Autumn Dyed with Niigata Sake (2)
This autumn, we are holding a campaign on our own initiative to dye ourselves in Niigata sake.
2) Fruitful Hokusho
Sake from Murakami City in Shimoetsu.
It is often seen at Yamaya with a special distributor label of Taiyozakari,
Hokusho is a junmai ginjo brewed entirely in Niigata with Niigata yeast, rice, water, and techniques, and aged at a low temperature for more than half a year.
It is served cold.
The color of the sake is a gentle yellow-green.
The top aroma is mild and smooth on the palate.
The flavor structure is similar to Tsukifumi no Ike, with a clean, refreshing sake with a blue banana aroma and moderate rice flavor. The moderate acidity is also effective and crisp.
It is a lighter ginjo-style sake than the junmai sake Tsukifumi no Ike, with a good amount of rice flavor, yet it is easy to drink and delicious. Expect it to warm up as well. ♨️🍶

I'll be updating this autumn with more Niigata sake, interspersed with a little bit of another sake 😊.

Good evening, Jay & Nobby. In the Kansai area, we don't have many opportunities to encounter Niigata sake, so it was a good opportunity for the Niigata Sake Festival to come to Osaka😊I wanted to have salted fish with kanzuri for my entrée, but I gave up because I don't like spicy food🥵.
