Another one this time.
It is Takatsugawa by Fusozuru.
It is from Shimane Prefecture.
I saw Hiraccio-san drinking it and longed for it 🙌.
First at room temperature.
The color is a solid yellow.
The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese.
The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity.
When heated up, it becomes smoother and more balanced, and you can just keep on drinking it.
It has a relaxing and soothing taste.
When tasted with a thick Shigaraki-ware sake cup, the warmth of the clay makes it taste even better.
