Ippongi長期熟成酒 古熟
ひるぺこ
This time it is a long-aged sake from Ippongi.
It is a special junmai sake, a former product of Denshin, a limited distribution sake of Ippongi, that was stored for several years in a room temperature warehouse, and then aged for a long time in a Kotsuyaishi cave where the temperature is kept at around 10℃ throughout the year, making it a 31-year-old sake.
It is served at room temperature.
Topaz-colored appearance.
The nose has hints of mushrooms, aromatic wood, burdock root, bitter chocolate, and sour cream.
Gentle on the palate. The base is a fine bitterness and an angular acidity.
The lingering taste is intertwined with bitterness and gentle sweetness, and flows down slowly and quietly.
It is an aged sake with a well-defined and elegant taste, not too rich and dense compared to its age and apparent image.
When warmed, the bitterness is subdued and the elegant sweetness is enhanced, making it delicious as well.
In Katsuyama, where the Dinosaur Museum is located, I was forced to make a side trip to "Ippongi is so close! I was forced to make a side trip.
