Gorgeous, it tastes like a huayou-yu. We compared them with Houou Mida, a combination of a handsome man and a gorgeous beauty 😊. Totally different directions, but I feel the soul of careful craftsmanship in each. The subtle aroma and fresh & juicy sweet & sour taste. As expected, they are very stable 😆.

No specs were disclosed, they said. It is dark and punchy, with a clear character and intention of being, ah, Houou Mida. Kobayashi Shuzo, which celebrates its 150th anniversary in 2022, has launched a new brewery called "Hisho Kura. The main focus here will be on test brewing, and this was a special bottle. It was a handsome sake with a crisp, dark, umami taste 😆.

Do you have any unfinished business in the summer? I had so much fun at the Tokyo offline meeting with Haruei Chichi that my thoughts about drinking have completely skipped over 😅. I think my post at that time might be my unfinished business... 😆. Here is the sparkler before I uploaded it again. It's been a while, but SENKOU is still the best! It's been a while, but it's still the best SENKOUNKOU yet! It has a juicy, fruity, sweet and sour taste that reminds me of melon or ramune, but with a crisp sharpness. What I left to do in the summer... Today Tokyo is suddenly turning into winter 😊.

I was attracted by the name "Bodhidashi" and as a Nara lover, I had to drink it, but I was not a fan of the counterpunch of alu-ness that is typical of sake, this is Mimuro Sugi. I was afraid to try it... but it had a good balance of aroma of wooden vats, neat acidity, and bitterness, and was so tasty I had to straighten up my residence. It may be a selfish preconception, but "sacred and cool" is an expression I pulled out of my poor vocabulary. It would be a shame not to drink it, let alone eat it 😊.

Mmmm. Adult amazake, that is. Genmai in Tokyo! I was about to order it, but the store staff recommended this nigorigo, which is also delicious, so I tried this one instead of Genmai. As a result, I will try Genshu Mai next time... It was delicious, but the balance between the degree of cloudiness and spiciness was too much for my child to digest. No, it is a nice sake, but it is suitable for adults 🧑.

I enjoyed Shinsei and Jikin in Ginza and went home running in the light rain again. Let's leave aside whether it's okay to run after drinking alcohol 😂. This is Kagurazaka. Since I was on my way home, I usually go through it, but I was attracted by the lineup of alcohol and entered. Niauto is highly recommended by my husband, who is a down-home drinker 😂, so we tried it first. The first sip was like, "Whoa! Sake! But after the second sip, it changes to seven different colors: subtly sweet, spicy, fluffy.... The aroma is also very unique, and it smells like brandy⁉️. It's a liquor that deceives people's mind 😊.

Shinmasa is compared to Jikin. Too luxurious😆. I was so excited with the Shinsei that I was so excited with the other girls I happened to be with at the corner bar, that my favorite Jikin got a little hazy... but the royal aroma, balance, and full texture were too perfect 😆.

I went to GINZA 6 to prepare for tomorrow's off-line meeting in Tokyo with Haruei Chichi 😂. On the way to the Imperial Palace, my goal was to go to lululemon, not to the corner bar, but I knew there was a problem when I went to IMADEYA. But we ran into Shinsei here! Just like the image on the bottle, it is clean and light with a refined depth of acidity of Shinsei. It is, after all, genius heavenly water! This was a corner bar at GINZA 6, and all the customers ordered this one.

Here's another one, Aizan! This is also Aizan! We compared the drinks. Sashimi of saury, hokki, and red clams for the entrée ←the old man 😂. It is still a stable Kangiku. It has a neat taste with no sweetness on the side, but it has a slight sassiness and a slight sweet and sour taste. I still like Kanjiku 😆. It has nothing to do with sake, but hokki has an interesting shape, doesn't it? The remains after eating look like a pineapple 😂.

I am back from golf. Under the guidance of a female pro, I've been disciplined by a gymnast. Thanks to that, I have clarified my issues😅. I'm going to take a break. It's a review meeting at Hasegawa. The menu said it was acidic, so I had to order it as I like sour food. We compared it with Mutsu Hachisen. The first sip was sweet! but as I drank more, the depth of the flavor came out. Usually with Daiginjos I think they are too straightforward, but this one tasted like a rich, custardy cheesecake 😆. I didn't detect much acidity 💦. I couldn't taste much acidity 💦. Here is a quote from the online site. Saku" limited edition Junmai Daiginjo brewed with Hakutsuru-Nishiki Hakutsuru Nishiki" is a secret rice developed by the Hakutsuru Shuzo brewery in Nada. I actually opened it 2 weeks ago, but I drank a little and left it to play for a while 😅... This JoOusama was at Hasegawa Sake Shop, "I want a Milky Queen from Musical Instrument Masamune!" and my husband, who is a down-to-earth person, had to find it for me and embarrassed the clerk by saying, "It's not Milky Queen, it's Queen, are you mistaking it for rice?" 😂. Once again, I'm drinking it today, it's milder than it was 2 weeks ago😅 and I think the first sip is more blue and melon-like. It still has a gentle, slightly fizzy feel. We are in Kyoto. So here is a sake from Kyoto. Many of Kyoto's sakes have a clear outline, and this one is a very orthodox type. It is crisp, but also has a subtle fruity flavor. It reminded me of Ice Breaker, also from Kyoto, but softer, more relaxed, and more gentle than that 😊.

I am on my way back to Tokyo from a trip home. On the way back after completing the four Suwa-taisha shrines this year without being aware of it and receiving a special fan, I came across a Mikotsuru store. I bought a bottle of orikagarami, which was filled on the spot in the store. After that, we went outside the store for a little sipping, or rather, tasting 😂. My husband, who is a non-drinker, is handy as a driver on road trips 😂 Even in Croatia, I traveled alone on a white wine tour, while he drove happily😅. On a quieter note. I bought the fire-brewed sake here before and it tasted a little bit alu-ish and adult. Today's raw orikarami has a mature core, but with a delicate, subtle sushuwa and a strong sweetness. There is also a slight aroma of oak. With my own childish taste buds, I concluded that the raw Otona is still the best! We concluded that it is the best! Then, we finished with Eel Kobayashi, getting back to the real world.

I got a bottle of Genmai, Ginjo and tasted it with my brother-in-law. The liquor store owner told us that this was the origin of the sake. He said that this is the essence of a brewer who is good at making sake with alcohol. It is truly a food sake type. The breadth of flavor is certainly a characteristic of this brand. It is a well-balanced type. Maybe a more unique raw type would be better. It's just my personal preference 😊.

This is Kawanakajima Genmai, which I couldn't bring home in a bottle. I was told about a store that unloaded fresh at a liquor store and visited here. Finally! The first bottle of Genmai. It has a soft and gorgeous taste. My husband, who is not a drinker, drank some of it and said it tends to be similar to Hana-yoso 😅 It's true. The aroma and taste are soft and gentle. It is a modest Yamato Nadeshiko. I bought a four-pack bottle of Aruzoe, which is said to be its origin, so I thought I would drink it with the boys who can drink during the Obon holidays. This restaurant is ambivalent, being Hakodate in Nagano Prefecture, and the tuna sashimi was delicious. Mmmm. Times have changed😅.

I am back home. As usual, I found a bottle of Kawanakajima Genmai at a liquor store where my husband, who is a loser, wanted to buy it. You're not the one who drinks it! I'm not sure if I'm right or not 😂. Takeshon, I don't know if I can go to Kajika no Yu because it is far from the city, but my sister gave me the information about your relative's bakery 😂. On a quiet note. I heard that this store used to sell Kawanakajima Genmai before it became popular, and I wanted to get a draft of it, but I had to give it up because it was in a bottle😅. However, the owner's sake discussion was very interesting, and there was a wide selection of high quality sake. In the end, we decided on Sakunohana. Sakunohana is my favorite brand, but I was attracted by the stylish (lol) label and the 375ml size. It seems that they use a high malic acid producing yeast (Nagano yeast P43-14) to bring out the best flavor. As a lover of acidity, I was a little disappointed that the acidity was a little too gentle, but I could fully enjoy the sweetness of ripe apples 😆.

I tried this zanso yomogina before at a French bistro in Kichijoji (lol) and it was delicious. My husband, who is a gentler drinker, happened to buy it in Kichijoji. One sip and it was fluffy and a little soggy. It is a sweet, dark, sweet and sour apple. It has a complex layered flavor that leaves a little astringent and sour. Yeah, it's delicious! I thought "Yoroku-shiki⁉️" and looked it up... The name "Shirokushiki" is a Japanese word for "Shiroku" type, which is a combination of the word "Shiro" for white malted rice type and "Shiki" for white malted rice type." (excerpt from the product guide). The label on the back of the bottle reads, "The acidity is 3.2, which is almost double the national average for sake! This is my favorite, as I love sour sake. However, it is not all about the sourness, but a well-balanced and beautiful sake. Ah, happiness 😊.

I really didn't follow up on that😇. Thank you for today. It was interesting to talk about pairings and all sorts of interesting stuff👍.

Rigel, my apologies for not knowing you! Thank you very much 😆 Pairing is a very deep process, but I think sake should be enjoyed freely. Keep up the good work! 😊
