi no Ike, with a good amount of rice flavor, yet it is easy to drink and delicious. Expect it to warm up as well. ♨️🍶 Oops, neither of these are my favorite 💕. A good start 🚩. I'll be updating this autumn with more Niigata sake, interspersed with a little bit of another sake 😊.

This time it is Rumiko's special junmai aged sake H29BY. This sake is made with Ise-Nishiki and No. 9 yeast. Ise-Nishiki is the oldest remaining sake rice, and is said to have a lineage that extends all the way back to Yamada-Nishiki. First at room temperature. Sake with a soft yellowish color. In the aging process, it has a soft sweet and savory aroma with an earthy flavor. Am I the only one who can sense the abundant harvest of rice just from the aroma? From a very mellow mouthfeel, the sweet and savory flavor of gently roasted rice flows smoothly. The latter half of the taste is broken by acidity and bitterness, leaving a light aftertaste of sweetness from the rice. And when served warmed, The comforting sensation of gently unraveling with the soft and fluffy rice broth feeling. Happiness 😊. This time, it is a pure Yamahai Junmai from Sanbaku. At the Takashimaya Sake Festival, When I visited Nozomu at the Takashimaya Sake Festival, I took home a bottle of this popular Tochigi Prefecture limited edition sake, which they claimed to have only one bottle left and no more available for tasting. From Takashimaya to Tochigi Love ❤️ It is served at room temperature. Pale crystal yellow in color. The top aroma is of grapefruit, ripe banana, and bay leaf, and the rice feeling is freshly pounded rice cake. The mouthfeel is stimulating, like a fine fizzy sensation. Fresh and rich acidity spreads from the citrus aroma, and the mild umami of the rice flows smoothly with a refreshing finish. No wonder this light and fresh Yamahai was so popular. I've burned myself out studying and drinking during the first two weeks of October. I will work properly from tomorrow! A lesson learned this time. Don't take the last train two trains before the last one. You'll miss it.

This time it is a little birdsong of Kamikame. I attended a shochu study group that I was invited to. I was excited to hear that the bar was participating in the go-around on 10/1, and that they were holding the event with heated sake from Kamikame. ⤴︎ Everyone was seriously tasting Shochu, but I wanted to drink Shinkame no matter what, so I started to warm up my own Shinkame 😅. But on that day, I dropped by the Hyogo Sake event at Kobe Hankyu, I stopped by the event of Hyogo sake at Kobe Hankyu, and had sake tasting -> shochu tasting without vomit vessel -> Shinkame -> wine. I was so drunk that I fell and injured my left hand on the way back home. On the way home, I fell down and injured my left hand, broke the screen of my cell phone, and missed the last train 😭. I missed the last train 😭 I was punished for not studying properly. That's why, The pairing of birds chirping and prosciutto ham was absolutely delicious! It was definitely delicious, but I can't write about it in detail. I would like to revisit Kamikame somewhere else! Cab fare and repair bills are a pain💸.

It is served at room temperature. It has a slight yellowish hue. The top aroma is sweet with a hint of apple. The taste is a robust Junmai Daiginjo with a gentle sweetness and umami. The bitterness is also well balanced and has a nice sharp taste. The soft sweetness and moderate acidity make it a good match with Japanese food. This time it's another 1-gou can of Amabuki's Strawberry Yeast. I've been enjoying drinking cups of sake and 1-gou cans lately, so I ended up bringing home a series of them. This time, I was sure of it, I was informed that Tsutaya had some aluminum cans of KURA ONE at their Thanksgiving festival 🍶🏃💨. No one comes to a bookstore for sake, so the clerk said, well, we have some! I apologize for the inconvenience of having to send out a search party to find them (they were quietly in front of the cash register 😅). It is served lightly chilled. Pale yellow appearance. The top aroma is mild, with a hint of caramel, rice, and maybe some green bamboo. Smooth mouthfeel, rice flavor base with rounded acidity. The taste of sweet and sour strawberries can be felt in the mouth. Because of the umami base, the sweet-sourness of the strawberries is not too much, and the balance of umami and sweet-sourness is delicious. It should be good warmed up! When heated, the aroma of strawberries was mild and the rice flavor was enhanced. The collaboration of Omachi and Ichigo yeast is good, and you can enjoy this character at any temperature. If it had been a 4-bottle, I might not have reached for it. So thanks to Tsutaya for carrying it this time 😊.

This time it is Junmai Ginjo from Ippodo. Hiyayogoshi is out again this year, The season of Junmai Ginjo from Ippouki has come around again this year 🙌. Serve chilled. Crystal with a slight green hue. The top aroma is of dark strawberry jam. The mild mouthfeel is followed by a sweet and sour aroma reminiscent of strawberry jam and a cotton candy-like sweetness that spreads out and is backed by a sense of rice. The taste is refreshing with a soft bitterness, and the strawberry jam aroma quickly fades away. It has a strong impression of strawberry jam sweetness, which I have never felt before in Ippodo. Although it is a clean, light flavor, it has a strong sweetness that is new to Ippouki, I think I prefer this Jungin when it is cooled down. This year, too, we have finally reached the entrance of autumn, This is how this year's Ippo-self is different! I look forward to comparing them every year 😊. Hopefully I wish it would cool down a bit more 😮‍💨🪭

This time it is Nechi Nechi Otokoyama's Nechi Nechi Valley Gohyakumangoku 2019BY. It is a sake from Itoigawa, Niigata Prefecture. Nechi is a Nechiozan Nechi Valley Domaine sake. I stopped by for a drink after work because of the holiday weekend 😎. It is served cold. It has a pale yellow appearance. The nose has aromas of mushrooms, sweet chocolate, and soy sauce. From the soft mouthfeel, there is an excellent balance between the clear, caramelized sweet umami and refreshing acidity, with a beautiful finish where the bitterness slowly builds from the acidity and finishes with a sharp finish. With all due respect, I had no idea that this was such a beautifully aged sake, and I was very impressed after taking a sip. It is a sake that I am glad to have encountered, as it is able to express such a beautiful and deep state of maturity in cold sake. And, it is a pleasure to have found it, While I wrote that I stopped by for a cup of sake, I actually drank Kaze no Mori Weeks 2024, Gorin, and Nechi. Isn't that a pretty drunken course? Well, I'm a happy drunk 🤣.

This time it's Okura's Aizan x Association No. 8 unfiltered raw sake R1BY. It's already crazy 😅. It is served cold. Pale yellow-green in color. The nose has a mild ripe apple and nutty aroma. The mouthfeel is thick. The taste is robust and rich, The first thing that hits your throat is the acidity. From there, deep raisin and ripe apple nuances, and overall, a round and thick flavor that is pleasantly mellow and thick. In the latter half, the bitter taste gradually fades away, leaving behind a mild sweetness and umami. The powerful flavor of Aizan and Association No. 8 is, of course, a given! However, R1BY's mildly rounded and matured taste makes it easier to drink and tastier than expected. It is powerful, but it doesn't stop you from drinking. This kind of mellow umami type is still my favorite 💕. And when heated, the ripe aroma settles down, and the savory broth from the rice, acidity, and bitterness become more balanced and delicious. In my opinion, Aizan sake is sweet and juicy. But this one is not sweet 😎. Aizan, like Okura, was recommended to me by Noyori-san and it was a good encounter 😊.
