This is a Junmai Daiginjo that had been made in a bag and left unrefined for 180 days. The unrefined sake was left to mature for 180 days 😳.
Tenge Nishiki is supposed to be a dry sake, but it had a sweetness like mirin (sweet sake) 😋, but the second half was dry and the balance was kind of bad? It was a strange sake 😁.
First time in Tenka Nishiki
It was full-bodied, dry, and had a noticeable bitterness.
After a few sips, the bitterness subsided a bit.
