I remember that the Junmai and the nigori were very good, so when I found the Junmai Ginjo, I immediately took it home.
It was aromatic and refreshing on the palate, but it also had a delicious umami flavor and a bitterness that is typical of Ippodo.
It is a perfect food sake and would go well with anything. Thank you very much for the drink.
Slightly wilder than Uraba Yanagi.

Autumn = hiyaoroshi! I headed to a local bar and found a never-before-seen Ippouki sake in stock, which I bought with my brain dead. I'll buy it again next time....
It doesn't have the tingling sensation of the unfiltered raw Ibuki, but it's still delicious. (I think I prefer it to the usual Ippo Mi!).
I think it has a sweeter taste than the unfiltered Nama Ibuki. It has a strong astringent aftertaste that goes well with food.
It has a slight melon aroma.

The aroma is a faintly sweet junmai aroma❗️As you take a sip, you'll notice a mild texture, followed by a sharp astringency on the tip of the tongue❗️And then the sweet aroma leaves your nose❗️❗️Good, sake⭕️
Fukushima has many sake breweries and I still have a lot of sake that I haven't tasted yet 🥲.
To be honest, there are a lot of sake that I don't like 😅
It is slightly dry on the palate, but the taste of rice spreads softly and the sweetness of rice soon arrives.
Personally, I prefer this sake with meat rather than fish.
This is my first time drinking Ibuki. It is a relatively new brand that was launched in 2011 by the ninth-generation head brewer of a historic sake brewery founded in Tempo.
In my experience, I have the impression that Fukushima sake has a strong umami flavor, and this Ibuki is just as strong as that impression. The sake is full-bodied with a clear alcohol taste, which is also due to the fact that it is a pure sake.
It is not the type of sake that can be drunk easily on its own.

The first sake of the fall season is "Ippoki Junmai Ginjo" from Toyokuni Shuzo in Furudono, one of my favorite breweries in Japan!
This is the sake that got me hooked on sake, so I was overjoyed to be able to get it!
The moment I opened the bottle, it smelled like pineapple! When you drink it, it also has a grape-like flavor!
