Takatsugawa is an everyday sake from Shimane's Fusozuru. Full-bodied and full of flavor when cold. Warmed up, it is a warm and mild sake. It goes well with solid everyday dishes and can also be drunk with oshiruko (soup stock). It is a soft, matured sake with a low price, and I love its mellow, umami taste.

Suddenly my tooth was not feeling well and I had to go to the dentist in a hurry. This time there was no anesthesia and no pain, so I went to an event at the Hanshin Department Store that was being held. I bought my favorite Japanese sweets at the event and drank sake to go with them. The wagashi I chose was an easy-to-eat warabimochi. The kinako (soybean flour) was done to a strong flavor and was not too sweet. I had the sake I chose heated. The sake is aged for 2 to 3 years before being bottled at the best drinking time, so the hot sake had a delicious flavor that enhanced the caramel and nutty taste. When I saw the aged color, I thought it wouldn't go well with warabimochi (rice cakes), but it went well with kinako (soybean flour) and was delicious.

The last of the four rounds of the Sanin Sake Heated Sake Tasting. Takatsugawa" junmai sake from the Fusozuru brewery. We ordered this sake last season because it was commented on the website of Kotobukiya in Atsugi as a "hidden gem for home drinking. It is a junmai sake with 70% polished rice. Good coloring👍

I was looking forward to this sake because it was described on Kotobukiya's website as "a hidden gem for home drinking. When I poured it out, it was already quite a nice color. The details are unknown, but I assume that it is shipped after a certain period of aging. It has a mature, umami, and savory aroma. Acid also underlies. After seeing Oyaji-san's wonderful post, I came home thinking that raw oysters would be the best, and there were fried oysters. With the stewed mori I made yesterday that I threw in tofu. I will also try heating the sake from lukewarm to 40 degrees Celsius. It has more strength and dryness. I think I can go hotter still. Today is Risshun, exactly one year since the arrival of Nonbei Yokocho at our house. It is good to be able to keep warm and raise or lower the temperature without getting up from my seat. It doesn't have a lot of style, but it is simple and functional, specializing in heating sake, and it has been working quite well. The temperature has been raised to a jumpy heated temperature. It does not collapse at all and gains strength, the quintessence of Sanin sake. The acidity is also good. Conclusion, great as an everyday evening sake. I can feel the power of the Fusozuru brewery 😌.

6/10 We were served an atmospheric sake at a bar with a nice atmosphere. Junmai sake with a rice polishing ratio of 70%. It had a mild aroma and a mild taste. It has an atmosphere that would be more enjoyable if it were slightly warmed up. I paired it with a strong-flavored sake, but the strong rice flavor made it a good match.

Kuwabara Bar, Masuda City, Shimane Prefecture This is a brand I have never seen before and this is my first time drinking it. It was also served hot. At room temperature, the rice flavor is clear and the sake is very drinkable. It is a sake that you can drink before or after dinner and not get tired of it. This sake also does not fall apart even when heated. The warmth and umami of the sake increased as it warmed up, but the rice flavor remained strong to the end.
