Nara's Hidden Sake

The aroma is mild, and it is like adding lychee and alcohol without the sweetness.
The moment it enters the mouth, it goes in clear and transparent.
After that, the impression of [umami, gasiness, acidity, and bitterness] spread throughout the mouth at the same time.
The taste of the previous sentence remains after the drink is over (the gasiness is particularly noticeable).
Consistently, there was little sweetness.
It was a chic sake that seemed to stick with middle-aged people more than young people.

I could not read the calligraphy at all when I went to the Shokokuji exhibition at the Geidai Art Museum.
It might be easier to remember it as Nara if I saw the calligraphy.
It comes from a mountain called "Shinomine" in Gosho City, Nara Prefecture.
The label is seal script (tensho). It is one of the oldest typefaces of Chinese characters and refers to the general name for the typefaces before the clerical script.

It was brewed using a doburoku recipe.
It is brewed with yeast No. 77 and the rice polishing ratio is 77%.
On SNS, a liquor store owner wrote that it might be the first and last product of its kind.
It says it has a sweet taste, but the sourness stands out more than the sweetness. Slightly effervescent. It has a unique taste that is not Shinomine-like.
It tastes like a flax cat minus the sweetness.

As I happened to have a makunouchi bento (boxed lunch box) on hand, I enjoyed it with boiled butterbur and fried egg, but I think it is a very attractive sake without any snacks.
