Welcome Spring with Iga Sake!
Iga Sake Fair this spring.
Mie Prefecture went out to 🥷Iga, the home of the ninja, to visit a local sake shop I met at the event and brought back 5 sake 😊.
The first one was a special Honjozo draft sake from Tenga Nishiki.
This sake is made with Yamadanishiki from Iga and uses white malted rice only for the sake mother.
It is served cold.
It has a crystalline color with a fizzy, bubbly taste.
The nose is fresh and cool with orange to apricot sweet and sourness.
It has a mild mouthfeel with a fine effervescence. It has a fresh coolness like cider, a cute sweet and sourness reminiscent of apricots and mandarin oranges, a creamy and full-bodied riceiness, and a finish that is full-bodied and crisp with a bitter bitterness.
By adding alcohol to the original richness of the sake, the balance of aroma and sharpness is beautifully balanced with a light mouthfeel, making it a very enjoyable drink.
If you come across this sake, you must drink it!

Good evening, Jay & Nobby. Iga sake has a strong image of ◯KIMA, but other sake is also of a high level 🥷This Tenga Nishiki is so good that I drank 90% of it before coming back to myself 🙏 to the legendary J & N who noticed the 📷.
Finally, I asked the manager to serve me an unusual one (a habit-forming one) 😁.
First of all, Tenka Nishiki
This is a Junmai Daiginjo that had been made in a bag and left unrefined for 180 days. The unrefined sake was left to mature for 180 days 😳.
Tenge Nishiki is supposed to be a dry sake, but it had a sweetness like mirin (sweet sake) 😋, but the second half was dry and the balance was kind of bad? It was a strange sake 😁.
First time in Tenka Nishiki
It was full-bodied, dry, and had a noticeable bitterness.
After a few sips, the bitterness subsided a bit.

It is said that this sake is made by Shimizu Seizaburo Shoten in Suzuka City, Mie Prefecture, which is famous for its zaku (Japanese sake). It is said to be a rare sake.
This is a delicious and elegant sake. You can tell the difference from other sake the moment it enters your mouth. It has a very fruity taste.

It is made with white malted rice, but the acidity is not that great and the taste is quite sweet.

The aroma is a mixture of lactic acid smell and caramel aroma!
It's hard to describe... The mouthfeel has a solid sweet and sour atmosphere, but it disappears without completely dominating the palate...(good sharpness 😁)
Totally different from the sake I've had before - (interesting!)
I bought it because I had seen it on SNS! Sake is profound! 🥰
