This time, it is Yamadaho from Sanjoraku. It seems to be a sake that challenged Yamadaho with Kumamoto yeast in Yamahai brewing. It has been warming up in the fridge for a while. Today is the time to open the bottle. It is served lightly chilled. Mild yellowish color. There are makuwa-uri, yellow peach, and banana. The aroma of green bamboo and rice is strong. The strong, thick mouthfeel gives a fruity taste like ripe makuwa-uri (Japanese cucumber) with a mild rice aroma. The strong alcohol and acidity give it a crisp taste while leaving a bright aftertaste of sweetness. And when warmed up, The freshly cooked rice flavor comes to the surface, and when drunk warmed, the balance between the rice and fruity flavors comes together to create a delicious taste. This time it is MIYOGIKIKU Junmai Nama Nama Sake 80. The Mishirokiku label is all Nara? Hinohikari produced in Nara and the sake mother is a water yeast with Nara Uruhashi yeast. It has a mild mouthfeel. It has a charcoal aroma with a cool autumnal feeling. The sweet and sour taste like apricot swells up with a sense of transparency and finishes gently. It has a wild mizu-hashiroshi character, but at the same time, it has a rich and subdued flavor that I like very much. Miyogiku is The gentle and honest personality of the brewer is directly reflected in the taste. I always think that Miyogiku is a sake that shows the gentle and honest personality of the brewer in its flavor. Summer Travel in Northeast Japan (7) Final This summer, Niigata Airport→Sendai Airport✈️ The last day of the trip will be Sendai. The last day is Sendai. The seventh bottle was Koganezawa Hiyoroshi. Actually, I couldn't afford to buy sake in Sendai, so I waited for the Koganezawa hiyaoroshi to be released and got it 😎. The label is beautiful before you know it! It is served at room temperature. The color has a slight yellow tinge. Aroma of sweet ripe apples and bananas, with a cool herbal touch. The taste of mild ripe fruit and milky, mild rice flavor flow slowly from the thick mouthfeel, and the fruitiness is gradually tightened with a bitter aftertaste. A taste of autumn 🍂Tasty 😆👍 The last day of the trip was also rainy. I wanted to visit Yamadera and Zao. But I gave up and went from Yamagata City to Matsushima in a straight line 🚗💨. Summer Travel in Northeast Japan (6) This summer, Niigata Airport→Sendai Airport✈️ This summer, I will be traveling in the southeast between Niigata Airport and Sendai Airport. The current location is Yamagata City. The sixth one is a shout out to the soil. Produced by Mr. Kumagai of LaJomon in Yamagata City, it is a sake produced by Shoichi Ishii of Ishii Farm, who grows "Rikuwa 132" without pesticides or fertilizers, and brewed at Suzuki Sake Brewery's Nagai warehouse using yeast No. 6. It is served cold. It has a light misty white color with a refreshing aroma of blue melon and herbs. From the slightly bubbly sensation of nama-shu, The green melon increases in concentration as it ripens in the mouth, and the mildly sweet flavor slides smoothly down the throat in a fresh and smooth manner. The aftertaste is mild and clean, with a bitter aftertaste. The taste is delicious, with a blue coolness and a full-bodied flavor, I want to drink it in the summer! I opened it just because I wanted to 😆. On the night of the Hanagasa Festival I stayed the night in front of Yamagata Station. I visited LaJomon the next morning. I didn't expect to see Mr. Kumagai! Summer Travel in Northeast Japan (4) This summer, Niigata Airport→Sendai Airport✈️ This summer, we are going on a trip to the southeastern part of Japan, connecting Niigata Airport to Sendai Airport. The fourth bottle is called Yei Yei Issui (盈盈一水), The fourth bottle was a sake called Yeiyo Issui from the Higashinoroku Sake Brewery in Nanyo City, Yamagata Prefecture. It is a regular sake made from Junmai-Daiginjo spec. ordinary sake made by polishing up to 50% equal rice of Yamagata sake rice developed for Daiginjo and Junmai-Daiginjo, which is then aged in ice temperature for about 2 years. Almost crystal in color. The initial aroma is sweet strawberry with a hint of nuttiness. The taste is clear and sweet, with a mildly matured richness that flows smoothly from a thickened mouthfeel. The aftertaste is pleasant, with a fine bitterness that softly tightens the palate. It is a delicious sake that one would be tempted to buy as a souvenir. The second day of the trip started with rain ☔. After leaving Bandaisan, which was not visible in the fog until the end of the trip, Kitakata is of course ramen🍜. We went to Bannai Shokudo. The salted pork bone broth was delicious. From there, the rain started to fall harder and harder, I was almost heartbroken, but I headed north in a straight line to Yamagata 💨. Summer Travel in Northeast Japan (3) This summer, Niigata Airport→Sendai Airport✈️ This summer, we will be traveling in the southeast north of Japan, connecting Niigata Airport to Sendai Airport. The current location is Aizu Sakashita→Aizu Wakamatsu. The third bottle was a cup of sake from Yamanoi. It is from a sake brewery in Minami Aizu, It is a cute cup of sake, limited to a plant shop in Aizuwakamatsu 💕. I stopped by to see if I could get some of Yamanoi's sake, There are standard 60 and 40 in this stylish cup sake designed by Ayumi Monoe, a painter living in Kitakata, and I selected the 40 this time. I couldn't believe that the plant shop was a liquor store. I was surprised at the stylish storefront! Do they even have a DJ booth? The color is a slightly pale yellow. The nose has a mild aroma of yellow peaches and a refreshing scent like bamboo grass. The slightly thickened mouthfeel is followed by a gentle yellow peach aroma, then sweet and sour tastes spread gently, leaving a lingering umami aftertaste and a mildly mellow and moderately thick taste with a mildly bitter aftertaste. The taste is mildly mellow and has a good thickness, yet it finishes easily and lightly. A high level cup of sake 😊. In Aizuwakamatsu, we toured Tsurugajo castle and Iimoriyama, and then went to Urabandai for lodging: ⛰️ After a relaxing soak in the hot spring at the hotel, I went to Urabandai. Summer Travel in Northeast Japan (2) This summer, Niigata Airport→Sendai Airport✈️ This summer, I went on a trip to the southeastern part of Japan, connecting Niigata Airport to Sendai Airport. I was the only driver this time. So I was told to keep the alcohol consumption to a minimum 😭. The second bottle is Chuo's Black Label R4BY. It is a souvenir sake from Gonoi Sake Brewery limited edition sake brewed by Akebono Shuzo nearby. It is a light cloudy color with big bubbles of shuwashu and cream color as R4BY. The top aroma is sweet, apricot-like malt aroma, hinoki (Japanese cypress), and rice aroma of ori. The taste is refreshing, with a bitter bitterness and a full-bodied koji rice flavor. The dryness with bitterness was not in my image of Akebono sake brewery👍. On the first day, we drove east from Niigata to Aizu on the Ban-Etsu highway. Then we went sightseeing from Aizu Yanaizu to Aizu Sakashita. First, we went to Aizu Yanaizu Station on the Tadami Line. I fell in love at first sight with Hitarito's red baby doll, who has a papier-mâché workshop in the station building, and whose backside made me happy. Then, we went to Aizu Sakashita for a full lunch of horse meat, including horse sashimi and sakura yakiniku, and then to Gonoi Sake Brewery. However, while getting the midori, I made the mistake of forgetting to see Akebono Sake Brewery! There are three breweries within a 100 meter radius of Gonoi's 💦. Now I have another reason to go back 🤣. There is one more brewery in Aizu.

Summer Trip to Southeastern Japan (1) This summer Niigata Airport→Sendai Airport✈️ to Southeast Japan The first bottle is Sotenbo. It's a sake from Nagaoka city, Niigata prefecture. Actually, it's a cup of sake I got as a Niigata souvenir a while ago 😅. My partner's rental car this time had Nagaoka license plate number, so I felt strangely familiar with it 💕. The taste is moderately delicious and beautifully sharp, a sake that makes you feel Niigata 🌾. The trip started in Niigata. We planned to have breakfast at the rice ball shop we wanted. However, But when we arrived, there was already a long line. I tried my best to get on the earliest plane at Itami! We can't get there any faster 😭. I couldn't take the time to wait in line, so I just bought a salad hope and left. Now, let's traverse from the Sea of Japan to the Pacific Ocean 🚗💨.

It is served at room temperature. It has a pale yellow color. The top aroma is a rounded mature aroma with a gentle fragrance. The aroma alone is intoxicating and beautifully mature. And when you take a sip In the second half, the taste is sharp with a mild bitterness and a lingering aroma of matured aroma from the acidity with a flavorful outline. Then, when heated to hot, the flavor of the sake is refined, The flavor of the sake is neatly arranged, The taste of soup stock-like umami and bitterness is pleasantly familiar to the body. It may be because it's been a while since I've had a matured sake, but it's a taste that will penetrate your body. ♨️ I wanted to pair this with Yaki-Fujima from Wagashi Kaorufu in Sendagi. Again, a white chrysanthemum from Okunoto. This is Noto's Natsuyasumi's extra edition. After drinking the last Blue Sea label I am too anxious to get the extra edition too 🤭. The last label was blue sea. The extra edition is an evening view🌅. Both have a lovely view of the beautiful sea that reflects the look of the sky at that time of day. It will be served chilled. Almost crystalline in color. The top aroma is of fresh blue bananas. From the gentle mouthfeel, fresh banana aroma with a slight rummy taste spreads pleasantly, and the full flavor of gentle sweetness flows gently through the palate. The last taste finishes with a gentle bitterness. The taste reminds one of a summer moment when the heat gradually eases and the evening scene quietly fades away. Personally, I prefer the extravaganza. But, the best thing is that we can compare the Shirafuji Sake Brewery! Happy Natsuyasumi🌻.

National Sake Fair 2025 (5) National Sake Fair held in Osaka in conjunction with the Expo This is the last one. The last one is Shirakiku from Okunonoto. It is called "Noto no Natsuyasumi. The label is also nice and reminds us of the sea of Noto. This is the first sake after the resumption of brewing in Noto in March this year. It is served chilled. It has a slight yellow hue. The nose has a rich aroma of honeysuckle, chervil, melon, and cream. From the gentle mouthfeel, from the soft and fresh floral intro, the richness of sweet and umami taste is smooth, and the sourness like butter candy is firmly felt. In the latter half, the bitterness gradually appears and the finish is slow and lingering. The way the richness of sweetness and umami comes out may be a little unbalanced, but it is still delicious and keeps you coming back for more 😊. Is there a version of Ishikawa Sake No. 68, newly developed in Ishikawa Prefecture? Is the extra version, Yuyake, more on the dry side? I tasted a whole range of Noto sake at the National Sake Fair, and I still love Okunonoto's Shirakiku. I was so happy I took it home immediately😊. Finishing up with everyone who went to the Kokunisake Fair 📷✨.

National Sake Fair 2025 (4) Kokuni-shu Fair in Osaka to coincide with the Expo. The fourth bottle is Hatsuhonohana. It is a sake from Sawada Sake Brewery in Kashiba City, Nara Prefecture. Would it be easier to convey the message if I say "joyful light"? As it is called Kashiba Mind, it is a sake made by growing dewy leaf wind from scratch locally. The color is a gentle yellow hue. The top aroma is of white grapes, mildly fragrant koji aroma, and rice aroma. From the gentle but thick mouthfeel, sweet and sourness like white grapes and young raisins spread thickly. The taste is refreshingly clean and crisp with acidity and mild bitterness. Delicious! It is similar to Tamagawa Ice Breaker. So, when served on the rocks, the sweetness is moderate and the taste is refreshing. Warmed up to lukewarm. It is easy to drink and has a fuller flavor. Personally, I like to drink it lightly chilled to fully appreciate its beautiful thickness. The brewer visited the Nara Prefecture booth and allowed us to taste two types of sake. I was surprised at the appearance of the bottle as I had only known the Kanji label, and it tasted delicious! I couldn't resist taking it home with me 😊. Nara sake is delicious!

National Sake Fair 2025 (3) The third bottle is an extra. When I bought the last bottle of Kiku no Tsukasa Shuzo's Shichifukujin, there was a sake called "Unraveling the Mysterious Sake 2025" that I bought along with it. I was thrilled to see the word "undisclosed" on the label. If you read the QR code on the label, a quiz will appear. The only information on the specs is on the back of the label, and you have to guess the rest (1) to (6) 🎯. In short, it's called blind tasting. By the way, there are 6 questions in the quiz. National Sake Fair 2025 (2) The second bottle is Nanafukujin. This sake is made by Iwate Prefecture's Kiku no Tsukasa Sake Brewery. I compared the sake rice at the Iwate Prefecture booth with Yui no Kou, Gin Ginga, and Gin Otome (3rd 📷), and I was still curious about the Seven Lucky Gods, so I popped it in for a refresher. It is served chilled. The color is almost crystal with a few bubbles. The top aroma is sweet and gorgeous with aromas of apple and melon. There is also a slight banana feeling. From the smooth mouthfeel with a gentle effervescence, the sweet and fruity taste slowly dissolves and spreads a soft sweet richness with a slight caramelized taste. The lingering sweetness is slowly brought together by a refreshing acidity and gentle bitterness in the finish. From the gorgeous aroma, a gentle, full-bodied sweetness develops, which can be easily tasted with a greenish acidity and a gentle bitterness. I like this lingering bittersweet fullness. Research shows that Kikuno-ji Sake Brewery is the oldest sake brewery in Iwate Prefecture and is currently located in Shizukuishi Town, Iwate Prefecture. This Nanafukujin has been a long seller since 1966, and with renewals, it is now a Junmai Daiginjo made with Ginga. I wonder if the yeast is from Giopanni, a GI Iwate sake. It is only at the National Sake Fair that you can meet such a sake 😊.

Kunisake Fair 2025 (1) We went to the National Sake Fair held in Osaka to coincide with the Expo. I started with a 1 gou can. It is Kinryo's Seto no Ao. It is a junmai ginjo made from Oceto, which is well-known in Kagawa. The can package has a cool, Seto Inland Sea feeling with the 🐟🐙🪼 drawn all the way around the can 😍. It is served cold. Crystal color. The top aroma is sweet and fresh with blue melon, muscat and bay leaf. From the gentle mouthfeel, the main taste is a little different from the impression of the top aroma, with a fresh Jungin aroma and a smooth, firm layer of rice flavor. The second half of the bottle finishes with a mild citrusy acidity and a lingering umami taste mixed with astringency and spiciness. From the package, I imagined this sake to be a little lighter and more refreshing, so I was surprised to see the mild rice flavor from the aroma when I first opened the bottle. It is also delicious as it slowly rises in temperature from cold sake. At the end of June, I went to Shohikona Shrine to purify my body over the summer. The shrine is tucked away in a building in Doshomachi, Osaka's pharmaceutical district. Good things and not-so-good things, We went through the thatched ring to reset our lives once and for all. Let's move on to the next half year 😊. So it will continue 🤗

This time it is Wakanami Honjozo. This sake is from Okawa City, Fukuoka Prefecture. One day I had some time to kill, so I went to Kadoya-san and found this little guy standing in line. I had to bring them home. It's been a long time since I drank Wakanami. I drank it cold. Crystal color with a hint of yellow. Fine bubbles. The top aroma is of apples, pears, cotton candy, green bamboo, and freshly pounded rice cakes. The pleasant, slightly effervescent mouthfeel is followed by a light, rice-cake-like rice flavor. The fruity sweet and sourness gently accompanies it, and it finishes off smoothly. After opening the bottle for a while, the density of sweet and sourness increases, and the banana-like texture also expands. Actually, it was not so good when I opened it, But if you drink it at a temperature that is not too cold after opening the bottle, I think it will blossom. I finally got around to drinking Wakanami Honjozo! There are so many more sakes I want to drink🤗.

This time it is Gorimacho, a large sake cup. Attracted by the impactful label of the Macho series, I finally fulfilled my wish to drink it at home someday. And it is a 90% pure rice brewed in the ancient style of Nama-Motomoto. It is served cold. The color is a soft yellow. Lots of big bubbles when poured into a glass. The top aroma is fresh pear with a hint of banana. The mouthfeel is smooth. The large bubbles gently burst, giving off a pear aroma and concentrated flavor. The aftertaste is tightened up with a rush of acidity and fresh bitterness, and is light and refreshing. I opened the bottle, determined to drink it with all my heart from the specs and the label, Surprisingly, it is easy to drink. The rich and complex umami flavor is brought together with the freshness and acidity of the sake yeast, making it easy to drink and giving you power even in the dreary rainy season 😆. I would like to try it with beef cutlet. The banana flavor becomes more bananas and mellow after a day. It has a good balance with the acidity and is also delicious 👍. I still like Oubai 💕. Macho series finally debuted✨💪!

This time it is Junmai Daiginjyo Kame-no-o from Takihama. This sake was brought back from a visit to the nearby brewery after visiting Akame 48 Waterfalls in Nabari City, Mie Prefecture, back in the GW season. I think it was a Junmai Daiginjo series, and only this one from Kame-no-o was aged 3 years? (Sorry my memory is a little fuzzy on the number of years 🙏 ) It was only fate that I came across this one 😆. I will have it chilled. The bottle was opened with a whistling sound, which I didn't expect. The color has a hint of yellow. The top aroma is of plump bananas with a refreshing muscat-like acidity. It is already beautiful. From the fine, smooth mouthfeel, the banana flavor and light muscat acidity blend together smoothly, and the taste finishes with a slight bubbly bitterness, leaving a lingering rice taste on the tongue. As the temperature approaches room temperature, the fullness of the flavor gently expands and is delicious. Taki's signature dry and refreshing taste is refined and subdued, It is a good sake with a mild sense of maturity combined with a freshness. Maki-hata is another line of Takachi-yo sake, which is derived from the fact that Takachi-yo Brewery is located at the foot of Mount Makiki-yama, one of Japan's 100 most famous mountains. It is served well chilled. Crystal color. The top aroma is sweet, with a bright fruity aroma of strawberries and ripe apples, with a freshness of ramune.
