Due to various circumstances, this sake was brewed at Shimizu Seizaburo Shoten of Saku.
This is a valuable sake, but we are relieved to hear that it is now in normal operation.
It has a slight bitterness, and the rich umami flavor comes through slowly.
It has a nice sharpness and a quintessential balance. ‼️
It is a bit close to "Saku", maybe?
Next is Tenka Nishiki, which the store bought when it went to Nagoya.
There are only a few places where you can buy it, so it's been a long time since I've had a saké.
It has a clean, clean taste, but it's also very robust and drinkable!
Apparently there are no distributors in Hyogo.
As far as I know, there are only 2 shops in Osaka and Nara in Kansai 🤔.
I was also given a sample of Senzuke Junmai Daiginjo Hyogo Omachi Unfiltered Unrefined Nama Sake, which was sweet and fruity and delicious 😋 It tasted like HanayoYoku or Takachiyo when it was first opened😳.
They only have one bottle of Senzuke Omachi, so I bought the fire-brewed one!

It is a very tasty sake with a good balance of sweetness, spiciness, and acidity.
At just under 1,800 yen for a 4-pack, it's a cosy sake these days, and good enough that I would recommend it to anyone I know.

Iga Sake Fair this spring.
Mie Prefecture went out to 🥷Iga, the home of the ninja, to visit a local sake shop I met at the event and brought back 5 sake 😊.
The first one was a special Honjozo draft sake from Tenga Nishiki.
This sake is made with Yamadanishiki from Iga and uses white malted rice only for the sake mother.
It is served cold.
It has a crystalline color with a fizzy, bubbly taste.
The nose is fresh and cool with orange to apricot sweet and sourness.
It has a mild mouthfeel with a fine effervescence. It has a fresh coolness like cider, a cute sweet and sourness reminiscent of apricots and mandarin oranges, a creamy and full-bodied riceiness, and a finish that is full-bodied and crisp with a bitter bitterness.
By adding alcohol to the original richness of the sake, the balance of aroma and sharpness is beautifully balanced with a light mouthfeel, making it a very enjoyable drink.
If you come across this sake, you must drink it!

First of all, Tenka Nishiki
This is a Junmai Daiginjo that had been made in a bag and left unrefined for 180 days. The unrefined sake was left to mature for 180 days 😳.
Tenge Nishiki is supposed to be a dry sake, but it had a sweetness like mirin (sweet sake) 😋, but the second half was dry and the balance was kind of bad? It was a strange sake 😁.
