This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake.
6) Kimi no I Yamahai Junmai Ginjo
This one was also purchased at the Niigata Sake no Jinjin in Abeno Harukas.
It was the only sake I bought on my first visit.
Tasting it, I found it to be my favorite💘.
I was wondering whether I should buy the unfiltered nama sake or the standard hi-ire sake, and decided on the unfiltered nama sake because it is not often available: ☝️
I will have it cold.
It has a light greenish flavor.
The top aroma is mild raisins, rice cake, cypress, nuts, and cheese-like aroma.
Mild mouthfeel.
The juicy flavor with plenty of raisin aroma is followed by the sourness of Yamahai. The juicy sweetness of the rice is relaxed on the tongue, and the cheese-like lactic acidity stays there, while the bitter bitterness opens up from the raisins and finishes off the taste.
It is different from the image of Niigata sake,
I was completely captivated by this elegant Yamahai with a raisiny sweet and sour youthfulness.
It is a rich mellow style with a sweet and sour taste, but it has a very beautiful aftertaste 😊.
One more bottle and I will make it last.
