When we asked for a different kind of sake, one of the people at the counter was drinking it with the same mushroom hot pot as us 🍲 It has a thick and unique texture, with a slightly oily rice taste and a soft milky taste behind the rich umami. The first meeting was over after this.

Watanabe Sake Brewery was featured in the Bratamori's Ito Shizugen no Kai. You can sense their careful approach to sake making.

This time it is Nechi Nechi Otokoyama's Nechi Nechi Valley Gohyakumangoku 2019BY.
It is a sake from Itoigawa, Niigata Prefecture.
Nechi is a Nechiozan Nechi Valley Domaine sake.
I stopped by for a drink after work because of the holiday weekend 😎.
It is served cold.
It has a pale yellow appearance.
The nose has aromas of mushrooms, sweet chocolate, and soy sauce.
From the soft mouthfeel, there is an excellent balance between the clear, caramelized sweet umami and refreshing acidity, with a beautiful finish where the bitterness slowly builds from the acidity and finishes with a sharp finish.
With all due respect, I had no idea that this was such a beautifully aged sake, and I was very impressed after taking a sip.
It is a sake that I am glad to have encountered, as it is able to express such a beautiful and deep state of maturity in cold sake.
And, it is a pleasure to have found it,
While I wrote that I stopped by for a cup of sake,
I actually drank Kaze no Mori Weeks 2024, Gorin, and Nechi.

I think it might be a cafe and liquor store in Dojima 🧐 It was a little different label, but the Nechi I had at the event was delicious 😋.
Good morning, bouken ☀Yes, it's the Osare Cafe in Dojima! I didn't know about Nechi and I'm glad I got to drink it 👍They didn't sell the 2019BY, but they did sell a slightly more shallow aged version 😊.
I would say it still has some ageing potential - or it need to be rested enough before drinking. When it is freshly poured into glass, the taste is very reserved with only slight umami and minerals felt. After airing for over an hour, it finally shows the strength of rice, both raw and cooked rice. Also tastes like roasted nuts and chestnuts are spot. Much more enjoyable in the end!
It is like Echigo-Tsumari sake. It is very light. After Corona is a new thing, but before Corona, I was not much interested in drinking out and was a home drinker. Now, I always drink it on business trips. Finally, I drink on the way to a stopover. I also go to local liquor stores. I have completely changed.
But still, Niigata was a kingdom. Next month I will be in Iwate, and the month after that in Niigata. I am looking forward to it.
